Here’s a recipe to help you out in that area.⁣

Mason Jar Salad 🥗 ⁣

Ingredients⁣
3 Tbs almond butter ⁣
1 Tbs apple cider vinegar ⁣
1 Tbs maple syrup ⁣
2 Tsp sesame oil⁣
1/2 Granny Smith apple, diced⁣
4-5 cherry tomatoes ⁣
4 radishes, sliced⁣
2 celery stalks, diced⁣
4 Tbs of your favorite nuts or seeds⁣
4-6 cups of your favorite greens⁣

Preparation ⁣
1. Add first 4 ingredients together in small bowl & whisk⁣
2. Add apple to dressing (fully covered so it doesn’t brown) & divide between 2 mason jars⁣
3. Layer the radishes, celery, nuts/seeds, tomatoes, and greens on top & seal⁣
4. When ready to eat, shake the jar, open and enjoy OR pour it into a large bowl to mix more thoroughly. ⁣

Hail Seitan! This hearty, flavorful and protein-packed dinner clocked in at 475 calories. 💁🏻‍♀️ I made homemade seitan based off an @itdoesnttastelikechicken recipe (modification: I used a Korean BBQ marinade). I prepped a whole bunch of seitan in different marinades a couple weeks ago and froze them. 👩🏻‍🍳 Last night, I moved this one from the freezer to the fridge to thaw. When I got home from work, I cooked it in the skillet for a few minutes on each side, sliced it up and served it on a bed of cauliflower rice. 🍚

This cauliflower rice was an “Asian-style” bag from the frozen section at Wegmans. I just microwaved it in the bag and it came out pretty good. 🌱

🔸Butternut Squash Veggie “Pasta”🔸 So... apparently I’m really into spiralized vegetables right now?? Whipped up this meal for the first time a few nights ago and am so excited about it! 🌟I picked up some butternut squash “noodles” from target thinking I’d try to get creative with it, and this is what it turned into!
1. In a skillet, sauté diced onion and zucchini in minced garlic and ginger
2. Once veggies are cooked, toss in desired amount of butternut squash noodles to the pan and cook for 2-3 minutes
3. Add in about 2 TBSP of my peanut sauce (recipe in previous zoodles post!) and let everything cook in the sauce for a few minutes until “noodles” are soft and no longer crunchy
4. Garnish with crushed up honey roasted cashews (in my snacks highlights). They add the BEST texture and really take this dish to the next level!

This meal is a perfect example of why I love cooking - I got to be creative with it, go out of my comfort zone, and it fueled my body with allllll the good nutrients 💪🏻⚡️

Shrimp, basil, and, green bean stir fry. My sauce base is onion, fish sauce, soy sauce, Sriracha blend, and a little basil as well. A scoop of each sauce mix in a bowl and let cook on a low heat for 5 mins. Add the other ingredients and it’s your perfect stir fry sauce. 🔹Always take inventory of your fridge before going to store.

Vegan Chick’n Parm Pull-Apart Sandwiches! by @vegantraveleats . .
Recipe: Makes 8 Sandwiches
2 7.1 oz bags vegan shredded Mozzarella, at room temp for better melting
8 Vegan breaded chick’n patties, cooked
8 vegan burger buns
¾ cup vegan butter, melted
2 cups marinara sauce
2 tbs dried Italian seasoning
1 cup + 2 tbs grated vegan parmesan

DIRECTIONS
Preheat the broiler and arrange an oven rack in the middle level of the oven. Split the entire pack of dinner rolls in half horizontally, if possible, keep the top of the buns attached to each other and the bottoms of the buns attached to each other for the “pull-apart” effect. If that’s not possible don’t worry, these will still be delicious!
Put the top and bottom halves cut-side up on a baking sheet. Brush cut-side with melted butter, reserving 2 tbs for later. Broil until toasted, 1 to 3 minutes. Keep a close eye on them, they will burn very quickly!
Turn off the broiler and preheat the oven to 400 degrees. Spread half the mozzarella on the bottom buns, top with chick’n patties, marinara, 1 cup vegan parmesan cheese, then the remaining vegan Mozzarella cheese, lastly, place the top buns on top.
Brush the tops of the buns with remaining vegan butter and sprinkle with remaining vegan parmesan and Italian seasoning.
Bake 12-15 minutes. Serve immediately!

Vegan Chick’n Parm Pull-Apart Sandwiches! by @vegantraveleats . .
Recipe: Makes 8 Sandwiches
2 7.1 oz bags vegan shredded Mozzarella, at room temp for better melting
8 Vegan breaded chick’n patties, cooked
8 vegan burger buns
¾ cup vegan butter, melted
2 cups marinara sauce
2 tbs dried Italian seasoning
1 cup + 2 tbs grated vegan parmesan

DIRECTIONS
Preheat the broiler and arrange an oven rack in the middle level of the oven. Split the entire pack of dinner rolls in half horizontally, if possible, keep the top of the buns attached to each other and the bottoms of the buns attached to each other for the “pull-apart” effect. If that’s not possible don’t worry, these will still be delicious!
Put the top and bottom halves cut-side up on a baking sheet. Brush cut-side with melted butter, reserving 2 tbs for later. Broil until toasted, 1 to 3 minutes. Keep a close eye on them, they will burn very quickly!
Turn off the broiler and preheat the oven to 400 degrees. Spread half the mozzarella on the bottom buns, top with chick’n patties, marinara, 1 cup vegan parmesan cheese, then the remaining vegan Mozzarella cheese, lastly, place the top buns on top. 
Brush the tops of the buns with remaining vegan butter and sprinkle with remaining vegan parmesan and Italian seasoning. 
Bake 12-15 minutes.  Serve immediately!

Second day of bulk eating. 💙

I was looking forward to today’s meals, even tho I spent most of Monday uncomfortably full. Today was a little better. I suspect eating larger meals than I’m used to is the reason. They are only 80-100 calories more per meal than I’m used to. I’m certainly not hungry with all the extra food. .

Esta receta que les comparto hoy, apesar de que son varios los ingredientes, es super fácil y rápida de hacer! Y lo mejor de todo es su versatilidad, ya que con la receta base tienen para jugar con los sabores y luego ponerse creativos💡 y sumarle otros ingredientes opcionales y darle un sabor diferente. Y por supuesto es una receta deliciosa😋 y saludable!

INGREDIENTES:
.
✅1 3/4 taza de avena en hojuela
✅1 taza de harina integral ó de almendras
✅1/2 taza de edulcorante (puedes usar azúcar morena ó de coco)
✅1 cdta. de polvo de hornear
✅1 cdta. de bicarbonato
✅2 cdta. de canela
✅1/2 cdta. de jengibre molido
✅1/2 cdta. de sal
✅1/2 taza de leche🥛 (la de tú preferencia)
✅1 taza de compota de manzana🍎 (la puedes comprar ó preparar cocinando la manzana en el horno ó hervida y haciéndola puré)
✅2 huevos🥚
✅3 cdas. de aceite de coco🥥
✅1 cdta. de vainilla
✅OPCIONAL: 1 taza de chocolate🍫, frutos secos ó alguna fruta🍌🍎.

INSTRUCCIONES:
Pre-calienta el horno a 400 grados.
En una licuadora mezcla todos los ingredientes húmedos: leche🥛, compota de manzana🍎, huevos🥚, aceite de coco🥥 y vainilla.
En un bowl mezcla los ingredientes secos: avena, harina, edulcorante, polvo de hornear, bicarbonato, canela, jengibre y sal.
Une la mezcla líquida con la seca y revuelve hasta que todos los ingredientes estén mezclados.
Por último añade una taza de lo opcional, en mi caso añadí una taza de manzana🍎 picadita.
Vierte la mezcla en un molde de ponquesitos y mete al horno de 15 a 18 minutos.
Una vez listos espera 5 minutos para remover del molde y disfrutar.

Hey Guys! After years of indulging in every food know to man I had decided to follow a Pescatarian diet. For those of you that know me and my love for food would probably shake your head in udder disbelief while others will probably assume my wife “made me do it”. Where the truth of the matter is it was something I was really excited to give a try. Since late November we have been in this path and have feeling younger and healthier than we have in years.

This is a healthy thing. I haven't really posted in awhile, even the first couple pizzas of the year.
This is an omelette. It's much healthier and no carbs.
I made it 3 eggs. I cracked them open and put them in a cup. I then added pepper, garlic powder, Italian Seasoning, and ground turmeric to the eggs before I used a fork to break the yolks and stir it up.

Then I added most my toppings into the cup. Those were green peppers, mushrooms, black olives, banana peppers, grilled chicken strips, spinach mixed with baby kale, and microwave steamed broccoli.

I melted partial butter sticks in the frying pan so it wouldn't stick. The last time I tried a non-stick spray it didn't work well.

Once I dumped the cup into the pan I used my fork from stirring the eggs to spread the toppings out a bit more evenly.
Then I put some shredded cheese on it, I used some leftover taco blend cheese tonight on mine. My mom's had 3 slices of American cheese and hers had no banana peppers. No pics of hers. She said she liked it though, and that felt good.

It tasted alright. I couldn't really taste the broccoli, spinach, or kale much. It was there though and it got ate. That's the important part.

I'm trying to correct my fatty liver. Hopefully it's not too late. I found out I had one in 2014 when they took my appendix out.

I've lost weight since then and I've adjusted my diet before, but I've felt so fatigued after normal trips out and about that it seems this might be the culprit. The fatty liver that is. I'm non-alcoholic but it's still a problem from carb overload.

Rosemary & 🍋 Roasted Chicken! Super easy and quick weeknight dinner that’s healthy & full of flavor! Add whatever sides you’d like! Check out below how easy it really is ⬇️

1 tablespoon fresh finely chopped rosemary
1/2 lemon
Salt & pepper
Olive oil

On a large sheet pan, place chicken and drizzle lightly with olive oil. Season generously with salt and pepper. Sprinkle finely chopped fresh rosemary. Roast at 425° for 45 minutes or until cooked thoroughly. Squeeze juice of half a lemon over the chicken before serving!

ORGANIC TURKEY BURGERS
Enough for the week 😍 packed with so much flavor + veggies and literally go with any meal. They keep up to 5 days in the fridge or you can freeze for later 🤜

1 lb organic ground turkey (or sub chicken or beef)
1 medium bell pepper, diced
1/4 cup chopped cilantro
1/4 cup diced red onion
1/2 cup finely chopped spinach
3 tbsp chopped green onion
1/4 cup crumbled organic feta or goat cheese
1/4 cup finely chopped sundried tomatoes
seasonings of choice: i love fennel seed, basil, italian seasoning, chili powder, red chili flakes, ground pepper + pink salt but you can use anything

directions: combine all ingredients together in large bowl and mix thoroughly. using your hands, form into patties. heat a 10-inch cast iron skillet over the stove with avocado oil. gently place patties in hot pan and sear on ether side. add 1/2 cup bone broth or water, cover and turn down heat to let steam / finish cooking, about 10 more minutes ✨

▪️10 oz. of unsweetened almond milk⁣
▪️1 scoop of collagen or protein⁣
▪️1/2 a serving of spirulina ⁣
▪️1/2 cup of kale ⁣
▪️1/2 a banana ⁣
▪️1/4 cup of mango/berry mix ⁣
▪️ 1 tbsp. of grass fed or coconut butter⁣
▪️ 1 tbsp of peanut or almond butter ⁣
▪️ 1 tbsp. of chia seeds⁣
▪️ pinch of sea salt ⁣

🌪 BLEND! 😋 I topped with freeze dried strawberries 🍓 to add some texture. I get them at Aldis and they are my new favorite snack!

I've had my challenges throughout the years maintaining my fitness through a lot of my emotional and physical health struggles where I would get fit maintain and gain it back after my pregnancy and having my son. Now since 2018 I have been able to lose 60 lb and myself but looking to loose more fat and gain more muscle. Home cooking isky but the greatest importance is nutrition knowing exactly what is going to help you customizing to your needs and your bodily capabilities in terms of fueling yourself and your foods and maintaining active daily. I used to be very depressed and I'm not seeing that I don't I have my moments now but Fitness and walking even outside home cooking is key but the great is importance is nutrition knowing exactly what is going to help you customizing to your needs and your bodily capabilities in terms of fooling yourself in your foods and maintaining active daily I used to be very depressed and I'm not I used to be very depressed and I'm not I used to be very depressed and I'm not saying that I I used to be very depressed and I'm not saying that I don't I used to be very depressed and I'm not saying that I don't have those moments now but walking/jogging outside has been therapeutic and a cleansing experience. Dance has increased my overall happiness.

I have a massive sweet tooth. I always have and I always will — so I’ve been trying to find recipes that help me fulfill that craving in a healthier way than running our and grabbing whatever baked good I can find. 🍰

I’ve also had to cut out gluten, dairy and refined sugar during a treatment for lyme, so I’ve had to get creative.

I’ll call these the “Healthy Snickers Ice Cream Bars” because that’s what @digimark said they tasted like last night. 🍫

Filling:
-Coconut cream from .5 can of coconut milk
-3 tbsp peanut butter
-2 tbsp maple syrup
-1 tsp vanilla
-1/4 tsp sea salt
-1/8 cup dark chocolate chips
-1/8 cup chopped salted peanuts

Chocolate Shell:
-1/2 cup of dark chocolate (I used a combination of dark chocolate chips and half of a dark chocolate bar we made from cacao beans from Tanzania)
-1/2 tbsp coconut oil
-1 tsp vanilla

Instructions:
-Mix coconut cream and peanut butter together until well-blended.
-Mix in maple syrup, salt, and vanilla.
-Fold in the chocolate chip and chopped peanuts until evenly integrated.
-Press the mixture into a silicone mold (or form balls or squares on parchment paper).
-Freeze for one hour.
-Place the chocolate and coconut oil for the chocolate shell into a double boiler and heat on low on the stovetop until melted (you can put a pyrex mixing bowl over a small sauce pan with a little water in it for this).
-Remove the peanut butter mixture from the molds.
-Using tongs, dip the peanut butter bars into the chocolate to coat.
-Set on parchment paper and top with chopped peanuts and sea salt (or whatever else you’d like on top).
-Put in the fridge for about 15-20 minutes before serving.
-Keep refrigerated.

Day 21: beef and veggie soup. .

Real simple recipe!!!
In a large pot add:
Beef broth, beef stock, beef bouillon with water or make your one bone broth - whatever you have
Cubed leftover eye of round
Diced carrots and celery
Chopped kale
Cook over medium heat. At least 30-45 minutes.
Next add:
Sliced mushrooms
Frozen peas
Frozen green beans
Frozen corn
Season to taste with salt and pepper
Cook for an additional 10 minutes.
Fill up a bowl and enjoy. .

Baked Chicken wings marinated in yogurt, mustard and red pepper served with baked potatoes and salad. One of my favourite comfort meals. Recipe for 2 portions: Make a marinade for the chicken wings out of few spoons of mustard, 200gr of yogurt, 2 spoons of olive oil, 2tsp of red pepper, a pinch of salt and half a tsp of peperoncino. Massage it well into the chicken wings then leave them marinade in the fridge for 2 h. Then place them on an oil sprayed baking paper along with thinly and longitudinaly chopped potatoes, drop some sesame seeds, spices of choise and a sprinkle of olive oil on the potatoes, then bake for about 50 minutes on 220°C on a preheated oven. Serve with salad and sauces. .

1 batch of gluten-free pizza crust (or crust of choice)
Sauce
2 tbsp olive oil or any other oil (divided)
1/2 cup tomato sauce (tomato passata)
4 tbsp coconut milk canned (or any other plant-based milk)
1 tbsp balsamic vinegar (or apple cider vinegar)
1 tbsp hot sauce (or more/less to taste)
1 tsp coconut sugar (or regular sugar)
spice mix (1 tsp each of smoked paprika, onion powder, garlic powder)
sea salt and pepper to taste
Other ingredients
1 batch of easy vegan cheese sauce
1 avocado
1 15 oz can chickpeas
Instructions
Make the pizza crust as per the instructions in the recipe. Preheat oven to 200 degrees C (390 degrees F). To make the sauce, mix 1 tbsp oil and all other sauce ingredients in a bowl with a whisk. Spread the sauce (but save 3-4 tbsp) on the pizza crust and put the pizza in the oven for 10 minutes.

Heat 1 tbsp oil in a skillet, add the remaining 3-4 tbsp of sauce and the chickpeas and fry for 3-5 minutes over medium heat.

Spread the chickpea mixture and the vegan cheese sauce onto the pizza and put it back into the oven for another 10-15 minutes (or until crispy). Peel the avocado, remove the stem, and cut it into pieces and put it on the pizza right before serving. Season again with sea salt/pepper/spices if desired. Enjoy your delicious avocado chickpea pizza!

Wrappers
3 cups all-purpose flour
pinch of salt
1 cup boiling water
1 tbsp cold water
Filling
2 tbsp avocado oil or other cooking oil
2 tbsp ginger, minced
1 medium onion, chopped
3 cups shiitake mushrooms, chopped
2 cups finely shredded cabbage
1 1/2 cups finely shredded carrot
4 (around 1 cup) scallions, finely chopped, both white and green parts
1 tbsp sesame oil
3 tbsp Shaoxing wine or rice wine
2 tbsp soy sauce
1 tsp sugar
1/2 tsp white pepper
1 tsp salt, or to taste
INSTRUCTIONS
To make dough: combine the flour and salt together in a medium bowl. Make a well in the center, and gradually add the boiling water, stirring with a spoon until the mixture forms clumps. Cover and let rest for five minutes. Add 1 tbsp cold water and knead into a ball, then cover and let rest as you prepare the filling.
To make filling: heat oil in a large work or skillet over medium high heat and stir-fry ginger and onions until translucent. Add in chopped mushrooms and stir-fry for another 3-5 minutes until liquid is evaporated, then add cabbage and carrots and stir-fry for 3-4 minutes, until most of the liquid from the vegetables is released. Add chives, wine, soy sauce, sugar, white pepper, and salt, and cook one more minute, then remove from heat. Taste and add more salt or sesame oil as necessary (you want the filling to be quite salty/well-seasoned, as the flavor mellows in the dumplings). Place filling in the fridge to cool.
To make the dumplings, divide the dough into two portions, and knead well. Roll each portion into a 1 inch rope, and cut into small tablespoon-sized pieces, flattening each piece with the palm of your hand. Dust the working surface with flour and roll each piece out into a flat disc. Add a generous amount of filling and pleat the edges, pinching tightly to seal.

🥔😍 Easy Lentil Stew With Mashed Potatoes! 📷 by @elavegan 🚨🚨Recipe: Lentil stew
1 cup dry lentils (190 g)
1 large onion (chopped)
2 cloves of garlic (minced)
1 tbsp oil (for frying)
3 tbsp white wine (40 ml) (optional)
3 cups vegetable broth (720 ml)
2 cups mushrooms sliced (135 g)
2 tbsp soy sauce (wheat free if gluten-free)
1 tbsp balsamic vinegar
1-2 tsp each of dried parsley, thyme and oregano (use more, if fresh)
A splash of coconut milk canned (for extra creaminess)
1/2 tbsp cornstarch (to thicken)
sea salt, black pepper and chili flakes to taste
Chopped pickles to taste (optional)
Mashed potatoes
4 medium-sized potatoes (600 g)
1/4 cup coconut milk canned (60 ml)
1/2 tsp nutmeg (or more/less to taste)
black pepper, sea salt to taste

Instructions
Rinse lentils under running water. I prefer to soak the lentils for about 15 minutes in lukewarm water but this step is optional (discard the water afterwards).
Meanwhile, chop the onion, garlic, mushrooms. Heat oil in a skillet/frying pan, stir in the diced onion, the minced garlic and fry for 3 minutes over medium heat.
Add mushrooms, dried parsley, thyme, oregano, white wine (optional), balsamic vinegar, soy sauce (or tamari/coconut aminos to taste) and fry for a further 3-5 minutes.
Now add the lentils and 3 cups of vegetable broth and cook on low-medium heat (add more broth if needed) until the lentils are tender (about 20 minutes).
In the meantime, peel and chop potatoes, transfer them to a pot with water + salt and bring to a boil. Cook on medium heat for about 15 minutes or until tender, drain. Transfer back to the pot, add coconut milk, nutmeg, black pepper and sea salt to taste and mash with a potato masher (don't use a food processor or blender).
Once the lentils are tender, mix a generous splash of coconut milk and cornstarch in a small bowl and add this mixture to the lentil stew. Cook for a further 1 minute or until the desired thickness is reached. Season again with soy sauce (if needed), black pepper, and chili flakes.

1 cup button mushrooms
1/2 cup chopped baby tomatoes
1/2 tsp smoked paprika
1/3 tsp chili
Salt to taste
2 tsp soy sauce
1 tsp toasted sesame oil
Bunch of parsley - minced
If you want you can add 1 garlic clove
1 portion spelt spaghetti
Extra Virgin Olive Oil
1 tsp ume su (optional)

Method:
1. Cook the spaghetti
2. On olive oil warm the spices and then add mushrooms(and minced garlic if using), season with salt
3. Sauté until slightly browned and fragrant, then add tomatoes and shoyu. Keep sautéing for 2-3 minutes until veggies are soft.
4. Add toasted sesame oil (for the added smokiness) and parsley. Mix in spaghetti. At this point I like adding a little bit more of olive oil for the taste.

4 potatoes
1 tbsp garlic powder
2 tbsp mix herbs basil, thyme, rosemary and parsley
1/2 tsp chilli flakes
2 tbsp coconut oil
Kosher salt .

-Wash the potatoes and cut into wedges.
-Preheat the oven to 200°c
-Place the potatoes on a baking sheet and drizzle with the coconut oil, garlic powder, mix herbs, chilli flakes .
- Coat well and bake for 25 to 35 minutes or till brown, tender and crispy.
- sprinkle with kosher salt - Serve with chilli sauce.

1 tbsp garlic powder
2 tbsp mix herbs basil, thyme, rosemary and parsley 
1/2 tsp chilli flakes
2 tbsp coconut oil 
Kosher salt .

-Wash the potatoes and cut into wedges.
-Preheat the oven to 200°c
-Place the potatoes on a baking sheet and drizzle with the coconut oil, garlic powder, mix herbs, chilli flakes .
- Coat well and bake for 25 to 35 minutes or till brown, tender and crispy.
- sprinkle with kosher salt - Serve with chilli sauce.

No I am not that gal heating up salmon in the cafe microwave at work!! So really I don’t think it’d be that bad but whatevaaaa there’s like a million articles on “things you don’t heat up for lunch at work” & salmon makes it every time.. Don’t worry though it’ll be my dinner later tonight 😏

⏩ This is frozen wild caught salmon from @wholefoods! I cooked in in olive oil, garlic powder, & onion powder stovetop. Sautéed all the onion, broccoli, & mushrooms in avo oil then added parmesan to the 🥦 & 🍄 while they were still hot on the stove.

The shells I bought was stale smh. 👇🏽👇🏽 Instructions

Season ground beef with Taco Tuesday Seasoning (@flavorgod ) and cook about 5 mins

Nacho Cheese dust: Cheese seasoning & Nacho Cheese (Flavor God)
Slice the lettuce (iceberg)

Take taco shell lightly coat with oil (use a brush) and toss in the home made Nacho Cheese dust
