    Channa Recipe :

Soak the channa (over night)
Boil the Channa in a pressure cooker - 3 Whistle 
Let the cooker depressurise naturally
Meanwhile cut onions and tomatoes into big chunks
Sauté the same along with some oil
Once the onions are caramelised and tomatoes become mushy turn off the stove
Let it cool down completely 
In a blender add the Onions , Tomatoes , Cashews , Ginger , Garlic , Chilli powder , Garam Masala and Salt
Once it’s blended , pour the same into a pan and bring it boil
Once you see bubbles add the boiled Channa and let it simmer for 3-5 Minutes

    You’ve got a sweet potato, a zucchini, an onion and some spinach.... what do you make?! 🤔🤷‍♀️ I’ve been finding lately that I haven’t had much time to sit down and plan proper meals so I’m making stuff on the fly whilst hangry 😈 and wanting take away instead

But rest assured that there is almost always something you can pull together out of miscellaneous ingredients - one thing that makes this task way easier is having some pantry staples tucked away for a rainy day

The answer to the above - what do you make? Quinoa roast veg salad with chickpeas and balsamic tempeh pieces 😋(having the chickpeas, quinoa and tempeh on hand transformed this dish from a sad collection of forgotten vegetables into a delicious and nutritious meal - for multiple days too!) The big takeaway here is that a little thought before hitting up Uber eats and some staple ingredients on hand can save you dollars and nourish you too - not to mention avoiding wasting already purchased food 🙀

    The fresh chickpeas are labour intensive to remove from their pod given there is only one pea in each and sometimes two (I have not yet seen two) . However, they are quite tasty and not anything like the dried version so I don’t imagine you could make hummus from these.. but perhaps and perhaps it would be green? If you are planning on these as an ingredient to a meal and you think you want a cup of chickpeas then give yourself a good hour to remove them from pods.
And how about that broccoli 🥦 and kale 🥬 my garden is still dishing out!

    Do you like curry?? I LOVE curry so I’m always trying to find new ways to have it. I made the recipe and tweaked it a little bit. ->I left off the salt and added later for taste. ->Did lite coconut milk
->left off the red Chile flakes because kids 🤪
->used spices vs fresh garlic and ginger 
It was soo delicious! I doubled the recipe and my take away is if you’re going to double the recipe, you can do 1 1/2 servings of chickpeas. Double was a lot!

    I made roasted chickpeas today for the first time, and they were so good and so easy. Honestly, I am not a huge chickpea fan. I love hummus and I have a soup recipe with chickpeas in it that I really like, but mostly I just tolerate them. The roasted version really changed that for me! I cooked chickpeas in broth in my instant pot a few days ago, and had some left over. I tossed two cups of the cooked chickpeas with 1 tablespoon of olive oil, 1 tsp garlic powder, and 1-2tsp of salt. I spread them on a parchment-lined baking sheet and roasted them for 30-35 min. in a 450 degree oven. My kids haven’t warmed up to them yet, but Clark and I think they are great.  I think these would be really great in a salad or as a crunchy soup topping. I couldn’t stop eating them.

    Want to Have Fun with Veggies?

Try this...Veggie Medley with Sautéed Chick Peas in EVOO and Lemon 🍋 
Cut up several tomatoes 🍅 and sauté them in olive oil

Add sweet potato 🍠 noodles and zucchini zoodles
Chop 🥬 Bok Choy

Add 2 cloves of garlic 
Add half of shallot 
Fresh herbs like parsley, basil, oregano and any other you prefer!

Add a cup of bone broth to enhance flavor (optional)
Season with pink salt and pepper. Sauté veggies till soft.

In a separate pan, sauté chickpeas with olive oil add pink salt

Once they turn brown, mix them with your veggie medley!

While still warm, Juice of 1 lemon and zest if you prefer! Mix and enjoy 😉

1. Drain a can of chickpeas but do not rinse with water. 
2. Transfer the chickpeas to a bowl. Add salt and mix well to combine.
3. DO NOT add any other seasonings. Bake in the oven on a baking sheet for a total of 45 minutes at 350F degrees.
4. Broil for 5 minutes for extra crunchiness. Transfer the crunchy chickpea to a bowl
5. Now add the seasonings :cayenne pepper, garlic powder, curry powder or other seasonings of choice and 1 tbsp of lemon juice. 
6. Let cool for 5-10 minutes. The chickpeas will continue crisping as they cool.
7. Serve with mashed avocado and your favorite side dishes (fries, greens, rice...). #bestofvegan

    My whole family LOVES these gluten free and dairy free Peanut Butter Chickpea Blondies! 🙌🏻👏🏻🙌🏻 They’re perfectly fluffy but still moist and fudgey!
