🔴Here is how you can make about 3 servings:⁠

1.Season 1 pound of boneless lamb with a lemon pepper seasoning, juice of 1/2 lemon, and 1 tablespoon olive oil. I used Sadaf, but you can use whatever brand you’d like. Let sit for a few minutes, or if you have time, marinate overnight.⁠

2.While the meat is sitting, get your veggie/salad base ready. I started with a bag of broccoli slaw that I dressed with a tahini dressing. To make the dressing, I used 2 tablespoons tahini, juice from 1/2 lemon, sea salt, and 1 tsp freshly minced garlic. Mix everything together, then taste. You’ll have to add more tahini/lemon/salt based on your preference if you’d like. Then just toss with your broccoli slaw.⁠

3.Once I was ready to make the lamb, I got a pan ready on medium heat, tossed in 1 tablespoon of oil, and put the lamb in for about 5 minutes per side. These take about 10-15 minutes. Cook until they are no longer pink. Alternatively, you can grill these. Extra bonus points x 1000 if you use a charcoal grill. I didnt have time today.⁠

4.Then I started plating everything. I put the lamb on top of the broccoli slaw, added 1 sliced Persian cucumbers, some cherry tomatoes, and some herbs. I also added 1.5 tablespoon of baba ghanoush that I dressed with some sumac and minced garlic.⁠

    This week I got several messages asking how I stay so motivated. 
Well here’s my answer I’m not! 
I’m never feel “motivated” I don’t wake up every day with some crazy emotion that helps me push play on my workout, or eat healthy. Its just as hard for me to do a workout as it is for you. I’m just as tempted to eat all the junk food or go though a drive through as you are. 
So how do I do what I do? I’m not motivated its true. 
But I am DRIVEN! 
I’m driven to workout because I get Instant gratification from it when I get the rush of endorphins, I get long turn gratifications when I see my arm and leg getting stronger and more toned or when I see my waist getting slimmer. 
It the same way with almost any thing you do if you think about it. I don’t do my dishes because I like it. I actually hate it but I’m “driven” to do my dishes because I hate seeing all the dirty dishes in my sink, see I get an Instant gratification from doing them by not having to see dirty dishes in my sink. I get long turn gratification for this when I go to get a fork and I don’t have to wash one. 
We are all driven to do most everything for all different reasons. 
I’m no different then you are I have just found my drive for why I need to workout and be healthy. 
My drive is that I never want to feel the way I did before, I never want to let my weight or health stop me from doing something I want or need to do. And I am driven to be a leading example to both my kids and to all the women on my team. 
So I guess what I’m saying is stop waiting for motivation to do something about your health! 
Let me help you find your drive! Let me show you how I do what I do and how amazing it really is to work everyday towards being a better version of your already amazing self!
