拿出了一個星期前制作的鹽麴昆布、做了這一碗椰菜湯。

非常好味!只是用了椰菜和蛋花作為材料而已。

先用清湯將椰菜煮熟、關火後加入1大湯匙的鹽麴昆布攪拌一下。

就算没有鹽麴昆布、也可以用鹽麴代替、但有昆布的話鮮味更濃。

第二張照片、可以看到鹽麴變得更粘更濃厚。

應該可以用在不同的菜式上呢!

我會分幾天介紹用上鹽麴昆布的食譜。

如果你用慣了鹽麴、想帶來一點變化、可以跟着我試試。

真的是非常好味呢!

Simple and surprisingly tasty!! ・
After cooking cabbage and the egg in the soup, ・
add kelp shio Koji after turning off the gas. Just mix them all tenderly. ・
The shio koji and kemp’s umami is incredible.

As you see in the second photo, the shio koji is thick and sticky!! ・
This is nothing but the increased umami! I waited for 5 days.

Will introduce some recipes of using this kelp shio Koji for several times. ・
Those who are used to regular shio Koji might want to try this one. Yummy!! ・

一週間前に作った塩糀昆布を使ってスープにしてみました。美味しい〜‼︎ ・
具材はキャベツと溶き卵だけ。

コンソメでキャベツをしっかり煮込み、最後火を消した後に、塩糀昆布を大さじ一杯入れて混ぜました。

やっぱり旨味が出てますね‼︎ ・
塩糀だけでも美味しいけど、昆布を入れることでさらに旨味が増してます。

2枚目の写真から分かるように、塩糀はどろりと重みが出ています。

いろんなものに使えそう〜。これから何日かにわたって、レシピをご紹介します。

普通の塩糀に飽きた方はぜひ試してみてください。

The final essential ingredient for making sake is yeast. Unlike making beer, where malting is carried out on all grains before fermentation, sake is made with multiple parallel fermentation - kōji is continuously converting carbohydrate to sugar as yeast is turning the sugar into alcohol.⠀

Esperimento con l'amasake.

Rovistando nella dispensa mi sono imbattuta in questo #amasake, una crema dolce di riso che ha attirato subito la mia attenzione! La mia mamma l'ha comprata qualche tempo fa, ma non sapeva ancora come usarla, quindi mi ha suggerito di aprirla e provare a farci qualcosa.

Era un po' di tempo che cercavo un'alternativa allo zucchero, non fosse altro perché quello di canna integrale che abbiamo in casa non mi piace proprio, ha un sapore troppo intenso che non corrisponde ai miei gusti. Allora ho pensato di provare a preparare una #crêpe dolce utilizzando qualche grammo di amasake e provare a vedere come venisse.

Ma cos'è l'amasake? Documentandomi su internet, ho letto che si tratta di un #dolcificante naturale molto diffuso in #Giappone. Viene prodotto dalla fermentazione di cereali come il riso, il miglio o l'avena per l'azione di un fungo, detto #Koji, che è lo stesso che viene impiegato per produrre il #miso e il #sake. Ha delle ottime proprietà, dato che è digeribile, povero di grassi e ricco di sali minerali, vitamine e fibre.

Io ho preparato una crêpe che ho poi farcito con la #nocciolata di Rigoni di Asiago. Ho usato un cucchiaino di amasake nell'impasto, assieme ad albume, farina di avena, latte di cocco e ricotta e il risultato mi ha soddisfatto.

Ecco i valori per 100 g:

145 Kcal / Grassi 0,9 g / Acidi grassi saturi 0 g / Carboidrati 30 g / Zuccheri 19 g / Fibre 2,1 g / Proteine 3,0 g / Sale 0,20 g.

Esperimento con l'amasake.

Rovistando nella dispensa mi sono imbattuta in questo #amasake, una crema dolce di riso che ha attirato subito la mia attenzione! La mia mamma l'ha comprata qualche tempo fa, ma non sapeva ancora come usarla, quindi mi ha suggerito di aprirla e provare a farci qualcosa.

Era un po' di tempo che cercavo un'alternativa allo zucchero, non fosse altro perché quello di canna integrale che abbiamo in casa non mi piace proprio, ha un sapore troppo intenso che non corrisponde ai miei gusti. Allora ho pensato di provare a preparare una #crêpe dolce utilizzando qualche grammo di amasake e provare a vedere come venisse.

Ma cos'è l'amasake? Documentandomi su internet, ho letto che si tratta di un #dolcificante naturale molto diffuso in #Giappone. Viene prodotto dalla fermentazione di cereali come il riso, il miglio o l'avena per l'azione di un fungo, detto #Koji, che è lo stesso che viene impiegato per produrre il #miso e il #sake. Ha delle ottime proprietà, dato che è digeribile, povero di grassi e ricco di sali minerali, vitamine e fibre.

Koji!

Here we have organic barley grains that been inoculated with koji spore (fungus called Apergillus oryzae). After couple of days a network of micelium spread everyware on the grains. 🍄 🍄 🍄
Now we can start to have some fun with it. 🍾🍾🍾 I’ve start what we call ‘Shio koji ‘. Its a mix of koji, water and salt that been ferment for a week or so. You can make all kind of stuff with it. Like drink it at it is, put it in your food, tenderized meat, curing meat and lots of other things!

And finaly there’s some straight soy miso that i’ve start. Gonna start a fire burnt oinion miso and a rye sourdough miso as well later this weekend!

You’re looking at veggie charcuterie! (From front to back carrots, zucchini, beets, with some burdock root peeking through.) This is not just a meat substitute—but it does a fine job of tricking your senses with mouthfeel and flavor—it is also a delicious highly crafted food in its own right. Intention, fermentation, and time transform! This technique of curing vegetables should be a relevant part of the food conversation. What do they taste like — hard to describe something that we don’t have words for yet. Beyond delicious these veggies have the flavor of cured (salt and smoke) the chew of meat the beet for example is like biting into a buttery rare tenderloin or lox. Yet they do not loose their own qualities— the carrot is still a carrot. I will be bringing some of this to this week’s Ferment Frenzy @motherearthfair part of @myfermentation magazine launch.
On the second frame you will see a charcuterie board where everything from veggies and cheese to the meats where cured with koji somewhere in the process. Again using koji to push sustainability — the blood sausage uses many parts we would not otherwise want to eat—and you can’t get enough. This magical plate of umami is what is happening @larderdb where we have been lucky enough to be the last few days—culminating in our class there with @tmgastronaut this afternoon.

Microbes 🦠 making art— green brought to you koji—aspergillus luchuensis—the koji that produces citric acid with nice sour and fruity flavors and blue touches are a little bit of surface penicillin.
