Chicken, lentil, turmeric soup from the @healthy_ish 2020 feel good food plan (great resource for healthy recipes that are big on flavor). I subbed the water for @brodo bone broth for an extra dose of immune boosting nutrients. Served with a side of @breadalonebakery toast (love their whole wheat sourdough) with @kitehillfoods cream cheese, 🥑, and @hawthornevalley fermented carrots & ginger 😋

Such an awkward picture lmao but progress pictures are important!
For 5 months I’ve been in a bulking phase. I always felt like I had to roll my eyes or make it a joke when I told people because the term has such a “gym bro” connotation. I felt judged. But I don’t care. These past five months and the bulking mindset has COMPLETELY changed my life. I didn’t do great with this bulk, only put on about 5 pounds. I am not looking for this to be a big cut. But even still I learned so so much. So instead of just posting a progress picture of where I’m sitting before I cut, there’s a lot of internal progress that came with it too.

I’ve shared before that I’ve had a somewhat negative relationship with food in the past. Never an eating disorder, but definitely disordered eating. Stressing about calorie content of everything I ate, feeling guilty after eating. Worrying about literally seasoning having calories. ARE YOU KIDDING. .
.
Then I decided I wanted to put on muscle. Scientifically, you have to be in a caloric surplus to put on muscle (weight). It took me about 2 months before I mentally accepted the amount of calories I needed to be at. But when I did, holy shit, my life changed. There was no more stressing, no more not even enjoying “treat” foods because I was too worried about calorie content. I ate whatever I wanted! Ate more than I wanted. Enjoyed going out with friends. Going out to eat. The mental freedom was insane. I was no longer a prisoner for the disordered eating mindset. I FUELED my body, because that’s what food does, and kicked my ass in the gym. Now I’m ready to cut down a little bit and see my hard work. I’m excited for this phase too (hopefully will save some damn money on food lol) and am happy I have a healthy mindset to do it. And since I’ve learned to properly fuel my body, I’m going to be cutting at still pretty high calories. It’s LIT. I’m so grateful for this sport and even though I only do it for myself, no competing or anything, it’s completely changed my life and I’ve become so passionate about showing anyone whose struggled with that mindset to see how it can changes yours too. NOW LETS GET SHREDDY.

I made a giant batch of this peanut sauce yesterday because it's so good on veggies:

1c natural PB (or almond butter)
1c water
Juice of 2 limes
1/4 tamari
1/4 c rice vinegar
.
Blend and enjoy 🥦

Busted out some pesto this weekend to use for different meals this week.✌️If you want to add a little flair to your meals give it a try.

Basil Pesto
-2 cups spinach
-1 pack of fresh basil
-3/4 cup walnuts
-1/4 cup toasted pine nuts
-1/8 cup olive oil (I didn’t measure but it’s was around this)
-4 cloves garlic -2 Tbsp Nutritional Yeast -Salt to taste
-1 tsp dried oregano
-1 tsp dried thyme -Dash of dried rosemary .

Put all ingredients into a food processor and blend until desired consistency.

Lemon Poppyseed Pancakes w/ Macerated Raspberries
Pancake Ingredients:
1 1/4th Cup Flour
1 Cup Almond Milk
1/8th Cup Lemon Juice
1/8th Cup Sunflower Seed Oil
1 tbsp Poppyseeds
1 tbsp Baking Powder
1 tsp Vanilla
4-5 tbsp Vegan Butter for Cooking
Directions:
On the stove put a skillet on medium to preheat. Add the vanilla, lemon juice and baking powder to a mixing bowl. Stir and allow the lemon juice and baking powder to bubble as they react together. Once bubbling has subsided add the almond milk and oil and mix until combined. Add the flour 1/4th cup at a time and stir until smooth. Once all flour is added stir in the poppyseeds, making sure to incorporate throughout the batter. Add a tbsp of vegan butter to the skillet and allow to melt. Using a 1/4th cup scoop add to the skillet. Allow to cook until small bubbles begin to form (2-3 minutes) and the bottom is solid, flip the pancake and cook for an additional 90 seconds. Add an additional tsp of vegan butter per pancake and repeat the previous step until all batter is used. Yields 10 pancakes.
Macerated Raspberries
Ingredients:
1 Cup Raspberries
1/8 Cup Water
3 tbsp Sugar
1 tbsp Lemon Juice
Directions:
In a small saucepan add all the ingredients and allow to simmer on low while you prepare your pancakes or at least 20 minutes. Remove from heat and allow to thicken.

Lemon Poppyseed Pancakes w/ Macerated Raspberries
Pancake Ingredients:
1 1/4th Cup Flour
1 Cup Almond Milk
1/8th Cup Lemon Juice
1/8th Cup Sunflower Seed Oil 
1 tbsp Poppyseeds 
1 tbsp Baking Powder
1 tsp Vanilla 
4-5 tbsp Vegan Butter for Cooking
Directions:
On the stove put a skillet on medium to preheat. Add the vanilla, lemon juice and baking powder to a mixing bowl. Stir and allow the lemon juice and baking powder to bubble as they react together. Once bubbling has subsided add the almond milk and oil and mix until combined. Add the flour 1/4th cup at a time and stir until smooth. Once all flour is added stir in the poppyseeds, making sure to incorporate throughout the batter. Add a tbsp of vegan butter to the skillet and allow to melt. Using a 1/4th cup scoop add to the skillet. Allow to cook until small bubbles begin to form (2-3 minutes) and the bottom is solid, flip the pancake and cook for an additional 90 seconds. Add an additional tsp of vegan butter per pancake and repeat the previous step until all batter is used. Yields 10 pancakes.

I got the best #compliment today. I had one of my colleagues' kids in my #FoodsandCulture class this semester. He stopped me and said "When you retire and think about the impact you've had on your students think about this. We discovered back when we were in the land of @Wawa 🙌🏻 (PLEASE come to CO) that Baby J loves smoothies. So, of course now that we are home I added them to our snack list 🤗

J’s Fruit Smoothie:

1/2 cup Frozen Mango
1/2 cup Frozen Pineapple
1/4 cup Frozen Peaches
1.5 cups Vanilla Almond Milk
1/4 cup Plain Yogurt
Blend until smooth! *next time I may throw in a couple leaves of spinach*

J’s Fruit Smoothie:

1/2 cup Frozen Mango
1/2 cup Frozen Pineapple
1/4 cup Frozen Peaches
1.5 cups Vanilla Almond Milk
1/4 cup Plain Yogurt
Blend until smooth! *next time I may throw in a couple leaves of spinach*

Had a busy weekend with our baby boy’s birthday party so meal prep this week needed to be cheap and easy. Most of the items I already had in my pantry or refrigerator.
Pantry taco bowl: .
4 small sweet potatoes, 2 cups broccoli, 1 can black beans (low sodium), 1 can Kidney beans (low sodium), 1 packet low sodium taco seasoning .
.
Directions:
1. Rinse and place sweet potatoes in crockpot. Cook on low for 5 hour (or until soft)
2. Toss olive oil and some of the taco seasoning on broccoli. Bake on 425 for 20 minutes
3. Rinse and drain both cans of beans. Place beans in pot with 1/2 cup water and remaining taco seasoning. Cook until warm.
4. Remove skin from sweet potatoes and combine all ingredients. Enjoy! .

Working on my smoothie bowl game! I could use some help!

Ever since we visited @eandrosewellness in Nashville I have wanted to make more smoothie bowls!

This morning I tried making a cherry chocolate smoothie bowl with frozen cherries and cacao nibs, I also blended in a banana, orange, liquid vanilla and ice.

Although this one tasted delicious it was not as thick as I would have liked! Besides ice and bananas what do you guys use to make your bowls a little thicker in consistency?

I’m doing anything and everything I can to try to not catch this Flu that is running rampant through my house. Honestly, I can’t believe I’m not down and out yet. Fingers crossed it’ll stay that way! We tried @alexiafoods #crinklecutsweetpotatofries for lunch for the first time today and Morrissey (and I) ♥️♥️♥️ them! #nongmoprojectverified and sweet potatoes are naturally #glutenfree. The only thing missing is the usda organic certification but I couldn’t find any #sweetpotatofries that had both at my local grocery store. These #alexiafoods fries are seasoned with cancer-fighting and anti-inflammatory #tumeric, which I don’t usually find on my fries, so it’s a win in my book. Oh, I checked through each listed ingredient and it’s #vegan! 🌱🌱

Vegan Potato Cheese Pockets 🤤

Recipe 👇
Yields 8 bite-sized
* 1 cup mashed potatoes
* 1 heaped tbs cornstarch
* 3 tbs vegan mayo
* 2 - 4 tbs flour (GF if needed)
* 1/2 tsp salt
* 1/4 tsp onion, smoked paprika, garlic & oregano powder *optional
* 1/2 tsp mustard
* 1 tbs vegan butter/oil
* 1/4 cup shredded vegan cheese
* Breadcrumbs/Panko (GF if needed)

1. Preheat the oven at 180C/350F. Whisk the potato mash along with all the ingredients except the last two. Slowly add flour as the batter should be firm enough to roll yet not too dry. Roll into 8 even balls, create a well in the middle by pressing into the ball with your thumb. Fill with cheese and cover by folding the edges. Roll into a ball again. Do the same to the remaining balls & brush with olive oil, roll into panko.
2. Bake for 20-30 minutes or until crispy. Allow to cool for a few minutes to firm up. Eat warm, if you like it extra crispy pan fry afterwards!

Now, I need just a quick sec to be a bit of a Debby downer here…  I’m so bummed about being sick because I had to cancel two big plans for today that I had desperately been looking forward to... .

A lunch date with @lindsay_humes that’s been like 5 years in the making and a girl’s weekend in San Francisco with my bestie. .

Yes I cried last night when I realized I wasn’t going to rally and beat this thing.  My 10 year old cried too when I had to tell him we had to cancel his best friend coming to sleep over cause I was sick. (Yes, these were 1st world tears.)

.
Let’s face it, this time of year so many people are sick.  And if you happen to be too I’m sending you strength and love ✊️💕

So now my weekend plans are writing in my journal, reading, and taking long baths while re-watching @downtonabbey_official episodes. .

All the greens for lunch today - roasted broccoli and fennel on a bed on my fav courgette hummus (link in my bio - really worth trying if you have any courgettes - also in #rebelrecipescookbook )
Served with some sourdough and a drizzle of olive oil. It was a very delicious and healthy lunch!

Lemony Spaghetti with Ricotta, Mixed Vegetables & Basil. This vegetarian meal is comfort food at it's best..flavor, veggies & protein all in one warming dish. (I used chickpea pasta to make it gluten free)
🍋 🌱 🍋 🌱 🍋 🌱 🍋 🌱 🍋 🌱 🍋 🌱 🍋 🌱 🍋
To make;
* Cook 1 lb of spaghetti to al dente (drain reserving 1/4 cup water and keep warm)
* Lightly saute the vegetables below until soft (cut into 1" pieces):
1 carrot, 1 zucchini, 1 red pepper, 11/2 cups cherry tomatoes (keep this warm)
* Mix together the ingredients below in a saucepan (heat until lightly warm):
1 1/2 cup ricotta, 1 cup grated parmesan, 1/3 cup olive oil, zest of 1 lemon, juice of 1 lemon, 1/3 cup torn basil, 1/4 cup hot pasta water, salt & pepper
*Gently toss all ingredients together in a large bowl then arrange on a platter. (I reserved 1/3 cup of the ricotta mixture and added spoonfuls to the top)
* Sprinkle with a few red pepper flakes, more pepper, more parmesan & some fresh basil.🌱🌱🌱
Serve & enjoy!
