#breakfast details 👉🏻 2 eggs
1/2 cup mashed cooked, peeled sweet potato
1/4 cup coconut flour
1/4 cup maple syrup
2 tbsp coconut sugar
1 tbsp melted ghee or butter
Spices:
1 tsp ginger
1 tsp cinnamon
1/2 tsp baking soda
Whisk the eggs then add in everything else
Bake for
35ish minutes at 350F. Let cool then ice with
1/4 cup melted coconut butter + 1/4 cup maple syrup. Microwave it for about 30 seconds and stir together. Added a tiny bit of organic powdered sugar from @aldiusa for fun 😉 #glutenfree #eeeeeats #foodies #choosingbalance
Vegan Cinnamon Butterscotch Rolls 🌱
Made using my favorite homemade cinnamon roll recipe and filled with a delicious coconut butterscotch sauce from @naturescharm 💗 Happy Saturday! 😘 .

Ingredients
3 cups all purpose flour
1/3 cup cane sugar
3 tsp yeast - instant or active dry yeast
1/2 tsp salt
1 cup + 2 tbsp warm unsweetened plant-based milk (heated to 120-130° F for instant yeast) (or 110-120°F for active dry)
1/3 cup melted coconut oil .
Filling
1/3 cup coconut butterscotch sauce @naturescharm
1 1/3 tbsp ground cinnamon
1/3 cup brown sugar .
Instructions
Combine brown sugar and cinnamon. Set aside.
In a stand mixer, combine flour, yeast, sugar, salt in a bowl. Stir in milk followed by coconut oil. Mix on low speed with the dough hook until a rough ball begins to form. Continue to knead on low speed for another 5 mins. On a floured surface, knead dough about 4-5 mins by hands. Cover dough and let it rest for 20mins. .
Roll dough into a rectangle using a rolling pin. Spread the butterscotch sauce over dough, stopping 1/2-inches from the edges on the long sides. Sprinkle the cinnamon sugar mixture evenly on top the butterscotch sauce.
Beginning at long end of each rectangle, roll up tightly. Pinch seams to seal. Use a piece of thread or dental floss to cut each cinnamon roll. Slide the thread under the cinnamon roll log, cross the ends of the thread and pull the ends tightly in opposite directions to smoothly cut through the roll. Place the rolls in the prepared baking pan (9x9”).
Cover and let rest for 1 hour.
Preheat oven to 180C. Brush the coconut oil on evenly, all the way to the edges. Bake for 18-20 minsjust until rolls are lightly golden around the edges and centers are puffed and cooked thoroughly.
Remove from the oven and let it cool slightly before serving. .

GINGERBREAD FRENCH TOAST—> 3 slices of baby sourdough dipped in 1 egg, 1/4 cup @malkorganics , and 1/4 tsp @primalpalate gingerbread spice cooked on the skillet. top with @rxbar maple almond butter and a side of fresh berries and 1 banana.

Baked eggs, San Marzano tomatoes, Ricotta and Basil - I just eat right out of the pan #home
RECIPE BELOW
BAKED EGGS IN SPICY TOMATO SAUCE
4 large eggs
2 cups San Marzano tomatoes
¼ cup your favorite hot sauce
1 small onion slivered
1 cup fresh ricotta
1 tbl ketchup
1 tbl olive oil
2 cloves garlic minced
1 tsp paprika
Kosher Salt
Black Pepper
Fresh basil
In a large sauté pan or cast iron skillet heat oil over medium heat. Add onion, garlic and paprika and saute for seven minutes.
Add tomatoes, salt, and pepper to taste and reduce heat to low. Simmer the tomatoes for ten minutes. Add ketchup and hot sauce, cover and cook for an additional ten minutes on low heat.
Crack each egg into a ramekin and set aside. Remove cover and turn heat up to medium until the mixture begins to bubble. Create little wells in the mixture and add the eggs, one by one, slowly into the wells. Reduce heat to low, cover and cook until the eggs set (about three to five mins) – be sure to keep watching to make sure eggs don’t overcook – yolks should still be runny.
Remove from heat and add drops of fresh ricotta cheese and garnish with fresh basil.

the recipe i followed for these @levainbakery style cookies is on my stories. i just swapped the walnuts for 1 cup marshmallows and 1/2 cup crushed graham crackers. because s’mores is better than plain ole chocolate chip.
