Woke up craving these HEALTHY SNICKERS 🍫🥜 just 6 ingredients, 20 minutes, and they’re vegan friendly, gluten free, and refined sugar free!! Guess I know what I’m up to tonight after work 😍.

The goods: oat cookie base, chewy date caramel, crunchy peanuts, all coated in dark chocolate. Ugh, SWOON. Made with simple, better-for-you ingredients. These are EVERYTHING. .

Some tips: You could use any nut/nut butter combo in these. If you don't have oat flour, just throw 3/4 cups of oats in a blender or food processor and blend until it turns to flour. .

HEALTHY SNICKERS
Date caramel:
1 cup soaked medjool dates (cover with boiling water, let sit 15 mins)
3 tbs @rxbar peanut butter (but any drippy PB works)
1 tsp maca powder
pinch of salt
1-2 tbs water (if needed)

Cookie base:
3/4 cup @bobsredmill oat flour
1/3 cup date caramel (from above)

Other:
2 bars @hukitchen dark chocolate
1/3 cup salted roasted peanuts

Directions
Line 8x4 pan with parchment paper.
Soak dates in hot water. Drain liquid, and place in blender with peanut butter, maca, and salt. Blend until smooth. You may need to add 1-2 tbs water. It will be thick and creamy. Scoop out of food processor and set aside in a bowl.
To food processor, add oat flour and 1/3 cup date caramel. Pulse until a crumbly, but sticky dough forms.
Press cookie base into pan. Then, scoop caramel layer on top. Place in freezer to harden for 1 hour.
Melt dark chocolate (I did 30 second intervals in the microwave). Once the cookie base is hard, remove from freezer. Slice into bars (it made 10 for me) or in half again into mini bars (makes 20). Working quickly, dip cold bars into the chocolate to coat completely, and place on lined sheet. Drizzle any extra chocolate over the bars once all are covered.
Place in fridge to set, and keep stored in the fridge. i sprinkled mine with flaked sea salt, because I’m that person 😂

Fluffy Chocolate Chip Pancakes by @itsallgoodvegan ❤️

Ingredients
1 ½ cups all-purpose flour
1 1/2 cups dairy-free milk
1 Tbsp baking powder
½ Tbsp baking soda
½ tsp salt
1 tsp vanilla
2 Tbsp maple syrup or agave
1 Tbsp apple cider vinegar
½ cup vegan chocolate chips
2 Tbsp vegan butter

Directions
Make the vegan buttermilk mixture. Combine the dairy-free milk and apple cider vinegar together in a bowl and set aside. In a large bowl combine the flour, baking powder, baking soda, salt, chocolate chips and whisk. together until a thick batter is formed. Pour the buttermilk mixture, vanilla, and syrup in the large bowl. Whisk until a batter is formed. Heat a large pan on medium heat. Lightly butter it and scoop 1/ 4 of a cup of pancake batter on the pan. Cook pancake until you see bubbles break the surface then flip (around 2 minutes). Cook each pancake until golden brown. Top with nut butter, chopped chocolate, and syrup and serve immediately. #bestofvegan
