Ralph’s Famous Italian Ices & Ice Cream
Babylon, New York

Not much to say about “Ralph’s” except that their ices are delish!  Tonight we had Rainbow, Root Beer, Cherry Cola, and Jelly Roll, which is chocolate ice with raspberry candies and a raspberry ribbon (yes, it’s as good as it sounds). Just want to make a special mention about the ladies (and one gentleman) who work at Ralph’s in Babylon Village.  They often have long line of customers at night during the summer, and they rock and roll!  They are efficient and courteous and really try to get everyone served as quickly as possible.  The next time you go and grab a few ices, throw a little something in their tip jar. 
So, before the season ends, and Ralph’s closes for a long few months, go grab a delicious ice.

    Putting those tomatoes from the #garden to work and let me just say Oh. My. Goodness!!!! 🤤🤤🤤This is the easiest dish ever and so so freakin delicious! Simple roasted tomatoes, perfect for crostini (see above), quiche, side dish, or, let’s face it, eating straight out of the pan (totally me when I made these, #sorrynotsorry 😘). All I did was cut the little tomatoes in half and lightly drizzle with olive oil. Then added some of the mint 🌿lemon🍋salt I picked up in Barcelona (but honestly, whatever herbs/spices float your boat, oregano would have been awesome!) and some minced garlic. Roasted in a 350 degree oven for ~40 minutes, stirring occasionally (carefully please!) and that’s it! Here you see them a topper for rustic toast, but really, these can sing on their own. Also, the smell was incredible, just an FYI 🥰 These also check a lot of boxes if you are dealing with a food allergy/intolerance/preference. They are (sound off): ✅#dairyfree ✅ #glutenfree ✅ #vegan ✅#vegetarian ✅#delish 🍅Also a great way to use up any leftover tomatoes you have if they are at the end of their shelf-life. The roasting brightens the flavor and actually increases the nutrient quality and density. Basically there are a million reasons to make yourself a batch, so what are you waiting for? 💁🏽‍♀️🍅💜🍅💜🍅

Pasta larga o corta, también puedes utilizar arroz si lo prefieres ( La cantidad varía  según el número de personas, yo utilice 500G se pasta larga)

Carne de soya (La cantidad varía según el número de personas en mi caso utilice 200G para 4 personas) 
1 Zanahoria
1 Papa
1 Taza de lentejas o frijoles
Cilantro, cebollín o cebolla

Lavamos y hervimos la carne hasta que está en su punto de cocción.
Picamos la zanahoria, la papa, el cebollín o la cebolla en trozos pequeños.
Sofreímos todo lo anterior en un sartén con aceite de tu preferencia (Yo utilice de soya)
Mezclamos la carne y los aliños sofritos y dejamos que se unan los sabores.
Agregamos una taza de lentejas o frijoles ya cocidos para darle más proteína.
Añade cilantro picado y unas hojitas de menta.
Acompaña está salsa con alguna otra de tu preferencia como ketchup o mayonesa vegana (Yo utilice mayonesa #HellmansVegana mezclada con crema o jugo de cebolla) #GoVegan #BonAppetite

I’m all about quick & easy weeknight dinners! Tonight I sliced up some tofu, seasoned it in the pan (garlic powder, salt, pepper, paprika, coconut aminos and liquid smoke), and fried it until it was nice and crispy.
Then, I added a bag of steamed broccoli (like - the frozen bag that you stick in the microwave for 5 minutes).
I added my favorite sauce - a mixture of peanut butter, garlic chili sauce, coconut aminos and lime juice.
Then I let everything cook and get nice and saucy and crispy! Topped with cilantro, green onion, and avocado slices for a tasty treat 💚

I lightened them up a bit, so I actually could eat them for every meal! I can't wait to eat my leftovers for lunch tomorrow! 🙌 Swipe right ➡️ for the recipe.

    VEGO RECIPE Yellow Curry Dumplings
Broth: 1 knob fresh Ginger, finely sliced
4 cloves of Garlic, crushed
2 Spring Onions, sliced
2 tsp good quality Curry Powder
4 cups Veg stock
2 cup water
Half Bunch Coriander stems finely sliced
1 tin Coconut Milk (400ml) Ayam is great quality with no thickening agents
1/4 tsp Salt and Black Pepper
Splash Apple cider vinegar, or juice of a lime, or rice wine vinegar, 1 tbsp fish sauce chili oil or chili sauce taste

Fry off garlic, ginger, spring onion, coriander, in oil on medium heat, add curry powder, stir, add stock, water, simmer 5 mins, add coconut milk, and rest of ingredients. Heat through.

Dumplings
4 cloves Garlic, minced
1 Knob Ginger, fine slice
1 Carrot, diced
3 Cup purple Cabbage, shredded finely then cut into three (short threads) 
2 Spring Onions, sliced
2 Red chillies, diced
300g firm Tofu, small dice, 1/2 cm sides
Thawed dumpling/wonton wrappers

Fry off garlic, ginger, chilli, spring onions, add carrot snd cabb, add tofu cook on medium heat for f5 minutes, stirring often. Season well as dumpling wrappers will dull salt down.
Using square wrappers, put 1tbsp filling in centre, brush water using finger on two edges of square, fold half over to make triangle and seal, pressing air out and edges together. Put a spot of water on one of the bottom corners of triangle and bring the other bottom corner around to meet it and seal together. 
Repeat x 20
Cook dumpling in seperate pot of boiling water for 4 mins 5-10  at a time depending on pot size (cooking in broth will make it go cloudy)

Reheat Broth adding 1 bunch sliced Pak Choy and Raw Zoodles. Place 5 dumplings in bowl, add broth, top with coriander leaves. Serves 4.

Peel two potatoes and dice them up into bite-sized pieces. Dice 1/2 onion and mince 3 cloves of garlic. 
In a Dutch oven, heat about 2 tbsp of olive oil and throw your potatoes, onion, and garlic in. Put one bay leaf in as well. Add as much pepper and salt as you desire and slowly add in in 1 1/2 cups of vegetable broth. Allow to simmer until potatoes are tender. 
Meanwhile, take your tofu out of the press and cut into even bite-sized cubes. Allow to soak in a bowl of vegetable broth along with turmeric, paprika and salt for about half an hour. Add one can of diced tomatoes, one can of tomato paste, and one can of drained chickpeas to your Dutch oven. Add paprika, salt, pepper, garlic powder, cayenne pepper, turmeric, cumin, and curry powder to taste. Allow to simmer. 
Pour all of your tofu and vegetable broth into a hot skillet and allow to cook until liquid has evaporated. When tofu has crisped up, place in oven for 10 minutes making sure to flip halfway through. Drizzle with agave syrup and allow it to "sop" up. 
After you've allowed your soup to simmer for a while add 1/2 to 1 cup of frozen green peas and 1/2 to 1 cup frozen spinach. Allow to cook through completely. Remove the bay leaf and add 1 cup of coconut milk. 
Remove bay leaf, scoop soup into a bowl and top with your tofu. Enjoy! 
Some suggestions of things you could add to personalize your meal includes: carrots, sweet potatoes, zucchini or green beans!

Prepare este RISSOTTO DE HONGOS 🍄 que se hace en 35 min, o menos si es que no tenes que sacarle foto al paso a paso 😚.

Apto #celiacos y #veganos . Un plato bien calentito para estas noches frías ⛄.

👩‍🍳 Lavar y cortar 1 cebolla, 2 cebollas de verdeo y 150g de champiñones, mientras hidratas 25g de hongos de pino. 
Saltear las cebollas en una olla con un chorrito de aceite de oliva, una vez que transparente, agregar 300g de arroz carnaroli y nacarar (revolver constantemente para que se empape con la cebollas y el aceite). Incorporar 200 cc de vino tinto, seguir revolviendo. Una vez que evapore el alcohol incorporar  los hongos. Agregar el caldo de verduras a medida que el arroz vaya pidiendo. Condimentar con sal y pimienta. Se va a necesitar más o menos 1 Lt de caldo. Una vez listo, agregar queso rallado a gusto (veganos pueden agregar levadura nutricional sabor queso) revolver, servir y disfrutar!.

Incorporar 200 cc de vino tinto, seguir revolviendo. Una vez que evapore el alcohol incorporar los hongos. Agregar el caldo de verduras a medida que el arroz vaya pidiendo. Condimentar con sal y pimienta. Se va a necesitar más o menos 1 Lt de caldo. Una vez listo, agregar queso rallado a gusto (veganos pueden agregar levadura nutricional sabor queso) revolver, servir y disfrutar!.

    Crispy Coconut Tofu Tenders by @thevegansara 🧡

What you need: 1 block of extra firm tofu, 1/2 cup sweet chili sauce, 2 1/2 tbl  tamari, 2 tsp lime juice, 1/2 cup whole wheat flour, 1 tsp salt, 1/2 tsp black pepper, 1 cup coconut milk, 1 1/2 cups panko, 1/2 cup unsweetened coconut shreds, 1 1/2 tsp smoked paprika, 1 tsp garlic
1. Slice tofu block in half, take each half & slice in 4 slabs, slice each slab in half (16 pieces) wrap, place in freezer safe container, freeze overnight. (When you Freeze/thaw tofu, the tofu texture becomes “meaty”)
2. The tofu will be yellow. No worries. Thaw to room temp, then press each slab with a kitchen towel to get out water
3. Make marinade by whisking together chili sauce, tamari, & lime juice. 
4. Take half the marinade, and marinate tofu pieces at least 1/2 hr 
5. While tenders are marinating, set up 3 stations for breading. One bowl with flour/salt/pepper, second bowl with coconut milk/1 tbl marinade,last bowl with Panko/ coconut/paprika/garlic. Line large baking sheet with parchment paper misted with oil
6. Take tofu toss into flour bowl getting all areas, dip into milk bowl shaking off excess, then into Panko bowl making sure it is completely covered, place on baking sheet. Repeat.
7. Bake at 375 F for 30 min flipping half way. 
8. I served my tofu tenders topped with the remaining marinade. #bestofvegan

    DOLCEZZE SOFFICI ALL’ANANAS 🍍 delle tortine allo yogurt facilissime, originali e che piaceranno a tutti! Nuovo Video!! 😊 
INGREDIENTI e PROCEDIMENTO:
2 uova
100 g di zucchero
uno yogurt all'ananas 125g
60 ml di olio di semi di girasole
1/2 bustina di lievito per dolci
6 fette di ananas sciroppato
170 g di farina
50 g di amido di mais
1/2 fialetta aroma limone
zucchero a velo per decorare

Per realizzare le dolcezze all'ananas iniziamo preparando l'impasto. In una ciotola rompiamo le uova e iniziamo a mescolarle con l'aggiunta dello zucchero. Uniamo anche lo yogurt e l'olio di semi. Io ho usato lo yogurt all'ananas ma se non lo trovate va benissimo anche yogurt bianco, al limone o alla vaniglia.

A questo punto uniamo la farina, l'amido di mais e il lievito per dolci. Mescoliamo bene tutti gli ingredienti e aggiungiamo l'aroma limone. Trasferiamo l'impasto all'interno degli stampi da crostatine, ce ne serviranno 6 ben oliati e infarinati.
Una volta riempiti i nostri stampini, adagiamo in ogni stampino, sopra l'impasto, una fetta d'ananas sciroppato. Inforniamo le dolcezze all'ananas per 20-25 minuti in forno ventilato a 170 gradi, forno statico a 180 gradi.
