Tomorrow I will be starting a mini-cut (lowering my daily calorie intake), for the remainder of the @sweat 6-week challenge so I’ve been trying to find yummy low-cal recipes to prep. I put this one together and it was amazing!
-255g cauliflower rice -170g shrimp -80g zucchini -33g avocado - braggs liquid aminos
-15g @ghughessugarfree teriyaki sauce
I cooked the veggies & shrimp in a skillet with salt, pepper, braggs and minced garlic then topped it with the avocado & teriyaki. Macros for all of this is: 19g carbs/7g fat/39g protein. Soooo good! Who’s ready to start week 3 of the #sweat challenge tomorrow?! .

UNA DELICIA
Es BAJO EN CALORÍAS!! 👏🏼👏🏼👏🏼 si, si para comerlo sin Culpas!!! 🙌🏻.
➡️SIN HARINA, SIN AVENA 🤩Agenda esta Receta.
INGREDIENTES 🍫1 SCOOP DE @ovoenergy_argentina o 4 claras de huevos.
🍫1 scoop de proteína @xtrenghtoficial
Sabor chocolate 🍫Esencia de vainilla ⚡50gr de Coco rallado
⚡1 cucharadita de polvo de hornear
😍PARA EL RELLENO Y COBERTURA👌
➡️YOGUR PROTEICO @Yopro opción ( dulce de leche sin azúcar)
➡️Queso crema Light.
➡️ BANANA
➡️CAFÉ
Preparación:
1- Batir las claras de huevo a punto nieve
2- Incorporamos 1 scoop de proteína, esencia de vainilla, edulcorante, y luego el coco rallado. Batimos nuevamente.
2- Colocamos la mezcla en una tartera rociada con aceite en spray y la llevamos al horno precalentado 25 minutos .
3- Por otro lado colocamos en un recipiente el yogur, la crema de leche light y mezclamos hasta unir los ingredientes.
4- Retiramos del horno el bizcochuelo y lo dividimos en dos, humedecemos con café ambas mitades
5- Vertemos la mitad de mezcla y colocamos rodajas de banana, colocamos la tapa y cubrimos la misma con la otra mitad de mezcla. Decoramos con la riquísima salsa de chocolate avellana de@mrstasteargentina que es zero calorias 🙌🏻🙌🏻. .

Stocked up on Pumpkin? Try this Chocolate Chunk Pumpkin Mug Cake. A pumpkin-fix with aromatic flavors in just 5 minutes. And that too with a chocolatey bonus!

I was so bummed after making this yesterday evening because as usual I underestimated how long I would need to take pictures and I needed to head to church.

I had zero, no, I had negative time to shoot this mug cake. The situation was so bad that I ended up eating this while driving to church.
Well thankfully this was a mug cake so I had that option. And finally used that cup holder for a cup lol.

But the thing is, as soon as I took that first bite, all frustration disappeared. It was so good, I really wanted to make it again, and would’t be doing it just for photos!

Yield: 1 10oz Mug Cake | Calories: 366 | Prep: 2 min | Cook: 3 min

Ingredients:
2½ tsp Coconut Oil
3 Tbsp Pumpkin Puree, Canned, not Pumpkin Pie Filling (46g)
1 Egg, Room temperature
½ tsp Stevia-sweetened Maple Syrup @sweetleafstevia
¼ tsp Vanilla Extract
2 Tbsp Coconut Flour @betterbodyfoods
2 Tbsp Almond Flour @wholefoods
½ tsp Pumpkin Pie Spice
¾ tsp Baking Powder
1 Tbsp Almond Milk, Room temperature
½ oz Stevia Sweetened Chocolate, Chopped (14g) @lilys_sweets

Instructions:
- Melt coconut oil 8-10 oz mug in the microwave for 15-20 seconds.
- Add pumpkin, egg, syrup and vanilla, and stir.
- In a small bowl, mix flours, spice and baking powder.
- Add dry mix to mug and mix until there are no more lumps, batter will be thick.
- Add milk and stir.
- Fold in chocolate pieces, and sprinkle some on top.
- Microwave on high for 2½-3 minutes, until cake has risen and top is fully cooked.

Paleo Breakfast Muffins. Less than 100 calories each and I’ve had 2 taste testers who approve! Here’s how to make them...Combine dry ingredients in a bowl (1-1/4 Cups Oat Flour, 1 tsp baking soda, 1/4 tsp salt, & 1 tsp cinnamon). Take 1 TBS Chia Seeds and add 3 TBS water in a small bowl and let it sit for 5 minutes to form a gel (this is your “chia egg”). Take 10 pitted dates and soak them in a bowl of water to soften them for 5 minutes. Then combine your wet ingredients in a blender (1/2 cup almond milk, 2 TBS Applesauce, 1 TBS Vanilla Extract) and add the drained dates and blend really well. Next, pour the liquid mixture and the chia seed mixture into the dry mixture and mix really well. Line a muffin tin with 8 large muffin liners or 12 small. Bake at 350 degrees for 19 minutes.

INGREDIENTS
1/2 Cup toasted pine nuts (toasted in extra virgin olive oil)
2 cups basil tightly pact.
1 garlic clove
1/2 Cup Extra Virgin Olive Oil.
1 tbsp lemon zest (zest of half a lemon)
3 tbsp freshly squeezed lemon (or juice of half a lemon)
3 tbsp grated Parmesan
1/2 tsp Himalayan Salt
1/2 tsp black ground pepper

INSTRUCTIONS
1. In pan toast Pine Nuts in extra virgin olive oil, until golden. (medium heat) Be careful not to burn them because they toast quickly. Takes 2-4 minutes max.
2. In medium bowl, add all the ingredients use hand mixer and blend until well combined.

Started Sunday off with these savory breakfast muffins inspired by @thekitchn
When I came across this recipe, it reminded me of @mcdonalds sausage egg McMuffin but with a “twist”
I got the taste in my mouth and decided to whip them up with my variations... I used white whole wheat flour instead of all purpose and I added a cheese blend instead of cheddar.

They tasted healthier but still wholesome and satisfying!

A filling dinner. Some days I need high carbs 😊

Express Green Curry by @mrs_kitchen_fairy, which takes only 15-20 minutes to make. · 1/2 broccoli
· 1 zucchini
· 15 brussels sprouts
· 1/2 can of chickpeas
· 2 handfull of spinach
· 2 small spoons of Green Curry paste
· 1 can of coconut milk
· Olive oil to spray the pan
· Fresh corriander and lime

Heat the pan, spray it and add Curry Paste. Once you smell the paste add coconut milk and bring it to boil. Add broccoli, zucchini andbrussels sprouts and cook with lid on for 15 min. Add spinach and chickpeas for 1 minute. Enjoy!!!

🍗Asparagus Stuffed Chicken Breast🔥 .

Ingredients:
4 large chicken breasts
1 tbsp lemon zest
salt & pepper
12 asparagus stalks, trimmed
3 slices mozzarella cheese
1 tsp garlic powder
1 tsp paprika
1 tbsp olive oil

Directions:
Preheat oven to 425 degrees F.
Cut the chicken breast in half, length-wise. do not cut all the way though.
You need to create a pocket into each chicken breast.
Season the inside of the chicken breast w/ lemon zest, salt & pepper.
Place chicken on work surface & lay the mozzarella cheese & 3 asparagus inside of each chicken breast & fold over, enclosing the filling.
In a small bowl mix together salt, pepper garlic powder & paprika. Then season the outside of the chicken breast w/ this spice mixture.
Heat a large & oven safe skillet over medium-high heat. Add the olive oil.
Sear the chicken for 3 to 5 minutes each side & until the chicken is golden brown on top.
Place the chicken in the oven.
Bake for 20 minutes. Make sure the chicken reaches the internal temperature of 165 degrees.
