Recipe 👇
• 240g chickpeas, cooked
• 2 cloves of garlic, chopped
• 1 onion, chopped
• half cup of oats
• 2 tablespoon flax seeds & 5 tbsp of water
• 1 teaspoon cumin + barbecue
• Salt and pepper

Method
Mix all ingredients in a small mixer or food processor.
Let the dough rest for 30 min.
Form the dough in pieces and roll in sesame seeds.
Heat oil in a pan, add the patties and cook until golden and crispy.

This lemon pasta recipe was SO GOOD last week. My mom sent me a picture of her recipe, which she had already been raving about, and I added onto it a little. This pasta is one pot, comes together quickly, and if You want more/a different veggie, I think you could probably replace half the spaghetti with zucchini noodles.

RECIPE:
1. Wash and cut Brussels sprouts, toss in olive oil, and season with salt, pepper, and any other spice you want to add (I think I used zaatar). Pour onto half a baking tray. Season ~1/2 can of chickpeas in the same way and put on the other half. Roast in the oven at 400-425F for 20-25 minutes, or until well-browned and crispy.

2. In a large pan on medium heat, add a little olive oil, minced shallot and garlic, and salt and pepper. Cool till slightly soft, then add a few tablespoons of salted butter, the juice of one lemon (save the zest to, we’ll use it later!), and 1/2 cup of broth or water (or white wine tbh). I used broth. Bring to a boil and add pasta of your choice.

3. As the pasta cooks, you’ll notice the starch is thickening the sauce so you don’t have to add any cream (which I loved because I’m not a big creamy pasta person). Keep an eye on the pan in the oven and pull it out when the chickpeas and sprouts look crispy and done.

4. To finish off, toss the chickpeas and sprouts into the pan with the pasta once the pasta is al dente. Mix the zest of your lemon into the dish. Add grated Parmesan and salt and fresh pepper to taste. I also added some chilli flakes. Serve!

☺️Ciao Foodies! Piattino poco elaborato e leggero oggi, con i miei adorati ceci al rosmarino 🥰 su vellutata di zucca light senza patate (la adoro ma volevo fare qualcosa senza troppi carboidrati). Scusate se ci sono delle imperfezioni nell’impiattamento, me ne sono accorta troppo tardi, nemica la mia miopia. 🤓Non sono vegetariana né amo le diete super fit ma adoro questo tipo di piatti, sono molto sazianti e non gonfiano. Poi mi piace davvero sperimentare, e mi annoia mangiare sempre allo stesso modo. La cucina per me deve essere colorata e fantasiosa. ☺️ Nelle prossime settimane cercherò di fare più ricette di questo tipo. Se avete consigli di qualche tipo sono ben accetti. Dinner was pan grilled aubergines with spiced chickpeas & beetroot, with not 1 but 2 dressings! I sliced an aubergine lengthways, so they are thin enough to cook quickly, but thick enough to not fall apart. Scored & lightly seasoned before being pan-grilled for 5 minutes on each side. I spiced up some canned chickpeas with olive oil, garlic, cumin, hot paprika, za’atar, salt & pepper. The cooked aubergines were drizzled with a homemade tahini dressing before being topped with sliced beetroot, chickpeas, and harissa yoghurt. Served with couscous (steeped in hot veg bouillon), avocado & parsley. On the table in half an hour, with most time spent on assembly! Oh I do love that despite all the flavours, you can still taste the underlying smokey umami-like flavour of a simple grilled aubergine 🤤💕🙋🏻‍♀️🍾🥰

Pasta, pasta and more pasta! This meal was deffo a dream come true and a perfect pre-workout lunch, so I’ll share the recipe below: be sure to save and make it later because all pasta lovers need this one in their lives. Hope you’re all having a fantastic day so far xx

Chickpea and mushroom pasta
150g pasta of choice
1 medium onion, chopped
1/2 zucchini, chopped
150g mushrooms, chopped
1 can chickpeas, drained and rinsed
1/2 can coconut milk
2 tsp turmeric
1 tsp cumin
2 tbsp tamari
1 tsp cornflour
2 cups spinach
Cook the pasta according to packaging instructions. Meanwhile, add the onions, zucchini and mushrooms to a non-stick frying pan and cook for 3-4 minutes, until softened. Add the chickpeas and pour in the coconut milk together with the turmeric, cumin and tamari. Stir for 2-3 minutes, then drain and rinse the pasta and add it to the sauce together with the cornflour and stir until the sauce thickens. At the last minute, stir in the spinach and cook until it wilts.

Seasoned with Chinese 5 spice and garnished with my own roasted wasabi omega seeds which consist of linseed, pumpkin seed and sunflower seeds. Avete presente quando vorreste che una cosa non finisse mai? Ecco, penso che sia la sensazione giusta per il pranzo di oggi 😂😂 Oggi avevo tempo e voglia di spadellare e devo ammettere che non me la sono cavata male 😋😋🍛🍛

Turku zirņu tofu!
Vakar uzgāju internetā nejauši šo vārdu savienojumu! Izdomāju ka jāizprovē kas līdzīgs!
🌱100g turku zirņu milti
🌱~160g ūdens
🌱krāsai-var pielikt kurkumu
🌱garšvielas-visvisādas
🌱sāls
🌱mandeļu milti (var citus miltus)
🌱eļļa cepšanai
Turku zirņu miltus sajauc ar garšvielām (iesaku baigi neskopoties ar tām) un sāli. Tad ar putojamo slotiņu maisa un sāk lēnām liet ūdeni klāt. Ūdens daudzumu +|- piekoriģējiet, lai gala beigās ir putra bez kunkuļiem( ne galigi šķidra, ne baigi bieza-vidēja). Liek katliņā uz lēnas uguns silda, nepārtraucot maisīt. Kad “putra” jau sāk mest burbuļus un ir sabiezējusi, lej ietaukotā traukā taisnstūra formā. (Izmantoju keksa pannu). Liek dzesēties. Pēc kādas stundas jābūt sastingušam. Atzīšos, ka man sanāca diezgan pamīksts, pieļauju ka ūdens varbūt bija par daudz. Cik skatijos netā, tad var sanākt tiešam stingrs un blīvs.

¡¡Receta destacada para este día!! los famosos Falafel de garbanzos son una exquisita, fácil y rápida opción para darse un gustito saludable a la hora de almuerzo. ¿Y tú, que esperas para prepáralos? Ingredientes: ⁃ 500 grs de garbanzos sin piel (dejar en remojo la noche anterior) ⁃ 1 cebolla picada ⁃ 1/2 taza de perejil fresco ⁃ 1/2 taza de cilantro fresco ⁃ 3 dientes de ajo, picados ⁃ 2 cdtas de comino molido ⁃ 1 tazas pan rallado o de harina en caso de no tener pan rallado ⁃ 1 taza de harina de garbanzos ⁃ 1 cdta de bicarbonato ⁃ 1 cdta de polvos de hornear ⁃ 1 cdta de sal ⁃ 1 pizca de pimienta negra ⁃ Aceite para cocinarlos
Preparación: - Lavar con agua y escurrir los garbanzos dejados en remojo la noche anterior. - Triturar en la juguera o procesadora directamente los garbanzos sin cocer junto con las cebollas, los ajos, el perejil, el cilantro fresco y una taza de agua. - Procesar todo hasta conseguir una mezcla espesa. Aparte en un bowl añadir la sal, el comino molido, la pimienta negra, el bicarbonato, los polvos de hornear, las harinas (o pan rallado) y mezclar un poco. - Dejar reposar la mezcla tapada durante 30 minutos. - Formar con la mezcla pequeñas bolas o mini hamburguesas, del tamaño que gusten. Ingredientes: ⁃ 500 grs de garbanzos sin piel (dejar en remojo la noche anterior) ⁃ 1 cebolla picada ⁃ 1/2 taza de perejil fresco ⁃ 1/2 taza de cilantro fresco ⁃ 3 dientes de ajo, picados ⁃ 2 cdtas de comino molido ⁃ 1 tazas pan rallado o de harina en caso de no tener pan rallado ⁃ 1 taza de harina de garbanzos ⁃ 1 cdta de bicarbonato ⁃ 1 cdta de polvos de hornear ⁃ 1 cdta de sal ⁃ 1 pizca de pimienta negra ⁃ Aceite para cocinarlos 
Preparación: - Lavar con agua y escurrir los garbanzos dejados en remojo la noche anterior. - Triturar en la juguera o procesadora directamente los garbanzos sin cocer junto con las cebollas, los ajos, el perejil, el cilantro fresco y una taza de agua. - Procesar todo hasta conseguir una mezcla espesa. Aparte en un bowl añadir la sal, el comino molido, la pimienta negra, el bicarbonato, los polvos de hornear, las harinas (o pan rallado) y mezclar un poco. - Dejar reposar la mezcla tapada durante 30 minutos. - Formar con la mezcla pequeñas bolas o mini hamburguesas, del tamaño que gusten. Meal 1👉🏻 2 chicken breast, recipe: Cook the 2 chicken breasts in a skillet over medium heat for 5 mins on each side. While it cooks, mix in a bowl 1/4 cup hot sauce + 2 tbsp coconut aminos + 1 tsp garlic + 2 tbsp honey. Spray a baking pan with nonstick spray, heat the oven to 400F. Add the chicken breasts to the baking pan and then coat the chicken with the mixture and bake for 20 mins. Paired with 1/2 avocado + chickpea pasta with a little bit of olive oil and everyday seasoning on top

Meal 2 👉🏻BBQ chicken: heat a skillet over medium heat and once it’s hot, add a little olive oil. Add 2 chicken breasts and cook for 6-7 minutes on each side. Then transfer to a bowl and take two forks and shred the chicken. Once it’s shredded, add 1/2 cup low sugar BBQ sauce and mix together. Add to 2 romaine lettuce cups and then I added onion and tomato. Paired with bean nacho chips + 1/2 avocado

Meal 3👉🏻 2 eggs boiled for 7 mins + 1/2 avocado + 1 sweet potato cut into rounds and broiled for 10-12 mins on the bottom shelf

Meal 4 👉🏻 1 piece of salmon cooked for 3 mins on each side in olive oil over medium heat with chipotle seasoning and pink Himalayan salt sprinkled on top + zoodles sautéed in olive oil for 3-4 minutes + vegan pesto + sweet potato chips broiled for 10-12 minutes

🛒YOU’LL NEED

✔️Olive oil
✔️1 white onion, small dice

✔️1 tin chickpeas, drained
✔️200g tomato passata
✔️200ml coconut milk
✔️200g frozen peas
✔️1 handful spinach, chopped
✔️300g pasta e.g. penne
✔️Salt and black pepper

👩🏼‍🍳RECIPE
.
1️⃣Fry off the onion and garlic in some olive oil in a large frying pan. Cook for 5 minutes before adding the mushrooms and cook for 5 minutes.

2️⃣Add in the smoked paprika and curry powder and stir. Pour in the chickpeas, tomato passata and coconut milk, bring to the boil and simmer for 10 minutes. Add the peas after 5 minutes and season with salt and black pepper.
.
3️⃣Cook the pasta according to packet instructions – save a splash of cooking water!
.
4️⃣Add the pasta into the sauce with the spinach and a splash of cooking water. Stir to wilt the leaves and serve warm.

Simple nourish bowl for lunch today! Turmeric chickpeas, miso mushrooms, quinoa, lettuce, cherry tomatoes and avocado, drizzled with tahini and sprinkled with nutritional yeast post-photo. To make the turmeric chickpeas, I simply cooked the chickpeas in a saucepan with turmeric and a pinch of pink Himalayan salt. Recipe (yields 4 servings)⁣⁣
🌱Ingredients:⁣⁣
~ 2 small sweet potatoes, skin removed & cubed⁣⁣
~ 1 can chickpeas, rinsed & drained⁣⁣
~ 1 cup chopped broccoli⁣⁣
~ 3 shallots & 3 cloves garlic - finely minced/blended⁣⁣
~ 1 heaping tablespoon red chili paste/sambal⁣⁣
~ 2-3 cups veggie stock (adjust to your preference)⁣⁣
~ 1/4 cup coconut milk (or more for a creamier texture)⁣⁣
~ oil, salt to taste⁣⁣
⁣⁣
✅In a heated pan with a drizzle of oil, pan-fry sweet potatoes for 3 mins (flip occasionally so all sides are slightly cooked, do not cover lid). Dish out & set aside.⁣⁣
✅Using the same pan, add 2 teaspoons oil, then sauté shallots & garlic until fragrant over low-med heat. Stir in red chili paste & veggie stock - for a smoother curry texture, blend all ingredients into a fine paste then return mixture to the pan & continue to cook. Add in chickpeas, sweet potatoes, broccoli & let simmer until sweet potato is slightly tender (I added broccoli last to keep the crunch😊). Season accordingly with salt or for a sweeter version, coconut sugar may be added. Finally, add in coconut milk & let simmer for 1 min. Serve warm with rice.⁣😍⁣
