Seven seeded oatmeal bread. I still have enough dough for another loaf. rolled oats, soaked chia seeds, cooked quinoa, sesame seeds, poppy, sunflower, pumpkin, caraway, flaxseed meal, wheat, flax, wholegrain wheat, sprouted spelt, dark rye, bread flours. Tangzhong method for moisture and a soft texture.
It's really good, very hearty and flavorful!

Happy Friday!
I am officially on Day 12 of my Wild Rose Herbal Detox. One of the biggest challenges of this detox was the recommended diet. The purpose of the recommended diet was to remove Sugar (including tropical fruit), Diary, Seafood, Gluten, and fermented foods. I felt great on this plan and have learned a couple new options to substitute in place of other ingredients. I made these Quinoa and Bulgur Veggie bowls that were delicious and fulfilling and Plant Based.
Here is what you need for this super simple Bowl.

1 cup of red quinoa
1/2 Bulgur
1 Red onion (chopped)
1 Tsp of Garlic (chopped)
1/2 cup Red and Yellow peppers (sliced)
1/2 Bok Choy (chopped)
1 cup of Spinach (1/2 cooked / 1/2 raw)
1/2 Green snap peas
1 Tbsp of Coconut Oil
1/2 Garlic Powder
1/2 Oregano
1/2 Red chilli flakes
1 Lime
Start by prepared your veggies, wash and chop them. Set aside. Wash Quinoa and bulgur in cold water.

In a Large Pot bring 2 1/2 cups of Water to a boil. Add Quinoa, and Bulgur to water. Reduce to Low temperature and cover for 10 mins.

After 10 mins water should reduce and you can fluff the quinoa and bulgur. Remove from heat.
In a Large Pot, add tbsp of Coconut oil and cook onions for 1 minute. Add Garlic, spices, peppers, Bok choy cook for another 3 minutes. Lastly you can add spinach and snap peas and squeeze 1/2 the Lime juice.
Now you can Combine the Veggies and Quinoa/Bulgur. Mix well.
To garish I used 1/2 Lime, the rest of the spinach.
Thats it in about 15 mins you have a Yummy Meal.

I made the pudding two ways, with 🍫 and 🍌. If you haven't made chia pudding before, then you are in for a treat!

Quinoa Chili

Tried this recipe for the first time for a chili competition...I took third.

Ingredients:
Mirepoix (celery, carrots, onions)
Garlic
Tomatoes
Canned diced tomatoes
Quinoa
Butternut squash puree
Liver beans
Garbanzo beans
Can of beer
Lime juice
Thai chili pepper
Cilantro
Cinnamon, chili powder, cumin, oregano, paprika, smoked paprika, brown sugar, salt, celery salt

Saute the mirepoix, first, then throw in most everything in the pot (except a few items). Once seasoned enough, I left chili to sit overnight.
Next day I add butternut squash puree to thicken chili
I then add quinoa, lime juice and cilantro.

Fridge dump salad for lunch today! I used leftovers and easy to grab items in my fridge (except the ripe tomatoes always kept on the counter) to make it. Arugula 🌿 with chickpeas, quinoa, ripe cherry tomatoes 🍅 , shredded Parmesan cheese 🧀 and kalamata olives with a generous squeeze of lemon 🍋 , extra virgin olive oil, cracked black pepper and sea salt. Ecco la prima ricetta studiata assieme a @thenutritionspecialist ovvero il QUINOTTO: risotto di quinoa agli spinaci e mandorle!
Ingredienti per 4 persone
240 g di quinoa
140 g spinaci cotti
140 g cavoletti di bruxelles cotti
40 g di mandorle a lamelle
2 cucchiai di olio
Per prima cosa frulla spinaci e cavoletti con mezzo bicchiere d’acqua fino ad ottenere una crema.
Metti la quinoa in una padella e comincia a cuocerla come se fosse un risotto, aggiungendo acqua con un mestolo ogni volta che si asciuga. Dopo 5 minuti di cottura aggiungi la crema di spinaci e continua la cottura della quinoa sempre come se fosse un risotto. A cottura ultimata manteca il risotto di quinoa fuori dal fuoco con 2 cucchiai di olio Evo e servi con delle mandorle a fette precedentemente tostate in padella.

Ingredients for 4 people
240 g quinoa
140 g stir fried spinach
140 g stir fried Brussels sprouts
40 g sliced almonds
2 tbsp oil
Blend spinach and Brussels sprouts in a blender with 1/2 glass of water to obtain a smooth consistency.
Put quinoa in a pan and turn the heat on (without oil). After 1 minute start adding water (or vegetable broth) one ladle at the time. Cook it as you would do for a risotto. After 5 minutes add the spinach and Brussels sprouts cream and finish to cook. Once ready, stir in 2 tbsp olive oil and serve with sliced almonds that you previously toast in a pan.

2 tbsp oil 
Blend spinach and Brussels sprouts in a blender with 1/2 glass of water to obtain a smooth consistency.
Put quinoa in a pan and turn the heat on (without oil). After 1 minute start adding water (or vegetable broth) one ladle at the time. Cook it as you would do for a risotto. After 5 minutes add the spinach and Brussels sprouts cream and finish to cook. Once ready, stir in 2 tbsp olive oil and serve with sliced almonds that you previously toast in a pan.
