🇨🇿Czech Vegan Goulash with Bread Dumplings! (Guláš with Knedlíky). Prague is one of our favorite cities, so veganizing Czech food has been a long time coming 😓! Goulash is the Czech Republic’s (a.k.a. Czechia’s) quintessential beef stew. It’s exactly the sort of cozy comfort meal we’ve been craving during our unseasonably *cold* winter here in Texas. We subbed in mushrooms and lentils for the beef and deglazed the pan with a splash of red wine. We also threw in chopped tomatoes, a red hot pepper, fresh marjoram, and spices like paprika, allspice, vegan beef bouillon, and caraway seeds. This recipe (inspired by @196flavors) is definitely a work in progress, but our first attempt was awesome and took us back to Praha! ✈️ Def going to use beer instead of red wine next time🍻

As for the bread dumplings...*ahem* I have no effing clue what we did wrong. We’ve made these damn things before, but our dough was hard as a motherfucking ROCK. In the end they were salvageable, albeit...dense. We’re going to have to run this recipe back and try, try, try again.

Hubs studied abroad in Prague in undergrad back in the early 2000s. In 2014, we visited the three sister cities of Vienna, Prague, and Budapest, and hubs was my own personal travel guide. I don’t know why Prague has the reputation of being the “ugly sister” among the three cities, because it is like a Tim Burton gothic fairytale come true. Swipe📲 for some of our Prague travel pics. Let it be in roomtemperature until the taste become as You want. The time that it takes depend on the room temperature, of course! ”Young coconut meat” You can somethimes find frozen. Baking doesn't always have to be perfect... It just has to be delicious! ⠀⠀⠀⠀⠀⠀⠀⠀⠀
This is definitely something I struggle with. I want each order to come out exactly the way I envisioned it to be. ⠀⠀⠀⠀⠀⠀⠀⠀⠀
So when a customer says to me "Do your thing, I trust you" sometimes "bakers block" happens & all creativity disappear. But I have to say that this is where the magic happens. ⠀⠀⠀⠀⠀⠀⠀⠀⠀
I loved how this cake came out. Inside was a soft chocolate sponge with fresh strawberries & a heavy handed drizzle of chocolate sauce.
Now that's my love language🌹

I nearly ate this entire thing standing up. I’m not joking 😳 It was so delicious I couldn’t even take the time to sit down, I needed to finish it right there 😂🐷 This is a double cashew cheese burger from my favorite restaurant. The owner assembled my burger and I watched her inject, literally inject, cashew cheesy goodness into the burger🤯🤤😋

370g SR flour
1 tspn baking soda
1/4 tspn salt
2 tspns mixed spice
100g rolled oats
1 tbspn golden flaxseed meal
120g coconut sugar
30g raw vanilla sugar
50g raw sugar/stevia mix (1 cup = 1/2 cup)
280g dried fruit (I used dried wild blueberries & organic sultanas)
250ml soy milk
1 tbspn vinegar
200ml organic sunflower oil /coconut oil
2 tspns vanilla extract
1/4 cup unsweetened apple sauce
2 tbspns filtered water
Preheat the oven to 190•C & line a muffin pan with muffin cases. In a large bowl sift the flour, salt, baking soda & mixed spice. Add the sugars & flaxseed meal. Whisk together & make a well. In a jug mix the soy milk & vinegar & allow to stand for 5 minutes. Whisk in the vanilla extract, oil & apple sauce. Pour the wet mixture into the dry ingredients. Fold through then toss in the blueberries, sultanas & the 2 tbspns of water. Fold through until just mixed. Using an ice cream scoop, scoop into the muffin cases until two thirds full. Scatter some more oats on top and a little raw sugar. Bake for 20 to 22 minutes or until a skewer comes out clean & the top is golden & crunchy.

I so often fall into the cycle of spending fortunes eating out, buying delicious *expensive* tubs of almond butter, and loading my freezer up with mock meats; but the truth is you don't NEED to buy these things to eat a plantbased diet. Incredible #vegan smoothie bowl served in a real papaya! How neat is that?! I loved this so much, especially the granola made with oats which tasted like a cookie. The green smoothie was made from blended coconut water, spinach dates and barley grass. Ate this at @wholeywonder in Penang Malaysia and have added them as an All-Vegan spot on our site NomadVegan.com, where you can find vegan options around the world.

Gut healing Ginger Coconut Fried Rice w/ Sauerkraut ✨life in food is what gives us life. Literally. Fun fact: 65% of our immune system lives in our gut. ⁣
Fermented foods are amazing because the good bacteria helps maintain a healthy gut microbiome (it controls weight/ runs your metabolism). ⁣

Some amazing food probiotics are: Sourdough, yogurt, kimchi, sauerkraut, miso, kombucha, pickles. ⁣
If you’re a fan of kimchi fried rice, this is another take on it :)⁣
To make: ⁣
~ cook 1c rice in coconut milk and fresh ginger root. (They have this at the restaurant I work at, and I always crave it). It’s 𝐥𝐢𝐟𝐞 𝐜𝐡𝐚𝐧𝐠𝐢𝐧𝐠. ⁣
TIP: using leftover rice makes the best fried rice. ⁣
~ Sauté some garlic in avocado oil. Then add mushroom, and veggies of choice. Add 1 tbs coconut aminos. ⁣
~Mix in your rice. ⁣
~Then stir in sauerkraut. ⁣
~Stir fry for 1-2 minutes. Season with salt, pepper, chili flakes/sriracha. ⁣

Some amazing food probiotics are: Sourdough, yogurt, kimchi, sauerkraut, miso, kombucha, pickles. ⁣
If you’re a fan of kimchi fried rice, this is another take on it :)⁣
To make: ⁣
~ cook 1c rice in coconut milk and fresh ginger root. (They have this at the restaurant I work at, and I always crave it). It’s 𝐥𝐢𝐟𝐞 𝐜𝐡𝐚𝐧𝐠𝐢𝐧𝐠. ⁣
TIP: using leftover rice makes the best fried rice. ⁣
~ Sauté some garlic in avocado oil. Then add mushroom, and veggies of choice. Add 1 tbs coconut aminos. ⁣
~Mix in your rice. ⁣
~Then stir in sauerkraut. ⁣
~Stir fry for 1-2 minutes. Season with salt, pepper, chili flakes/sriracha. ⁣

Tempeh Tacos. Steam tempeh for 15 minutes to remove bitterness and allow it to soak in marinade better. Crumble and marinade in the following mixture. 1/4 cup hot water to dissolve the marmite, better than bullion garlic bullion and no chicken bullion. Add @traderjoes mushroom seasoning, juice from chipotles, garlic powder, onion powder, dried oregano and dried sage. Add a bit of oil to the mixture (I used the last bit from a jar of sundried tomatoes, but any kind will do) sauté on high heat just to crisp up
Serve on warmed corn tortillas, spread with smashed avocado seasoned with salt and lime. Pile on the tempeh, add red onion, diced tomato, cilantro and a chipotle aioli (@followyourheart vegannaise, minced chipotle and a bit of lime) top with a salsa of your choosing. We have really been liking the @herdeztraditions taqueria original roja when we don’t feel like making our own

Balsamic Glaze Stir Fry
1 can chickpeas
1 small head of broccoli cut into florets
1/2 cup sliced mushrooms
1/2 small red onion, diced
3 tbsp water
2 tbsp balsamic vinegar
1 tbsp coconut aminos or soy sauce
2 tsp maple syrup
3 cloves garlic, minced
1/2 inch fresh ginger, minced
1/2 tsp dry thyme
Pinch of cornstarch

In a small bowl combine balsamic vinegar, maple syrup, coconut aminos and corn starch. In a pan start by sautéing onions and mushrooms until onions are softened. Add in chickpeas, broccoli and water, then cover pan and allow to steam for about 4 minutes or until broccoli is bright green. Remove lid then add garlic, ginger and thyme and sauté until fragrant, about 2 minutes. Add sauce and sauté until sauce thickens and coats veggies and chickpeas. Serve with grain of choice (I chose quinoa).

Happy #meatless Monday🌱
Thai curry is one of my absolute favorite dishes and while nothing compares to making your own fresh curry paste, we sometimes just can’t find the necessary ingredients or have time to make it from scratch. I, for example, couldn’t find fresh lemongrass or kaffir lime leaves here (which would make this even tastier) but it still is a delicious and healthy meal that won’t take a lot of time to prepare!

𝐆𝐫𝐞𝐞𝐧 𝐂𝐨𝐜𝐨𝐧𝐮𝐭 𝐂𝐮𝐫𝐫𝐲 𝐖𝐢𝐭𝐡 𝐓𝐨𝐟𝐮
(2 servings)
Any veggies of choice
2 tbsp of vegan friendly green curry paste
1 cup coconut milk (canned)
1 cup coconut water *
1/2 tbsp coconut (or brown) sugar
1 tbsp coconut aminos
Juice of half a lime
1 handful Thai basil
Plus:
Pan fried tofu (see below)
Brown rice

Start by preparing the rice. I used organic quick cook brown rice, 8 minutes manual setting in the instant pot.
Curry:
Wash/peel and cut all of your veggies into bite size pieces. (I used sugar snap peas, bell pepper, spring onion, corn and peas here)
Heat up coconut milk and coconut water in a large wok/skillet.
Stir in curry paste, coconut sugar and coconut aminos and bring to a boil.
Lower the heat and add veggies to the wok.
If you have a couple of kaffir lime leaves and lemongrass (~ a crushed finger sized piece) add them now as well.
Let everything simmer for a few minutes until the veggies are slightly soft but not overcooked. Add lime juice and Thai basil at the end.
Taste and adjust saltiness if needed.

Tofu: **
For 2 servings I use half a block extra firm sprouted tofu. Press out excess liquid and cut it into large pieces. Heat up ~ 1 tsp of avocado (or other cooking) oil in a non stick pan and sear tofu on all sides until slightly browned, then add a splash of coconut aminos and/or any other seasoning of choice (I like mushroom umami seasoning) and pan fry for another few minutes.

*I wanted to keep things a bit lighter but can also use all coconut milk **To make the dish even easier, skip the pan frying step and let tofu simmer with the veggies.

I’m on such a chickpea kick and I can’t be stopped! One of my favorite dishes to make since becoming vegan is curry. I love curry because it’s a one pot meal and this one can be made in 30 minutes, but it packs a ton of flavor. Tonight I made some red lentil and chickpea curry with lime jasmine rice. This recipe that I’ve addapted from @kateveggiedesserts is a repeat make because it’s just that good! This curry is full of veggie protein, makes a great meal prep, and is also super freezer friendly for meals down the road.

Recipe:
Ingredients:
Tempeh
1 8 oz block tempeh
1 tsp soy sauce
1 tbsp Shaoxing cooking wine (optional)
1 tsp cornstarch
1 tbsp sesame oil

Stir Fry Sauce
2 tsp soy sauce
1 tbsp sugar
1 tbsp Chinkiang vinegar*
1 tsp sesame oil
¾ tsp cornstarch
1 tsp water

Stir Fry Ingredients
2 tbsp cooking oil
2 tbsp dried red chilies, divided
1 tsp Sichuan peppercorns
1 tbsp minced ginger
6 scallions, white parts only, cut to match size of peanuts
half a red bell pepper or carrot, chopped into quarter-inch dice
½ cup roasted peanuts
green part of one scallion, sliced thinly for garnish

INSTRUCTIONS
1. Blanch tempeh in boiling water, or steam, for 1-2 minutes (this reduces bitterness and softens it to soak up more flavors, optional but highly recommended). Cut tempeh into 1/2 inch cubes, then add to a bowl with the marinade ingredients and stir to coat. Set aside to marinate for 15 minutes. In the meantime, prepare the stir-fry sauce in a small bowl, stirring until sugar is dissolved.
2. Over medium heat, heat oil in a wok until shimmering. Add half of the dried chilies and peppercorns and fry until darkened. Remove the spices, leaving only the oil. Add ginger and green onions and fry for 30 sec. Increase heat to high, then add tempeh cubes (with remaining marinade) and the other half of the dried chilies and cook until tempeh is heated through. Add red bell pepper. Give the stir-fry sauce a stir and pour it into the wok, then toss until tempeh is evenly coated. This process should be quick and with high heat.
3. Turn off heat, add in the peanuts, and stir to make sure everything is incorporated. Top with green onions for garnish, if desired, and serve.
