heyyy happy weekend 🤩 soo motivated to lift now finally! the past week felt like i had to drag myself to the gym i was so out of it 🙄 but i’m feeling much better now so excited to get my groove back and this page back on track. i’m going to run through some caption prompts and other stuff like that to keep it going! check my story and let a girl know what i should post more about 💚❤️

Decided to do something a little different with a classic stove top dish that my mom loves to make...and a favorite of mine (and Greg). Typically you make arroz con gandules on the stove top, but this one you can actually cook in the oven without much fuss. Easy and super flavorful. Kind of obsessed and need to make this again when I get home. 🤤

Baked Arroz Con Gandules
1 can gandules, rinsed and drained (pigeon peas)
1 cup brown rice
1/2 small yellow onion, diced
1/2 green bell pepper, diced
1 tbsp tomato paste
2 cloves garlic, minced
1 tbsp capers, diced or 2 tbsp diced olives
2 cups vegetable broth or mushroom broth
1/2 cup full fat coconut milk
1/2 tbsp soy sauce/tamari
1 tsp hot sauce
1/2 tsp cumin
1/2 tsp adobo (@eatloisa)
2 tsp sazon (@eatloisa)

Preheat oven to 400F. In a sauce pan add in vegetable broth, coconut milk, soy sauce, tomato paste, cumin, adobo, sazon, hot sauce and minced garlic. Bring to a boil, whisk to fully combine and then remove from heat. In a baking dish add drained gandules and spread across the surface evenly. Distribute onion, bell pepper and capers evenly. Cover dish with rice making sure to evenly distribute over surface. Then carefully pour over hot broth into dish making sure that it is spread out evenly in the baking dish. Cover top of baking dish with foil and place carefully into the oven to bake for 55-60 minutes. Remove from oven, pull off foil and fluff rice with a spoon. Serve as desired. I personally love a little extra cilantro and avocado with my rice, but you do you. 😌

Happy Friday my little 🍊 (cuties - get it?!) 😂 Earlier this week I set a goal for myself to MOVE at least 4x a week and so far so good! I’ve done 3 workouts already this week and have one planned for tomorrow AM! I know for me if I don’t schedule my workouts like meetings I’m very likely to skip my sweat session to continue working. I’m a Capricorn through and through and I love the hustle and the grind and love to be successful and for me work literally never ends. There’s always something happening and I’m the only one who can do what I do but I’ve also realized that I can’t be my best self without getting in my workouts! I’m a better version of me (more productive, more creative, and just happier) when I sweat! What workouts have you been doing this week?! I’ve done hot yoga 2x and hot Pilates once and tomorrow I’m boxing! Do you have any fun fitness goals you’re working on right now?! Also now that my girl @aubrewinters is back in town I can’t wait to start dancing with her again!!
