FRESH CORN SALSA 🌽 I’m making the most of late-harvest fresh corn as summer sadly comes to an end, but this Fresh Corn Salsa is almost just as yummy using frozen corn kernels.⠀

Fresh corn with spicy jalapeños, cumin & paprika in a creamy greek yoghurt with a dash of lime juice. This corn salsa is typically served with mayonnaise, but I find greek yoghurt gives the right amount of creaminess without the added calories. Crumble some feta (or cojita if it’s available) over the top, and scatter with a good handful of fresh coriander. Delicious as a side for taco nights, or great as a snack with corn chips ✨⠀

Hi from my corner of the interwebs 🤓 I feel like I’ve been pretty absent lately. I told myself I wouldn’t pout when personal projects get derailed for one reason or another— and I’m sticking to that promise. In the meantime, I thought I’d share some recent content for my clients that I’ve never shared! 👉🏽 I’m about to crack open ‘The Power of a Positive No’ by William Ury (I’m 2 books deep in @goodreads for 2020, slowly onward!) and there’s a marbly piece of meat in my fridge that’s soon to get the instant pot roast treatment. My grandad says that when someone offered him his first taste of grits, he said, “sure, I guess I’ll try just one”. 😂Well, even if it was possible you wouldn’t want just one of these Black pepper Parmesan grits with a side of withered greens in bacon drippings and candied yams... 🙌🏼💃🏼Used my gorgeous @nesthomeware Dutch oven to get these babies extra creamy and luscious for Fat Tuesday last night!

A gorgeous meal prep for a client this week!
🤩

The first half of the week I spend being a private chef for clients (whom I love so much!). We cook for the week and depending on the client we prep breakfasts, lunches, dinners and cook for dinner parties & corporate lunches. I used to be a private chef full time but found that I would work myself into the ground. Now, I have a super happy balance between cheffing, food coaching, my online programs, recipe development & social media.

With that, I know that this much food to prep can seem overwhelming to do for yourself so I wanted to give you my top tips for meal prepping like a boss!
💪🏼
1. Meal prep (and cooking in general) isn’t something you have to do, it’s something you GET to do! Your mindset around cooking will not only make the process more enjoyable, but the energy will make your food taste better too!

2. Shop for foods in season and make recipes with repeating ingredients. This will save you money and time!

3. Cook the rainbow 🌈 and store in glass. Half of the fun is opening up your fridge to see gorgeous food that you get to devour! Glass is non-toxic and more appetizing to eat out of.

4. Find inspo all week long to get you excited to cook. My favorite inspo accounts are tagged above! When you find a recipe you want to make, immediately add the ingredients to your list for the week to avoid procrastination. I use the app Wunderlist for my list making and sharing with clients.

5. Make a plan that fits side by side with your schedule! This is the most important one. Be realistic about how much your working, exercising, and going out! I even like to plan my days to eat out so I don’t skip a beat.

6. Have fun with it & don’t do it alone! Get a friend, family member or spouse to prep with you. You can tag team the prep so you can prep for two people/families in half the time!

Meatballs and pasta are an easy 20 minute dinner. 🍝 .
It’s also so easy to simply make more and wack it in the fridge for lunch tomorrow or the entire week. 👌🏻

Use whatever veg you’ve got in the fridge and whatever dried herbs (or fresh) herbs you’ve got in the cupboard and switch the pasta for rice or noodles if you like!
.
The idea is to make these one pot meals your own.🙌🏻
.
The tomato sauce with the vegetables is so low in calorie but packed FULL of vitamins and minerals that it’s always my go to base for most dishes. 🍅 🥦 .
You can literally make this in 20 mins so crackkkk on!💪🏼
.
For 100g spaghetti & 4 meatballs & cheese it’s 684 kcals ✅ I don’t tend to add up the veg and sauce but that’s at about 50kcals or so.
.
P: 64.5g
C: 73.2g
F: 14g

Grilled pear and biltong salad.
I'm a big fan of fruit in savoury salads. To add an extra layer of flavour I griddle pan everything from pears to nectarines. I cook them just enough that they start to char to add a little bitterness to them. The biltong was a special present from home-home but we know that you can get it from the Saffa shop in London (after you take out a small loan). Rumour also has it that Jarrow has a butcher with epic biltong.
We'll research to confirm or deny said rumour.

Happy Wednesday Friends!! 🌞 We're halfway through the week already which is awesome! I swear time flies by every week haha. I actually have today off since I worked on Monday so it's kinda nice to break up the work week! I did have to go in for a work meeting this morning but it's Ok! I love our meeting because we learn so much about health and nutrition ☺ Also we had a crew appreciation breakfast and I made these PALEO RASPBERRY RED VELVET DONUTS!! 😍😍💕 This is probably my favorite donut recipe I've come up with so far because I love the chocolate and raspberry combo 👌 Plus they look so pretty!! haha 😉 I used coconut butter and dragon fruit/hibiscus powder for the icing which gave it a nice pink color!
Here's my recipe 👉

For the donut batter: .
Wet ingredients: 3 eggs, 1/2 cup unsweetened almond or coconut milk, 1 tsp vanilla extract, 1/3 cup smooth almond butter, 2 tbsp melted coconut oil, and 1/4 cup maple syrup, and 1 cup fresh organic raspberries. .
Dry ingredients: 1 cup almond flour, 1/4 cup cassava flour or tapioca starch, 1/2 tsp baking soda, 1/4 cup cacao powder, and 1 tbsp beet powder.
.
Mix wet and dry ingredients separately then together except for the raspberries which you will mash up and fold in last. Pour batter into grease donut pans or silicone donut molds and bake at 350 degrees for 15 mins. When they are done let them sit out to cool for a while and then stick in the freezer for a couple hours.
.
For the icing melt 1 8 oz jar of @artisanaorganics coconut butter and mix in 1 tsp dragon fruit powder and 1 tsp hibiscus powder(I used @spicexsprinkle.)
Then take your donuts out of the freezer and carefully dip each one in the coconut butter and let sit on a cooling wreck or parchment paper lined baking sheet. Then melt 1/2 cup dark chocolate(I used @lilys_sweets stevia sweetened chocolate chips) and drizzle over top of the donuts 🤗 I would store then in the fridge because of the raspberries in then to keep them good for longer!

Pepper Sauce—what my family calls
onions and peppers soaked in white vinegar. It was a staple in my grandmother’s home in Nicaragua. My mom always has a jar in the fridge and I try to as well. It’s very simple and very delicious and can be used on so many things. .
Typically we’ll slice onions and peppers (jalapeños, serranos, a habanero or two) and put them in a a mason jar with a little salt and white vinegar. That’s pretty much it. We don’t boil the vinegar beforehand or dilute it with water (though you certainly could if you wanted). .
It’s best to let it sit a few days to a week to mellow out the heat, unless you love intense spice. I like to play around with ingredients so today I sliced a sweet onion, serrano peppers, and some yellow peppers and tossed them in mason jars with a few dried arbol chilies. I’ve never used dried chilies before and I’m not sure what the results will be. .
Then I filled the jars to the top with rice vinegar (instead of white) and added some salt (typically I’ll do a teaspoon of sea salt or kosher salt for a 32 oz jar, but after a few days you can add more to taste if you’d like). I’m curious to see how this batch differed from ones I’ve made in the past. You can add any ingredients you’d like (I’ve tried sliced garlic, bell peppers, radishes, cucumber). .
If you make it let me know! It’s not fancy but it’s one of those simple pleasures that makes me think of home.

Cottage Cheese Breakfast Bowl with Raspberry Jam with Toasted Nut Topping
2/3 cup small curd cottage cheese
1 tbsp raspberry chia fruit spread
2 tbsp shredded unsweetened coconut
1 tbsp pumpkin seeds
1 tbsp raw walnuts
2 tbsp freeze-dried raspberries

Heat coconut, pumpkin seeds and walnuts in a dry pan over medium heat until coconut is light golden brown, 4-5 minutes. Remove from heat and cool for 3 minutes.
Add cottage cheese to a small bowl and top with chia fruit spread or jam, stir lightly to incorporate. Top with toasted nut topping and freeze dried berries. .

This cacio e pepe cauliflower rice is insanely easy and so delicious - one of my all time favorite low carb dishes! Thank you to my friend Joe @stassage for the amazing recipe 😊💕

▪️1 Tbs Butter▪️5 Cloves Garlic▪️1 Bag Frozen Riced Cauliflower▪️1 Tbs Olive Oil▪️Salt & Pepper▪️3 Tbs Pecorino Romano▪️

1️⃣ In a large pan, sauté the garlic in butter until fragrant (~2 min)
2️⃣ Add the frozen riced cauliflower and drizzle the olive oil - stir fry until hot
3️⃣ Add the pecorino romano and season to taste with salt and a generous amount of fresh ground black pepper (the dish should taste peppery!)

Espresso Cacao Muffins

These lightly sweetened muffins are the perfect cure for any chocolate craving, made with antioxidant-rich raw cacao powder. Recipe below!

1 cup blanched almond flour
1/3 cup unsweetened cacao powder
1 tbsp espresso powder
1 tsp baking powder
1/2 tsp sea salt
2 large eggs + 1 egg white
1/3 cup pure maple syrup
1/4 cup melted unsalted butter
1 tsp vanilla extract

Preheat oven to 350F and line 6 muffin tins with paper liners. Combine almond flour, cacao powder, espresso powder, sea salt and baking powder in a medium mixing bowl and whisk to combine. In a separate medium mixing bowl, whisk together eggs, egg white, melted butter, maple syrup and vanilla extract. Gradually whisk dry ingredients into wet until batter is smooth.
Divide batter between 6 muffin tins, filling 3/4 of the way full. Bake for 25 minutes. Cool muffins at room temperature for 15 minutes.

BANANA CHIA BREAD anyone? Did a poll on my story last week and there’s no fooling you guys. No pumpkin bread here. All banana! 😁⁣

2 mashed bananas ⁣
2 beaten eggs ⁣
1/2 tsp vanilla ⁣
1 cup almond flour ⁣
1/2 tsp baking powder ⁣
1/4 cup coconut sugar ⁣
1/3 cup chia seeds ⁣
1/3 cup light brown sugar ⁣
1 tsp cinnamon ⁣
1/3 cup coconut milk ⁣ ⁣

What to do 👇🏼⁣
Preheat oven to 350. Mix dry ingredients, making sure there’s no clumps. Mix wet ingredients separately. Add wet to dry and fold in, mixing well. Pour into lined baking pan. Cut in half a banana and place on top of batter. Bake for 1 hr 25 minutes. Poke with a toothpick to check if it’s done. The toothpick should come out clean. Let cool, slice and serve!

Musaengchae ( Korean Radish side dish )

As I mentioned before there are a few variations of making this. I have introduced Musaengchae seasoned with salt and vinegar before. Today, I made seasoned with fish sauce version. This is commonly eaten in Junla province in South Korea and called differently as Muchaeji. It treated more close to kimchi in Junla province rather then salad style side dish in Seoul. It can be kept little longer then other versions and have little deeper flavor comes from fish sauce.

If you make these two different versions, please let me know which one you like better.

오늘은 전라도 스타일 무생채를 해봤어요. 무채지라고도 불리는 소금대신 젓갈로 맛을내고 무치기전 살짝절여 물기를 뺀 김치에 조금더 가까운 스타일이요. 드셔들보셨는지 모르겠네요. 저는 개인적으로 무를 너무 좋아해서 보통 소금간하고 식초 넣은 새콤달콤 버전도 좋고, 이것도 좋아해요. 어떤걸 더 좋아하시는지 궁금하네요.

✨NEW RECIPE✨⠀

Happy Wednesday you guys! As some of you might have seen in my stories, yesterday I was preparing a very mysterious green stew 🌿⠀

Before I tell you more in detail what the dish is, I wanted to give you a micro background about the story behind the dish you saw. ⠀

Monique from @peaches2peaches invited me along with other inspiring black women to create and shoot a dish in honor of #BlackHistoryMonth. ⠀

This challenge got me really excited to reconnect back to my Congolese heritage and veganize a dish that is very close to my heart: Saka Saka. That is the dish you saw yesterday😉⠀

This dish consists of cassava leaves, spinach, green bell peppers, lots of garlic and peanut butter. It is rich, super satisfying and on top of that, super healthy! ⠀

Garlic Bread Topped with Asparagus & Smoked Cheddar Cheese 💯
Garlic bread belongs on every family's table! And veggies should always be served with every family meal too! @furlani_foods garlic toast slices make it easy to prepare this delicious appetizer with a healthy twist. These beauties can be on your table in just 10 minutes!

INGREDIENTS:
▪️Bunch of asparagus
▪️Shredded smoked cheddar cheese
▪️Pinch or two of salt and paprika powder
▪️Furlani garlic toast slices (fresh, not frozen)

DIRECTIONS:
🔹️Wash asparagus and trim ends.
🔹️Blanch asparagus by bringing a pot of water to a boil and adding asparagus for 3 minutes. Immediately remove asparagus and rince with very cold water to stop the cooking process. Dry with a paper towel.
🔹️Transfer asparagus to a plate and cut all spears to create two shorter pieces from one. Sprinkle all pieces with a light pinch or two of salt and paprika powder. Toss gently.
🔹️Pre-heat oven to 425F (or as per package directions).
🔹️On a non stick baking sheet arrange garlic bread slices flat on the sheet. Add a few asparagus spears to each piece of bread and top each with some shredded cheese.
🔹️Bake for 5 minutes (or as per package directions). Change oven setting to broil on high for 1-2 minutes. Immediately remove from oven, serve and enjoy!!

Vegan Satay vegetable curry. We always put sweet potatoes in it and cook them to nothing so thickens up the sauce, that way the kids will eat it. Also we cook the kids some chicken and put it on top as they get grumpy if there is no meat in a curry. But we will just have vegetables as we are cutting back. My husband has got grumpy as he has put on weight due to not running. Normally he is training for a marathon at this point. But has hurt his back and has deferred his Manchester marathon place until next year. Oh and don’t forget to Sprinkle some cashews nuts on top.. ..Felix can eat a kilo in one sitting. .

Pancake day + 1!
Ok so I know pancake day was yesterday, but due to the ongoing floods and impending night shifts linked to said floods, we had our pancake day a day late. Sorry jesus.
I have to say, I LOVE pancakes, American pancakes are alright, but English pancakes, thin and with the little bubbles where they catch the butter in pan, covered in lemon and sugar makes my traditionalist heart sing!
You can keep your fancy pants, over stuffed, over topped extravagant pancakes thank you.

Pancake day + 1!

NEW RECIPE 💥 LEMON COURGETTE PASTA

You won’t believe how quickly you can get this dish on the table. Put water to boil in a saucepan and grate the courgette into a bowl, then finely chop the onion and parsley. Add the pasta to the sauce pan and mix the chopped garlic and parsley with olive oil and lemon juice along with a pinch of salt and pepper. Drain the pasta, mix it all together and voila! Delicious plate of goodness in about 20 minutes!

It’s crazy to think about how the most important meals I will ever create will come directly from my body. Breastfeeding is such an empowering act, but it’s also humbling knowing that there’s little I have to do with it besides what I put into my body.

My first go-around was rough. I had every issue in the book: over-supply, under-supply, thrush, clogged ducts, mastitis, medications I had to time perfectly in order for the baby not to receive it through the breastmilk...but with all those struggles I loved breastfeeding so much. It is such a precious bonding experience. And not only that, it’s amazing to know that this milk that comes from my body is the absolute best thing I could ever give to my child and a foundation of good health that will affect them for the rest of their life.

Roasted Red Pepper, Goat Cheese and Basil Galette. 🙌

The obvious colors of the Italian flag must be a sign that I need to travel to Florence again soon. 😉 But really, this lovely galette is lunch today. I typically make my own crust, but I also shortcut with a store bought crust now and again. ☺️ I’ve listed this tasty recipe below! Oh, and it pairs so deliciously with an Oregon Pinot Gris, Chardonnay or Rose. ❤️ Serves 4
Ingredients
Galette Dough
1 ½ cups all-purpose flour
1/4 cup walnuts, toasted and chopped
½ teaspoon salt
1 stick (1/2 cup) of very cold unsalted butter, diced into small pieces
1 egg
2 ounces of cold water
For the Galette
2 red peppers roasted, peeled seeded and sliced into strips
3 -4 ounces goat cheese
¼ - 1/3 cup basil pesto
½ bunch fresh basil, sliced chiffonade or torn
1 egg whisked with 1 teaspoon water
Kosher salt or finishing salt
Directions
In a food processor, add the walnuts and pulse until finely chopped. Then add the flour and salt and give it another pulse to combine.
Add the cold butter and pulse until the mixture is crumbly. Then add the egg and while the
food processor is running, add one tablespoon of water at a time until the mixture forms a firm dough.
Roll the dough out onto a slightly floured surface and pat it into a round disc. Cover with plastic wrap and refrigerate for at least an hour. To make the galette, pre-heat the oven to 375F.
On lightly floured parchment paper, roll out the dough into a rough circle, it doesn’t have to be perfect. Roll the dough about 1/8th inch, but not too thin that it falls apart. Then transfer the parchment with the galette crust onto a baking sheet.
Spread the pesto on the bottom of the galette, leaving room around the edges to fold. Then
dollop goat cheese over the pesto and layer with the strips of roasted red pepper.
Fold edges of galette dough toward the center of the galette to form a rustic pie shaped circle and then brush edges with egg wash and sprinkle with kosher or finishing salt.
Place the galette in the oven and bake for about 30 minutes until the edges are golden brown.
Remove the galette and let cool. Top with basil and serve.

Well to start I have to admit that I am a huge fan of shortbread, It is so versatile and crumbly good.
These Brown Sugar Walnut Shortbread Bars have a buttery shortbread crust followed with a brown sugar walnut topping. They are the perfect decadent treat for any occasion... .

امروز وقتی رفتم تو گل فروشی برای خرید گل ، همش یاد شما بودم ،اميدوارم وقتی این عکسارو می بینید یکم روحیتون عوض بشه ، گفتم شاید بتونم از رآه دور كمي شادتون کنم.
این شورت برد گردوي خوشمزه رو طوری انتخاب کردم که خیلی گرم و مقوی باشه چون می دونم دوست دارید الان از مواد غذایی طبع گرم استفاده کنید❤️

مواد لازم خمير شورت برد
يك پيمانه آرد
يك چهارم پيمانه پودر قند
يه پنس نمك
يك دوم پيمانه كره سرد خورد شده.

مواد لازم تاپينگ؛
يك پيمانه شكر قهوه اَي
يك عدد تخم مرغ
يك ق چ وانيل مايع
يك +يك دوم قاشق غ ارد
يك چهارم ق چ جوش شيرين
يه پنس نمك
يك پيمانه گردو خورد شده
.
فر رو درجه 350 فارنهايت يا 180 سانتيگراد روشن كرده.
قالب مربع بيست در بيست يا قالب تارت رو چرب و كاغذ روغني گذاشته.
در كاسه اَي ارد ،جوش شيرين، نمك مخلوط كنيد ، كره سرد رو بهش اضافه كنيد و با نوك انگشتتون مواد رو مخلوط كنيد.
مواد رو روي قالب با پشت چنگال پخش و صاف كنيد .
قالب رو بگذاريد درون فر بمدت ده تا پانزده دقيقه يا تا زماني كه اطرافش طلاي شده از فر خارج كنيد بگذاريد كنار تا كمي سرد بشه در اين فاصله مواد تاپينگ رو درست كنيد.
در ظرفي شكر قهوه اَي و تخم مرغ و وانيل رو مخلوط كنيد و با همزن دستي فقط يا چنگال بزنيد تا مخلوط بشه.
ارد و نمك و جوش شيرين رو با هم دو ظرف ديگري مخلوط كنيد و به مايع تخم مرغ اضافه كرده هم زده تا مخلوط بشه و در اخر يك پيمانه گردوي خورد شده رو اضافه كنيد و هم بزنيد .مايع اماده شده رو بريزيد روي شورت برد و صاف كنيد و در اخر اگر دوست داشتيد روش كمي بيشتر گردو خورد شده براي تزيين بريزيد.
قالب رو در فر بگذاريد بمدت بيست و پنج دقيقه يا تا زماني كه روي مايع سفت و قهوه اَي بشه از فر خارج كنيد و بگذاريد كنار تا سرد بشه و بعد برش بزنيد.
بينهايت خوشمزه هستش اين شورت برد گردوي يك هفته ماندگاري داره .
درست كنيد و لذتش رو ببريد كه محشره❤️

This past week, the cold that has been going around totally kicked my butt. I was craving quick and easy food that would soothe my throat all the while taste delicious.

Hey, there happy Wednesday. Today I had to skip Uni due to a very important appointment I had earlier. It a very long story and I'm not gonna go further explain it right now but what I will say is: Making peace with food isn't an easy journey. I used to struggle with this every single day, I still have my ups and downs but I'm waay better than I used to. It takes time to learb how to eat intuitively and actually with enjoyment and no fear. Having fearfull thoughts on specific food and food groups is a very common symptom of early stages in eating disorders. Especially between women /girls this is very common. Girls I definitely feel ya! What I wanna say from experience and from a person that still tries to make peace with food is - take it slow, baby steps will make a huuuge difference in a long run. - Don't compare yourself with NOBODY else you are unique the way you are, you are beautiful and you need to be respectful of yourself, never let anyone tell you otherwise.

King oyster mushrooms, seared in duck fat, topped with grated end bits of gruyère, sea salt, Aleppo pepper and a raw yolk. (On a raw yolk phase these days 😅) Make things completely vegetarian by searing the shroomies in avocado oil instead.

I always love pairing this palm leaf plate with a bright yolk bc it reminds me of sunny California—where I actually got the plate from in LA! 🤓☀️🌴

Stored with many micronutrients, probably much more than freshly cooked rice, Panta Bhat has high nutritional value and is a super immunity booster. While the summer is slowly approaching, I am ready to beat the heat with this super delicious probiotic summer cooler. Panta Bhat or Poita Bhat or whatever else you call it, goes amazingly well with dim bhaja (fried egg), mach bhaja (fish fry), alu bharta (mashed potato) and so on. Try it and your gut will definitely thank you.

Stored with many micronutrients, probably much more than freshly cooked rice, Panta Bhat has high nutritional value and is a super immunity booster. While the summer is slowly approaching, I am ready to beat the heat with this super delicious probiotic summer cooler. Panta Bhat or Poita Bhat or whatever else you call it, goes amazingly well with dim bhaja (fried egg), mach bhaja (fish fry), alu bharta (mashed potato) and so on. Try it and your gut will definitely thank you.

This big steaming cozy bowl of pork noodle soup with simmered vegetables + kimchi is made super flavorful from @bibigousa’s hot & sweet gochujang sauce. #ad @Bibigousa’s gochujang sauce offers an accessible rich taste of Korean cuisine in convenient packages. This is not a one-note hot sauce--it lends an addictive spicy, savory depth and slight sweetness that makes the sauce great for stir-fries, dips and spreads. Here’s an easy mouth-watering recipe for you (serves 2)

In a wok or cast iron pan on med-high heat, stir-fry minced ginger, garlic + scallion whites in some oil until fragrant. Add in ½ lb. ground pork and 2-3 Tbsp @bibigousa gochujang sauce (adjust amount for your spiciness preference). Cook + toss everything for about 2-3 min until the pork is cooked through. Remove pan from heat and keep warm. Meanwhile, cook noodles of your choice according to package directions. In a saucepan, heat up a quart of store-bought or homemade chicken broth until boiling, season with a touch of salt or soy sauce, and simmer your choice of veggies for a couple minutes. I used a mix of yu-choy and enoki mushrooms here. Divide noodles between bowls and top with @bibigousa gochujang sauce + pork mixture, simmered veg and kimchi. Ladle the boiling hot broth into the bowls, quickly top with toasted sesame seeds, sesame oil, scallion greens and a raw yolk (optional) for added creaminess. Serve immediately with a couple cloves of raw crushed garlic, more kimchi and @bibigousa gochujang sauce at the table for dipping/flavor adjustments.

Don’t be alarmed by the dark color of the gochujang sauce! It is 100% natural + normal. The sauce is heavily pigmented by the gochugaru (Korean red chili pepper)--not artificial food coloring. When mixed into a stir-fry, broth, dips or spreads, the deep appetizing red color reminiscent of gochujang comes to life. Got a couple of onions lying around? Maybe a sprig of rosemary? An open bottle of wine? Pine nuts in the cupboard? Then may I suggest this sizzling pan of caramelized onion pasta that’ll use up those leftovers and brighten your Tuesday! It’ll take a minute to make but is well worth the wait (you know my spiel on caramelized onions 😎). Cheesy mushroom lanterne are pictured here but this would be pretty perfect with anything, boxed pasta included! Recipe follows 👇. Today I’m cranking out a special cappelletti dish at @ilbruttoaustin and honestly I cannot wait to get my hands on (more than) a couple of dishes this evening! Sometimes you just crave pasta, ya know? 🤷🏻‍♀️ .

Thinly slice ~2 yellow onions (more if you want leftovers!). Heat 1T butter in a Dutch oven or large sauté pan over medium heat. Add the onions and cook over medium-low, stirring somewhat frequently to prevent burning, until deeply caramelized, ~45 minutes. Season to taste and remove from pan.

Increase heat to medium-high and deglaze with 1/3 cup white wine. Reduce by about half, scraping up any onion bits. Follow with 3/4 cup stock, then reduce again until thickened, ~5 min. Reduce heat to medium-low and swirl in 2T butter, stirring constantly, followed by a generous dash of cream (not pictured but extra yummy!). Stir to combine and simmer briefly to thicken/desired consistency. Season to taste.
Cook pasta in well-salted water and, while it’s cooking, add onions back into the sauce. Transfer cooked pasta directly to sauce, carefully toss to coat, and serve topped with more sauce, toasted pine nuts, black pepper, parm, finely chopped fresh rosemary, and a drizzle of balsamic reduction (or whatever you like!). Serve immediately and enjoy!
