RECIPE OF THE WEEK:

My favourite part of the week! We are still on our breakfast theme this week and to cap it off I am sharing the recipe for these simple oatmeal and cinnamon pancakes.
Theses pancakes are really fluffy and filling and packed with yummy goodness. They are perfect if you are looking for a heavier breakfast or if you are having a late breakfast, perhaps towards brunch time.

The texture and colour of these pancakes is a bit different to regular pancakes because of the addition of the oats so it is important to remember this when cooking. Other than that, it is pretty similar to normal pancakes!

FLUFFY OATMEAL AND CINNAMON PANCAKES

Ingredients
1 cup (70g) Quick cooking oats
2 cups (480ml) Milk
11/2 Cup (180g) Plain flour
4 tsp Baking powder
2 tbs Sugar
1 tsp salt
11/2 tsp Cinnamon
1 egg
3 tbs Vegetable oil
Butter for frying

Method

1. In a bowl, combine the milk, oats and milk and leave to stand for about 5-10 minutes or until the oats are soft to touch.
2. Once the oats are soft, add your flour, baking powder, salt, sugar, egg and oil.
3. Mix until combine. Do not over mix. Your batter would be pretty thick. Leave the batter to stand for about 3- 5 minutes.
4. Heat your frying pan on the lowest setting. Once your pan is hot, melt some butter. Ensure the melted butter covers the entire base of the pan.
5. Using a 1/3-cup, scoop your batter and pour into the pan.
6. Allow the pancake to cook until the surface has no wet batter. You should begin to see small holes as well on the top.
7. Once the top surface of the pancake is dry, carefully flip your pancake and cook the other side for 30 seconds.
8. Place your cooked pancakes on a plate and repeat steps 4-7 until the entire batter is exhausted.
9. Serve your pancakes with syrup, fruits or nuts.

Quick lunch idea ... this was my 3 minute hot lunch today thanks to @traderjoes kale/cabbage/brussels mix and a cooked chicken breast in my fridge. All in the same skillet, I sautéed 2 handfuls of the greens and sliced up half of the chicken breast. Seasoned with coconut aminos, toasted sesame oil and sesame seeds. So good, and perfect for busy people! 💚

I was busy working on my homework assignment tonight and lost track of time. All of sudden I looked at the clock and it was after 6pm so I decided to make a quick #dinner I made #airfryer baby potatoes with some sautéed broccoli, zucchini and red pepper that I got in my @imperfectfoods box yesterday and then I had a turkey sandwich on @udisglutenfree bread. My trick to make toasted bread since I don’t have a toaster is to put the bread in the air fryer for about 2-2:30 minutes each side. I get a nice crunchy bread then for my sandwich. Sticky asian meatballs with cauliflower rice, carrots, and zucchini.
.
Meatballs: ground beef, egg, cauli rice, almond flour, ground pork rinds, fresh garlic, fresh ginger, and minced onion, salt & pepper. Broiled for 12 min.
.
Sauce: coconut aminos, vinegar, lime juice, fresh garlic & ginger, salt, pepper, tapioca starch slurry. Heat till thick.

Growing up in Uganda, East Africa, our family always had kidney bean and potato curry at least once a week. Kidney beans grew in Uganda and were always available fresh( not dried or canned).I always crave this comfort food in the winter. So filling, so healthy, so yummy!

Cheesy Chicken Broccoli Pasta 🍝🥦😋

This Cheesy Chicken Broccoli Pasta is a dish that is packed with cheesy, rich flavor, loaded with chicken and broccoli. It's prepared all in the same pot to ensure each bite is tasty and easy to whip up in a flash! One pot and only 30 minutes is all you require to make this incredibly delicious dish!
.
1 tbsp olive oil
1 lb chicken breasts boneless and skinless cut into small bite size pieces
1/2 tsp salt or to taste
1/2 tsp pepper or to taste
1 medium onion chopped
4 cloves garlic minced
8 oz pasta uncooked, such as penne, shells, rigatoni, etc.
1 cup chicken broth low sodium
2 cups milk
2 cup broccoli cut into small florets, 1 head of broccoli
1/4 tsp nutmeg
2 cups cheddar cheese shredded

Instructions
Heat the olive oil in a large skillet. Add the chicken breasts to the skillet and season them with salt and pepper. Cook for about 5 minutes until the chicken is cooked through and starts to lightly brown.
Add the onions, garlic and cook for another 2 minutes until the onions softens a little bit.
Add the pasta, chicken broth, milk and bring to a boil. Turn the heat down to low, stir, cover the pot/skillet and simmer for 15 minutes, stirring occasionally, until the pasta cooks through.
Uncover the pot and stir in the broccoli. Continue cooking for a couple more minutes until all the liquid evaporates. Stir in the cheddar cheese. Taste for seasoning and adjust with salt and pepper if needed. Serve while warm.

The finished product! This was a simple dinner to fix, 10 minute prep time (boiling the potatoes up front in broth helps with flavor and cook time). 30 minute cook time in the oven. The pork chops were soft and tasty, I would like more flavor and spice on the Brussels sprouts though, so I will be tweaking the recipe for the Brussels sprouts. The veggies were tasty, we just prefer them a bit spicier. The purple in the photo is a potato. Beautiful color isn’t it? Overall, this dinner was a win. Tomorrow night I will be making meatloaf and gluten free macaroni and cheese if you would like to check my page for the before and after on that 🤪🤪. Currently surrounded by boxes and random piles of stuff we are donating/getting rid of/haven’t figured out how to pack yet BUT I did finish going through ALL of my clothes and I did manage to put together a decent #dinner: salmon croquettes, salad, #airfried butternut squash and some oven roasted broccoli and cauliflower served with a dollop of #homemade mayo... not super pretty, but it came together in under an hour and it was #farmerben approved, so I’m calling it a win! 🎉

🍓These strawberry almond energy balls are jam packed with healthy ingredients, and they only take 5 ingredients and 5 minutes to make. Soon enough these will be a regular in your meal prep rotation.
🍓
Strawberry flavored, energy packed, and made with just five ingredients. Perfect for a quick snack or for a whole foods dessert.

Ingredients
1 cup pitted medjool dates
4 medium strawberries, sliced
3/4 cup slivered almonds
1/2 cup rolled oats, dry
1/2 cup shredded coconut flakes

Instructions
1. Combine all ingredients, except the coconut flakes, in a food processor (my favorite brand). Process until almonds are broken up into tiny pieces (not fully ground)
2. Form into 13-14 ping pong sized balls and let rest in the fridge for about an hour.
3. Pulse the coconut flakes in the food processor, or chop up finely by hand until they are broken down into small pieces. Roll the chilled balls in the coconut flakes. Store in fridge for up to a week. Enjoy!

The sounds of cooking!

Cooking is happy, festive, joyous.. a celebration! I started cooking because I wanted to be healthier.. and I realized the only way to do that, was to have the food you eat be in your control. From there I got curious about the art and science of cooking. Over time I started enjoying it.. the process of cooking became something I would relax with. Sometimes, it is almost meditative.. and most of the time, it is just fun! It is like a show that you are in charge of and that serves all your senses!
There are amazing sights, smells,.. for sure taste too. But, I have been recently enjoying the sounds of it. I love the sizzle of food when it hits the hot pan! That sound is so happy, festive that it immediately puts me in a happy mood. Recently I made some amazing carnitas and today grilled some delicious chicken. I enjoyed the sounds so much, that I recorded them for your pleasure!

A nourishing bowl of molokhia soup. Molokhia/Jew's mallow or Rau Đay in Vietnamese is one of the few veggies that thrives in hot and humid Miami summers. They keep nicely in the freezer too. 🅐🅝🅞🅣🅗🅔🅡 🅕🅤🅛🅛 🅓🅐🅨 🅞🅕 🅔🅐🅣🅘🅝🅖. Doing my first weight cut in a long time. I spent all of 2019 and most of 2018 eating at maintenance and taking care of me. It’s totally cool to set aesthetic goals, but before you go and cut calories, you got to take care of yourself first. ❤️ Setting my sights on 5lbs loss but I am not putting all my stock on the scale. Just looking to regain my body confidence. Giving myself 2 months, & whatever the outcome I know my body is not happy on a deficit too long and having a 6-pack is not my goal.
So far, I am eating a lot of the same foods as you can see. Still plenty of oats, lean protein and produce. Focusing more on food volume and timing to best manage hunger and keep myself from feeling deprived.
1. Breakfast: Powered by proats : 1/3 cup quick oats, 1/3 cup egg whites, 1 scoop of collagen, cooked on the stove top until creamy and delicious and topped with @eatfatso , fresh raspberries and a little granola for crunch.
2. Lunch: My go-to. Turn last night’s dinner into a big salad. Left over salmon, salad + a side of air fryer Japanese yam fries.
3. Snack: Randomness to fit my macros. Rosemary ham (from Costco we love it), Swiss cheese, a few crackers, cucumber slices and hummus.
4. Dinner: Delicious turkey meatballs with burnt broccoli and rice from @bonappetitmag .
5. Bed time treat: 1/4 quick oats done in the microwave with water, with a few & @eatfatso cocoa. 😍

Daily total: 190C 67F 145P with 29g of fibre. •••••

#ad green pea falafels featuring @birdseyevegetables steamfresh sweet peas. peas are a fun swap for traditional chickpeas in a falafel. @birdseyevegetables has an array of veggie and grain options, many of which can be microwaved like the ones in this recipe! this makes healthy recipes quick and easy. // recipe for these falafels, inspired by a recent meal kit delivery i received, as follows:
1 bag @birdseyevegetables steamfresh sweet peas (makes about 2 cups cooked)
2T tahini
1/2 teaspoon minced garlic
1/4 teaspoon salt
1/4 cup panko breadcrumbs
1/4-1/2 cup whole wheat flour, start with 1/4 cup and add more as needed
step 1- microwave peas according to package directions. transfer to a food processor and blend. i like to leave some chunks.
step 2- transfer to a bowl and add mix in breadcrumbs, flour, garlic, salt, and tahini to form a dough.
step 3- roll into 8ish falafels. refrigerate for 10 minutes before cooking.
step 4- heat avocado oil in a pan over medium heat. cook falafels for about 4 minutes on each side or until browned.
step 5- serve with salad and a whole grain. i made an arugula and cucumber salad plus a couscous/quinoa mix on the side.

Soup always reminds me of my mom. We live 6 hours away from each other, and if I'm being honest, it really stinks not having her close by. (Kinda my fault for moving 🥺) She makes the best soup that feels like a hug whenever I was under the weather or sad. I wasn't feeling sick or sad today but it's darn cold, was missing my mom and also really in the mood for tortilla soup! I just wish I could share some with her! And you too @aria.haney 😂❤️

I had roasted a whole chicken on Tuesday and used the carcass to make bone broth. I made the broth overnight in the crockpot and it was so flavorful. (feel free to DM me for the recipe.) I used @thecookierookie 's recipe for the tortilla soup as a guideline and it was delicious! 😋

“i would never have time to make breakfast like yours in the morning.” - i literally hear this from people ALL the time, but in reality making this breakfast doesn’t take any longer than brushing your teeth. remember, you aren’t artfully decorating your breakfast and taking a pic, and that’s what takes most of my time. here’s how you do it: cut up your fruit the night before, or cut it all up on sunday. then throw the fruit into tupperwares (this can be done ahead of time too!), top with yogurt, and top that with granola, nuts, nut butter, etc. if you’re eating at work you can even keep granola or nuts at your desk to throw on right when you’re about to eat. 3 minutes max. i promise you. // yogurt bowl with @siggisdairy vanilla cinnamon plant based yogurt, fresh mango and strawberries, pumpkin seed butter, and granola. #yogurtbowl #easybreakfast #eatyourbreakfast

tried the new kale gnocchi from @traderjoes and the consensus is... it’s really good! taste isn’t hugely different from the cauliflower gnocchi, but the kale adds a nice nutritional punch. also want to say i have nothing against good old regular gnocchi, but this is another tasty option that also has vegetables in it so what’s not to like? // kale gnocchi with roasted brussels sprouts, marinated tomatoes, pesto, parmesan, and a [broken] egg over a bed of arugula #kalegnocchi #traderjoesfinds #vegetarian

Chicken Bacon Spinach Pasta

2 tablespoons olive oil
1 large, boneless skinless chicken breast
1 teaspoon Italian seasoning (a combo of thyme, oregano, & basil)
Salt/Pepper, to taste
4 bacon strips
10 oz. penne pasta
Garlic Parmesan Sauce
2 teaspoons garlic, minced
2 Tablespoons all-purpose flour
1 + 1/3 cups half and half
1 + 1/3 cups Parmesan cheese, shredded
1 tablespoon red pepper flakes
1 cup cherry tomatoes, halved
2 cups uncooked spinach
Directions:
In a large cast-iron skillet, heat 2 tablespoons of olive oil on medium-high heat.

Butterfly the chicken breast to create 2 thinner slices, each about an inch thick. Season each side generously with Italian seasoning and desired amounts of salt and pepper.

Sear the chicken in the hot skillet on each side. Refrain from moving the chicken around as it sizzles, it will hinder the nice golden sear color. If the pan gets too hot, reduce the heat to medium. Each side will take 3-5 minutes. Once each side is a nice, golden brown and the middle is cooked, set the chicken aside.

Reduce the heat to medium low and add the bacon to the same skillet. Low and slow is the best way to cook bacon.

While the bacon cooks, prepare the pasta according to package instructions. Once done, drizzle with a little olive oil to prevent sticking, toss, and set aside.

Once the bacon is cooked and crisp on each side, use tongs to remove it from the pan. Leave 2 tablespoons of bacon grease in the pan, and add the garlic. Cook for about 60 seconds.

Increase the heat to medium and gradually add in the flour, whisking constantly.

Temper the half and half by heating it in the microwave for 30 seconds. Add the half and half to the skillet and increase the heat to medium-high, stirring constantly. Once it starts to lightly bubble, decrease the heat to low. Mix in the Parmesan cheese. Once well-combined, add the tomatoes, spinach, and red pepper flakes. Cook for a few minutes until the tomatoes have softened slightly. Use a silicone spatula to gently mix in the penne.

Crumble the cooked bacon, sprinkle it on top of the pasta, and serve!

Patatesle hazirldiginiz ic harcini yufkalara koyup muska seklinde sarin .. Sonra sarilmis bu borekleri sodali karisima batirin firin tepsisine (firin kagidi koyarak) yerlestirin..
