Fluffy vegan orange and chocolate cake 🍊
Who's up for a moist and fluffy slice topped with thick and rich chocolate frosting?🙋🏻‍♀️
It's easy to make, vegan and healthy 🌱

Ingredients for one 22 cm loaf cake :
For the cake
190g | 1,5 cups spelt or all purpose flour
15g | 2 tbsp corn starch
150g | 3/4 cup light brown sugar
1tsp baking soda
1/2 tsp pink salt
180ml | 1,5 cups soy milk
2 organic oranges, zest and juice (120ml | 1/2 cup)
1 tsp vanilla bean paste
65g | 1/3 cup vegetable oil
2 tsp orange zest

For the frosting
30g non dairy dark chocolate, chopped
20g | 1 tbsp coconut oil
120g cashews, soaked overnight
60g coconut cream from a can
60g | 3 tbsp maple syrup
1/4 tsp pink salt
15g raw cacao powder
Orange zest and rose petals @suncorefoods for toppings
Instructions
Preheat the oven to 175 C. Grease a 22cm loaf tin and line with parchment paper.
In a small bowl, combine soy milk and orange juice and set aside for 5 minutes to create buttermilk.
In a large bowl whisk together flour, baking powder, baking soda, salt and sugar.
Add the oil, vanilla and orange zest to the buttermilk and mix until incorporated.
Pour the wet ingredients over the dry and whisk to combine.
Pour the batter into the prepared pan and bake for 40-45 minutes. Check with a toothpick in the middle if the cake is done.
Cool the cake in pan for 15-20 minutes before transferring to a wire rack to cool completely.

To make the frosting: melt the chocolate and coconut oil over a Bain Marie. Place the cashews, vanilla, maple syrup, coconut cream, salt, cacao powder in a food processor or high speed blender and blend until smooth. Slowly add the chocolate mixture and blend until creamy and smooth. Spread over the (cool) cake and let set for a couple of hours (in the fridge if it's warm outside).

KAISERSCHMARRN
3 eggs, separated
120 g all purpose flour
3 tbsp sugar
1/4 tsp vanilla bean powder
250 ml milk
A pinch salt
Butter or oil for frying
METHOD
In a large bowl combine all ingredients except the egg whites, and whisk until smooth. Let rest for 30 minutes.
Beat the egg whites to soft peaks and gently fold into batter.
Melt butter or oil in a non stick pan over medium heat. Pour the batter into the pan and cook until golden brown underneath.
Using a spatula, divide the pancakes into quarters and flip over and cook the other side until evenly golden brown.
Cut/tear the pancakes into small pieces, sprinkle powdered sugar on top and serve with berry jam.

Who has tried a doughnut burger?
A necessary double required with a visit to @milkbar_cafeish, getting our hands on the 'Death by Donut' which includes 2x Angus beef patties, double American cheese, bacon, hash brown, pickles, grilled onion, aioli in a cinnamon doughnut.
Paired with a milkshake and some loaded fries, this was a Sunday afternoon well spent. 🍩🍔🍩🍔🍩🍔🍔🍩
Chocolate doughnut as a bun next time? I think so...
