'Leftover' Grain Free Vegetable Egg Bake 🥚🧅🥦🥬🥕🍗 Do you have any extra lunch meat, cheese, or vegetables you need to use up by the end of the week? Well, an egg bake is the perfect thing to use all that up and can stay refrigerated for up to 2-3 days as an easy go-to for breakfast, lunch, dinner or snack.

For this egg bake, I had a lot of vegetables that I sauted with some avocado oil, threw into a 9x9 @pyrex dish, and covered with an egg, almond milk, chive, red pepper flakes, and Parmesan cheese mixture.

Preheat you oven to 375 degrees F. Grease a 9x9 @pyrex dish with ghee.

In a pan, heat about 1 tablespoon of avocado oil. Add in 1 tablespoon of fresh minced garlic, 1/2 chopped red onion, and handful of chopped green onions. When soft, add in 1 package of @applegate turkey lunch meat and cut into squares or cubes. Then, add in more vegetables! I had a package of shredded carrots, 1/2 a bag of fresh spinach, and 1 bag of fresh broccoli florets. Add in a pinch of sea salt and cracked pepper to taste. Let this cook and simmer for about 8-10 minutes. Pour mixture into your pyrex dish and let cool.

Meanwhile, in a bowl beat about 8-10 organic, large eggs. Add in 1/4 cup of almond milk, cracked pepper, small handful of chopped fresh chives, and dash of red pepper flakes. Pour this egg mixture over the vegetable in the pyrex dish. Top with grated Parmesan cheese or other type of cheese, chopped parsley, or sliced tomatoes.

Bake for 45 - 50 minutes in the oven and serve!

Today I made the yummiest roasted red pepper, leek and goat cheese gnocchi after one of those “omg I have nothing in the house” meltdowns. It’s so good and so quick and easy! Instructions are below!

Bring a large pot of water to a boil. Salt it and add in one package of premade gnocchi. When the gnocchi rises to the top, drain it and set it aside.
In a large skillet, heat a tablespoon of olive oil and melt one tablespoon of butter. Add some Chili flakes (to taste) and one sliced leek. Sauté until the leek is tender, then add one large clove of minced garlic, 2 finely chopped roasted red peppers, salt and pepper and sauté another minute or so. Add in about a 1/4 cup of the marinade/liquid from the jar of roasted red peppers, a drizzle of balsamic and a couple tablespoons of crumbled goat cheese. Add in the gnocchi and toss it all together until the cheese is melted and everything is combined. Remove from heat and serve! Enjoy! 😋

Xi'an Pit Sticker Dumplings for today's #getcookingcookbookclub recipe challenge. •


I'm so glad @fuchsiadunlop author of Every Grain of Rice picked this for our challenge. I've made pot sticker dumplings before, but this was a first making my own wrappers. It really wasn't that difficult.



The filling is ground beef, ginger, green onions, garlic, sesame oil, soy sauce, Shaoxing wine and chives, some water to loosen it up. •


What I really liked about this recipe is that the ends of the dumplings are left open. No fancy folds so it's quicker to make! Came in handy as I made these right before the boys got home from school. •


Sean says he had 7, and that's literally 5 minutes before I took them out for an early dinner! Guess what they will finish when they get home from swim...

Often, people see the food I eat and say- I wish I had your discipline. And then I giggle. 🙈 This isn’t discipline. It’s just me eating foods I enjoy... and whipping up a quick meal before heading to teach my next yoga class.
I’m not sure why eating vegetables is considered being disciplined. Maybe peas and kale scrambled with eggs and a side of sugar snap peas doesn’t sound sensational to most? 😆 A delight for me!

Then again- I used to request my mom cook dandelion greens when I was little so 🤷‍♀️. #wholesomeheart

Method

1. Preheat oven to 170 degrees C, and grease and line a large tin loaf. Set aside.
2. In a medium mixing bowl, add all wet ingredients (listed from yoghurt down to lemon juice) and whisk together well.
3. In a large mixing bowl, sift in flour and baking powder. Add salt and lemon zest, and combine. Pour the wet ingredients into the bowl, and gently incorporate until just mixed together (the batter should be smooth). Add frozen blueberries, and gently fold through. Pour into prepared pan, then bake between 1 hour and 1hour 10 mins. For my oven, 1 hour and 5 minutes in perfect.
4. Allow cake to cool for 5 minutes before gently removing and cooling completely on a wire rack.

At this stage, your loaf is ready to eat. I think it is perfect as is, but if you would like to add icing (like in the picture) here is how;

2-4 tsp powdered, freeze dried berries
1/4 cup icing sugar.

1. Sift icing sugar into a mixing bowl, then add remaining ingredients. Mix well, then allow to set in the fridge for 1 hour (if using the coconut whipping cream; yoghurt will not need to set). Spread over the top of your loaf, and generously decorate with fresh berries.

Serving;

This is best served at room temperature, but will need to be stored in the fridge if you frost it. To serve, simply remove a slice 20-30 mins prior, and allow to warm sligh

2 tbsp of vegan friendly green curry paste
1 cup coconut milk (canned)
1 cup coconut water *
1/2 tbsp coconut (or brown) sugar
1 tbsp coconut aminos
Juice of half a lime
1 handful Thai basil
Plus:
Pan fried tofu (see below)
Brown rice

Start by preparing the rice. I used organic quick cook brown rice, 8 minutes manual setting in the instant pot.
Curry:
Wash/peel and cut all of your veggies into bite size pieces. (sugar snap peas, bell pepper, spring onion, corn and peas here)
Heat up coconut milk and coconut water in a large wok/skillet.
Stir in curry paste, coconut sugar and coconut aminos and bring to a boil.
Lower the heat and add veggies to the wok.
If you have a couple of kaffir lime leaves and lemongrass (~ a crushed finger sized piece) add them now as well.
Let everything simmer for a few minutes until the veggies are slightly soft but not overcooked. Add lime juice and Thai basil at the end.
Taste and adjust saltiness if needed.

Tofu: **
For 2 servings use half a block extra firm sprouted tofu. Press out excess liquid and cut it into large pieces. Heat up ~ 1 tsp of avocado (or other cooking) oil in a non stick pan and sear tofu on all sides until slightly browned, then add a splash of coconut aminos and/or any other seasoning of choice (mushroom umami seasoning) and pan fry for another few minutes.

½ cup oat flour (use more buckwheat flour for completely gluten free)
½ cup buckwheat flour
1¼ cup almond milk
1 banana
1 TBSP maple syrup
pinch salt
1 TBSP grapeseed oil
drop vanilla extract
coconut oil spray for frying
Method
if you don't have oat flour, begin by breaking down rolled oats in a blender until they become a flour.
Add the rest of the ingredients to the blender and blend until a crepe batter forms. It should be fairly runny.
Heat frying pan and spray with coconut oil spray.
Add about ⅓ cup batter to a frying pan and spread around as best possible until you get a crepe shape.
Fry for 1-2 minutes and then flip and fry the other side for a few more seconds. you can tell when they are ready when they turn golden in colour.
repeat until you finish the entire batter, adding more coconut oil spray as needed.
Remember the first crepe is always bad.
Enjoy with fillings and toppings of choice.

1 cup good quality tahini
Juice from one lemon
Chickpea juice from the can
3-4 cloves of garlic
1 tsp salt
1 tsp pepper
Blend everything until smooth and creamy. Plate the hummus in a shallow bowl, decorate with chopped purple onions, roasted chickpeas, cherry tomatoes, parsley, lemon wedges, and crushed red pepper. Enjoy with warm pita bread.
