Today I'm sharing my version of Chicken Jalfrezi, a fragrant chicken, tomato, and pepper stir-fry which is the perfect combo of Chinese technique with Indian flavors. Because it's a quick stir-fry the vegetables stay vibrant and fresh and the chicken, plump and juicy. The best part is that it comes together in under 10 minutes, which makes Chicken Jalfrezi a delicious, balanced weeknight dinner.

    Korean Stir Fried Rice Cakes - Tteokbokki

Tteokbokki is one of the most popular Korean street foods in Korea. This delicious, spicy, slightly sweet, and chewy rice cakes are addictive and be can easily made at home.

Depending on where you live, you can find tteokbokki rice cakes freshly made, refrigerated, or frozen at Korean markets.

The spicy sauce has a combination of gochujang ( Korean red chili pepper paste) and gochugaru (Korean red chili pepper flakes). Anchovy broth is typically used for a depth of flavor which includes dried kelp and dried anchovies  but you can simply use chicken or vegetable broth.

To make anchovy broth: add 3 cups water, 7-8 dried anchovies and 6-7 inch of dried kelp and boil for about 15 minutes. Discard anchovies and kelp)

Ingredients 
2 cups anchovy, chicken or vegetable broth
1 pound tteokbokki- cylinder shaped rice cakes
2-3 sheets of fish cakes ( optional)
1 - 2 green onions, sliced 
Optional garnish: sesame seeds

Sauce 
2-4 Tablespoons Goguchang  Korean red chili pepper paste ( depending on spice level) 
1 - 2 Tablespoons Gochugaru ( Korean red chili pepper flakes) gochugaru (depending on spice level)
1 Tablespoon soy sauce
1-2 Tablespoons sugar or corn syrup ( depending on sweet level)

Directions 
Soak the rice cakes in warm water for about  15-20 minutes to help soften / separate rice cakes.

Boil broth in a large pan. Stir in sauce ingredients and bring to a boil.

Add the rice cakes and simmer until rice cakes becomes soft and the sauce starts to thicken, about 5 minutes, stirring often.  Taste and add more chlii pepper paste, sugar, etc as needed, depending on the spice level desired.

Add in fish cakes and continue to stir and simmer until rice cakes are soft and sauce has thickened. (Total time will be longer is you use frozen rice cakes) Stir in green onions.

To serve, garnish with optional sesame seeds.

    Happy Sunday!! Woke up early, drank some coffee, & headed straight to @traderjoes to beat the weekend crowds, and I’m glad I did! I picked up lots of veggies, avocados, berries + tempeh and of course the beloved everything but the bagel seasoning, which I pretty much add to everything, haha anyone else?

Sharing one of my favorite go-to meals: Cauliflower rice + carrots cooked with @chosenfoods spicy sesame oil, cucumbers, avocado, sautéed spinach, tempeh, sauerkraut + cilantro! #cwkeats

Ricetta per una frittatina:
Ingredienti
100 ml di albume
40g di farina 00
Bicarbonato + un cucchiaio di yoghurt magro 
Procedimento
Sbattere leggermente l'albume in una terrina. Aggiungere la farina e mescolare. Far reagire il bicarbonato con lo yogurt e aggiungerlo nella terrina. Mescolare ancora e cuocerlo per 12 minuti a fuoco basso in un pentolino antiaderente abbastanza alto con il coperchio. .

F: 0,4 g

    BIG CREPES
It’s a crepe day (and not a porridge day.. yes I’m chocked too) 🙊
I actually wanted a porridge but I didn’t have the toppings i wanted (bananaaaa) 
So I decided to go for something new and protein packed! 
This protein big crepe! ➡️ingredients: - 2 eggs - 40 gr wholewheat flour - 20 gr prots - A splash of soy milk - 1 tsp baking soda - 1 tsp apple vinegar 
Toppings:
- 1 nectarine - 100 gr red berries - 1 tbsp coco - 1 tbsp peanut butter

C’est la journée de ma crêpe géante… Oui je suis choquée aussi, pas de porridge ce matin. 🙊En fait j’en avais vraiment envie mais j’avais pas les topping que je voulais vraiment (banane) du coup j’ai décidé de partir sur quelque chose d’autre et de protéiné. 🐥 ➡️Ingrédients: - 2 oeufs
- 40 gr farine de froment - 20 gr protéines - un peu d’eau ou de lait de soja - 1 cac de vinaigre de cidre - 1 cac de bircabonate 
Toppings: - 1 nectarine - 100 gr de fruits rouges - 1 cas de coco - 1 cas de peanut butter 
C’est tout! 
J’espère que ça vous plaira! (oui j’ai même pas mis de chocolat: double choc) 
J’ai toujours ma tête dans ma valise et dans mes derniers préparatifs pour le Canada, et hier j’ai travaillé très tard du coup j’ai pas beaucoup de temps pour travailler des recettes! Mais on trouve toujours le temps pour la gourmandise! 😍

    🍊 Orange and chocolate chip  muffins 🍊

Prep 20 mins; cook 25 mins; serve 12 large or 24 mini muffins

Ingredients
2 medium eggs 
125 ml vegetable oil
250 ml semi-skimmed milk
200 gr caster sugar
400 gr self-raising flour (or same quantity plain flour and 3 tsp baking powder)
1 tsp salt
1 tsp vanilla
3 oranges juice and zest
100 gr dark chocolate chips

Method
Heat oven to 200C/gas 6. Line a muffin tray with paper muffin cases. In a large bowl beat the eggs lightly with a handheld electric mixer for 1 min. Add the oil and milk and beat until just combined then add the sugar and whisk until you have a smooth batter. Sift in the flour and salt (and baking powder if using) then mix until just smooth. Do not over-mix the batter as this will make the muffins tough. Stir in the vanilla, orange juice and zest and chocolate chips
Fill muffin cases two-thirds full and bake for 20-25 mins, until risen, firm to the touch and a skewer inserted in the middle comes out clean. 
Leave the muffins in the tin to cool for a few mins and transfer to a wire rack to cool completely.

Served with flaky paratha, onion rings and lime.  Marinating the lamb pieces in yoghurt or meat tenderiser is great to help the flavours soak through and renders succulent lamb chunks in the rich gravy. Recipe on Maunika’s Indian Recipes App on ITunes. Link in profile👆🏼
