I absolutely love @chefori & Chef Genevieve’s take on middle-eastern flavors and dishes. I literally dream about their pita bread and oyster mushroom kebab 🍞🍄. Also, did I mention that the interior design is flawless? ✨ ⠀⠀

Enoki Mushrooms and Oyster Mushrooms instead of Pasta+Pork Shoulder instead of Bacon, with Egg Yolk+Black Pepper+Grana Padano Cheese for a Low Carb Low Sodium Healthy “Carbonara”👍 Grana Padano is less salty than Parmigiano or Pecorino but adds a nice umami kick to the dish🙌 (And remember: you REALLY don’t need heavy cream to make Carbonara👏👏)

Thanks to this man for pushing the tuna envelop in NYC. Now, I see Oma tuna making rounds in NYC.
It is not a marketing ploy; Oma Tuna is the real deal. 🇯🇵

Because Oma tuna feed on mostly Mackerel (Sanma or Pike) and is caught under the cold climate condition of Aomori, it contains far more high quality fat than tuna that feed on leaner fish or squid and caught in warmer climate. 💯

In terms of taste, it has the sweetest umami. It melts in your mouth without a film of fat coating your mouth. It literally disappears without a trace, except for its long lasting umami. 🤯

De las cosas que más descuidamos es nuestro momento para comer, muchas veces lo aplazamos por cosas "más importantes" o " falta de tiempo", pero esto es como decir: tengo el tanque vacío pero no tengo tiempo para poner gasolina... Yo se que entiendes lo que quiero decir, pero a lo mejor piensas que no es igual porque tu cuerpo si sigue trabajando aunque no le des la comida que necesita. Y sí correcto, sigue funcionando, no te mueres, pero hace sus funciones con dificultad y se va dañando, desgastando, pero como el cuerpo es taaaaannnn flexible no ves el daño hasta que ya esta avanzado.... Hoy solo quiero decirte que comer es una Prioridad y si hoy no tienes tiempo para cuidar de ti y tu salud, en unos años tendrás que tener tiempo, dinero y paciencia para cuidar de tu enfermedad. Tu eliges, por favor por ti y tu familia, elige bien! ❤️

Simple 3 ingredient vegan mango chia seed puddings to kick off your weekend. Delicious and dare I say, healthy!
Ingredients

1 cup chia seeds
2 cup coconut milk
Puree of 1 or 2 mangoes
2 tbsp maple syrup/honey (optional)

Stir the chia seeds into the coconut milk and whisk it well.
Let it sit for 10 mins.
In a glass, layer the mango puree at the bottom. To the second puree layer add a tbsp of chia mixture before pouring in. To the third, add 2 tbsp chia mixture. Continue till you get a shaded color effect and you're out of chia mixture.
Totally unnecessary but looks so pretty. 😍
Let it set in the refrigerator for atleast 30 mins till ready to serve.
Top with cubed mango and mint or pumpkin seeds for some crunch

Self care 💁🏼‍♀️✨ it’s quite the buzzword these days. .
It may seem like you need to pay copious amounts of dollars 💸 or have lots of time ⏱ to participate but that’s far from the truth! Though I do occasionally spend a little more time or money on my self care, the majority of things I do that make me feel amazing are free or of little cost! Here are a few ideas....
.
FREE/LOW COST: warm bath, light a candle, meditate, hot tea, massage temples, read scriptures, call a friend, make a warm meal, eat a piece of chocolate, tongue scraping, face mask, dry brush, acupuncture massage and cupping (free with our insurance), cold shower in the morning, green smoothie, yoga, exercise, 8 hours of sleep, reading before bed, listening to a podcast (favorites are @tbbpodcast , @richroll , @mindbodygreen , @theskinnyconfidential , @michaelgervais to name a few)
.
MORE EXPENSIVE: facial, nails, eating out, $15 smoothie bowl from sunlife (lol), sauna, cryotherapy, massage, hair, fitness classes, trips/vacation
.
All feed my soul in different ways, all have their time and place, but it’s those free/low cost things that really make my world go round! Especially during this healing process 🧘🏼‍♀️🙏🏻

This is the 3rd Dutch Baby I’ve made in three days. Yes it’s that good and yes I might have an obsession. I’ve been adapting the NYT recipe each time and this is the best one yet! Such a quick snack or breakfast, brunch to make.

INGREDIENTS:
3 eggs (pastured-raised preferred)
½ cup flour
½ cup milk
1 teaspoon vanilla extract
6 dashes of cinnamon
Pinch of nutmeg
2 tablespoons butter
Apple sauce or Banana with peanut butter a a splash of maple syrup have been my favorite toppings so far.

PREPARATION:

Preheat oven to 425 degrees.
Combine eggs, flour, milk, sugar and nutmeg in a blender jar and blend until smooth. Batter may also be mixed by hand.
Place butter in a heavy 10-inch skillet or baking dish. I do this when it’s preheating. As soon as the butter has melted (watch it so it does not burn) add the batter to the pan, return pan to the oven and bake for 15 minutes, until the pancake is puffed and golden. Lower oven temperature to 300 degrees and bake 5 minutes longer.
Remove pancake from oven, cut into wedges and serve with toppings.

- ½ lb fusilli pasta - 1 lb chicken breast, cooked and shredded
- 2 Tbsp olive oil
- 4 cups broccoli, steamed
- 3 bell peppers, chopped - 1 ¼ cups plain nonfat greek yogurt
- 1 clove minced garlic
- 3 Tbsp lemon juice
- 2 Tbsp red wine vinegar
- 1 tsp dried dill
- ½ tsp oregano

Directions:
1. Cook pasta according to package directions
2. While pasta is cooking, in a large bowl, stir together greek yogurt, garlic, lemon juice, red wine vinegar, dill and oregano
3. Once pasta is done, drain and rinse with cold water.
4. Drizzle olive oil over pasta and combine.
5. Add pasta to the large bowl with yogurt mixture and combine well
6. Add chicken, broccoli, and peppers to pasta and combine
7. Separate into 6 servings

Exchanges: 2 starch, 4 meat, 1 fat

Meal of the Day. Steamed Minced Meat Patty with Salted Eggs.咸蛋蒸肉末.

🐧Marinate minced pork with sugar, pepper, egg, salted egg (without yolk),sesame seeds oil, some corn flour, finely chopped spring onion, cilantro and bit water in a mixing bowl.

🐧Mix them well with a spoon till well combined. Place the salted egg yolk on top of the meat patty & steam for about 20 mins. Add some garlic oil/sesame oil or shallot oil & corinader leaves to the cooked patty before serving.

Day 17 I’m kinda enjoying banana with chocolate spread...probably a little too much. But hey this isn’t about not enjoying my food! This is about balance! Life is a bit stressful right now. Lots of good stuff but lots to do! I’m at university doing a nursing course and feel like some of the coursework is building up on top of me. Work is also a stressor because I’m an apprentice and the work for everyone has increased recently, meaning people aren’t as positive as normal and some are snapping at each other. I don’t take things well if I feel like people don’t like me, even though I know I shouldn’t care what they think if I know I’m trying my hardest. That obviously makes thing hard. Then me and Aaron are in the process of moving house, we’ve just booked a big holiday to Orlando but obviously with Christmas just gone we are just scraping by money wise, we also just adopted 3 beautiful baby degus to become companions for our 4 year old degu Malibu, but as they are both territorial animals the process of introducing them can be difficult. Turkey and Cabbage Stir Fry 👇🏻.

I cooked ground turkey with onions and garlic. I scrambled 3 eggs in a separate pan. I then added shredded carrots, mushrooms and diced orange bell pepper to the turkey pan. Once those had cooked for a little bit I then added a bag of shredded cabbage with about 1/4 cup of beef bone broth. Seasoned with ginger, Salt and pepper and coconut amino‘s. Once the cabbage was cooked I threw in the eggs and mixed all together. Served it on top of a microwave bag of rice cauliflower and broccoli mix 🥰.

The Charcoal Grilled Mackerel Set ($14.90++) fared much better, with a ridiculously crispy skin and succulent flesh that had us hooked from the first bite .

You won’t find the overly fishy flavours of poorly prepared mackerel here. Instead, the fish had a beautiful mildly oily flavour and addictively firm texture to it.

Simple nourish bowl for lunch today! Turmeric chickpeas, miso mushrooms, quinoa, lettuce, cherry tomatoes and avocado, drizzled with tahini and sprinkled with nutritional yeast post-photo. To make the turmeric chickpeas, I simply cooked the chickpeas in a saucepan with turmeric and a pinch of pink Himalayan salt. As for the mushrooms, I followed my miso glazed mushrooms recipe which I will share in my stories and bio. What did you have for lunch today? Happy Tuesday my friends xx

Simple nourish bowl for lunch today! Turmeric chickpeas, miso mushrooms, quinoa, lettuce, cherry tomatoes and avocado, drizzled with tahini and sprinkled with nutritional yeast post-photo. To make the turmeric chickpeas, I simply cooked the chickpeas in a saucepan with turmeric and a pinch of pink Himalayan salt. As for the mushrooms, I followed my miso glazed mushrooms recipe which I will share in my stories and bio. What did you have for lunch today? Happy Tuesday my friends xx

Obviously was super fickle last night when I was deciding what to prep for breakfast. Choco or vanilla? Chia pudding or oats?? I couldn’t decide. SO I went with both because who doesn’t love a good mash up!! Fun fact...it’s wednesday y’all, we are half way to the weekend ❤️

Choco Overnight Oats
1/2 cup gluten free oats

CREAMY MUSHROOM & CHICKPEA PASTA 🍝🍄🌱 This is a ridiculously comforting bowl of pasta that had me cuddled on the sofa unwinding after a long day. It’s a delicious smokey, meat-free recipe that’ll satisfy everyone you know and whipped up in no time.

Serves 4
.
🛒YOU’LL NEED
.
✔️Olive oil
✔️1 white onion, small dice
✔️2 garlic cloves, crushed
✔️400g mushrooms
✔️1/2 tsp hot smoked paprika
✔️1/2 tsp mild curry powder
✔️1 tin chickpeas, drained
✔️200g tomato passata
✔️200ml coconut milk
✔️200g frozen peas
✔️1 handful spinach, chopped
✔️300g pasta e.g. penne
✔️Salt and black pepper
.
👩🏼‍🍳RECIPE
.
1️⃣Fry off the onion and garlic in some olive oil in a large frying pan. Cook for 5 minutes before adding the mushrooms and cook for 5 minutes.
.
2️⃣Add in the smoked paprika and curry powder and stir. Pour in the chickpeas, tomato passata and coconut milk, bring to the boil and simmer for 10 minutes. Add the peas after 5 minutes and season with salt and black pepper.
.
3️⃣Cook the pasta according to packet instructions – save a splash of cooking water!
.
4️⃣Add the pasta into the sauce with the spinach and a splash of cooking water. Stir to wilt the leaves and serve warm.

SOY IS BAD FOR YOU 🌱 they say, a “hormone-disrupting poison”. As with most things in nutrition, there’s cause for debate but there are too many misconceptions about soy that I had to do some #MYTHBUSTINGwithRhi! 👊🏻

✋🏻MYTH 🍴 Soya isn't a good source of protein
.
Soybeans are what's known as a complete protein 💪🏻 unlike most plant proteins it contains all essential amino acids we have to get from food because they can't be made by the body. A cup of cooked soybeans contains about 22g of protein, almost as much as a serving of steak!
.
✋🏻MYTH 👨🏻 Men shouldn't eat Soya because they produce man-boobs!
.
Soya contains zero estrogen and there's zero evidence for soy disrupting sexual development or reducing men's testosterone levels. Soya does though contain phytoestrogens (plant hormones 🌱 not human hormones) as do coffee beans, apples, oats, lentils, rice, carrots and even beer! In fact, those compounds within Soy are powerful antioxidants with research suggesting positive effects in protecting against diseases.

✋🏻MYTH 🦠 Soya causes cancer
.
The confusion whether Soya is good or bad for cancer risk is because Soya's compounds can mimic estrogen in the body 🤓 and some cancers grow in the presence of estrogen. However, in eastern Asia where soya is consumed the most, comparatively speaking on a population level with the US, they have less breast cancer, prostate cancer, and cardiovascular disease, and fewer bone fractures.

👋🏻BOTTOM LINE: You certainly don't have to eat soy products but they are typically affordable, nutritious, delicious and helping us to achieve an increasingly plant-based diet by reducing our intakes of animal protein which can also benefit the environment and food sustainability 👏🏻 Remember quality also counts so check the ingredients! For women it may also be beneficial especially during menopause.
