Orange Carrot Cake 💫 My favorite carrot cake turned into a Xmas version 🎄The secret of this cake is to blend the carrots and not grating them 🤓 Aaannd to use freshly squeezed orange juice, find the recipe below! Happy new week 💕 Love, Sarah x

Ingredients
400 g flour (I used 300g spelt and 100g whole wheat flour)
2 tbsp baking powder
300 g carrots (peeled)
100 ml orange juice
Juice of one lemon
50 ml almond milk mixed with 1/2 tsp apple cider vinegar
120 g light brown sugar
100 ml coconut oil
pinch of cinnamon
For the frosting
100 g icing sugar
100 g vegan cream cheese
Method:
Preheat oven to 180C/375F and prepare a loaf tin. In a food blender mix the carrots with the orange and lemon juice. Add the oil and mix well, add the almond milk mixed with apple vinegar. In another bowl mix all the other ingredients and combine with the carrot-mixture. The dough will be quite firm. Bake for 45 min. Let it cool down and prepare the frosting by mixing the icing sugar with the cream cheese and spread it over the cake. Next time I’ll bake it I’ll add some orange zest to the dough to make it even more flavored, just a tip 😉

An overindulgent weekend has my body craving raw veggies. 👉🏻Snow peas, medley tomatoes and activated pumpkin seeds, cucumber, microgreens pea shoots, red cabbage, avocado with hemp seeds. Shiitake mushrooms cooked for a few minutes with a dash of olive oil. Hummus and marinated @genobilesaba dolmades (vine leaves stuffed with rice). Season with Himalayan salt, pepper and olive oil.

L’avete vista nel goloso profilo @nu3_it ed ecco un’idea cioccolatosavelocesana, per quando magari si è di corsa al mattino e non si ha nulla di pronto nonostante la presenza ai fornelli per tutto il weekend... 😬😂

~ Porridge proteico ~ bio con cioccolato, 100 % vegano e senza aromi artificiali, pronto da gustare in 5 minuti! Lo conoscete già?
.
Con farina di mandorle, farina di zigolo dolce (buonissima e sa di nocciole 😍!) e soffici fiocchi d’avena: semi di girasole croccanti e il riso forniscono una porzione extra di proteine vegetali e garantiscono la giusta consistenza.
.
Basta aggiungere circa 90 ml di acqua a 50 g di miscela Protein bowl e mescolare bene lasciando riposare 5 minuti in modo da far assorbire i liquidi e trasformarsi in un porridge cremoso.
.
Io l’ho accompagnato con la mia marmellata di cachi, mele e limone (trovate la ricetta sul blog e qualche post indietro), stelline di banana, una manciata di Fit Muesli e un filo di sciroppo d’acero.
.
Buona.. che dico, stellare colazione a tutti!
E buon inizio settimana ✨

65g | 1/3 cup coconut oil, melted, room temp
80ml | 1/3 cup espresso, warm
1 teaspoon vanilla extract
1 teaspoon white vinegar
240ml | 1 cup water

Instructions
1. Preheat the oven to 175C| 350 F degrees. Line a 25x10cm| 10x4" loaf pan with parchment paper.
2. In a medium bowl, mix together the cacao powder, flour, sugar, baking soda, and salt together. Set aside.
3. In a separate bowl, mix together the coconut oil, espresso, vanilla, vinegar, and water until well combined.
4. Stir in the wet ingredients into the dry ingredients and stir until just combined.
5. Pour the batter into the baking pan and bake for 50 - 55 minutes, or until a toothpick inserted in the middle comes out clean.
6. Remove from the oven and let cool into pan for 5 minutes before transferring to a cooling rack.
7. Cool completely before slicing

For dinner I made a super easy bowl with brown basmati rice, quinoa, black beans, sautéed onions & bell peppers, @miyokoscreamery vegan mozz cheese, avocado, & my favorite ever hot sauce; Valentina. ❤️🙏🏼 It was suuuper good but I’m looking forward to actually cooking soon! I’ll get less lazy I swear! 😂

Crunchy Portobello Mushrooms by @vegaliciously 🍄 it is crispy deliciousness! 💚

Ingredients⠀
300 g portobello mushrooms (cut into slices)⠀
5 tbsp all purpose flour⠀
1 cup water⠀
200 g panko bread crumbs⠀
1/2 tsp paprika powder⠀
Salt & pepper to taste⠀
1 cup oil⠀

How To Make:⠀
1. cut the mushrooms in 4-5 mm thick slices.⠀
2. Place flour and paprika in a bowl, adjust salt and pepper, stir in water and whisk until lumps free.⠀
3. Place panko in another bowl.⠀
4. Put the mushrooms into the flour mixture ad then coat with panko.⠀
5. Heat the oil in a skillet and fry the mushrooms.⠀

Recipe: (serves 4):⁣
🍃Noodle ingredients:⁣
~ 2 cups all purpose flour, 3 tablespoons aquafaba, 1/4 cup + 2 tablespoons ice cold water, 1/4 tsp salt⁣ ✔️Place all ingredients in a bowl & knead (with hand) until a dough forms (mixer works too). Cover with damp paper towel & let rest for 30 minutes. Divide dough into 4 equal parts. Using a pasta machine, run one dough through a dough thinner a few times, then change settings to cut. Cut dough into long noodles & coat noodles well with flour to prevent sticking. Boil a pot of water with a pinch of salt & cook noodles until al dente about 3 minutes. Homemade noodles has shorter cooking time.⁣ ⁣🍃Tofu crumbles:⁣
~ 1 pack of firm tofu (drained, pat dry, mashed)⁣, 3 caps of mushrooms (soaked until soft and sliced)⁣
~ 5 cloves garlic (minced), 3-4 shallots (minced)⁣
~ oil and additional salt if needed⁣ 🍃Sauce: 1.5 tablespoon soy sauce, 1.5 tablespoons stir fry sauce, 2 teaspoons dark soy sauce, 2 teaspoons sugar, 1 teaspoon salt⁣ ✔️In a heated non-stick pan, dry tofu crumbles until lightly brown, then add 1 teaspoon oil &continue to cook until tofu looks chewy/spongy, push aside. Add another teaspoon oil & sauté mushrooms until cook. Then, add shallots, garlic & cook until fragrant. Add sauce & continue to stir until tofu absorbs all the sauce. ⁣ ⁣🍃Garnish: Blanched yu choy/bok choy, fried shallots, chili crisp

RICE AND BEANS!! Ok you guys - this is a super duper easy peasy one. We roasted the cauliflower on a baking tray with olive oil, garam masala, turmeric, oregano, and seasoned salt and THAT was the ‘hard’ part. 350 degrees for about 25 minutes and Bob’s yer drag queen. Put it in a bowl and dance some green onion on top and hennnyyyyy yaaass. .

I K E A V E G G I E B A L L S
Because I've been sick this week we haven't been to the supermarket in over 2 weeks 😱. That's a loooong time for a family of 4, especially given that we send the kids to daycare with packed lunches. So the fact that I'm eating a meal that looks sort of like fresh food astounds me. I do keep a pretty solid stash of frozen options and it's been super handy this week. These veggie meatballs are from ikea (they're called Allemanstratten) and they're damn good! Just cook them in the air fryer on 180 for 10-15mins 👍. The macros are totally workable too, for 5 balls there's 6g protein, 5g carbs and 7g fat.

These veggie meatballs are from ikea (they're called Allemanstratten) and they're damn good! Just cook them in the air fryer on 180 for 10-15mins 👍. The macros are totally workable too, for 5 balls there's 6g protein, 5g carbs and 7g fat.

1-2 oyster mushrooms, sliced
1/2 can chickpeas
1/2 tsp turmeric
Pinch of salt
100g rice noodles
1/2 medium onion, chopped
1 tbsp tomato paste
1/2 can coconut milk
1/4 cup water
1 tbsp tamari
2 tsp curry powder
1 tsp turmeric
Large handful kale, de-stemmed and chopped
Spring onion, to serve
Sesame seeds, to serve

Add the oyster mushrooms to a non-stick frying pan and cook for around 2-3 minutes on each side, until soft. Remove and set aside. Add the chickpeas to the same frying pan together with the turmeric and salt and stir for 2-3 minutes. Meanwhile, cook the noodles according to packaging instructions and add the onion and tomato paste to a saucepan and sauté for 2 minutes. Then, add the coconut milk, water, tamari, curry powder and turmeric. Simmer for around 5 minutes, stirring frequently, and at the last minute stir in the kale. Pour over the noodles and serve with the mushrooms, spring onion and sesame seeds.

BLACK BEAN CHORIZO TOSTADA 🥗 Tostadas are not just made for ceviche! As kids, Madre would make ham tostadas, chicken adobo tostadas and even just simple pinto bean tostadas 🤤

Here we lathered a tostada with a #vegan cashew chipotle aioli (made from scratch). Topped it with a black bean & vegan chorizo mix, and dressed it with a fresh tomatillo pico de gallo. 💚

Korean BBQ Pulled Jackfruit bowl by @okonomikitchen 😋 This Korean BBQ Pulled Jackfruit is sweet, spicy and packed with flavour! So easy and takes only 20 minutes! Get the recipe:

​INGREDIENTS
2 15 oz cans of young green jackfruit
1 package of soy curls (150g), rehydrated and drained*
2 medium onions, sliced
1–1.5 cup Korean BBQ Sauce
1/4 cup water
Additional korean side dishes or any vegetables you have on hand! Spinach, carrots, sugar snap peas are delicious paired with this.
Optional toppings: green onions, sesame seeds, drizzle of sesame oil, sriracha.. etc

INSTRUCTIONS
Heat a wok or large skillet over medium high heat. Add in the sliced onions and fry until lighty browned and translucent (around 1 minute)
Add in the drained jackfruit, soy curls, BBQ sauce and water. Stir to coat all the jackfruit and soy curls.
Shred the jackfruit pieces with a fork until it resembles “pulled pork”. Cook for 4-6 minutes. Stir and taste. Add more BBQ sauce, salt or pepper if needed. Allow it to cook for another 2-3 minutes.
Serve immediately over rice with some vegetables. Top with sesame seeds and green onions if desired.

Glossy slurpy noodles with crispy sweet and sour tofu! 📷 by @the_clumsy_vegan 🚨🚨Recipe: Tofu: 1 block pressed for 1 hr
Arrowroot: 1T
Olive oil
For marinating tofu:
Liquid aminos or soya sauce: 4T
Xylitol or brown sugar: 2 T
Apple cider vinegar: 1T
Sriracha: 1/2T
Ginger powder: 2t

Liquid aminos or soya sauce: 4T
Xylitol or brown sugar: 2 T
Apple cider vinegar: 1T
Dried basil: 1/2 t
Sriracha: 1T
Arrowroot: 1T
Water: 2T
Ginger: 1 T grated
Carrots: 2 cut in thin strips
Broccoli: 1 cup
Celery: 2 cut in thin strips
Vermicelli noodles: 2 portions cooked as per packet instructions

Method:
1) Place whole block of pressed tofu in a lidded container with the marinating ingredients. Refrigerate for at least 1 hr turning the container every 10 minutes for an even marinade
2) Take tofu out of the container and place on a chopping board. Cut tofu in bite sized pieces and return to the container. Sprinkle 1 T arrowroot powder over tofu and put the lid on. Shake to coat evenly then tip the tofu onto a lined baking sheet and drizzle with olive oil.
3) Roast in a preheated oven at 190C for 30-35 min turning half way
4) While tofu is cooking make your noodles. In a bowl mix together liquid aminos, xylitol, apple cider vinegar, dried basil and sriracha. In another bowl mix together arrowroot and water
5) Heat olive oil in a wok and add ginger, carrots, celery and broccoli. Stir fry for 5 minutes and add contents from both bowls mixing constantly to avoid lumps. Add noodle and stir fry for a few minutes. Garnish with fresh basil leaves.

@bestmarkethq by me always has these super great lasagna sliced butternut squash. I always glance over them but finally got them and made this has a meal prepped meal. Side note @kimberlybbod totes gonna need your meal prep help. Haha. Anywho I first sautéed oyster mushrooms in broth. Then added a chopped onion. Sautéed that together so the onions are soft. Then added black and kidney beans. Sautéed that for about 5 minutes. Added diced tomatoes. Sautéed for five more minutes. Then a can of tomato sauce and I brought it all to a boil. Once at a boil, I made the lasagna and layered it together. Then baked it all for 45° at 375°. It should make six servings. Probably cost about $10 to make. #plantbasedonabudget

On Sunday I like to have a productive day. I don't know about you but there is something about a packed day that makes me want to get out of bed and get active. Sorry maybe I am weird, but slow mornings will never have my heart. .

In order to get through my to-do list, and to get things done in general, I need to fuel my body with the right foods like this dump and bake style casserole from @frommybowl (yes, I do make all of her recipes pardon me). Brown rice, chickpeas, broccoli, and spices all at once in the oven make a hearty and satisfying meal thats gets me going. Really on board with that kind of recipe. AND don't forget to add a nice drizzle of tahini (added more after the photo obviously) for some healthy fats + bitterness + happiness AF.

Sweet potato mac n cheese by @vegamelon 😋 A creamy and comforting recipe served with some brussels sprouts! .
creamy sweet potato mac and cheese (serves 3)
-8 oz (225g) dry pasta
-1 medium sweet potato (~250g), peeled and chopped
-3 tbsp (20g) nutritional yeast
-3 cloves garlic
-1/2 tsp each: salt, black pepper, chili flakes (or to taste)
-1/2 cup (~70g) almonds, toasted
-1/2 cup (120g) plant-based milk, plus more as needed,
-1-2 tbsp lemon juice, to taste

Steam, boil, or bake the sweet potato until fork-tender, then let cool for 10 minutes. Meanwhile, boil your pasta according to package instructions; drain and set aside.
In a blender, combine everything except for the pasta and blend well. Add more milk as needed to reach a smooth consistency. Add more seasoning to taste, then pour the sauce mixture into the pasta and toss well. Serve immediately.

Lentil Bolognese by @nourishingalex 😋 A very tasty recipe to try out! .
Serves 2-3
Lentil bolognese:
• 1/2 onion, finely diced
• 2 cloves garlic, minced
• 1 medium carrot, finely diced
• 3-4 mushrooms, finely diced
• 1 tbsp tomato purée • 1 tbsp sundried tomato paste
• 1 tsp dried basil • 1 tsp dried oregano • 400g can chopped tomatoes
• 340g can lentils, drained & rinsed
• salt & pepper, to taste
• a sprinkle of nutritional yeast
_______________________
1. Sauté the onion, garlic & carrot in a saucepan with a little water/oil. Cook on a medium heat for 5-8 mins until everything is soft.
2. Add in the mushrooms and further cook for 3 mins until the mushrooms are soft.
3. Stir in the sundried tomato paste & tomato purée, then add in the dried herbs. Stir well until fragrant.
4. Pour in the chopped tomatoes & lentils, then add just a little water to loosen it all up a bit. Bring to the boil, then once it starts to bubble, turn the heat down to medium-low to simmer for 15-20 mins until the sauce has reduced. Season with salt and pepper and sprinkle in a little nutritional yeast.
5. Serve with pasta and sprinkle with more nooch! Enjoy!!

​Mushroom and Miso Risotto by @veryhungryvegan 😋 A delicious, comforting recipe to try out!

Ingredients (serves 4)
1 1/2 cups arborio rice
1 brown onion, diced
1.25L vegetable or mushroom stock
1 1/2 tbsp white miso paste, dissolved in some water
1 tbsp rice wine vinegar
200g mushrooms, sliced
2 spring onions, sliced
shredded nori and sesame seeds, to garnish ⠀⠀⠀⠀
⠀⠀⠀⠀
instructions
1. in a non-stick fry pan add brown onion and rice and sauté until translucent
2. add in mushrooms and cook until softened
3. add stock (1 cup at a time), rice wine vinegar, miso paste, and spring onion
4. cook until liquid is absorbed and rice has softened
5. top with extra spring onion, nori, and sesame seeds

Baked Buffalo Broccoli Wings by @rainbownourishments 💜 A bowl of crispy deliciousness! .
BAKED BUFFALO BROCCOLI WINGS
'Wings'
1 1/4 cup (190g) plain flour
2/3 cup (100g) chickpea flour
1 1/4-1 1/2 cups (310-375g) plant-based milk, such as almond, soy or coconut, depending on how thick you'd like your batter
1 tsp garlic powder
1 tsp smoked paprika
Pinch of any good-quality salt
3 cups (300g) broccoli florets
1/2 cup (125mL) hot sauce*
1/4 cup (100mL) maple syrup
.
Creamy Dipping Sauce
1/2 cup (65g) raw cashews
1/4 cup (65mL) plant-based milk, such as almond, soy or coconut
1 tbsp lemon juice or apple cider vinegar
Pinch of any good-quality salt
1 tbsp dried dill
1 tsp garlic powder
.
Instructions
1. Preheat the oven to 180°C (350°F). Line 2 trays with baking paper.
2. To make the broccoli wings: In a medium bowl, combine the first 6 ingredients.
3. Dip each frozen broccoli floret in the batter. Make sure all sides are covered but shake off the excess batter. Place the broccoli on the lined baking trays.
4. Bake the broccoli in the oven for 20 minutes, flipping them after 10 minutes.
5. Meanwhile, make the hot sauce coating by combining the hot sauce and maple syrup in a small bowl.
6. Drizzle the hot sauce over the broccoli ensuring all sides are coated. Alternatively, dip each floret in the sauce and return them to the baking tray. Bake the broccoli for another 15-20 minutes or until the batter is golden.
7. Meanwhile, make the creamy dipping sauce: Add all ingredients to a blender and blend until smooth.
8. Enjoy immediately!

Notes
*If you like spicy food, use less maple syrup and more hot sauce. If you don't like spicy food, substitute some of the hot sauce with barbeque sauce.

BBQ Pulled Mushroom Tacos by @livinlaveganlife 👌🏼 One probably won't be enough! Get the recipe: ​
𝐈𝐧𝐠𝐫𝐞𝐝𝐢𝐞𝐧𝐭𝐬⁣

- 7 oz King oyster mushrooms, sliced ⁣
- 2 tablespoons of olive oil⁣
- 5-6 small tortillas ⁣
- 3/4 cup Homemade BBQ Sauce ⁣

𝐈𝐧𝐬𝐭𝐫𝐮𝐜𝐭𝐢𝐨𝐧𝐬⁣

1. Slice your king oyster mushrooms to get a flat surface.⁣
2. Cook on flat surface pan with olive oil for 10 minutes on each side. When cooking them, add tiny pinch of salt to help release some moisture. ⁣
3. Pull mushrooms apart with 2 forks to get string like consistency. ⁣
4. Place pulled mushrooms in a hot pan on medium low with your homemade BBQ sauce. Cook for 5 minutes. ⁣
5. With warm tortillas, add a tbs of your bbq pulled mushrooms to the center of the tortillas. ⁣
6. Roll them tightly and add them to pan with oil of choice on medium low to golden the tortillas to perfection! ⁣
7. Enjoy with some extra BBQ sauce on the side! :) ⁣

Mushrooms chestnut sticky rice bowl '香菇栗子油饭'⁣⁣ by @woon.heng 😍 a delicious gluten-free comfort food that is scrumptious and perfect for any day!

Recipe (yields ~6 servings)⁣⁣
Ingredients:⁣⁣
~ 2 cups of glutinous rice (rinse until water turns clear, and soak overnight, then drain well)⁣⁣
~ 1/2 cup roasted chestnut⁣⁣
~ 1/4 cup sliced Chinese/Shiitake mushrooms⁣⁣
~ 7-8 shallots, finely sliced⁣⁣
~ 2 teaspoons sesame oil⁣⁣
~ oil, salt to taste⁣⁣
~ chopped scallion & fried shallots⁣⁣
~ water⁣⁣
⁣⁣
🍃Sauce: 3 tablespoons soy sauce, 2 tablespoons Chinese cooking wine, 1 tablespoon organic sugar, 2 teaspoons stir fry sauce (optional), 1-1.5 teaspoon salt, 1/2 teaspoon white pepper⁣⁣
⁣⁣
✔️In a heated non-stick pan with 2 teaspoons oil, sauté shallots until fragrant, then add mushrooms & continue to cook until mushrooms turn light brown. Add sauce & continue to sauté & drizzle with sesame oil. Turn off heat. ⁣⁣
✔️Place drained glutinous rice in a pyrex bowl & add 1 cup + 1/3 cup water. Then, spread mushrooms mixture on top and add chestnut. Steam rice in high heat for 30-35 minutes. Using a chopstick/fork, fluff rice by mixing mushrooms mixture until well combined. Season if needed (added few drizzle of dark soy sauce for color😁). Close lid and steam for another 20-25 minutes. (Be sure you have enough water for steaming). ✔️Turn off heat & let cool a little, top with fried shallots & chopped scallions before serving. I paired it with some sautéd bok choy

Crispy cauliflower salad by @micadeli_ 😋 Comes with quinoa, avocado, and a lime dressing! Find the cauliflower recipe below:

​Ingredients:
​• 300g cauliflower
• 2 tablespoon maple syrup
• 1 tablespoon ketchup
• juice from 1/2 lime
• 2 tablespoon soy sauce
• 1 tablespoon olive oil
• 1 teaspoon paprika

Wash the cauliflower and chop in smaller pieces - cook in the oven at 200c in 10 minutes. Mix the rest of the sauce ingredients, add on the cauliflower and cook 5-6 more minutes until golden and crispy. ​Hungry for more plant-based recipes?
