    Cooked some veggies today (surprise)!! I had something really similar the other day but I still thought I’d show it! I had garbanzo beans, quinoa, tuna, carrots, broccoli, cucumber, bell pepper, tomato, kale, mixed greens, and sliced avocado on top!😋🥕🥑🍅🥦

    couscous salad step by step recipe !

made this one up mainly because i’ve had sooo much pasta recently and wanted something fresh but o m g it was lush

firstly i roasted some courgette, tomatoes and chickpeas in a bunch of seasonings

while that was cooking i cooked loads of couscous and chopped up some garlic, peppers, spinach, olives, onion and tomatoes and put them in a big dish - i then mixed everything together with some butter and beetroot so it wasn’t super dry and added some extra seasoning

the vast majority of this was veg based and it was so healthy, refreshing and really really tasty !! i only used butter as i had to use it up but it would be just as good using olive oil to make it fully vegan 🌱

    Aubergine, Tahini, toasted chickpeas & mint leaves at @ottolenghi - gets me every time 😛🍆🥜🌱 & so pretty! 💜 their hot chocolates are also my favourite 🍫☕️👍🏽 creamy, chocolatey & almost buttery 😋

My bowl from this weekend! This bowl was basic but great because it contained my two favorite vegetables and my favorite legume 🔥

Of course I had to include hummus too, because if it doesn’t have hummus or avocado, it just isn’t complete in my opinion 😂

I briefly posted this Saturday with the numbers mixed up so here they are fixed! (Whoops)

Ingredients 🌟🌟🌟🌟🌟
1 can of chickpeas (15 oz) (rinse & drained)
1/2 cup of all-natural peanut, almond or cashew butter🥜
1.5 tablespoons chickpea flour (oat flour works, too!)
1/2 tablespoon pure vanilla extract
1/4 tsp of cinnamon
1/2 cup pure maple syrup or raw honey 🍯
3/4 cup chocolate chips or chunks, I use DF ones 🍫
1/4 teaspoon baking powder
1/4 teaspoon baking soda
1/4 teaspoon sea salt🧂

Instructions 🌟🌟🌟🌟🌟
Preheat your oven to 350F and line a small baking pan with parchment paper. Throw all ingredients into your blender or food processor- except for the chocolate chips. Blitz/blend until smooth, but allow the texture to remain thick. Gently fold ~1/2 cup of the chocolate chips with a spatula. Pour the batter into the pan and top with the remaining chocolate chips. Bake for 30-35 mins or until the edges are golden brown & the center has solidified. Allow them to cool for 30 mins before slicing into them. Store them in the fridge, they taste even better the next day!❄️☺️👌🏼

If you’re allergic to PB, or any nuts- simply swap for sunflower butter & make them lunchbox-friendly. These are also egg-free and completely vegan. If you don’t have chickpea flour, add a beaten egg as a binder. OG recipe inspired by @ambitiouskitchen and I gave it my own spin with a few additions/tweaks.
