Ingredients
Recipe:
Veggie chicken pieces: 175g, I used Vivera chicken purchased from @sainsburys
Marinade for chicken:
Coconut yogurt: 2 T
Tikka masala spice: 1/2 T
Turmeric: 2t
Salt: 2t
Olive oil: 1T
Other ingredients:
Onion: 1 finely chopped
Ginger: 1 T
Tomato puree: 2T
Xylitol/sugar: 3 t
Vegan butter: 2 T
Oat/coconut cream: 100ml
kasturi methi (dried fenugreek leaves): 1 t
Salt as required
Water as required
Spices:
Cinnamon stick: 1
Cloves: 4
Black cardamon: 1
Green cardamom: 2
Garam masala: 2 t
Red chilly powder: 2t

Method:
1) Marinate chicken pieces in the listed ingredients for 2 hrs
2) Heat olive oil in a skillet and fry chicken till caramelised on the outside.Keep aside
3) Heat vegan butter in a pan and add the listed spices, ginger and onions
4) Cook for a few minutes then add tomato puree and xylitol. Cook tomatoes till the raw smell disappears
5) Stir in oat cream, Kasturi methi and add chicken pieces. Add water to the desired consistency and cook for 7-10 minutes shredding the chicken with a fork. Season as desired.

Ultimate plate of comfort food 🙌🏻

🎄 mum and I went Christmas food shopping the other day and got some bits and bobs (including @lindamccartneyfoods new meat loaf!! And gravy hehe )
As you can see though, I couldn’t wait until Christmas Day to use the gravy so I made myself some sausages + mash absolutely drowned it in the stuff 😂🤦🏻‍♀️

🌟 For the mashed potato 🌟
1️⃣ wash and peel however many potatoes you like (I used around 5 small ish ones)
2️⃣ microwave them for 4 to 5 minutes until soft
3️⃣ mash them up with a potato masher
4️⃣ stir in a tsp of mustard, 1tbsp nutritional yeast, salt and pepper and some oat milk to get it to the desired consistency -

Garlic Broccoli Stir-Fry by @elavegan 💚 An easy and delicious stir-fry for your next meal! Recipe below!

​Ingredients
1 tablespoon oil
1 onion, diced
5 garlic cloves, minced
1 heaped tablespoon fresh ginger, minced
1 teaspoon onion powder
1 teaspoon paprika
1/2 teaspoon smoked paprika
Black pepper & sea salt to taste
Pinch of cayenne pepper
1 medium head of broccoli, cut into small florets (450 g)
1/3 cup vegetable broth (80 ml)
One 15 oz can of chickpeas, rinsed and drained
Cooked rice of choice for serving
Sauce:
1/2 cup of water (120 ml)
3 tablespoons soy sauce (gluten-free if needed)
2 tablespoons rice vinegar or balsamic vinegar
2 tablespoons maple syrup or any other sweetener
1 tablespoon cornstarch

Instructions
Heat oil in a pan over medium heat. Add onion, ginger, garlic, and all spices. Sauté for 3-4 minutes.
Add broccoli florets and vegetable broth. Fry until the broccoli is tender but not soft, about 10 minutes.
Meanwhile, prepare the sauce: In a medium bowl, combine water, soy sauce, vinegar, maple syrup, and cornstarch. Whisk.
Pour the sauce in the pan and add chickpeas.
Bring to a boil until the sauce simmers. Fry for a further few minutes.
Taste and adjust seasonings. Add more salt/pepper/cayenne pepper if needed.
Serve alone or with cooked rice. Enjoy!
