Cooked apples right now are so magical. ✨ I feel in general I’m more attracted to warming foods. I definitely crave warm foods when the temperature drops. And cooking fruit is super simple. Often times I just make my pot of oats and after scraping all the oatmeal bits, I will just diced up some apple and toss it in the same pot (I believe that the less pots you use the happier you will be 😂). I like cooking my apples with a little cinnamon, pecans, a touch of sweetener (either maple or date syrup) and a pinch of salt. Just warm them on the stove until they soften and you have the most amazing treat to top your oats with in the morning. 🌻

Bringing this curry back because it was super yummy and comforting. 🥣 I am a huge fan of slow cooked or pressure cooked meals in the winter. 🥶 They are generally super easy to make (just dump and go), can be loaded with a ridiculous amount of veggies and cheap. Recipe for this one is listed below, but definitely feel free to add your own spin to this. I always change it up with different things depending on what I have on hand. 🥣

Chickpea Curry
1 can chickpeas, rinsed and drained
1 can coconut milk
1 can diced tomatoes
1/2 can tomato paste
3 Yukon gold potatoes or sweet potato
1 red bell pepper, diced
1 green bell pepper, diced
1 red onion, diced
1 inch ginger, minced
3 cloves garlic, minced
1 tbsp curry powder
2 tsp cumin
2 tsp smoked paprika
2 tsp crushed coriander
2 bay leaves
3 cups veggie broth
Salt to taste 💫

Placed it all in my instant pot and set to manual for 15 minutes with a natural release. I let it sit for 20 mins before serving to thicken up and cool. If cooking on the stove top, start by sautéing the onion and green bell pepper until both soften (about 3 mins). Add in garlic and ginger, sautéing until fragrant, another 2-3 minutes. Add remaining spices and stir to combine allowing spices to become fragrant, 1-2 minutes. Add remaining ingredients, and bring to a boil then reduce heat to a simmer. Allow curry to cook at a simmer for 30-40 minutes, allowing curry to thicken. When ready to serve, feel free to enjoy it with some rice (I used a mix of brown and white basmati rice from @lotusfoods), avocado and cilantro. 🙏🏽

Trips like this make me realize how much I adore fruits and veggies. 😜I know, strange, but that’s how my pallet works. Totally love all the fun foods I’m eating, but need some beans and greens really soon. 👏🏽Luckily, this Oatmeal has been steady and helpful for me throughout the vacation. Now time for some more fun now that the rain is over! 🙌🏽

1 sliced banana
1/4 tsp cinnamon
1 cup unsweetened vanilla almond milk .
Add ingredients to a sauce pan and bring to a simmer. Allow oats to cook and thicken while stirring occasionally for 5 minutes. Then go ahead and top. 👏🏽

If you’d like to make blueberry chia jam, add 1/2 cup frozen blueberries with 1 tsp chia seeds and a pinch of cinnamon to a small sauce pan. Feel free to sweeten with sugar or maple syrup if you need it to be a little sweeter. Stir and cook consistently as the berries warm through and release their juices. Berries should start to thicken, and you are welcome to lightly mash if you really want a good jam like consistency. Love these right off the stove in the winter, so warm and cozy. 🤤 If you can’t handle chia seeds you can also replace with a pinch of corn starch or agar agar to thicken as it cooks. 👏🏽

My morning started with these oats and were soon followed by some vegan beignets. The food experiences have been so fun and have me itching to get back to the kitchen. 😂 Hoping you all are having a fantastic week so far. ❤️
