[Belle Découverte] En ce samedi ensoleillé, direction les pentes de La Croix Rousse, non loin du jardin des plantes, afin de débroussailler les environs et apprivoiser « les mauvaises herbes ». Petit havre de paix à la décoration soignée, aux multiples plantes et autre végétation luxuriante, murs apparents et quelques tableaux décorants les murs. Une mezzanine et un petit canapé seront pour ce déjeuner mon petit salon privatisé. L’endroit confectionne une popote aussi bien végétarienne que vegan en respectant les produits et les gens qui les produisent. Au menu aujourd’hui : salade de betteraves colorées, pousses de moutarde, crème de raifort. En guise de plat principal : chou fleur rôti aux épices, topinambours à l’estragon, houmous citron confit et olives vertes. Pour finir en beauté : poire pochée aux épices, purée de patates douces, cacao et pamplemousse. Pas une once de viande et pourtant ce repas m’a sacrément mit une claque. C’est beau, savoureux, original et divinement bon. Je suis fan de cet endroit et avec autant d’originalité, de diversité et de goût, je suis près à renoncer régulièrement à la viande ou tout dérivé animal. Ever since I was a little girl my mom would make us smoothies, she would pack them filled with fruits, veggies, herbs all the nutrients that would keep us healthy and growing strong. As you may know I’ve carried this with me into my adult life! I love a good smoothie and make one almost everyday and now being under the weather nothing seems more appealing to me than a cold smoothie filled with all the good stuff to help me feel better. OMG. I am dying😂 My lunch main course enchilada was low on carbs and left a hole to fill but my goodness, my dessert did that and more! 🤪 The staff had made a massive portion of ‘Any port in a storm’ frappe which I duly devoured and consumed some of the excess too 😅 I don’t think I’ll ever eat again. Here's a great veggie burger recipe to make after you have enjoyed some Fat Tuesday Paczkis. It's super easy, affordable, flexible, fully plant based and yummy.

Ingredients
1lb can of Beans, drained and rinsed, or 1.5 cups cooked Beans (Suggestions: your favorite bean!)
-1/2 cup chopped Onion
-1 clove Garlic, minced
-2 cups diced Veggies (Suggestions: Carrots, Celery, Mushrooms, Chopped Spinach, Chopped Kale, Corn, Chopped Artichokes, Zucchini, Squash, Sweet Potato)
-2 teaspoons + 2 tablespoons Oil for frying (Suggestions: Olive, Coconut, Grapeseed)
-3 tablespoons Liquid Flavor (Mix and Match Suggestions: Mustard, Ketchup, Soy Sauce, Teriyaki Sauce, Vegan Worcestershire, Buffalo Sauce, Balsamic Vinegar, Salsa, Pasta Sauce, Marsala, Water)
-4 teaspoons Spice (We recommend combining at least two: Smoked Paprika, Cumin, Chili Powder, Italian Seasoning, Poultry Seasoning, Montreal Steak Seasoning, Black Pepper, Cayenne Pepper, Fennel, Oregano, Curry Powder)
-1/2 teaspoon Kosher Salt (Omit or Reduce if your liquid or spices contain salt)
-1 cup Dry Base Ingredient (Suggestions: Buckwheat, Unsweetened Protein Powder, Bread Crumbs, Cornmeal, Oatmeal)
-1/2 cup Texture Ingredient (Suggestions: Chopped Walnuts, Olives, Avocado, Sundried Tomatoes, Leftover cooked Rice/Quinoa/Bulgur, Parsley, Cilantro, Basil)

Instructions
-Heat 2 teaspoons oil in a pan over medium heat. Fry the onion, veggies, and garlic until softened, about 5 minutes.
-Transfer to a food processor and pulse with beans, liquid flavor, spice, salt until combined but still chunky. Pulse in the dry base and texture ingredient.
-Form into golf ball size balls and flatten into patties.
-Heat 2 tablespoons oil over medium-high heat. Fry patties 2-3 minutes per side until browned and heated through.
-Makes about 18 small patties.

Vegan junk food done right🙌🏻🌱

Whilst staying with my non-vegan friends this weekend I was determined to show them that you’re not ‘giving up’ anything by being vegan and you can still enjoy a binge night by making simple swaps!

We went to Sainsbury’s and got a vegan garden pizza, vegan nuggets and pizza express dough balls. They ate the garlic butter so we didn’t waste it but actually preferred dipping in ketchup ✌🏻🍅

Obviously eating things like this aren’t healthy all the time but ITS SO EASY to make vegan choices, and if you have this opportunity to help the planet - why wouldn’t you? 🌍 •

Miso and mushroom ramen with bao buns 🍄🍜 I didn't make the ramen myself from scratch for once. I used the @itsuofficial miso ramen carton from @marksandspencer and an M&S noodle and veg packet. It was realllly good but I think next time I'll add some fresh chilli and ginger to give it a bit more flavour 🌶️

What’s for lunch? Sprouts! Sprouts are both nutritious and delicious 😉. They are also a favorite of mine in a salad or sandwich. Today I made a tasty sandwich adding mayo, spinach, red onion and @followyourheart smoked Gouda on multi grain bread! 🌱

To say that I have a hummus addiction is an understatement. I love hummus in all different flavor variations, including Quinoa & roasted garlic and Beet & roasted sesame or the Classic 😋. Yesterday I was wondering what pancake day actually meant and I’m quite surprised I’ve never asked myself that before. Anyway, I found out that it’s because it falls on the day preceding lent... traditionally people would fast for the 40 days of lent and making pancakes beforehand were a way to use up foods such as milk, sugar and eggs. The ingredients in pancakes were also seen to sybolise four points of significance during this time of year:
Eggs: Creation
Flour: The staff of life
Salt: Wholesomeness
Milk: Purity

Lunch with a view 😍 back to @berkanofoods_ today with @jasmyngaddess & @_caitymarie269 we all enjoyed our tasty as sandwiches 🥪 pictured is the satay chickn and the honey mustard chickn and Jasmyn got the pesto chickn panini but was busy eating hers while I was taking this photo shoot (fair enough) 😂 Honestly, eating delicious food, with good company and a gorgeous view is very good for the soul 😇🥰

Balsamic Glaze Stir Fry Bowl 🍛🥦

Balsamic Glaze Stir Fry
1 can chickpeas
1 small head of broccoli cut into florets
1/2 cup sliced mushrooms
1/2 small red onion, diced
3 tbsp water
2 tbsp balsamic vinegar
1 tbsp coconut aminos or soy sauce
2 tsp maple syrup
3 cloves garlic, minced
1/2 inch fresh ginger, minced
1/2 tsp dry thyme
Pinch of cornstarch

In a small bowl combine balsamic vinegar, maple syrup, coconut aminos and corn starch. In a pan start by sautéing onions and mushrooms until onions are softened. Add in chickpeas, broccoli and water, then cover pan and allow to steam for about 4 minutes or until broccoli is bright green. Remove lid then add garlic, ginger and thyme and sauté until fragrant, about 2 minutes. Add sauce and sauté until sauce thickens and coats veggies and chickpeas. Serve with grain of choice (I chose quinoa).

One of my favourite celebrations of the year: PanCake DaY 🙌🏻 aka Shrove Tuesday for all my fellow UK friends out there! Who’s whipping themselves up a stack?
I thought it would only be fitting to share a favourite pancake creation of mine today; salted caramel protein pancakes, topped with all the goods; @miiro_uk chocolate coated peanuts, strawberries & @manilife_ peanut butter 👻 .
I simply used 2tbsp salted caramel protein, 60g flour, 1tsp baking powder, 150ml almond milk & 1/2tbsp apple cider vinegar for the batter, then cooked them on a medium heat before topping 👌🏻
