Today I had dinner with many colours to make sure that all the necessary nutrients are present! I made this mega bowl for mom and for me, it includes:

I love broccoli cheese soup and I hate following recipes but for some reason I very nearly actually followed this entire recipe for broccoli cheese soup from @gfshoestring. I did everything right except for adding heavy cream, which like, yes obviously would be better but I must say this was still very very good. (Pictured with raw broccoli because I like to dip raw broccoli in my hot broc soup. Pictured with whole onion because it is ART.)

Stocked up on Pumpkin? Try this Chocolate Chunk Pumpkin Mug Cake. A pumpkin-fix with aromatic flavors in just 5 minutes. And that too with a chocolatey bonus!

I was so bummed after making this yesterday evening because as usual I underestimated how long I would need to take pictures and I needed to head to church.

I had zero, no, I had negative time to shoot this mug cake. The situation was so bad that I ended up eating this while driving to church.
Well thankfully this was a mug cake so I had that option. And finally used that cup holder for a cup lol.

But the thing is, as soon as I took that first bite, all frustration disappeared. It was so good, I really wanted to make it again, and would’t be doing it just for photos!

Ingredients:
2½ tsp Coconut Oil
3 Tbsp Pumpkin Puree, Canned, not Pumpkin Pie Filling (46g)
1 Egg, Room temperature
½ tsp Stevia-sweetened Maple Syrup @sweetleafstevia
¼ tsp Vanilla Extract
2 Tbsp Coconut Flour @betterbodyfoods

#mealprep for the week: some turkey meatballs with spinach, sweet potatoes and some cranberries.

1 1/2 tbsp olive oil, divided
2 sweet potato, cut into 1/2 inch cubed
1 tsp cinnamon
1 lb ground turkey
1/2 c wild rice, cooked
2 tbsp chopped sage
1 tbsp chopped rosemary
1 tsp salt, plus more for seasoning
1 tsp ground pepper, plus more for seasoning
1 c cranberries
1/2 tsp brown sugar
4 cups spinach, washed and dried

Preheat oven to 400 and grab a sheet pan and a clean cutting board.
Toss sweet potatoes with 1 tbsp olive oil. Sprinkle with cinnamon and season with salt and pepper to taste, and roast for 10 minutes.
Meanwhile, prepare meatballs. In a large bowl, mix turkey, wild rice, sage, rosemary, salt and pepper together. Form into 1 1/2 inch balls (approximately golf ball-sized) and set aside on the cutting board.
After the sweet potatoes have cooked for 10 minutes, pull out sheet pan and add formed meatballs. Cook another 10 minutes.
In a small bowl, mix together cranberries with remaining 1/2 tbsp olive oil and brown sugar. Add to the sheet pan and cook a final 10 minutes.
Serve warm with spinach and enjoy!

This salad is one of my favorites, and it had been way too long since I'd made it! It has a napa cabbage base (and the kind of cabbage makes such a difference here!), and lots of peppers, carrots, cucumbers, cashews, and chopped herbs. But, before I tossed all those veggies together I sauteed mushrooms and broccoli in carmelized onions. Once they were partially cooled I tossed them into the veggie mixture! I made a dressing with olive oil, lime juice, jalapeno, garlic, and ginger.
We ate it with warm brown rice, and it was a perfect combo!
(Oh, and yes, there was carrot cake for dessert! See my story for a pic of that!)

Sunday night dinners are my favorite! They are a great way to start off the week with a nourishing meal and set the tone for the week. I did some meal prep along with making dinner tonight too (basically just made a lot of what we are having). We have @miss.allieskitchen hot honey grilled chicken thighs (so good!), roasted sweet potatoes with butter and cinnamon, and a boat load of chipotle coleslaw (recipe on @eatthegains). Hope you guys had a great weekend!

My fur babies turned two yesterday! So I did what any sane person would do and threw a bbq for my kitties but disguised it as an Australia day bbq...hehe
This was their birthday cake! A raw peanut butter cheesecake with the recipe from @bakeritablog I couldn't find any roasted peanuts that didn't have any may contain statements so I had to substitute then for roasted almonds in the base of the cake but it turned out absolutely delicious! I was so happy with how pretty this cake turned out. I used fresh berries, a crumbled @shelbys_hh choc chip cookie and @loving_earth caramelised buckinis. It was an absolute hit! .

If you need a quick Sunday eve cookie fix, I GOT YOU. These oatmeal chocolate chip cookies are aaaamazing, GF, vegan & all the things. Here’s what you need: ~1 cup almond flour
~1 tsp baking powder
~1/4 tsp salt
~1 cup oats
~1/2 cup + 2 tbsp almond/nut butter
~6 tbsp maple syrup ~1.5 tsp vanilla
~2 tbsp nut milk of choice ~3/4 cups chocolate chips
~1/3-1/2 cup chopped walnuts
How:
1. In a large bowl, mix flour, salt & baking powder until well combined. Add in all other ingredients except chocolate and walnuts and mix until well combined. Fold in the chocolate chips & walnuts.
2. Using a cookie scoop, divide batter into 8 golf ball sized cookies. Place on a baking sheet and press down with palm.
3. Place cookie sheet in the freezer for 3 min. Remove and bake for 10 min @ 350 degrees. Sprinkle with sea salt once cooked.

I have waited to try recreating it until I found my favorite gluten free flour and oats (thanks Bob’s Red Mill). These bars are so simple and delicious, you have to try them for yourself. Ok y’all this is a keeper!!! Like seriously the best recipe! It’s amazing cooked or not. I have been playing around with it for a while and it’s absolutely the PERFECT chocolate chip cookie recipe! The dough is extremely soft and has to be refrigerated a few hours. After that I rolled into balls. You can eat at that point because as my husband said they taste better then the store bought dough! If you’re not a raw dough lover then toss your cookie balls on a cookie sheet and bake 10 minutes at *350.
This my friends is where these little balls get even better! If you don’t want to eat or bake all those cookies put them in the freezer. The dough taste amazing right out of the freezer. You can bake the same as from the fridge. Also they do great in the air fryer. I do 10 minutes at *350 and they are soft in the middle and crunchy on the edges.

Ok y’all this is a keeper!!! Like seriously the best recipe! It’s amazing cooked or not. I have been playing around with it for a while and it’s absolutely the PERFECT chocolate chip cookie recipe! The dough is extremely soft and has to be refrigerated a few hours. After that I rolled into balls. You can eat at that point because as my husband said they taste better then the store bought dough! If you’re not a raw dough lover then toss your cookie balls on a cookie sheet and bake 10 minutes at *350. 
This my friends is where these little balls get even better! If you don’t want to eat or bake all those cookies put them in the freezer. The dough taste amazing right out of the freezer. You can bake the same as from the fridge. Also they do great in the air fryer. I do 10 minutes at *350 and they are soft in the middle and crunchy on the edges.

Lemon Blueberry Protein Muffins 🍋🧁
1 1/2 cups almond flour
1/2 cup ground flax seed
2 scoops vanilla paleo protein
1 tsp baking soda
1 tsp baking powder
2 eggs
1 banana
2 tsp lemon extract
1 tsp vanilla extract
1/4 cup melted coconut oil
1 1/2 cup frozen blueberries

Mix all dry ingredients together and set aside. Mix all wet ingredients together in a separate mixing bowl except for the blueberries. Slowly add the dry ingredients to the wet until blended well. Fold blueberries carefully into mixture.

Spoon into muffin tins about 3/4 full. Bake in oven at 350 for approx 25 minutes. Check with toothpick to make sure fully cooked.
For vegan, omit eggs and add a splash or two of your desired nut milk. Let sit for a minute or two before spooning into muffin tin. Use plant based protein powder.

GF oatmeal cookies with craisins, chocolate chips, and pepitas 😍.

Ingredients (makes approx 18 cookies):
1/2 cup palm shortening
1/4 cup organic cane sugar
1/2 cup coconut sugar
2 tsp maple extract
1 large egg
1 & 1/2 cups GF rolled oats
3/4 cup GF flour blend (with xanthan gum; used King Arthur Measure for Measure flour)
2 tsp cinnamon
1/2 tsp baking soda
Pinch of salt
1/2 cup dark chocolate chips
3 tbsp pepitas
3 tbsp dried cranberries

1. Preheat oven to 375F and line 2 cookie sheets with parchment paper
2. In a large bowl, whisk rolled oats, GF flounder blend, cinnamon, baking soda, and salt. Set aside
3. Using a stand mixer, cream together palm shortening, cane sugar, and coconut sugar for 2-3 minutes until light and fluffy
4. Add egg and maple extract and whip until combined
5. Add dry ingredients to stand mixer; mix until JUST combined then fold in chocolate chips, pepitas, and dried cranberries
6. Using a small/medium cookie scoop, drop dough into mounds onto prepared baking sheet. Flatten tops slightly with the palm of your hand
7. Bake for 9-10 min; center of the cookie will look slightly underdone but don’t over-bake them! They will harden as they cool on cookie sheet
8. Keep refrigerated in an airtight container for up to a week

1 can diced tomatoes 🍅
1 onion 🧅
2-3 cloves garlic 🧄
3-4 leaves of kale 🥬
4 cups mushroom broth 🍄
4 cups water 💧
2 cups lentils
3 tbsp paprika
3 tbsp Chili powder 🌶
Sriracha to taste •

Stew together until lentils and veggies are all cooked through, then blend. Pour into mason jars while hot, let lids seal themselves at room temperature. •

I have been so good at being plant based lately, but tonight I was just craving a traditional Caesar salad. I used to eat the one from @panerabread all the time in high school and haven’t had it since.
I used the cauliflower breaded chicken (I can’t say enough good things about it) and @primalkitchenfoods Caesar dressing.
The perfect dairy free, gluten free, sugar free salad for 250 calories.
Sprinkle a little nutritional yeast to add a more cheesy flavor!

Tonight’s dins featuring a salad as big as my head and the most delicious almond butter salad dressing. I spent the weekend working on some new projects and catching up on a week off due to the storm. Mondays are our favourite day of the week over here. I love to make a plan for the week on Sunday and try to completely it by the end of Friday. I don’t always get everything done, but it’s nice to have a plan and work towards a goal. Anyone else love mondays? 🌞 - Les

Salad details: base of romaine, kale, quinoa, broccoli, roasted sweet potato, with sweet peppers, cherry tomatoes, green onion, avocado, carrot, red cabbage and cilantro.
Dressing:
3 T almond butter, 1.5 t toasted sesame oil, 3 T rice vinegar,
2.5 t agave nectar, 1-2 garlic cloves (minced), 4 T coconut aminos. Whisk and pour over salad. Enjoy, friends! 🤗

Gluten Free Apple 🍎 Crisp!
Bobs has these enormous, delicious bags of Apples from Delhaven Orchards, so I used 7 apples peeled and sliced.
Sprinkled on some organic coconut sugar, raw local honey, real maple syrup, cinnamon, alcohol free vanilla extract, organic coconut oil. Then topped with a mixture of gluten free oats, coconut flour, cinnamon, cardamom, coconut sugar, and more chunks of coconut oil. * 2 cups #GlutenFree Flour, I used @cup4cup
* 2 cups Greek Yogurt
* 4 tsps Baking Powder
* 1 1/2 tsps Salt
* Cream Cheese
* 1 Egg for Egg Wash
* #everythingbutthebagelseasoning ⠀⠀⠀⠀⠀⠀⠀⠀⠀
Mix together 1st four ingredients, then separate into 16 sections, flatten, add cream cheese to center and roll into ball. Top with egg wash and sprinkle on that EBTB seasoning. Bake these little bagel bites on a baking sheet with parchment paper for 25 minutes at 375*.

I love roasted sweet potatoes. I most always cook them in the Air Fryer, but this past week I’ve been cutting them into a wedge shape and popping them in the oven. Last week I made 3 things at once in the oven, #mealprep and this was one of them. They were so good. Four things about these sweet potato 🍠 wedges: 1)They’re easy to reheat in the Air Fryer. 2) I love them cold out of the fridge when they’re cut in the bigger wedges. 3) My dog loves them!! 4) I’ve partially meal prepped for Monday and Tuesday! So every once in a while... it’s ok to give my air fryer a break and let the sheet pans come out!! I wedged 3 sweet potatoes today and used 2 sheet pans with @kasandrinos olive oil and @balancedbites Trifecta. Super yum!! Breakfast, lunch, snack, and dog treat!! 😂 .

Had a chocolate craving (as usual lol) so I whipped up some healthy hearty muffins that did the trick! These are #vegan and #glutenfree and made with #wholefoods These aren’t too sweet so they would make a great healthy breakfast on the go or a delicious dessert 😊

Ingredients:
2-3 mashed bananas (about a cup worth)
1/2 cup almond milk
1 tsp vanilla
1 tbsp ground flax or chia seeds
1/4 cup maple syrup/honey/zero-sugar sweetener of choice (I actually used @sweetleafstevia 12 sweet drops)
1 tsp cinnamon
3/4 cup toasted quinoa flour (toast it for a bit in the oven you’re already preaheting and then blend it into a flour)
1 cup oat flour
1/3 cup cocoa/cacao powder
1 tsp salt
1.5 tsp baking powder
Optional 1/2 cup chocolate chips

Directions:
Preheat oven to 350F. Mix wet ingredients and ground flax. Let sit for a couple mins. Then add the rest of the ingredients and mix until it’s like a thick pancake batter consistency. Add more almond milk if needed. Then fill greased or lined muffin tins 3/4 of the way. This made 6 larger muffins for me. Then bake for 25 mins until toothpick comes out clean. Add peanut butter on top if you’re into that. Enjoy!

Gluten-free & vegan chana masala by @lazycatkitchen 🍲
Follow the steps in the video using these ingredients:
2 tbsp / 30 ml olive oil
2-3 garlic cloves, finely chopped
1 large onion, finely sliced
5 tsp of finely grated ginger
1-1.5 tsp salt
2 tsp ground coriander
1-1.5 tsp hot chilli powder (adjust to your liking)
4 tsp ground cumin
1.5 tsp ground turmeric
2 tsp garam masala
5 cups cooked chickpeas
2 x 400g tins of plum tomatoes
2 tsp sugar (especially if tinned tomatoes contain citric acid)
cooked basmati rice, to serve
fresh coriander, to serve

January = Veganuary for a lot of people but did I do a bake for just Vegans or those giving it a go? Oh no. These Lemon and Raspberry Bars are also Dairy-Free, Refined Sugar Free, Gluten-Free and most importantly, NOT Delicious-Free 🥳⁣

Requiring minimal fuss, they are a quick and easy bake to knock up, especially when using the @russellhobbsuk Desire Matte Black Food Processor.⁣

You'll Need:⁣
100g Gluten Free Oats⁣
125g Almond Flour⁣
30g Coconut Sugar⁣
15ml Maple Syrup⁣
65g Coconut Oil⁣

125g Cashews (soaked 1hr in boiling water)⁣
250g Coconut Milk (the cream at the top of the tin)⁣
15g Cornflour⁣
Juice of 3 Lemons, Zest of 2⁣
70g Maple Syrup⁣
1tsp Vanilla Bean Paste/Extract⁣
Handful of Raspberries⁣

You Do It Like This:⁣
1. Preheat oven to 175C/160C Fan. Add oats, almond flour and coconut sugar into @russellhobbsuk Desire Matte Black Food Processor and blitz till fine. Add in maple syrup and coconut oil and blitz again until it all comes together ⁣
2. Transfer to a greased and lined 8x8inch baking tray and spread evenly. Pop into a preheated oven at 175C/160C Fan for approx 20mins. Remove from oven to cool⁣
3. Add cashews, coconut cream, cornflour, lemon juice zest, salt, maple syrup and vanilla into @russellhobbsuk Desire Matte Black Food Processor and mix until smooth⁣
4. Pour cashew filling over the oat base, scatter on top raspberries and pop into oven for a further 25 mins⁣
5. Remove once cooked (should still be a little wobbly in the middle) and leave to cool for 15 mins before cooling for at least 4hrs in the fridge before slicing and serving⁣

And it's as easy as that. Did I just use a food processor to make both the base AND filling for these deliciously moreish Lemon & Raspberry Bars? Abso-fruitily. The versatility of the Desire Matte Black Food Processor makes this recipe a total breeze.⁣

This Quinoa Pizza Crust recipe by @feelgoodfoodie is a fool-proof method of making a gluten-free pizza crust without any flour! It's easy to prep, healthy and a crowd pleaser! 🙌
⠀⠀⠀⠀⠀⠀⠀⠀⠀
INGREDIENTS
1 1/2 cup cooked quinoa (1/2 cup uncooked)
2 eggs
2 teaspoon olive oil
2 teaspoon Italian seasoning
1 teaspoon onion powder
1 teaspoon garlic powder
1/2 teaspoon baking powder
Salt and pepper to taste
1/4 cup mozzarella cheese
1/2 cup parmesan & mozzarella cheese blend
INSTRUCTIONS
1. Preheat oven to 425°F. Line a baking sheet with parchment paper and spray with cooking spray.
2. Whisk eggs, olive oil, Italian seasoning, onion powder, garlic powder, baking powder, and salt and pepper to taste.
3. Add cooked quinoa and mozzarella cheese to the egg mixture and mix well with a spoon until everything is well blended.
4. Spread the quinoa dough into a ¼ inch, even layer on the parchment paper into desired shape.
5. Bake for 15-17 minutes until it becomes golden brown.
6. Remove from the oven and top with shredded cheese and bake for additional 5 minutes, until cheese melts.
