    Chocolate Covered Bread Pudding ☺️

I used my grandmother’s recipe, which she passed on to my mom. My mom used to bake this often when I was a kid and she taught me how to bake it too later on. I haven’t made bread pudding since a long time and it was so nice to relive those memories. •
I usually keep my bread in the freezer to keep it fresh longer here in the tropics. I decided to start keeping my bread leftovers too (#zerowaste). I’ve been keeping them in the freezer in a separate cotton bag. When I finally collected enough leftovers I made a bread pudding.

Recipe:
Bake the bread leftovers in the oven until crisp. Break the bread into small pieces. Soak the bread in milk. Add sugar and cinnamon to taste (as it always differs depending on the amount of bread you use). Pour into a greased baking tin and bake in the oven (180C) for 50 minutes. Super, super simple!

I am sure you could use a substitute for milk if you are lactose intolerant or want it to be vegan. You could also replace the sugar with another sweetener of your choice. 
I have read online that some add eggs and butter to the recipe but there is no need, my family have never added them and honestly, it tastes great without.

I covered mine in chocolate but you can just as well serve it as it is.
You can add nuts or dried fruits like raisins as well or even fresh fruits like small dices of apple. You can be creative and make new taste combinations and change it up every time which I love. •

I’ve teamed up with @mccormickfoodsaustralia to bring you this recipe, using their Organic Turmeric. It’s just 100% ground Turmeric sourced from India, and available at Woolworths. Please let me know if you give this recipe a try or if you’re planning to, don’t forget to use the save feature! 🍋 
Raw Vegan Lemon Turmeric Tarts
makes 3 small tarts.
base
3/4 cup almonds
6 medjool dates
1/2 tsp vanilla
1 tsp rice malt or maple syrup

filling
3/4 cup raw cashews, soaked for a few hours
2 tbsp lemon juice
2 tbsp maple syrup
2 tbsp melted coconut oil
1 tbsp water
1/2 tsp McCormick Organic Turmeric

In a food processor, process the almonds into a fine meal. Add the remaining base ingredients and process again until a sticky dough is formed. Divide into 3 small tart tins, press down evenly and set aside.
To make the filling, drain and rinse the soaked cashews very well. Add them to a high speed blender, along with the other filling ingredients. Blend until completely smooth. Pour onto the base and smooth out the top. Place into the freezer to set for a couple of hours. Top with lemon slices and a dusting of turmeric. Store in the freezer but serve slightly softened and creamy.

برای درآوردن کیک از قالب از کاغذ روغنی استفاده کنید. این توصیه خوب و درستی است ولی برای درآوردن کیک از قالب های طرح‌دار استفاده از کاغذ روغنی خوب نیست. و اصلاً نمی توان طرح قالب را به خوبی درآورد و عملاً نشدنی است اما راهکار چیست؟تجربه شخصی من برای درآوردن کیک از قالب مخصوصاً قالب های فلزی این است که:
قبل از اینکه خمیر کیک را در قالب بریزید، اینگونه قالب خود را آماده کنید:  من با ارده چرب میکنم تمام  وقتی چرب میکنیم و ارد میزنیم رویه کیک بدشکل میشه که دوست ندارم

بعد از پخت کیک کمی صبر کنید تا کیک شما کمی سردتر شود. نه خیلی داغ باشد نه خیلی سرد، حدود ۱۰ دقیقه بعد از اینکه از فر کیک را خارج کردید، اطراف کیک را با کارد یا کاردک از قالب جدا کنید.

سینی را روی قالب قرار دهید و قالب را برعکس کنید.

اگر کیک شما خوب پخته باشد و قالب را با توجه به توضیحات بالا آماده کرده باشید. برای درآوردن کیک از قالب مشکلی نخواهی داشت و خیلی راحت کیک داخل سینی قرار می گیرد اما اگر کیک بیرون نیاد
دو الی سه ضربه محکم به ته قالب بزنید. تا کیک از قالب جدا شود. اگر بیرون نیامد خیلی ضربه نزنید. چون ممکن است کیک شما نصفه از قالب جدا شود. روش زیر را انجام دهید.  وقتی کیک هنوز گرم است، می‌توانید پارچه‌ای نخی را با آب داغ خیس کنید و زیر قالب و اطراف قالب پهن کنید و ۲ الی ۳ دقیقه صبر کنید. بعد دوباره قالب را برعکس کنید و محکم به ته قالب ضربه بزنید تا کیک از قالب جدا شود.

۲- سعی کنید برای چرب کردن قالب از روغن جامد یا کره استفاده کنید چون باعث می شود لطافت کیک شما حفظ شود و برای جدا کردن کیک از قالب هم بهتر است.
۳- وقتی کیک را از قالب درآوردید داخل سینی نگذارید داخل توری،آبکش، یا الک قرار دهید تا سرد شود. چون کیک داغ است خمیر می شود و به ته سینی می چسبد

    Eggless, moist Banana, Coconut And Pomegranate Cake (recipe below) with an apple cider vinegar glaze. One of those kitchen experiments that make you want to dance. This cake is truely amazing. Happy Sunday lovelies💗 
Coconut, Banana and Pomegranate Cake. 
Makes a 7 inch round cake

2-3 large bananas, roughly mashed
1/2 cup coconut oil
1 cup brown sugar
1 tsp vanilla extract 
1 and 1/2 cup self raising flour
1/2 cup coconut milk (remove the fat/cream)
1 tsp baking soda
1 tbsp Apple cider vinegar 
For the glaze
1/4 cup apple cider vinegar
2 cups icing sugar

To make the cake, preheat oven to 180 degrees C. Grease the base and sides of an 8 inch round cake pan and line the base with baking paper. Mix together the bananas, coconut oil, brown sugar, vanilla in a bowl until smooth. Add the flour and mix to combine. 
In a glass bowl, place the coconut milk, then add baking soda and apple cider vinegar.  pour this mixture into the banana- coconut mixture. Fold until you have a smooth batter. 
Pour into the prepared pan. Smoothen the top. Bake for 1 hour or until cooked through (test by inserting a wooden skewer in the middle. It should come out clean,)
Remove from oven. Turn out onto a wire rack to cool. Once cool, drizzle with glaze. Top with fresh pomegranates. 
To make the glaze, mix apple cider vinegar and sugar together until you have a smooth consistency. Add more sugar or vinegar as needed.

    i have a newfound resolution for the next 365 days and i’m. so excited to announce that, i will be rekindling my forever love affair with cookies !! and i’m going to be doing that by making a different batch of cookies every week !! for the next year. this is a big goal for me because i can get kinda scatterbrained and let things fall on my back burner but. i’m writing this in my planner! every week. more cookies. this is the best resolution i have ever made for myself i don’t know why it took me so long to attempt this 😪 hope u all will support me on this endeavor. 🌎 first up!! (v) peanut butter cookies w a choco drizzle 🤤

• 1 3/4 cups flour (i used @bobsredmill gf 1-to-1 all purpose)
• 1 tsp baking soda
• 1/2 tsp salt
• 1/2 cup vegan butter (softened) i used earth balance sticks
• 1/2 cup creamy natural peanut butter
• 1/2 cup coconut sugar
• 1/4 cup maple syrup
• 1 tsp vanilla
• 2 tbsp nondairy milk
• vegan dark chocolate bar
🍫 
directions
1. preheat oven to 375f
2. get a large bowl and mix the flour, baking soda, and salt. set the bowl aside. 
3. add the remaining ingredients to another bowl (except chocolate) and beat together with a hand mixer on medium speed (can also use stand mixer)
4. on low speed, slowwwlllly pour in the flour mixture and mix until a dough is formed 
5. line a baking sheet with parchment paper, and use a small cookie scoop or roll little cookie dough balls and place on lines baking sheet 
6. press down to flatten cookies out a bit and use a fork to gently make the checkered pattern
7. bake for 10-12 min
8. allow them to cool for a little bit, and then transfer to a cooling rack to cool completely
9. microwave the chocolate in a bowl in 30-sec intervals until melted
10. when the cookies are cool, drizzle the melted chocolate over the top of the cookies! you can also dip them in the chocolate and even sprinkle with crushed peanuts before the chocolate sets!
