Aunque no lo crean muchas personas me han pedido el video de como a hacer una Crema de Auyma (calabaza) 🎃 así que aquí se los suelto bebesh...

Ingredientes (las cantidades varían dependiendo de la cantidad que vayamos a hacer):
🎃 200grs de Auyama.
🎃 2 tallos de celery.
🎃 3 ají dulces.
🎃 1/2 cebolla.
🎃 Sal y pimienta.

Sigan las instrucciones del video y disfrútenla.
.
Particularmente la incluyó en mis planes de alimentación por ser baja en carbohidratos y calorías 100grs solo contiene 46Kcal, 8grs de carbohidrato y 3grs de fibra así que pueden comerla a la hora que más les guste.

The past several months I have been having an inner battle with myself about this. I felt lost, conflicted, hurt, and empty as I knew what I needed to do in my heart, but my mind was telling me to hold on to the relationships because of selfish reasons. Selfish being a long history with a friend, or out of convenience that benefited both of us in a negative way. Either way I knew the end result needed to be me cutting ties with those relationships and starting fresh by consuming my energy around like minded people. I tried to do this in the past on my journey in life, but I never successfully ended up doing this. This time around is different, it’s different because MY life shifted. It shifted in ways I wasn’t expecting, and I took this as a sign. A sign that I needed to listen to, and really work on. Through the process I became aware of so much more. Letting go of the negative energy, the people who weren’t supportive, encouraging, or truly invested into my life like I was towards them. Once I did this & LET IT GO, I felt so much better. So much better mentally and emotionally. A weight was lifted and I could see more clearly. I was able to start fresh, and focus on myself, and my daughters. Look toward the future with a solid purpose. A purpose that involves surrounding myself with like minded people. People who have the same beliefs, morals, goals, interests as me. (At a later point I will share these.) Such an amazing feeling to have, understand and be able to relate to 100%. I can only imagine how my future will be if I am able to surround myself with like minded people. I talk to my clients about the importance of having "staple meals"

Staple meals are meal that just WORK for a few reasons:
👅You love how they taste
👩🏻‍🍳They're easy to prepare
🥰They satisfy you
⏱They save you time
⠀⠀⠀⠀⠀⠀⠀⠀⠀
Basically, you don't have to put much thought into them and you look forward to eating them every time.
⠀⠀⠀⠀⠀⠀⠀⠀⠀
This chili recipe is one of my staple meals. It's so delicious but I also love that I can make a big batch and freeze it in individual portions. That way, when I have a crazy week, I can pull a serving out of the freezer to defrost and all I have to do is heat it up and top it with all my fave toppings (@traderjoes peach salsa, sour cream, cheese). It's also a nice big portion which I love ( #VolumeEater) and you can even throw it over rice, cauliflower rice, sweet potato, etc.

This week feels very scattered. Kind of matches my travel schedule too. 😂 Anyway, before I ran out the door, had this bowl of apple pie oatmeal.

Apple Pie Oats
1/2 cup oats (quick or rolled, doesn’t matter or you can opt for some quick steel cut varieties too)
1 tbsp ground flaxseed
1/2 tsp pumpkin pie spice
Pinch cardamom
2 tbsp chopped dried apples
Pinch of salt
1 cup unsweetened almond milk (you can add more if you want them to be looser) 🌸

Add all ingredients to a sauce pan and bring to a low medium heat to simmer. With a spoon or spatula, stir oats as it cooks, about 3 minutes. Remove from stove top and top oatmeal as desired. For some apple goodness, I took a Fuji apple and thinly sliced it up to cook on the stove top. Add a tsp of sweetener of choice, pinch of cinnamon, pinch of salt and 1 tbsp water. Allow apples to cook and brown until soften then pour over oatmeal. 🍎
