Ingredients
20 medium shrimp peeled and deveined (about 1 pound)
1 tablespoon oil of choice
1 clove garlic minced
1 teaspoon chili powder
1/2 teaspoon ground cumin
1/4 teaspoon kosher salt
1 tablespoon olive oil
squeeze of lime optional

Avocado Salsa
1 avocado cut into chunks
1 tomato, chopped
1/4 cup loosely packed fresh cilantro leaves coarsely chopped
1 tablespoon fresh lime juice from half a lime
1/2 teaspoon salt
1/4 teaspoon black pepper

Cilantro Sauce
1/4 cup sour cream
1/4 cup cilantro
1/2 jalapeño 
1 clove garlic
1 tablespoon fresh lime juice
salt and pepper, to taste
8-12 lettuce leaves

To cook the shrimp:
In a medium bowl whisk together olive oil, garlic, cumin, chili, and salt. Add shrimp and mix until shrimp is covered in seasoning. Heat a large heavy-duty or cast iron skillet on high heat for 2 minutes. Add the olive oil and shrimp. Cook 2-3 minutes per side or until shrimp is cooked through. Turn off heat and finish with a squeeze of lime (optional).

To make avocado tomato salsa
In a medium bowl, gently combine tomato, avocado, cilantro, lime juice and a sprinkle of salt and pepper and mixed through. Set aside.

To make the Jalapeno Cilantro Sauce
Add the sour cream, jalapeno, garlic, cilantro, lime and salt and pepper to a food processor. Blend for 30 seconds or until creamy.

To assemble:
Plac two romaine or butter lettuce leaves on top of each-other for each lettuce wraps. Top with 4-5 pieces of shrimp, a few tablespoons of avocado salsa and a genros drizzle of the spicy jalapeno cilantro sauce. Enjoy hot or cold!

    " I saw so many people this weekend making my chocolate muffins. It was the best feeling. Keep tagging me in your posts! I honestly can't tell you how happy it makes me. I decided since it was so cakey, to see if my recipe would hold up in a loaf pan. And it did!! I changed absolutely nothing about my recipe. I pulled it out maybe a minute too soon and the top fell a bit but all in all a success!

Things I thought about after making this in a loaf pan. You can make your servings much smaller! I also think these would be great all cubed up in a trifle with some sliced strawberries, sugar-free choc syrup, and whipped cream. Just throwing it out there! Haha

💖 𝙄𝙉𝙂𝙍𝙀𝘿𝙄𝙀𝙉𝙏

3 eggs
1/2 cup almond butter
1tsp. Vanilla
2Tbs sour cream
6 Tbs erythritol or sweetener of your choice (2.5oz)
1/2tsp. Baking powder
1/3rd cup unsweetened cocoa powder
3Tbs melted butter
2 squares melted unsweetened bakers chocolate
1/3rd cup Lilly's chocolate chips (optional)

💖 INSTRUCTION
.
I melted my butter and chocolate squares together in a bowl in the microwave for 1 minute on 20% power. Take out and stir them together until totally incorporated. You may need an extra zap but if your butter is melted it should melt your chocolate. Just give it a minute :)
.
Blend your eggs, almond butter, vanilla, sour cream, and sweetener together until incorporated. If your butter/chocolate mixture is well mixed add that too. Mix!
.
In a separate bowl gently mix your cocoa and baking powder. Mix your wet and dry ingredients. Your batter will be thick. It's ok!
.
I spread my batter into a parchment-lined loaf pan and baked at 325 for 15 minutes. EVERYONE'S OVEN IS DIFFERENT! I've said it before, the only time this recipe was meh was when I overcooked it.

🌿INGREDIENTS

2 avocados
2 tbsp butter (or any oil)
4 large eggs
Kosher salt
Freshly ground black pepper
1/4 c. shredded cheddar
2 slices cooked bacon, crumbled (optional)
2 green onions, sliced

🤓DIRECTIONS
⠀
Cut avocado in half and remove pit. Lay avocado halves on their sides and carefully cut lengthwise into 2 thick slices each. Hollow out middles with a paring knife.
In a large, nonstick skillet over medium-low heat, melt 1 tablespoon butter. Place avocado slices into skillet and crack an egg into the center. Season with salt and pepper.
Cover skillet and cook until egg is cooked to your desired doneness, about 5 minutes for a just runny egg. Sprinkle cheese on top of each slice, cover with lid again and cook until the cheese is melted, a minute more.
Repeat with remaining ingredients. Garnish with bacon and green onions.

✅🌈🙋🏻‍♀️Hey guys- I always encourage you to switch the protein source - if you so wish☺️💫 I’m “mostly” vegetarian so I wouldn’t necessarily use bacon myself, instead I would use something like smoked salmon or salmon! I don’t know about you, but I sometimes see DELICIOUS recipes, but I just don’t like the meat type or wanna make it vegetarian. So feel free to swap ingredients to suit your lifestyle and preferences💁🏻‍♀️🌈⭐️

How does your mood affect your food choices?

When I eat well - fresh, minimally processed, balanced, plant-based, not in excess but adequate in nutrients - I feel light, energized, motivated and happier!

When I choose foods that are high in refined sugars, salts and are highly processed - OR if I skip balanced meals and snack all day instead - I feel heavy, tired, uninspired, bloated, and often sad.

Food and our mental health have definite connections and are different for everyone.  My recommendations are for you to identify the foods you eat + your schedule of eating when you feel your best (both mentally and physically) and for days you feel your worst - recognize your patterns, journal them and equip yourself with the tools to make food choices that don’t aggravate already down moods.

    With all of the fun weekend trips this summer, its been a while since my husband and I have had a weekend night at home. We took advantage of it last night by feasting on some delicious eats. Lucky for me, my hubs did all the cooking and I seriously can’t get over how amazing everything was. I’m posting part 1 today, which was these bomb Thai lettuce wraps. The recipe is from @thespruceeats but he subbed @beyondmeat “beef” and went rogue on the stir fry sauce by using soy sauce, rice wine vinegar, red chili sauce, coconut aminos and a little lemongrass paste.     - Cauliflower Grilled Cheese! Recipe + 🎥 by: @delish

1 head cauliflower, (to make about 4 cups processed cauliflower)
2 eggs, lightly beaten
1/2 c. finely grated Parmesan
1/2 tsp. oregano
1 1/2 c. shredded white Cheddar 🌀 DIRECTIONS

1. Cut cauliflower into florets. Process cauliflower florets in a food processor until the texture resembles rice. Alternatively, you can grate the cauliflower.

2. In a medium bowl, combine processed cauliflower, eggs, Parmesan and oregano. Mix until evenly combined then season with salt and pepper.

3. Heat a large nonstick skillet over medium heat. Spray with cooking spray then scoop the cauliflower mixture into a small patty on one side of the pan. Repeat to form a second patty on the other side. (These are your “bread” slices.) Press down on both pieces with a spatula and cook until golden underneath, about 5 minutes. Flip and cook until the other sides are golden, about 3 minutes more.

4. Top one cauliflower slice with cheese then place the other cauliflower slice on top. Cook until the cheese is melted, about 2 minutes more per side. Repeat with remaining ingredients. - . . . . .

Blend up and simmer for the sauce:⠀
1/2 cup soy sauce⠀
1/4 cup brown sugar⠀
1 clove garlic⠀
1-inch knob fresh ginger⠀
1 tablespoon rice vinegar⠀
1 tablespoon sambal oelek (or sriracha)⠀
1 tablespoon toasted sesame oil⠀
1/2 tablespoon cornstarch⠀
⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀
Toss 6-8 cups of cauliflower florets with some olive oil and roast on a pan at 450 degrees for about 30 mins. When it's done, toss enough sauce on the pan to get the cauliflower nice and saucy. Load into butter lettuce cups and top with extra sauce, spicy mayo, crushed peanuts, and chives. YUM.⠀

    I've always been blessed with confidence but I believe there's different kinds of confidence. I've always been a confident heavy girl, enjoyed dolling myself up and always put together, dressed well and all but the confidence I feel now is SO DIFFERENT. I don't even know how to explain it. Self-confidence is magical but when you combine it with determination and discipline, it is a super power... Once you start believing in yourself, you become unstoppable! So what are you waiting for? Nothing is IMPOSSIBLE. Don't let anything stop you. Did you fall off the wagon? Hop back on! Miss a day or two at the gym? Get back to it! But whatever you do, don't quit! I believe in every single one of you! It's time you believe in yourself too!

2 years ago I started my Keto journey to weight loss at 256 lbs (I'm 5'4" btw) not knowing what to expect. I set a goal weight of 100 lbs down in 1 year but quickly put that goal in the back of my mind and took it one day at a time. "If you focus on results, you will never change. If you focus on change, you'll see results". I started learning more and actually enjoying my new "diet". I was so consistent that it became my lifestyle pretty quick.

I've been in maintenance for a year and went from a 6 to a 4 since then in these same brand/style jeans although I'm about the same weight (about 150lbs... I was actually smaller before surgery 🤷🏼♀️). Since hitting goal weight, I've had a tummy tuck and breast implants (4 ¹/² months ago). That's been a whole struggle on it's own dealing with swelling, and body image issues I've never had to deal with before... having big boobs ain't all that it's cut out to be.

It's still a struggle and I still have to give myself a pep-talk to try to be a badass every day lol but (and I hate to sound cliché but I swear it's so true) if I can do it, anyone can too.

Whether it's Keto, Low-carb, Atkins, South Beach, Paleo, or whatever "diet" you want to try, remember to do what works for YOU! You'll know what it is because you'll no longer see it as a diet, you'll see it as your new lifestyle... and that's what it's all about, living your best, healthiest life at your own pace 🤗
