I used to love burgers but not the healthy kind! It’s ok to have a treat from time to time, just not McDonald’s every second or third day like I used to. Combining fish in a burger is definitely a delicious dinner. Add beetroot, avocado, red onion, and spinach, in a dairy free, gluten-free, soy free bun. Just because I have coeliac disease, shouldn’t mean I should miss out. Recreating my favourite food but in a healthy way, not only helps my health, but also my wellbeing! .

Heck, you could still get those things but not realise you put it off 5-10 years by listening to that guy on Instagram who cared about your health instead of trying to sell his BS supplement or PDF copy weight loss plan. ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀
It can be hard for a person to see the health benefits of eating more plants or any healthy eating behaviour. ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀
No doubt some people will feel better when they improve their eating habits and we certainly do have markers of health, but some aren’t going to feel any different and many aren’t going to get those checks done. There are going to be many who have a bunch of benefits but not be able to tangibly acknowledge them. ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀
I guess my main messages here are, there is an element of trust in healthy eating, get regular health checks where you can and like always ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀

As oats are a low Glycemic Index food they are a slow releasing energy carbohydrate which is perfect when trying to avoid that 11am energy dip 🥱 .

Oats contain large amounts of beta-glucan, a type of soluble fiber. Health benefits of beta-glucacan include reducing your LDL (bad) cholesterol levels and reducing your insulin response and blood glucose levels - which is very important if you are pre / type 2 diabetic 💉

Post gym / run breakfasts usually consists of porridge with banana and honey 🍌🍯 over night oats with fruit 🍓or my homemade coconut granola with Greek yoghurt 🥥🥛

Aniseed myrtle leaves stripped and ready to process for creation of my aniseed myrtle water kefir. Let me say a few things about how I harvest and process.

First of all, I ask permission from the plant to harvest. I connect my energy to the plant as I caress it and appreciate its beauty. I send the question: I would like to harvest your foliage (in this case) to make things to help my human family. I always get a clear yes or no, and respect this.

I cut the branches with strong and sharp secateurs, cutting with confident care, apologising for the pain I cause.

The branches come home where I take to remove any insects, placing them in my garden, so no harm is caused. The branches are hung upside down in a dark, airy place so the good oils and other compounds are concentrated in the leaves.

The leaves are stripped as needed with gratitude, and any spider or insect who has curled and silked within a leaf is transported in that leaf to my garden. First, do no harm.

Crushing the leaves by hand is a perfect opportunity to put the energy of love into them.

And after this, my usual alchemy follows as I consciously brew and combine, the techniques employed being dependent on the vehicle, and the desired result.

With all the #immunosuppressants I’m on I just can’t take the risk of not allowing my body any figthting chance. Roasted pumpkin and heirloom tomato salad. How delicious does this look!? Perfect for a weekend bbqs with leftovers for mid-week lunches.⠀

You’ll need:⠀
*1/2 whole jap pumpkin, seeded, 2cm wedges⠀
*2 tablespoon olive oil⠀
*250 gram baby heirloom tomatoes, some halved⠀
*150 gram baby spinach leaves⠀
*1/4 cup roasted flaked almonds⠀
*100 gram feta, crumbled⠀
*1 bunch chives, snipped⠀

Maple mustard dressing:⠀
*1/4 cup extra-virgin olive oil⠀
*1/4 cup red-wine vinegar⠀
*2 tablespoon maple syrup⠀
*2 teaspoon wholegrain mustard⠀

1. Preheat oven to 200°C.⠀
2. Toss pumpkin with oil on a large oven tray. Bake for 15-20 minutes until just tender and golden.⠀
3. Meanwhile, to make dressing; in a small jug, whisk all ingredients together. Season.⠀
4. In a large bowl, combine pumpkin, tomatoes, leaves and almonds. Season. Drizzle with dressing, tossing well. Top with crumbled feta and chives, to serve.⠀

I’ve been pondering, if true healing is possible, why don’t people reach for it? Each week I will be posting on different topics. This week I wanted to start with the importance of “Gut Health”

All of our emotions are first processed in our stomachs and then throughout our entire body. So it is important to understand and process our emotions so that they don’t wreak havoc on our health.

Think about when you are nervous or anxious or have a “gut feeling” about something. Think about how that feeling starts in your stomach and moves to your breathing and muscles. Negative emotions have a very powerful effect on our wellbeing.

All feelings GOOD or BAD start in the gut.

Good feelings or emotions start in the gut and quietly move gently throughout the system sending relaxed soft energy into the cells. This causes a heart healthy feeling along with deeper breathing and calming thoughts.

These positive feelings help us to navigate toward our purpose and flow.

Consistency in positive thoughts, GRATITUDE, and mindfulness (staying in the moment rather than rushing our thoughts to the past or future) heal our bodies of many ailments and help us to make other healthy choices.

So stay positive and optimistic, release negative toxic thoughts and emotions and enjoy your day... Tomorrow I will post a breathing technique to help release negative emotions and increase positive feelings and behaviors.

my newest ferm pet: fermented organic Taiwanese dried mushrooms (椴木香菇). the mushrooms were given a rinse with boiled water & added to 2% salt brine, half tsp of kome koji added to speed up fermentation. by day 5 at room temperature (29 degC) a nice tang has developed. going to age the mushrooms in the fridge for another 25 days & use it for a vegan version of my chilli sauce 😁

This caponata is everything you want in a slow cooked sexy sauce. Eat as is, or on pasta, polenta, beans or mash. (Or whatever delicious carb you fancy)
I served it over pulse pasta 🍝
Slow cooked eggplant, zucchini, onion, garlic, basil, capers, olives and tomato. Finished with a lug of good quality olive oil, a tear of fresh basil leaves and pepper.
I used a few cans of organic tomatoes, poured them in a small oven dish, and roasted for 1 hour until dark red, reduced and thick. This adds a depth of flavour you get from the slow cooking process that would usually take 4-6 hours.
You can use ripe fresh tomatoes in season, but I didn’t have any on hand (using up my fridge contents). So this is a great tip for winter when tomatoes aren’t in season!

I feel REALLY DAMN GOOD. I just started a new stomach med that I swear is a miracle drug called #lowdosenaltrexone. Regular dose Naltrexone (50-100mg) is for addicts/alcoholics who need help staying clean. But in very small doses (2.5-5mg) it’s anti-inflammatory (NOT an anti-depressant), targeting the gut. Happy gut = happy me.

1️⃣Stay hydrated💦: Water is free and absolutely vital for human function. Put down the soda/juice/coffee and pick up a glass of water. 2 first thing in the morning and 2 more with every meal.

2️⃣Timing is everything⏰: Late night eating spikes your blood sugar. Eat an early dinner, the earlier the better, then shut it down for the night.

3️⃣Loose the booze🍸: Alcohol kills bacteria. There are 39 trillion microbes in your colon. What do you think happens?

4️⃣Hara hachi bu🇯🇵: This Japanese tradition means eat until you're 80% full. It allows your body to catch up with your food intake, making sure not to overshoot.

TRUTH TIME // Gut healing can be a complicated beast to tame. It’s part of why I really love doing this work with my clients. There isn’t always a simple solution and it’s definitely not ONE-SIZE-FITS-ALL (ahem, I KNOW YA’LL HAVE HEARD THAT BEFORE, A TIME OR TWO, AROUND HERE). It keeps me on my toes, that’s for sure AND I really like supporting folks through that.

Gut healing requires you to stay aware, alert and to really listen. You become a curious detective, paying attention to the little whispers as much as you do the screams. You need to know when to stay curious and dig deeper. It’s a bit of a dance, as I like to call it.
.
It’s not to say that some of what is in that left column can’t be helpful (OK, prob not those first two) - many of these are actually included within what is recommended on the right side. But, expecting these ALONE to heal your gut without doing any of the deeper work, it’s a lofty goal, my love, especially depending on how serious the need for gut healing is.
