WAGYU BEEF FAT GOUGÈRES⁠. The á la carte Den menu is designed, explicitly and transparently, to utilize the leftovers of our tasting menu. Fine dining's drive for perfection and uniformity generates a lot of waste. But there is a stigma around using (or paying for) trim and leftovers. So even though every restaurant tries to utilize its leftovers to save money on product, it's usually done in a sneaky, hidden way. That lack of transparency perpetuates the stigma, which discourages restaurants from applying the effort and creativity required to orient themselves toward throwing out less product.⁠⠀

We're trying to combat that stigma by explicitly calling out our use of trim, extra bits, and leftovers in the Den menu, alongside our extensive program of preservation.⁠⠀

We had a fondue dish on the menu for a couple months, and each night we would have some leftover cheese sauce. It was rich and tasty, made with Fiscalini cheddar and Comté cheese, stabilized with the sweet and nutty starch of sunchokes. We discovered that we could whip that cheese sauce and keep it warm as a delicious, airy dip. So we started baking gougères to dip in the cheese mousse. The gougeres include even more Comté cheese, and are tossed in rendered beef fat after baking for extra rich flavor.⁠⠀

But the fondue dish just left the menu. That means that this snack will be leaving our Den menu very soon!⁠⠀

I was browsing YouTube and saw my favorite Bon Appetit segment #ReverseEngineered where @moroccochris recreated #MadhurJaffrey’s Chicken Tikka Masala. I’ve been meaning to take a stab at this dish for so long and that video inspired me to recreate it myself!

I decided to sear my chicken thighs on a cast iron instead of grilling it and made the masala on there too. It ended up being a little more brown and grainy than I wanted it too, but still super delicious. Can’t wait to try it again in the near future.

Fresh MANGO CURD is so easy to make and totally delicious. A few weeks ago I made some in-store @ziggysfresh to go with a pavlova board. 👨 There was this one gentleman there who thought my demo was so good, it made this MAN GO buy all the ingredients on the spot! 🤣 The recipe is up on their website and I’ll put a link in my bio. The puns are free 😉
