I really, really didn't feel like working out today. It is late here and I am just tired but heck I did it and I am happy I did.
The workout was a HIIT workout I found on YouTube by Heather Robinson but boy did it kick my butt. Definitely recommend this one.

Eating lots of plants provides us with vitamins, minerals, phytonutrients and fibre but they are also a major source of carbohydrate. The only animal food containing carbohydrate is dairy. To ensure you keep your blood sugar levels balanced eat real food (i.e. unprocessed food) and focus on carbohydrates with a lower glycemic load. ⁠

When we talk about plant intake we are referring to real plants. In other words a Fruit Shoot drink does not count as plant intake. A handful of berries does. ⁠

What else is better than a Sunday omelette 🍳 I love my Sundays because I get all my stuff done. It’s a good day to digress from the week and prepare for the week ahead. I’ve found a pretty good routine for my Sunday’s that seems to set my week up for success.

Typically I’ll head to the grocery store first thing in the morning before the crowds. I must say if being a profession grocery shopper was a career, I would absolutely nail it. I then head over to my gym and do some stretching and cardio to start my day off on a good note. Then from there I’ll do my typical things like laundry, clean, cook, all that fun stuff. As simple as that all sounds it does bring me so much joy and calmness back into my life.

How can I forget the real reason why I look forward to Sunday’s 🤦🏻‍♀️ I can actually take a few extra minutes to cook a 💣 breakfast. It usually ends up being more of a “lunch” but let’s be real you can have an omelette any time of the day. They’re so easy to make and are super nutritious for you. All I did for this was cook up some frozen broccoli, whisk 2 eggs together, cook that then I added ham, bacon and cheese to the middle. Top this all off with some sugar free ketchup and bam 💥 so so so GOOD!

➡️ For all my omelette lovers out there... how did you make yours? What do you put in your omelette? I am always looking for new creative ideas to spice them up!

Power cookies de avena, canela y limón.

----- Te pongo en situación. Hace una semana, algunas amigas vinieron a casa a comer y el menú fue un acierto tras otro ✨ De primero tomamos ramen vegetal con salsa de cacahuete (la receta queda pendiente, no os podéis ni imaginar lo sencillo que es y lo rico que está 🤤), para beber, unas #kombuchas bien fresquitas y, aunque alguna de ellas era reticente a tomarla (habían tenido malas experiencias en cuanto al sabor), después de probar las de @komvidakombucha , fueron directas a comprar un arsenal 🙈. 🙋🏽‍♀️ Tengo que decir que yo también me he sorprendido con el sabor, todos están muy logrados! (Mi favorito el de mojito 😅).
Y, para terminar, @oatmornings trajo unas galletas que quitan el hipo! Y de aquí la receta que te quiero compartir hoy 👇🏽

INGREDIENTES
▪️200 g Copos de avena
▪️50 g Coco rallado
▪️2 cdt Canela
▪️2 cdt Ralladura de limón
▪️10 Dátiles Medjool ▪️1 Chorrito de agua

El paso a paso es tan sencillo como meter la avena, el coco, la canela y el limón en la trituradora/batidora. Triturar hasta que quede un polvo homogéneo.
Añades los dátiles y el chorro de agua (la necesaria hasta que te quede una textura moldeable). Le das forma con las manos, espolvoreas más coco y canela y directo a la nevera!
Lo dejas enfriar hasta que se endurezca un poco y listo! a disfrutar de esta delicia!

work day lunches are all set and ready to go! all together, this cost me a total of $7 tops. for everything. when we stop and think about it, that's the cost of only ONE meal when eating out! I made four out of it! meal prep is such a time and money saver.
I purchased these containers at walmart for about $2. They are not glass, no, but they are reusable, and being that glass was out of my budget at them moment, I thought to myself, "that'll do!" They have come in very handy to me so far.
In these containers, I have brown rice (the cost of one bag costs about $.68, cant beat that!), four tilapia fish filets (I found these for about $3.28 at walmart), broccoli and cauliflower (which I bought frozen at about $1 a bag), and mashed sweet potatoes.
Filled with protein and carbs to keep me full throughout the day!

1. 🍎 Breakfast part 1 - bulletproof coffee with raspberries.
2. 🍎 Breakfast part 2 - scrambled eggs (4 egg white and 1 whole egg) and cherry tomatoes.
3. 🍎 Lunch - red and yellow peppers stuffed with quinoa, beef, avocado oil, onion, garlic and tomato sauce topped with a bit of parmesan cheese.
4. 🍎 Pre-workout meal - whole wheat spaghetti pasta with home made bolognese sauce (ground beef, onion, garlic, tomato sauce, olive oil, fresh basil and lots of herbs). 5. 🍎 Post-workout meal - basmati rice, beef steak, steamed green asparagus, lettuce with olive oil and yellow cherry tomatoes.
6. 🍎 Dinner - whole wheat bread with bresaola ham, spinach, avocado and tomato.
Total of 1'831 calories 📝😁 I had my legs session followed by short cardio and I burned 700 calories 🏋🏼‍♀️

slept in, had a nice slow morning reading my book and relaxing, and now diving into breakfast before heading into work for the day! ❤️
keeping things short and sweet today, but I hope you all are doing well, and take a moment to do something nice for yourself today!

#whatsonmyplate: 1/3 cup @birchbenders paleo pancake mix + 1 egg + cinnamon mixed with enough water/milk to create a thick batter consistency! cooked my pancakes on medium/low heat with some @nutiva coconut oil, and then paired them with some plain greek yogurt, warmed up frozen raspberries, banana slices, @beekeepers_naturals bee pollen, @maranathanutbutters almond butter, and a drizzle of maple syrup!
