    Sicilian Pizza using all ingredients from @raleys. The super fresh products and convenient  #Ecart pickup service really makes life easy. With Ecart I was able to plan what products I needed and could spend more time actually making the delicious pizzas. Shout out to Bel Air in Rocklin 🙌🙌🙌 Grandma style Sicilian topped with Ricotta/mascarpone blend, fresh basil, fresh oregano, and grated grana padano cheese.

    In my previous attempts of making pizza, I only roughly measured the ingredients, but one of the main things I've gathered so far from the @thepizzabible is that weighing ingredients is very important. It's a bit more tedious, but I like the black and white precision of it.

Another new thing I've never done is activate the yeast. You add lukewarm water to the yeast and whisk it in a bowl for about 30 second before adding it to the dough mixture.

So with my newfound knowledge, tonight I followed the Master dough recipe. First, I added the flour and the diastic malt to the mixer bowl and turned on the Kitchen Aid fitted with the dough hook. While still on the lowest speed, I added the ice water, then the yeast, and let it continue to mix. It seemed like the flour wasn't quite mixing so I added more water... perhaps too much... Eventually it all mixed together and I added the salt and mixed for another minute, finally adding the oil and letting it mix for another two minutes. Once it all came together into something resembling dough, I stopped the mixer. Since I don't have a dough scraper yet, I used my hand to scrape it out of the bowl and on to my granite countertop.

The dough was very sticky and difficult to work with, which I assumed was due to my "extra water additions". As result I had to skip the "kneading the dough part" since the dough was like glue. Instead, I just covered it with a towel and let it rise for an hour.

Once complete, I transferred it to a bowl, covered it in plastic, and put in the fridge. I'll have to wait 24 hours to see how it turns out... #homemadepizzaadventure #homemadepizzadough #pizzabible #pizzamaking #pizza #respectthecraft #dough

    As instructed by @thepizzabible, I did nothing but read for the first 19 pages of the book. I've managed to get most of the tools and ingredients or at least the most important one for now.
As for tools, I have a pizza stone, digital scale, kitchen aid stand mixer, immersion blender, instant read thermometer, and a pizza peel.
For ingredients I have All Trumps pizza flour from Amazon as well as Diastic malt. Semolina, active dry yeast, fine sea salt, extra virgin olive oil, can ground tomatoes, can tomato paste, can whole plum tomatoes, whole-milk mozz, and dried oregano. I'm excited to try out this highly recommended flour. Tomorrow the adventure of dough making begins.

    Now, I know what you’re thinking . . Did they eat six slices or only five? Well to tell you the truth, in all this excitement I’ve kind of lost track myself . . but being that this is an encore segment of The Great American Pizza Tour, the most ambitious pizza journey to ever take place across this land . . You’ve gotta ask yourself, “Am I feeling lucky?” Well, for even more cliches we end this trip where many trips begin, the Haight Ashbury neighborhood of San Francisco.
Now a new trip begins, we are on Route 1 south headed to Los Angeles where we will get back to the ongoing quest of finding the very best @sliceoflosangeles and we will also begin to sort out the rankings for each of the shops that we visited during the 12,000 mile adventure that took place over 53 days and brought us through Arizona, New Mexico, Texas, Tennessee, Kentucky, Ohio, Pennsylvania, New York, Connecticut, Rhode Island, Massachusetts. New Hampshire, Vermont, Michigan, Minnesota, North Dakota, Montana, Wyoming, Utah, Arizona and Nevada - with one 24 hour period that included a pie from Santillo’s, slices from Joe’s and Di Fara and a pie from Lucali but there were many other great slices along the way and through our rankings we hope to establish a great travel guide for those wishing to visit the slice shops of America. Who knows, perhaps you may see a book from this or maybe even a second leg of the tour someday

    Tony’s Coal Fired Pizza and Slice House by Tony Gemignani in San Francisco - on previous visits to San Francisco we were thoroughly impressed with the 2nd St location, this time around we’ve only visited that location once and found that slice to be the worst of them. The Slice House on Haight St has been consistently churning out excellent slices. This makes sense, there’s a few familiar faces in there that have been there for at least two years now. We’ve finally made it over to North Beach to try a slice from the original Slice House next to Tony’s Pizza Napoletana . . Strangely enough, we haven’t found much consistency in the slices between the different Slice House locations, which is not to say that they aren’t all great but just that they are not uniform- in fact, there’s much more variation between the shops than we’ve noted in the past. Which is nice in a sense that Slice House is making their doughs in-house rather than shipping them out from a regional facilities the way places like Papa Gino’s do. The slice from the original location tastes more rich. It’s more salty and the cheese, perhaps slightly aged, has a flavor that’s noticeably different than the cheese at the other shops. It’s amazing, it denotes quality. Now the only issue is the dilemma about which shop we will be getting our full pie from before we leave the city

    Escape from New York Pizza on Haight St in San Francisco - While here you may see many middle aged yuppie types walk in lauding the place as a purveyor of great pizza. That’s because once upon a time this, along with Big Slice, was one of the street’s premier pizza option. That means; On your way to Hippie Hill to puff a doobie? Trying to score some acid from the Haight St hippies? Then this pizza may have earned a special place in your heart. We’ve seen this happen to certain degrees in many areas around the country that are essentially in a pizza vacuum - where the options are between corporate sithlord pizza and other mediocre variants. Luckily, this condition no longer exists on Haight St because the location that once housed ‘Big Slice’ has since turned hands to Tony Gemignani’s ‘Slice House’ - which is turning out slices of such perfection that we don’t really want to go back to the 2nd St Slice House location to see if they are doing better than they were on our previous visit (see previous review) - but being that Escape from New York is selling pizza at $4.50 a slice, I have to put nostalgia aside and call this what it really is . . This is slightly tolerable trash pizza. The sauce is a bit zesty - it is not much of a pizza sauce but it is the only redeeming quality of the pizza. This crust tastes like a crouton and the cows making the cheese being used are not striving for quality. I do not know if this place is named after a movie or the sense that their pizza is literally an escape from New York style pizza that I didn’t ask for

    we are frequent visitors whenever we’re in the area of one of Tony’s shops so when we found ourselves near the 2nd Street shop near the San Francisco Giants’ stadium (I do not recite stadium sponsorships) we, of course, went in for a slice; and will likely find ourselves stopping by all of the Slice House shops at least once during our visit to San Francisco 
Unfortunately, this was Slice House on a bad day - which, although still a great slice, leaves us longing for the perfection of the slice we experienced earlier at the Haight St location. Whereas usually we make note of, and even applaud, the slightly higher cheese to sauce ratio that we find to be the norm at the Las Vegas location, this slice appeared to be topped with incrementally more  cheese. Dare I say someone may of ordered “extra cheese” on their pie earlier in the day and the pizza maker just forgot to readjust after - However, the problems do not stop there. The crust is slightly off, even soggy toward the middle of the bite - this coming after a reheat. In the past we have noted an exceptional standard from this location so I hope that the skewed proportions are just a mistake limited to this one pie and not an issue where this location uses extra cheese to appeal to a stadium crowd

    we are frequent visitors whenever we’re in the area of one of Tony’s shops so when we found ourselves near the 2nd Street shop near the San Francisco Giants’ stadium (I do not recite stadium sponsorships) we, of course, went in for a slice; and will likely find ourselves stopping by all of the Slice House shops at least once during our visit to San Francisco
    Unfortunately, this was Slice House on a bad day - which, although still a great slice, leaves us longing for the perfection of the slice we experienced earlier at the Haight St location. Whereas usually we make note of, and even applaud, the slightly higher cheese to sauce ratio that we find to be the norm at the Las Vegas location, this slice appeared to be topped with incrementally more cheese. Dare I say someone may of ordered “extra cheese” on their pie earlier in the day and the pizza maker just forgot to readjust after - However, the problems do not stop there. The crust is slightly off, even soggy toward the middle of the bite - this coming after a reheat. In the past we have noted an exceptional standard from this location so I hope that the skewed proportions are just a mistake limited to this one pie and not an issue where this location uses extra cheese to appeal to a stadium crowd

    Gabriella’s Pizza - It’s aesthetically pleasing but we’re ultimately disappointed. The problem with this pizza is that it doesn’t know what it’s trying to be. It’s calling itself New York style but it’s more like a Greek style trying to achieve the soupiness of a Neapolitan pizza. To put it simply; It’s just not good and at nearly $4 a slice I have to say that I feel a bit ripped off. This area is burrito territory, and it doesn’t seem like pizza is making any inroads. Like any city, there is a large segment of trash pizza in SF and I am going to have to say that this falls into that category

The list will continue but these places are perfect examples of the pizza shops that seem to be working off a cookie cutter business model of serving trash pizza late into the night via third party delivery apps
I have to note that I also heard that this place doubles as PizzaAoki - this is another business that seems to be based on third party delivery apps, so much so that they don’t even need to have their own storefront, they instead use pizza as a promotional tool as they outsource the work of managing a pizza shop
