Vraag mij wat ik leuk vind aan koken en ik zal je een flinke waslijst geven. De lijst van wat ik nog wil leren in de keuken is mogelijk nóg langer. Eén van die dingen is het mooi opmaken van borden. Ik kijk in een restaurant altijd met veel bewondering naar hoe een gerecht op een bord ligt. Af en toe probeer ik zoiets, maar meestal wordt het niet wat ik in mijn hoofd heb. Herkenbaar voor iemand? 🤷🏻‍♀️ (Een beetje net als wanneer ik probeer te tekenen trouwens. Dan komt er ook nooit op papier wat ik wil. 🙄)
Desondanks blijf ik proberen en blijf ik in een restaurant of in kooktijdschriften goed kijken naar hoe anderen dat doen.
En af en toe.... heel af en toe, lukt er iets wél. Dan ziet het bord er wél uit zoals ik had bedacht. Zo ook vandaag. Ik maakte een bordje met een streep gemalen kaneel. Misschien nog steeds niet zoals in een restaurant, maar ik ben er wel trots op 😊👩🏻‍🍳
Dit toetje heet overigens 'helva', het is een soort griesmeelpudding en het komt uit hetzelfde Turkse kookboek als waaruit de simit van gisteren kwam. En ik at het ook ooit op vakantie in Griekenland. Erg lekker!

🇬🇧⬇️ Homemade mushroom ravioli with a creamy sauce

Gevulde pasta staat heel hoog op mijn lijstje met gerechten die voldoening geven. Vandaag maakte ik ravioli, gevuld met een duxelles van kastanjechampignons. De pasta hield ik iets dikker dan normaal en dat pakte goed uit (standje 2 op de pastamachine). Het geeft net iets meer structuur en bite.
Bij de ravioli maakte ik een roomsaus met sjalotjes, tijm, citroen, peper en een snufje gerookt paprikapoeder. Alles bij elkaar: ultiem comfort- en weekendfood! 😋

🇬🇧 Today’s dish is mushroom ravioli. I’ve made a duxelles of chestnut mushrooms to fill the pasta with. I’ve kept the pasta a bit thicker than usual for a better texture.
Alongside the ravioli I’ve made a creamy sauce with shallots, thime, lemon, pepper and a pinch of smoked paprika powder. All together it’s ultimate comfortfood. 😋

Crumb of previous bake 🌾🦋💜 Instead of swirling, this time I decided to go with 100% butterfly pea flower tea for an extra bold color! 😍 Dough was incredibly soft and extensible - 🎬@fullproofbaking :
like silk! from the addition of the tea... just brilliant to handle! Added some fresh, lightly processed sprouted rye for extra sweetness. Got some really cool crumb out of this one - very happy with this bake. Enjoy your weekend everyone!

And thanks as always to @ratti_xtraordinarybite for the original idea to use these flowers in sourdough! 😘

Specs: All hand mixed. Prepared butterfly pea flower tea by adding 20g dried flowers to 250g boiling water, steeping 20 min, straining, and cooling to room temp by adding several ice cubes (water was so dark blue it looked nearly black!).
Started with 250g *autolysed* flour: a mix of 195g blue water with 12% (33g) AP einkorn flour (@jovialfoods) and 217g bread flour (@kingarthurflour). Let rest 3 hours to autolyse.
Added 20% (50g) levain (100% hydration, 1:1:1, 5 hours 80°F), bringing the total flour up to 275g & the final hydration up to 80%. 30 min later, added 2% (5.5g) sea salt, and immediately after, 18% (50g) lightly ground up fresh, sprouted rye berries.
6.5 hour total bulk ferment at ~74°F with 1 light fold, 1 lamination, & 3 stretch and folds separated by 60 minutes.
Tipped out and straight to final shape, then transferred to banneton. Proofed at room temp 30 min, then placed overnight 12 hours in wine fridge (temp range 39.6-45.7°F). Baked using @challengerbreadware.

Preparation... I find it faster to pre-fry first before putting it in the oven especially when I’m in a hurry 😊 Chicken breast with stuffed baby spinach topped with cheese.. Plated on some raw baby spinach and balsamic vinegar, salt and pepper😋 deliciously tasty.

Crumb of previous bake 🌾🦋💜 Instead of swirling, this time I decided to go with 100% butterfly pea flower tea for an extra bold color! 😍 Dough was incredibly soft and extensible - 🎬@fullproofbaking :
like silk! from the addition of the tea... just brilliant to handle! Added some fresh, lightly processed sprouted rye for extra sweetness. Got some really cool crumb out of this one - very happy with this bake. Enjoy your weekend everyone!

Specs: All hand mixed. Prepared butterfly pea flower tea by adding 20g dried flowers to 250g boiling water, steeping 20 min, straining, and cooling to room temp by adding several ice cubes (water was so dark blue it looked nearly black!).
Started with 250g *autolysed* flour: a mix of 195g blue water with 12% (33g) AP einkorn flour (@jovialfoods) and 217g bread flour (@kingarthurflour). Let rest 3 hours to autolyse.
Added 20% (50g) levain (100% hydration, 1:1:1, 5 hours 80°F), bringing the total flour up to 275g & the final hydration up to 80%. 30 min later, added 2% (5.5g) sea salt, and immediately after, 18% (50g) lightly ground up fresh, sprouted rye berries.
6.5 hour total bulk ferment at ~74°F with 1 light fold, 1 lamination, & 3 stretch and folds separated by 60 minutes.
Tipped out and straight to final shape, then transferred to banneton. Proofed at room temp 30 min, then placed overnight 12 hours in wine fridge (temp range 39.6-45.7°F). Baked using @challengerbreadware.
