    My husband is out of town Monday to Friday for work so we try and take advantage of every weekend.  Friends family and good food.  Almost every weekend is a food adventure.  Today we had 20 lbs of pork butt smoking all day on a charcoal barbecue with pecan wood.  Husband woke up and had it on at 7am.  Got to enjoy this lovely pulled pork with grilled peaches and cream corn 🌽, brioche buns, veggies and baked beans made with organic canalleli beans from @grainworks_inc.  12 hours in the bbq was definitely worth the wait.  A beautiful dark caramelized crust and moist sweet, umami pecan meat inside.  Each morsel nestled comfortably in a golden brioche bun topped with a light sauce from the drippings.  The evening is full of laughter and conversation while we gather around the fire and finish off the higher with a glass of port.  Another fun food adventure  full of local food and the people we care about. 
Today’s food adventure involved learning to make a pork butt in the Weber kettle.  Key skills to achieve, temperature control through vent and moisture control and crust development.  We usually flambé the pork in bourbon and slow roast in the oven or sous vide and finish on the grill.  We also got to test the integrity of the brioche buns.  They are moist and delicious but how well do they hold food?  Do they have structure?  Will they stand up to the potentially sloppy mess of pulled pork?  It’s always disappointing eating a sandwich or burger and have the bun disintegrate.  I am happy to say the test subjects approve.  They stayed intact until the very last bite of each pulled pork sandwich.  The brioche bun dough is worked until optimal gluten development is achieved and a slow rise with reduced yeast in a cool environment.  There is nothing fast about this bun, low temp and slow just like the pulled pork.

    One of the current crazes in Bangkok is Brioche from heaven. And the young Thais apparently have this thing about taking photos of themselves in front of popular cafes. They come armed with cameras and pose for lots of shots. This guy was posing like that for about 10 minutes before the shop opened. And when I walked up to the door to look at the menu inside, they wanted to ask me to move off cos I was in the picture! I happened to walk away just as his girlfriend uttered the first word. Then he happily posed for another five minutes. Haha. So Singaporeans and our obsession with taking food photos isn’t the only crazy thing.  #brioche #bangkokeats #foodphotograpy #foodporn #foodcritic #straitstimesfood

    Seems like my food journeys are bringing me back to Duo Galleria. Here I was at Mesting Place, enjoying an item from their lunch menu - brioche sandwich with wagyu patty and purple cabbage. Swapped the yam chips with a salad for $2 more. Very yums!
