Lots of beef short ribs. These were quickly salted, peppered and browned. At this stage they are good eating off the bone. Next a mirepoix is added to a large cold pot, brought to a simmer and gently cooked until soft. I add garlic in slivers near the end of this stage time lest it ends up harsh and bitter. A nice drinking red is added and reduced before the ribs are added, both on and cut off the bone. I smell the aromas and wait. I wait and taste the air. Now the roasted tomatoes are acting fidgety so quickly they are added. Beef broth comes into play with the addition of bay leaves, anchovy paste, date syrup and Demi glace. Now we are left to simmer. Two hours in the carrots are added. One more hour left in a lovely slow oven. My mind is fogged by the scent, the perfume. We had it the evening after. My first two visits to this restaurant left me bewildered as to how a restaurant seemingly beloved by locals and highly praised by world-traveling gourmands I respect had failed to resonate with me. On my initial visit in early 2018, I found a restaurant whose ambition exceeded its ability to deliver on taste. At the time, the plates were saturated with too many ingredients whose flavors and textures did not always integrate well. Understandably, Bresca had been open less than one year, so its identity felt nascent, its footing unsure

I returned on Mother’s Day the following year. Once again, I walked away disappointed by food that, while visually appealing, lacked much distinction or craveable flavor profiles. Fortunately, I ran into Chef @r_ratino shortly thereafter who informed me, due to the large crowd size that particular Sunday, that the cooking wasn’t, admittedly, their best. Fair enough

So when a friend invited me to @brescadc last month, I accepted with a sense of trepidation. To use a dating example, if you have two dates with a girl, both of which were not horrible but also rather mediocre, do you actually desire a third date? Do you really want to spend time with a person your friends have claimed is quite promising though your experience reveals her as blasé? 🤔

Well, I can attest that this metaphorical third date was most fantastic! I almost could not believe how delicious my meal was that evening. The too-eager-to-please plates of the past that lacked any gustatory punch are gone. The food now feels much more focused, the cooking sharpy dialed in, and flavorings and seasoning are carefully balanced. The ingredients, individually and together, are top-notch. More than simply terrific, the cooking is admirable. Every bite, every dish. With attentive service to match. There are few restaurants in the DMV that can match Bresca’s level of quality execution right now 👏

Moral of this long post? Go on more third dates! 😄

Monday Night of #RWMadison was delicious. Heritage Tavern is always on my list of places to go because it’s incredible. Every bite is a nice surprise. All of the ingredients go well together. I went with @andyeddyeats and @wisconsingourmande and we tried everything we could! The Smoked Sunchoke Agnolotti & Miso Marinated Strip Loin were great. We upgraded our fish and went with the Monkfish. We wanted more of the Thai-Red Curry Shrimp & Pork Meatball Soup. We cleaned that bowl. My favorite dessert was the Bartlett Pear Sorbet that came with candied lemon and a polenta crumble. Yummmmm. I am going to dream about that Thai Curry Soup tonight . .

Recipe of the Day: Lemon Poppy Seed Bundt Cake
Recently, @TGH3RD and I had a few friends over for dinner. I figured that this Lemon Poppy Seed Bundt Cake from @MarthaStewart would make for the perfect dessert. Instead, it turned out to be a perfect lesson in patience. We found ourselves in a situation where we were up against the clock, not having managed our prep-time well enough. After the cake came out of the oven, I didn't give it ample time to cool, and as I was rushing to get the cake glazed, I flipped it out of the pan too soon and it disintegrated before my very eyes. I was so annoyed at myself, that I just threw it into the trash (although, before I did, Thomas snuck a piece and told me it was delicious). Not one to wallow in self-pity, the next morning, I took another stab at this cake. Without feeling the pressure from the clock, this time it turned out perfectly. The sour cream enhances the tangy/tart lemon flavor, the poppy seeds are a delightful surprise with each bite and the glaze on top is a nice extra punch of lemon. Although intended for a dessert, it makes for a nice breakfast, too!🍋

The past few days i've seen posts of this awesome bottle: The Epicurean from Douglas Laing's. That made me come to mind that I also have a bottle of this blended lowland malt #scotch! So tonight i've opened it up. Great layers of citrus, herbal and floral notes! The rest will have to wait for the full review.

The fact also they produce with a low amount of sugar did not help the expression of the fruits. Its difficult to have good extra brut Rose i feel since you look for those nice fruity aromas. Solera is a process for aging wine by fractional blending in such a way that the finished product is a mixture of ages, with the average age gradually increasing as the process continues over many years. A group of one or more containers, called scales, criaderas ('nurseries'), or clases are filled with the wine of the year, every year. At the end of the interval after the last scale is filled, the oldest scale in the solera is tapped for part of its content (25% for cuvée M), which is bottled. Then that scale is refilled from the next oldest scale, and that one in succession from the second-oldest, down to the youngest scale, which is refilled with new product. This procedure is repeated at the end of each aging interval, during 10 years in the case of this Cuvée M. The transferred product mixes with the older product in the next barrel. At the end, Margaine produced a very fine and complex champagne that was bottled in 2013 with discharging in 2019. The nose is very fresh and mineral and winey, close to oxidative with apple, citrus, dry fruits, toast, spices. The bubbles are very fine and persistent. I think that we opened the bottle a bit early and I would rather wait 1 or 2 years before opening the second one, the wine should be more complex and interesting.

Y’a des fans de hot dog comme moi dans la salle ? J’ai vu qu’il y avait 75% d’entre vous, suite au sondage réalisé ce matin en story. .

Passion hot dog par ici ✌️. .

Et jai trouvé les meilleurs de toute ma vie ici @hotdogger.dijon. J’ai pris le Queens (pain, saucisse, cheddar, bacon, cornichons, ketchup, moutarde au miel). Tout est frais, le pain artisanal fait par un boulanger de Dijon, les saucisses de volaille faites par un boucher de Dijon également (les garçons du boucher pour ceux qui connaissent, meilleur boucher d’ici). Ça ne peut être que bon. .

J’ai trop trop trop adoré ! Le menu tel que présenté coûte 9€, 11€ avec dessert. Je vous le conseille +++. Vous pouvez également commander sur Deliveroo ou Ubereats. .

Tacitus, in full Publius Cornelius Tacitus, or Gaius Cornelius Tacitus, (born AD 56—died c. 120), Roman orator and public official, probably the greatest historian and one of the greatest prose stylists who wrote in the Latin language. Among his works are the Germania, describing the Germanic tribes, the Historiae (Histories), concerning the Roman Empire from AD 69 to 96, and the later Annals, dealing with the empire in the period from AD 14 to 68.
