Red-Thai Curry with Vegetables and Noodles by @beferox 馃А Perfect for this easy weeknight dinner!

鈥婬ow to:
鈥婭 heated some sesame oil in a pan over medium-high heat, added 1 tablespoon of red thai-curry paste, 3 cloves of minced garlic and a small piece of minced ginger. I then let that cook for about 2 minutes and added some chopped veggies (1 onion, 1 zucchini, 1 bell pepper, 2 carrots, 3 tomatoes) to the pan. After another 2 minutes of cooking I added 1 can of coconut milk (400ml), a small jar of water, 2 tbsp. soy sauce, 1 tbsp. brown sugar and 2 tbsp. sesame oil. I brought that to a boil, reduced the heat to low and let everything simmer for about 5-7 minutes or until the veggies were soft. Then, I added some cooked noodles (I used spaghetti but you could also use rice noodles or ramen noodles) and the juice of 1/2 to 1 lime to the sauce, mixed everything together and served it with some sesame seeds馃尶馃尶馃尶

1 slice of bread of choice 鈥 I went for wholegrain 鈥1 flax egg (flax seeds + water)鈥1/3 cup plant milk鈥2 tsp maple syrup鈥1/4 tsp cinnamon鈥∣ptional toppings: banana slices, mini chocolate chips & nut butter

鉅鈥1. In a mug, mix together the flax egg, milk, maple & cinnamon.鈥2. Add in half of the bread, sliced into squares, then (optional) a few banana slices and mini choc chips, then the rest of sourdough. Make sure all sourdough pieces soak in the egg mixture鈥3. Microwave for 1:30-2 minutes, stopping every 30 seconds (just for a few seconds) so nothing spills over鈥4. Top with more banana, chocolate chips & nut butter

Butternut Squash Risotto by @eatwithclarity聽馃構聽So delicious and comforting! Get the recipe below:

鈥婭NGREDIENTS
2 cups arborio rice or short grain brown rice
4鈥6 cups vegetable broth, warm (see notes)
2 large tomatoes
1 yellow onion (2 cups chopped)
4鈥5 cloves garlic
2 tbsp olive oil
1/2 cup white wine*
1 medium butternut squash (2 cups pureed/mashed)
2 sage leaves
1/2 cup vegan parmesan cheese
1 tsp salt
1/4 tsp black pepper 鈥婭NSTRUCTIONS
Preheat the oven to 400 degrees Farenheit.
Cut the butternut squash in half and place face down on a baking pan lined with parchment paper.
Cut the tomatoes into quarters and add to the baking tray.
Bake for 30-40 minutes or until the squash can be easily pierced with a fork.
While that is cooking, add the chopped onion and minced garlic to a large pot with the olive oil.
Saute until translucent.
Add in the whole sage, salt and pepper.
Add the rice and let brown for about 2 minutes.
Add the wine and cook until all liquid has evaporated.
Add 1/2 cup of vegetable broth and cook until the liquid is absorbed/evaporated. Continue with this process until the rice is cooked through. Be sure to only add in 1/2 cup broth at a time, and stir occasionally until it is absorbed before adding in the next 1/2 cup.
When the squash and tomatoes are done, let cool or use an oven mitt to peel off the skins of the tomatoes and remove the seeds of the squash.
Add the peeled tomatoes to a blender.
Measure out 2 cups worth of the squash flesh and add to the blender. Process until smooth.
Add to the risotto and mix well.
Remove the sage leaves, stir in the vegan parmesan and black pepper. Serve warm.
