Way back when my grandparents where still alive, they used to take us to to their favorite Chinese restaurant after church in Calgary. And egg foo young was always one of the dishes we ordered. I guess it’s been over 30yrs since I had this and I missed it so much. And today I saw some bean sprouts at the market and the first thing that came to my mind was egg foo young 😍 and I had texted a friend and she gave me the recipe 😉and that gravy on top it completed this dish 😍😋

Would you believe I've never used the term PR when referring to my personal beats in gym?
Until today. Hit #355 for 8 reps on the left press today! I know it isn't much, but I'm not a huge dude and it's the best I ever did.
Felt like I could do more even. Going to see how far I can take it over the next couple weeks I think.

Today was a massively productive day on ever level. Inside everything from waking up at 6am to getting in 2 massive workouts (leg day in the morning and kickboxing/sparring/no gi). I even got my studying in!
So why am I bragging all about how I had one good day? Anyone can have one good day. Consistency is what's important right?

When you feel like you've had a great day, or accomplished a new personal best in life, take some fucking pride in your hard work!

There's a difference between being a braggart and acknowledging yourself for a job well done.
It's ok to feel good about doing good.
Don't go bragging about everything all the time, but when you hit a milestone or new record, own it!
Own your own bullshit for sure. But also own your success!
Stay strong my friends!

22 weeks out

I know that seems like forever away, but I also know it’s going to come by in the blink of an eye.
.
This past week was little rough for me: life, work, and overall fatigue set in and pulled me away from my usual daily posting and routine. I had a few days where my macros were off and step count was not up to par. To be honest I felt like crap the entire week from a mental and physical stand point and I didn’t want to get back on track. I was slightly nervous my @samokunola was gonna whale on me and think I was having another “gummy bears are carbs, so I’ll eat those for my daily carb intake!” episode. I just felt like at that point I could of gone way off the handle and just said “F it”and ate whatever, but there was also that little voice in my head that told me to “man up” and that “I’m not going down based upon 2-3 days worth of mistakes. One way or another I’m making this happen.” And so I went right back to plan no over compensating by trying to burn more calories through cardio or eat less, I just followed the plan and figured if I need to adjust time will tell all.

It’s funny when you’re that honest and communicate, Coach ended up congratulating me on a job well done picking up the ball and I even hit a few new lows.
.
All in all even when I don’t want to, I plan to stick to the plan💪🏾🙌🏾

GF Vegan Banana Bread 🍌 I love testing new banana bread recipes and I’ve been trying to get a good plant based one for a little bit now! Tested this one twice this weekend and was so happy both times with how it turned out 😍 We only have 1/2 a loaf left 😅 It takes awhile to bake but it’s worth it 👌🏻 It doesn’t have a ton of added sugar so definitely add more if you want to! Happy Monday everyone! -

#breakfast details 👉🏻 Preheat oven to 350F
In a small bowl, make 3 flax eggs. 1 flax egg is 1 tbsp flaxseed meal + 2.5 tbsp water. Let them sit for 7-8 minutes to thicken.
In a larger bowl add:
3 mashed bananas
1/4 cup nut butter
1/4 cup + 2 tbsp coconut flour
1 1/2 tbsp cinnamon
1/3 cup unsweetened almond milk
1 tsp baking powder
1 tsp vanilla
1 tsp coconut sugar* add more if you want a sweeter bread
Mix everything together then add in your flaxseed eggs.
Mix well then add in 1/2 cup blueberries.
Line a loaf pan with parchment paper and add the batter in.
Bake for 55-60 minutes. Let cool completely in the pan before removing so it cooks a little longer. Store in the fridge! #plantbaseddiet #healthybreakfast #eatwell #choosingbalance

Tested this one twice this weekend and was so happy both times with how it turned out 😍 We only have 1/2 a loaf left 😅 It takes awhile to bake but it’s worth it 👌🏻 It doesn’t have a ton of added sugar so definitely add more if you want to! #breakfast details 👉🏻 Preheat oven to 350F 
In a small bowl, make 3 flax eggs. 1 flax egg is 1 tbsp flaxseed meal + 2.5 tbsp water. Let them sit for 7-8 minutes to thicken. 
In a larger bowl add: 
3 mashed bananas 
1/4 cup nut butter 
1/4 cup + 2 tbsp coconut flour 
1 1/2 tbsp cinnamon 
1/3 cup unsweetened almond milk 
1 tsp baking powder 
1 tsp vanilla 
1 tsp coconut sugar* add more if you want a sweeter bread 
Mix everything together then add in your flaxseed eggs. 
Mix well then add in 1/2 cup blueberries. 
Line a loaf pan with parchment paper and add the batter in. 
Bake for 55-60 minutes. Let cool completely in the pan before removing so it cooks a little longer. Store in the fridge! #plantbaseddiet #healthybreakfast #eatwell #choosingbalance

Air Fryer Buffalo Tofu Bites 👌🏻 my favorite way I’ve made tofu so far! An incredibly easy #meatlessmonday over here. Anyone else make the food their significant other doesn’t like when they’re not home? 😂 Whenever Eli’s like oh I won’t be home for dinner I immediately start thinking of all my favorite dinners he doesn’t like 😜 Not that I can’t make them when he’s here but there’s just something about him being gone and making my favorite food haha. Sounds weird typing it out 😂 But anyways, now time to watch the Bachelor with some friends 🌹I honestly don’t have any clue what’s going to happen this season 😅 -

I pressed 1 package of extra firm tofu for 20 mins.
Then cut into cubes and coated with
1/4 cup @sietefoods hot sauce + 1 tsp garlic.
Preheated air fryer to 400F.
Air fried for 15 minutes, flipping halfway through.
Removed and coated with another 1/4 cup of hot sauce.
Paired here with @sietefoods nacho cheese + @hopefoods red pepper cashew dip + celery #plantbased #plantbaseddiet #choosingbalance

Te sugiero algo delicioso como esto para un día que llegues súper [email protected] a tu casa y tengas mucha hambre, o sea un día como hoy🤣

Aquí te va la preparación: .
1. Haz las crepas: 1 huevo, un chorrito de leche de la que quieras y 3 cdas de harina de avena (avena pulverizada) . Bate la mezcla y haz las crepas en el sartén lo más delgaditas que puedas para que salgan 3 como en la foto.

2. Por aparte guisa los champiñones con ajo y especias. .
3. Rellena las crepas con los champiñones , queso panela y corona con guacamole o dip de aguacate (aguacate licuado con yogurt griego y ajo).
.
4. Disfruta tu cena riquísima !! .

Pizza de coliflor!🤤🤤
Seguro que muchos habéis visto esta receta en instagram porque se ha puesto de moda... esta riquísima, no sabe nada a coliflor y es mucho más saludable!

Para la masa necesitamos: 🌱350g de coliflor
🌱200g de queso fresco 0%mg
🌱2 huevos
🌱orégano, sal y pimienta .
1️⃣limpiamos y trituramos la coliflor con un procesador de comida o con el túrmix
2️⃣mezclamos la coliflor con el resto de ingredientes
3️⃣esparcimos la masa en una bandeja de horno, con un papel vegetal debajo. Apretamos bien con una espátula para que quede firme. E intentamos que quede finito
4️⃣ponemos la masa en el horno 20 minutos a 220 grados
5️⃣sacamos la masa, la secamos con un papel de cocina y le ponemos los toppings (yo he puesto tomate triturado, pavo, champiñones, mozarella y orégano)
6️⃣horneamos 10 minutos más y listo!!! .
