I can’t believe I never used to eat breakfast! About 5 years ago, I had never really eaten breakfast properly, just started snacking around 10am on chocolate bars and had most likely to have eaten my lunch by 11am 🙈🙈

But then, I started eating breakfast and now, it’s definitely there on my fave meal of the day! I love a yummy and nutritious breakfast to set me up for the day. I find it helps stabilise my hunger ready for the day ahead and helps me mentally too, in terms of focusing, as well as having many health benefits.

So here is one of my fave breakfasts, eggs!
9/10 times I also add egg whites to my eggs to give me more volume and protein.

Here are the details:
🍳 2 x whole eggs
🍳150g of liquid egg whites @bulkpowders or you can just use egg whites if you wish. This would equal about 4 egg whites probably so I use the liquid egg whites as it’s so much easier.
🥖2 x slices of wholemeal @hovisbakery nimble bread. This has only 50 calories a slice and is perfect if you love@bread but are looking for a slightly lower calorie alternative.

I cook my eggs using @frylighthq and that’s it! Add salt and pepper to season and there you have the perfectly balanced breakfast full of protein, carbs and healthy fats to keep you nourished and set you up for the day!

Bringing fresh sourdough to you every day seems simple enough but with a closer look this process is complex and wonderful. With every delicious bite remember that many hands have toiled to make it possible.
From the farmers who have planted, cared, and harvested the grain. To the miller who took the time to treat that grain with respect and honor its origin. Even after the grain gets to me, I count on my team to help me with this process. From Alex who also mills our specialty grains and malt and Carla who late at night during a difficult service shift mix the starter and weigh out the dry ingredients.
Our starter then ripens for 12 hours until Erica, Karla and I come in the mornings and do the mix. I am so thankful for these two who make it possible for me to have a day off once in a while. We then wait for our dough’s four hour fermentation time, folding to help it build strength. Next is pre-shaping and shaping which takes another hour or two. The dough is then put to rest overnight in the walk-in so when I come in, usually in the very early hours of the morning, they are ready for me to load in the hot oven.

This schedule has changed and evolved since I first opened in 2017. Levi who has mixed, divided and baked his share of breads to meet large orders or to cover for absent staff. Essentially running three businesses with all of their intricate facets and demands, while keeping my menu seasonal and experimenting with beer pairings and flavors. Writing a book and studying for my artisan bakers exam.

All of this has been rewarding and exhausting, full of failures and success. I’m honored to work with such wonderful hardworking people who have helped and supported me in growing my business and putting out a beautiful product. Thank you all for your continued hard work and diligence.

I have been LOVING my sourdough hobby and seriously look forward to baking a new loaf every Saturday. Pain de mie maison. Après l'émission tv sur ces fameux pains, je n'ai plus envie d'en acheter. Dans le mien il n'y a pas de conservateur, c'est certain qu'il faut le manger assez vite, contrairement aux pains de mie de supermarché où il peut conserver 3 semaines ! J'y ai mis du beurre (du vrai), du lait (pas de la poudre) et de la farine de blé de bonne qualité. Small but important reminder‼️ It is okay if you are NOT a 100% in love with your life and how everything is going on.
It is more about those little aspects which we should fall in love with.
No one is able to like everything about their life.
But there are so many little moments we should love and appreciate.
A coffee with our friends or fam.
A movie night.
Having breakfast in the morning while the sun starts to rise.
Little few hours that are so beautiful.
If we focus on them and fall in love with them.
We are able to survive and live the bad times as well.
If we focus on the positive times the bad ones become easier.
Lately I have tried my best to live for those good times. And guess what⁉️
They have become more!!!
We should definetly try to NOT make everything perfect.
Not reach out to love everything.
Accept and count the good times.
And maybe, yeah maybe one day we will fall in love with life.
The good and bad times.
But for now it is okay just to love the good times that much so we are able to survive the worse.

Je refais du pain depuis quelques temps. Pas tout le pain que nous consommons, mais des pains spéciaux.
En ce moment je fais du pain aux graines et fruits secs ; j'en achetais en boulangerie mais étant donné le prix de celui-ci... Je préfère le faire ! Et puis, c'est juste super bon. Tout le monde adore à la maison, et moi la première de leur faire plaisir 🤗

Je refais du pain depuis quelques temps. Pas tout le pain que nous consommons, mais des pains spéciaux.

One of my favorite things about making sourdough is seeing what results you get when you make changes to the recipe.

I accidentally added too much water when making this dough, so since I was working with a higher hydration, I decided to make a few other adjustments to see how how much more of an open crumb I could get.

Instead of my usual stretch & folds, I tried the coil fold method, which worked nicely with the higher hydration, more extensible dough. And since it’s been so cold, I decided to let my dough sit for another hour at room temperature after shaping before transferring it to the fridge overnight.

It’s probably not that evident to most people, but compared to the crumb I usually get, this is a lot more open. It tasted great, too!

I have been living and breathing all things sourdough lately...working hard at developing a recipe with methods that will produce reliable loaves of sourdough for beginners and more experienced sourdough bakers alike!

What I love most about making sourdough is the process: comparing techniques, testing different flour combinations and getting to experience each loaf that has been made with so much thought, care & love 🥰🍞

Progress with panettone 😄 As always I'm taking so many notes along the way and learning as I go. This was my favorite so far - the crumb is unbelievably soft and shreds nicely. The flavor is far better than I've made before... Moist and tender and sweet and rich. I know I am still not quite there yet but will continue to work at it! So much dedication goes in to each and every loaf - it's a joy to finally enjoy a slice at the end of the process 😋💖 Enjoy the journey, I always like to say! 🥰

Plans going forward: so far I've been using @kingarthurflour Sir Lancelot, but will now try Electra Light by @centralmilling to see how it compares. This flour was recommended to me by @publicanqualitybread in Chicago who make such lovely panettone. I want to keep working to strengthen my pasta madre, as the longer it is kept and refreshed the stronger and more mature it becomes. Next stab at panettone I want to very slightly raise the hydration and play with the fermentation duration as I go.

**FIVE DAYS** cold proof in the fridge at 1C and it comes out like this! 😯😳
I only mix dough on Thursdays and Fridays (for Friday and Saturday production bakes) so any spare dough that I have from those batches gets shaped as normal and then stored at the bottom of the fridge for family consumption through the week, when I bake it up in my regular home oven using a cast iron pot.
This dough was made on Thursday morning and it has been in the fridge ever since. Today being Tuesday means that’s five whole days. And it’s as good a crumb as the production loaves from the same batch had when they were baked on Friday - probably better actually! 😂
Yes it’s got a bit more tang to it but not that much more to be honest, and in no way is it overpowering. Is there any limit to how long the dough can be held at a low temp like this? Presumably, due to the increasing acidity, the LAB are still functioning, albeit at a slow pace, but at what point does this (or any other factor) compromise the dough structure and ruin the integrity of the final loaf? 🤔
