New Zealand style grouper bottarga. Potato dumpling, wild fennel fronds. Confit yolk. Light lambs broth.

A happy accident. I keep a number of base broths. I aimed for seafood, but grabbed lamb. (Label/dating chef) I figured I would give it a whirl. Good thing I did. The bottarga works well with it. It is more mild than typical bottarga, and the non typical light smoking gives it a different flavour. It's more similiar to very mild, good quality anchovy. Serve a simple leaf salad on the side, and bang...you're done.

Блюда вегетарианские🥥🍠🥑 Нужны ли они в меню современного ресторана?
На мой взгляд, всё зависит от концепции заведения. Есть несколько путей развития.
Первое. Использовать, исключительно, продукты которые подходят для вегетарианцев, веганов и поклонников ЗОЖ💥
Второе. Делать качественные имитации. Именно по этому пути пошли ребята из WRF, с их бургерами🍔 и хотдогами🌭 без мяса и салом из кокоса.
Третий вариант. Блюдо по просьбе Гостя. Из перечисленных посетителем ингредиентов приготовить блюдо "из под ножа".
Все варианты рабочие. И хотелось бы услышать тех кто работает на кухне, каким же путем пошли? И посетителей, а главное вегитарианцев. Как решаете вопрос с питанием в заведениях не специализированных?
