Yesterday’s left over cheeseburger pasta for dinner today 🤤.
I’m so glad there were left overs of this as it’s really is very yummy 😋 and it was just what I needed after work and the mad rush of collecting the girls from different locations.
Also taking a few mins to look at the new @slimmingworld magazine for some meal and story inspiration, as I follow the plan so much better when I’m organised.

The day before I do our family food shopping I clear out the fridge of foods that need eating. This creates room for the new food but it also makes sure no food goes to waste! (A very rare thing in our house) —

I usually go for soups, stews, chowders or roast veggie dishes. I also decided to make a fresh loaf of rye bread today and some bite size rhubarb crumbles. So, so yummy!! —
I actually sweetened the rhubarb sauce with hardly any sugar but with ripe bananas and it worked nicely. When sugar is needed I always aim for a healthier alternative such as banana, maple syrup, organic coconut sugar or steamed apple (natural/unrefined sugars) —

TIPS
✿ Make notes of all the meals you plan on doing for the coming week. Remember to include a variety of foods —
✿ Write a shopping list —
✿ Plan one day of the week where you will do all your food shopping —
✿ Don’t be tempted to buy what you don’t need —
✿ Learn appropriate portion sizes per meal —
✿ Find glass & BPA free food containers —
✿ I find prepping two days a week works best for me (Tuesday & Friday) —

You may also notice you can save money! Don’t worry if you can’t stick to it all at once. When I started food prepping I started off with two meals a week until I was comfortable with organising the whole week. I’ve attached an example of how I plan my meals - doing it this way food doesn’t get boring ☻ —

実は、この作り置きを始めた2年ほど前からずっと勉強していた試験に先日なんとか合格しまして、今冬からお弁当生活が開始することになりました😦✨✨(今まではラップのをそのままモソモソ家で食べていた笑)
そんなわけでまだお弁当生活は始まっていないのだけど今回から練習ということで、お弁当用のも詰めることにした😄とはいえいつもの大量の作り置きを百均の製氷機に詰めただけなんやけど笑、お弁当っぽくなって嬉しい!!笑 でもお弁当毎朝詰めるなんてできるかなぁ😵それに正直一番不安なんは、三週間ぐらい毎日のように同じようなおかずのお弁当持ってきてて不審がられへんかなってこと😅😂けど毎日作るんはやっぱり私にはキツい🤭
それから秋やから芋栗かぼちゃ、きのこもメニューに入れた〜!幸せや〜🍠🌰🎃

After competing last year I developed a pretty shitty case of body dysmorphia. Something I never thought I’d have, I always felt as though I was quite realistic in the way I approached and saw things, but my body became a pretty hard place to live in post competing.
⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀
I had developed ammenoreah, along with mounds of other symptoms, and on top of that the way I viewed myself had gotten to a point where I genuinely felt worthless. I couldn’t control my thoughts, nor could I see the wonderful things that were right in front of me. The world was grey and dark and I had become accustomed to this for about 10 months.

I have battled with anxiety since getting my first period at 8 years old. After the small phase of it I had at 8, it become more dormant but returned later into my early 20’s with a vengeance. It resurfaced during both competing seasons but in a slightly different way, and now it’s just something I can manage on a daily basis through life style and diet choices, managing stress and positive thinking.

Sometimes it still consumes me, on the bad days. And especially when I drink too much or don’t exercise enough, but at least I’m aware of it so I generally try to keep myself to myself during those times. If you are prone to any type of mental illness, even if it seems very mild, I would never recommend competing. It’s extremely likely it will worsen with the extreme stress on the body, and I am not the only proof of this.

I’m getting better for sure, I can tell I’m starting to view myself differently and I can see the world in colour again, for the most part. I’m doing everything in my power to keep myself away from medication, I’ve survived so far without it and I’m determined to continue to. Things will always get better as long as you keep trying and look after yourself. Mental health and physical health come hand in hand.

Pumpkin-Oatmeal Breakfast Bake 🎃
12 eggs, 14 oz can pumpkin purée, 2 cups rolled oats, 1 tsp pumpkin spice, 1/2 tsp cinnamon

Combine all ingredients, bake in a 9x11 casserole dish sprayed with olive oil at 350 for 30 minutes.

I have a big appetite, so I make 4 portions at 4sp each. Top it with with almond butter and unsweetened applesauce or homemade blueberry compote! 😋

This hybrid recipe for a traybake was really a success on our #newrecipemonday!
I mixed up 2 recipes to get to this one, it's 9 points and about 510 kcal.
Ingredients for 2: 1 red and 1 yellow bell pepper, 400 gr small Roma tomatoes, 1 zucchini, 200 gr gnocchi, 1 red onion, 2 cloves of garlic, 40 gr pesto, 100 gr cottage cheese, 1 lemon, 400 gr shrimps, salt, pepper and dried Italian herbs. Cut the veggies, put in a bowl with the shrimps, gnocchi, squeezed garlic, pesto, shrimps and seasoning. Mix everything well and pour on a tray. Bake in the oven (220 degrees celcius) for 20 minutes, then mix and bake for another 10 minutes. In the meantime mix the cottage cheese with a bit of lemon zest, lemon juice, salt and pepper. It's really easy to make and really tasty! ~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~

Ah college comes with a plethora of people with disordered eating habits.
Thankfully!! My two closest friends here have very healthy relationships with food, it also helps that they know all about my ed (they were with me all through my relapse) so they are super careful about how they speak about food and their bodies🥺💝
Others though?? Not so much. Other girls take two bites of a salad for dinner, then shit on their body right after they leave the cafeteria. They say they “shouldn’t be eating” certain things, which naturally makes me feel like shit because usually I’m eating the same things. Some people talk about their fasting. And plenty of others wake up hungover on a Sunday and don’t eat their first meal until around 3, which by that time I will have eaten probably two breakfasts, lunch, and two-three snacks already😂
It’s important for me to remember that !!my body!!MY NEEDS!! If other people decide to engage in unhealthy behaviors that is their prerogative.
My prerogative is recovery. freedom. health. My prerogative is keeping my period after so long fighting for it to come back. My prerogative is JOY.

👩🏻‍🍳Using just 9 ingredients (which are all plants) this simple cauliflower ‘fried’ rice comes together effortlessly.

INGREDIENTS ⠀
Serves 3-4 people.⠀

1-2 steaks of choice⠀
250g dry medium egg noodles (around 4 nests)⠀
2-3 Tbsp of white miso⠀
1 Tbsp of cornflour⠀
30g fresh ginger (around thumb size)⠀
x2 garlic cloves⠀
5 Tbsp of chicken stock (just under 100ml)⠀
3 Tbsp of light soy sauce ⠀
Few drops of sesame oil ⠀
25g fresh coriander/cilantro (a small handful) ⠀
1-2 spring onions/scallions ⠀
1-2 red chillies (depending on how hot you like it)⠀
1 tsp vegetable oil⠀
Optional crispy shallots⠀
METHOD ⠀
Slice steak into thin slices and generously coat in sweet white miso. Set aside. Cook egg noodles in water according to package instructions, once cooked immediately run under cold water to refresh. Set aside. In a small bowl mix 1 Tbsp of cornflour with 2 Tbsp of cold water until a smooth paste forms (this will thicken the sauce). In a separate bowl grate a thumb-sized piece of fresh ginger, around 30g (using a fine grater) and x2 garlic cloves. Add 5 Tbsp of chicken stock, 3 Tbsp of light soy sauce and a few drops of sesame oil. Mix in your cornflour paste until everything is combined. Set aside. Heat a skillet on super-high, and be prepared to work quick: fry steak in a splash of vegetable oil for about 30 seconds on each side, remove from pan. Quickly add the cold noodles and sauce to the skillet and heat through – mixing until hot. Add the steak back into the pan to warm and finish with fresh coriander, spring onions and red chilli. Optional: top with crispy shallots and a few more drops of sesame oil.

* 8 oz Whole Wheat Penne⠀
* 1 lb Jumbo Shrimp peeled and deveined⠀
* 2 Tbsp Olive Oil⠀
* 3-4 Garlic Cloves minced or pressed⠀
* 4 oz Sun-dried Tomatoes drained and chopped⠀
* Sea salt and pepper, to your taste⠀
* 2 Cups Baby Spinach⠀
* 1 ½ Cup Skimmed Milk⠀
* 1 Tbsp Corn or Gluten-free Flour⠀
* 1 Tbsp Dried Basil⠀
* ½ Tsp Chili Flakes⠀
Instructions⠀
1. Fill a pot with salted water and bring it to the boil. Add in the pasta and cook for 6-8 minutes, or until al dente.⠀
2. Meanwhile, heat oil in a large skillet over medium-high heat. Add garlic and cook until fragrant, 1 minute.⠀
3. Add shrimps, dried tomatoes, chili flakes, dried basil and a pinch of salt. Cook until shrimps are pink, about 3-4 minutes, then set aside on a plate.⠀
4. In the same pan add milk and flour and cook whisking constantly, until sauce thickens⠀
5. (about 3-4 minutes). Season with salt and pepper to your taste.⠀
6. Add baby spinach and cook until just wilted about 1 more minute.⠀
7. Stir in the cooked pasta and shrimps and gently mix to combine. Enjoy!

Here's a SUPER Simple Dinner, or meal prep idea for you!⠀

makes 4 servings⠀

Ingredients:⠀
1 lb. boneless skinless chicken breasts⠀
1 Tbsp ghee/clarified butter⠀
2 cups cherry tomatoes, quartered⠀
2 avocados, cubed⠀
1/2 cup fresh or frozen organic corn, cut from the cob ⠀
1 medium red onion, thinly sliced⠀
a handful of fresh cilantro leaves, chopped⠀
juice of 1 large lime⠀
1 Tbsp extra virgin olive oil⠀
sea salt and fresh ground black pepper, to taste, about 1/4 teaspoon each ⠀
Instructions:⠀

Melt ghee in a large skillet over medium-high heat. Add in the chicken and season with sea salt and pepper. ⠀
Sear for about 4 minutes on each side, or just until cooked through and no longer pink in the inside. ⠀
Set your cooked chicken aside on a cutting board to rest for a few minutes, then using a sharp knife cut it into bite sized cubes.⠀

In a large bowl, add in your cubed chicken together with tomatoes, avocado, onion, cilantro and corn.⠀

Squeeze fresh lime juice over and drizzle with olive oil. ⠀
Toss gently to combine, then taste test, and season with sea salt and pepper to taste.⠀

Ingredients:⠀
2 cups fresh, organic corn kernels, cut from the cob⠀
1.5 lb. medium shrimp, peeled and deveined ⠀
2 Tbsps avocado oil, or olive oil ⠀
1 Tbsp smoked paprika ⠀
1/4 tsp each sea salt and pepper ⠀
1.5 cups roma tomatoes, diced ⠀
1 large avocado, diced ⠀
1/3 cup fresh cilantro leaves, chopped ⠀
1 fresh jalapeno pepper, thinly sliced, seeds removed ⠀
For the honey-lime dressing: ⠀
2 Tbsps fresh lime juice ⠀
2 tsps raw honey⠀
2 small fresh garlic cloves, minced ⠀
2 Tbsp extra virgin olive oil ⠀
Instructions:⠀
Place a grill basket on an outdoor grill and heat to medium heat. ⠀

Transfer the cooked corn to a large bowl. Lightly grease the grill and then place the shrimp on. Cook until the shrimp are pink ⠀
and opaque, about 2 minutes per side. Add shrimp to the corn bowl. ⠀
Add in the tomato, avocado, cilantro and jalapenio. Gently combine.⠀
In a small glass bowl, whisk together all the dressing ingredients. ⠀
Pour the dressing over the salad, and very gently toss to combine. Enjoy!⠀

Garlic Dijon Shrimp and Salmon Foil Packs ⠀

SERVINGS 4 PEOPLE⁣⠀
Ingredients⁣⠀
4 salmon fillets I used skin-off⁣⠀
1/2 pound large shrimp, peeled and de-veined I kept tails on, feel free to remove them before beginning recipe if desired⁣⠀
4 tablespoons olive oil⁣⠀
salt and pepper to taste⁣⠀
1 teaspoon dried Italian seasoning herbs see note⁣⠀
Garlic Dijon Sauce⁣⠀
8 tablespoons butter, melted 1 stick or 1/2 cup⁣⠀
2 tablespoons honey⁣⠀
2 tablespoons dijon mustard⁣⠀
2 teaspoons whole grain dijon mustard⁣⠀
3 teaspoons minced garlic⁣⠀
salt and pepper, to taste I used about 1/8 teaspoon each⁣⠀
1 tablespoon fresh chopped dill⁣⠀
Instructions⁣⠀
Prepare 4 12x12 inch pieces of foil and set aside. Drizzle salmon with olive oil, rub over whole surface, then season with salt, pepper, and half of the Italian seasoning dried herbs. Repeat process with the shrimp. ⁣⠀
To make the sauce, stir together all ingredients in a bowl and set aside. ⁣⠀
Assemble foil packs by placing salmon in the middle, topped with 3-4 shrimp. Drizzle HALF of the sauce over the shrimp and salmon, RESERVE the other half for using later. Fold foil over the shrimp and salmon and pinch edges to seal closed so no juices leak. ⁣⠀
Grill foil packs over medium-high heat salmon-side down for 10 minutes, then flip and cook another 5 minutes or so until shrimp is opaque and salmon is cooked through and flaky. ⁣⠀
Drizzle with the reserved sauce (you may need to microwave it for a few seconds first if the butter has cooled) and top with additional fresh chopped dill if desired and serve. ⁣⠀

For the Italian seasoning dried herbs, you can also substitute with 1/4 teaspoon each dried oregano, dried thyme, dried basil, and dried parsley.

Dinner tonight was crispy chicken thighs with slow roasted tomatoes and burrata with fresh basil 🌿⠀
To make the crispy chicken thighs👇👇⠀
Preheat oven to 400F. Season bone in skin on chicken thighs liberally with salt and pepper on both sides, melt 1 tbsp of ghee into a cast iron skillet, place chicken thighs in skillet skin side down and allow to cook for 8 minutes on the skin side. Flip and cook for an additional 8 on the bottom side. Place in 400F oven for 8-10 minutes depending on the thickness of the thighs. Enjoy!
