My local Chinese restaurant serves up regional specialties from the northeastern part of China, near the North Korean border. A lot of the food here is somewhat familiar to me since I've had something similar in LA's Koreatown at Feng Mao Lamb Kebab. Shi-yan-yan (the characters read "happy sheep sheep") is a quick 5 minute walk. I've been eating here since they opened several years ago, but it's changed hands a few times, and the quality seems erratic, but the lamb skewers are always good, and I'm getting a bit worried for them since it's been pretty empty when I'm there. I wonder what happened to the folks who ran the restaurant during the past two incarnations. I don't know if their moving on is indicative of greater opportunities in Japan, or if it has to do with the strict immigration policies and they're back in their homeland.

The Lamb Cheek and Shank Soup with tossed Hoi Fu shark’s fin (羊頭蹄羹,一口魚翅) was a popular dish in the 60’s-70’s prized for its collagen-rich benefits, but fell out of favor due to its complex preparation. Chef Tam reinterpreted the dish with the cheek and shank of the lamb which is slow-cooked for hours with white pepper and galanga. The soup is paired with simmered shark’s fin - to be eaten separately or together with the soup.

The last dish is a delightful dessert - Pear and Chuan Bei Soup with Deep-fried Almond Puff (戈渣). The deep-fried custard puff is originally a savory dim sum but Chef Tam presented it as a dessert instead with almond tea as a basis. What a lovely rendition of a classic dish and another favorite of the meal!

3 ovos
5 colheres de sopa de manteiga derretida
5 colheres de sopa cheias de açúcar mascavo
1/2 xícara de leite integral ou vegetal
3 colheres de sopa de cacau em pó
1 e 1/2 xícara de farinha de aveia
1 colher de sopa de fermento em pó

Modo de preparo:

Bata no liquidificador todos os ingredientes líquidos por uns 3 minutos, depois adicione os secos ( menos o fermento) e bata novamente até tudo se misturar, adicione o fermento e misture novamente, unte uma forma com manteiga e cacau em pó e despeje a massa, asse em forno pré-aquecido por aproximadamente 25 minutos!

Para o brigadeiro fake:

Leite condensado + 2 colheres de sopa de cacau em pó + 2 colheres de manteiga ou oléo de coco, mexa tudo em fogo baixo por aproximadamente 10 minutos, deixe esfriar em um prato.

Para montagem é só corta o bolo em 3 partes iguais e rechear, o que sobrar use na cobertura!

🍴 Carrillera de ternera con calabaza (9,40€). Te sirven en el plato un buen trozo de carrillera sobre una base de calabaza y algunas verduras entre los que hay alga wakame. Te dicen de aplastar la carrillera con la cuchara y posteriormente servir; lo acompañan de un pan bao. Muy rica y plato muy recomendable.

There comes a time when a friend enters your life, and you couldn't ever imagine a moment without them. Para a torta:

120 gramas de manteiga sem sal
1/2 xícara + 2 colheres de sopa de açúcar mascavo
1 ovo
1 colher de chá de essência de baunilha
1 e 1/2 xícara de farinha de arroz, ou aveia(se necessário ir adicionando mais)
100 gramas de gotas de chocolate 60% ou chocolate 60% picado (em barra)

Para o recheio: 250 gramas de chocolate meio amargo derretido, usei um 40% por que era o que eu tinha aqui, mas vocês podem usar um de porcentagem maior.

Modo de preparo:
.
Com um fuê ou batedeira bata a manteiga com o açúcar mascavo até ficar bem fofinho, adicione o ovo e a essência de baunilha e misture bem, adicione a farinha e misture até não grudar mais nas mãos, jogue o chocolate picado e misture novamente.
.
Em uma forma redonda de fundo removível adicione metade da massa de cookies e espalhe, adicione o chocolate derretido e espalhe bem por toda torta, depois adicione o restante da massa de cookies por cima, asse em forno pré-aquecido à 180 graus por 25 minutos! Fica INCRÍVEL!!!!🤤😍❤️👏🏼👏🏼👏🏼👏🏼

I feel bad for anyone trying to decide which Yu Kurosaki line they're going to go with. Each of the three lines we offer is incredible in their own way and they all have incredible edge retention, cutting feel and feel in the hand. From left to right in the above picture is The Fujin AO super, Raijin Cobal Special, Shizuku R2(SG2). If you had to, which would you choose?
