Winner winner chili dinner! 🥣 almost all of you guessed it was chili for tonight’s dinner. AND OKAY YUM. This recipe was a new one & called for a tablespoon of cocoa powder which I thought was different 🤷🏽‍♀️ but ended up working out! The chili is technology vegan but ya girl added cheese and sour cream. Andddddddd don’t tell my grandma but this bowl is part of a dish set she gifted us for the wedding...but it was too pretty to wait to use🙈

Full disclosure this is not my original recipe. It was shared with me a few years ago, and recently when I was craving it, I couldn’t find it anywhere! So I did my best to recreate it. ⁣

I love these for so many reasons. The combo of the lemon and tahini is magical. No added sugar, sweetened only with dates. The cacao nibs are unexpected but SO GOOD. Dried blueberries can be kind of hard to find sometimes, but if you can they’re great, a nice little chewy sweet surprise. ⁣

I also love that you don’t have to bake them, between the tahini and dates they’ve got stocking power, and just some time in the freezer will hold them together. ⁣

HI GUYS! I’m so excited to share this recipe.. If you’re an Aussie, you must know the Arnotts Mint Slice Cookies. These were the BEST treat after dinner with that chocolatey minty goodness. Here’s my take on them with the help of @macr0mike mike protein and the best @pana_organic chocolates 😍 (vegan and gf)

FOR THE COOKIE BASE
WET
🍪 1/3 cup of coconut oil
🍪 2 tbs maple syrup
🍪 1/4 cup of coconut sugar
🍪 1/4 cup of almond milk
DRY
🍪 1 cup of almond or oat flour (I used oat flour blended in the blender, but use almond if more gf conscious)
🍪 1/4 cup of @macr0mike mike choc mint protein 🍪 1/4 cup of cacao
🍪 1/4 tsp baking soda
🍪 1/8 tsp of salt

Combine the wet ingredients and then add in dry until you get a cookie dough consistency (soft but mouldable). You might need to add more flour if it’s too wet, it does depend on the flour you use.

HI GUYS! I’m so excited to share this recipe.. If you’re an Aussie, you must know the Arnotts Mint Slice Cookies. These were the BEST treat after dinner with that chocolatey minty goodness. Here’s my take on them with the help of @macr0mike mike protein and the best @pana_organic chocolates 😍 (vegan and gf)

FOR THE COOKIE BASE
WET
🍪 1/3 cup of coconut oil
🍪 2 tbs maple syrup
🍪 1/4 cup of coconut sugar
🍪 1/4 cup of almond milk 
DRY
🍪 1 cup of almond or oat flour (I used oat flour blended in the blender, but use almond if more gf conscious)
🍪 1/4 cup of @macr0mike mike choc mint protein 🍪 1/4 cup of cacao
🍪 1/4 tsp baking soda
🍪 1/8 tsp of salt

Combine the wet ingredients and then add in dry until you get a cookie dough consistency (soft but mouldable). You might need to add more flour if it’s too wet, it does depend on the flour you use.

I loved making this cheesecake...and pretty sure it’s been my breakfast all week 😂 RP @hungryharvest: Eating plant-based doesn’t mean sacrificing flavor or fun! It can be unexpected and delicious like in this Vegan & Paleo Key Lime Cheesecake from @emily.likes.food. Rich and creamy, it requires no baking, no dairy, no gluten and no refined-sugars! ⁣

Do your meals look like this on a regular basis? Let me know below 👇⁠

This is a simple way to put some structure on your meals, obviously, it won't be laid out perfect each time, but are you getting a combination of foods in each meal to ensure you're getting a wide range of foods with a spread of different nutrients. ⁠

So as you're building a meal stop and think, is there fruit or veg in here? Can I add some more? Is there a protein source? Have I got some fat like nuts, seeds, avocado etc and finally do I have a carb source? ⁠

After a while it'll become second nature and you'll have a bank of recipes that fit your goals.⁠

Some examples of meals -⁠

Tempeh, sweet potato, roasted veg & avocado⁠

Chickpeas, quinoa, salad and a tahini dressing⁠

Soup with lentils, sweet potato, carrot, onion, garlic & coconut cream⁠

Back to the food: A veggie wrap is a great way to increase your veggie servings. I used @mariaandricardos quinoa tortilla, and added hummus, spring mix, cucumber, tomatoes, roasted garlic @clekraut, and avocados. For added flavor, you can dip it in some plant based ranch dressing 🙌🏾🔥

Sweet Sticky Tofu Recipe 💚 - Served with stir fry garlic broccoli & mushrooms +protein noodles made from pea protein! ⁣
Sweet Sticky Tofu:⁣
• 1/2 block extra firm tofu, drained & pressed all the liquid out⁣⁣⁣
• 2 tbsp soy sauce⁣⁣⁣
• 2 tbsp maple syrup⁣⁣⁣
• 1 tbsp sriracha sauce⁣⁣⁣
• 1 tsp garlic powder⁣⁣⁣
• 1/2 tsp ground ginger⁣⁣⁣
• 1 tbsp cornflour ⁣⁣⁣
⁣⁣⁣
1. Prepare the tofu by draining all the liquid out of the packaging, then gently pressing the tofu in between two clean tea towels until dry. Slice the tofu into bite-size cubes.⁣⁣⁣
⁣⁣⁣
2. Whisk all the sauce ingredients together in a small bowl until smooth and well combined.⁣ Stir in some sesame seeds for a crunchy texture.⁣⁣
⁣⁣⁣
3. Dunk the tofu cubes into the sweet sticky sauce until the tofu cubes are covered, then marinade them for 30 minutes by covering with clingfilm and placing them into the fridge to chill and soak up all the flavours.⁣⁣
⁣⁣
4. Transfer the tofu into a heated frying pan/wok with a little spray oil. Cook for about 10 minutes on a medium-high heat setting until sticky and firm.⁣⁣⁣
⁣⁣⁣
5. Serve with your stir fry veggies and noodles! Enjoy! ⁣⁣⁣

⁣⁣ps. If you have any sauce left, I normally drizzle it all over the food in my bowl 😋⁣

AFRICAN PEANUT STEW 🥜

1 jalapeño-diced
4-5 kaffir lime leaves (2g) remove stem -minced
1 lime-zest and cut in half
1 Diced onion
1 Diced yam - sweet potato
Kale - chopped 1/2 inch pieces
Tofu diced into squares
Broccoli
1 can coconut milk
2 tbsp tamarind concentrate
1 tbsp garlic
1 tbsp ginger
1 tbsp brown sugar
2 tbsp peanut butter
1 tsp cumin
1 tsp coriander
1/2 tsp smoked paprika
1/2 tsp cinnamon

COOKING INSTRUCTIONS
* Fry in pan tofu squares till little brown set aside
* 2 tbs oil in large saucepan over med high cook onions and sweet potatoes 5 min till tender and golden.
* Add broccoli cook 1 min
* Stir garlic ginger, spices, jalapeño to taste cook 1 min
* Add coconut milk, brown sugar, peanut butter, tamarind, lime zest, kaffir leaves, and 1 cup of water * Add tofu
* Stir Until evenly mixed
* Season to taste salt pepper and half lime juice
* Bring to simmer. Reduce to med. cook for 15 min until sweet potatoes are tender
* Stirs kale cook 1-2 min
Serve with quinoa and garnish with peanut and remaining lime juice to taste

A new decade means new goals, bigger dreams, and more personal growth. Going vegetarian was one of the best decisions I have personally made, and going completely plant based is the goal for this decade. I started this blog in the hopes to keep myself motivated to meal prep and stay the course, and hopefully help inspire others to incorporate more plants into their lifestyles as well. I was fortunate to find a partner who loves eating plants as much as I do, and have had an amazing year exploring new recipes and restaurants, and witnessing how a plant based diet has changed both of our lives mentally and physically. Le estoy dando un chance al jugo de apio. Llevo dos semana tomando 16 oz en la mañana. Se que ya noto algunas diferencias pero esperaré un poco más para hablar de mi experiencia.

💥Tempeh Veggie Lasagna 💥 This was delicious and packed with veggies but next time would sub out the smoky tempeh for plain tempeh (that’s what I was hoping for in the first place but all I had in the fridge were the smoky strips 🤷🏻‍♀️). It was still delicious and enjoyed by everyone! Lasagna is a biweekly staple in our house but the best part is I make it just a little bit differently every time depending on what is in the fridge! Always a winner!

In Order Of Layers:
1. @luciniitalia rustic tomatoe basil sauce
2. Alternating rows of roasted Italian seasoned sliced zucchini and eggplant
3. Roasted mushrooms and finely chopped romanesco
4. Strips of @lightlifefoods tempeh
5. Finely chopped spinach with lots of nutritional yeast
6. @explorecuisine lentil lasagna (just add without boiling first)
7. Repeat steps 1-6 (except 4)
8. Top with extra sauce. Add post oven nutritional yeast, chopped basil and slices of kalamata olives! And crushed red pepper for the adults!

Coconutty tofu seaweed soup with rice! 🥥🍲🍚 It’s very similar to something I made awhile back, but with a few changes. I still baked the tofu and used onions, mixed bell peppers, mushrooms, onions, and seaweed, but I omitted the celery and used white rice (which I cooked in the same pot because I was lazy) instead of noodles. I’ve probably made spring rolls 20-30 times, and it only just occurred to me today to YouTube how to actually roll them 🤯 Go figure, it makes a huge difference 😎 so looks like I’ll be quitting my job and opening a spring roll restaurant because just look at these puppies 🤩 inside is cilantro 🌿 lettuce 🥬 tofu and @traderjoes broccoli slaw (food processed). Not pictured: sriracha peanut butter sauce ⭐️

VITAMIN B12 DOES NOT ORIGINATE IN ANIMAL PRODUCTS. 🐄⠀

It is actually found in dirt/from the ground. Animals don’t wash their produce before eating it and, therefore, consume the B12 which resides in their gut.🦠 It then transfers to humans when we eat animal products.⠀

We as Vegans, however, are thoroughly washing off our fresh produce as pesticides and chemicals are used. This means we wash all the vitamin B12 off the plant prior to consuming it.⠀

Okay, so how much B12 do Vegans need? I recommend taking at least 4-7 mcg in supplement form per day. (Don’t worry, if you get too much, the body disposes it through your urine.)⠀

I personally eat enough Nurtirtional Yeast to supplement all my vitamin B12! 🤪

VITAMIN B12 DOES NOT ORIGINATE IN ANIMAL PRODUCTS. 🐄⠀

It is actually found in dirt/from the ground. Animals don’t wash their produce before eating it and, therefore, consume the B12 which resides in their gut.🦠 It then transfers to humans when we eat animal products.⠀
⠀
We as Vegans, however, are thoroughly washing off our fresh produce as pesticides and chemicals are used. This means we wash all the vitamin B12 off the plant prior to consuming it.⠀
⠀
Okay, so how much B12 do Vegans need? I recommend taking at least 4-7 mcg in supplement form per day. (Don’t worry, if you get too much, the body disposes it through your urine.)⠀

I personally eat enough Nurtirtional Yeast to supplement all my vitamin B12! 🤪

🌶️ Spicy steamed dumplings! 📷 by @woon.heng 🚨🚨Recipe:
~ 2 lbs of bok choy, washed and julienned
~ 1 package of wonton/dumpling wrapper
~ 1 box of firm tofu, drained & mashed
~ 1/4 cup of saute mushrooms
~ 1 tablespoon black bean sauce
~ 1 tablespoon corn starch
~ salt to taste
~ oil
Spicy sauce (whisk all ingredients in a bowl until sugar dissolves):
~ 3 tablespoons soy sauce
~ 2 tablespoon chili oil with chili crumbs
~ 1 tablespoon sesame oil
~ 1 teaspoon Chinese black vinegar
~ 1 teaspoon grated ginger
~ 1 teaspoon sugar

Place julienned bok choy in a large bowl with 2 tsp salt, using your hands, gently massage salt into veggies. Set aside for 15-20mins. In a heated pan with 1 tsp oil, sauté mushrooms until lightly brown, add black bean sauce and stir until well combined, set aside and pan fry mashed tofu for 2 minutes (or until brown), season with salt. Place both ingredients in a big bowl.

Using a cheesecloth or just with your palms, squeeze as much liquid out as possible from your bok choy. Add tofu mixture, starch, combine well & season if needed.

Place a dollop of mixture in the middle of your wrapper, moisten side with water and pleat to seal. Place wontons on a steamer basket and steam for 15mins in high heat. Remove and serve warm with spicy sauce. You can serve sauce on the side or as pictured.

Vegan Tahini Caesar Salad by @ginabnutrition 🤤 So quick, simple, and satisfying!​
​For the caesar dressing, combine in a small bowl: 3 tbsp tahini, 3 tsp soy sauce (or tamari for gluten free) 2 tbsp nutritional yeast, 2 tsp garlic powder (to taste), the juice of 1/2 a lemon, 1 tbsp extra virgin olive oil, 1 tsp dijon mustard + 2-3 tbsp water (or more depending on your preferred consistency). ​
​Taste it and add anymore of the ingredients to your preference, then stir in 1 tsp capers (optional). Pour over chopped romaine or kale (add it gradually so you don’t add too much!) + top with lots of crunchy roasted chickpeas.

Crispy Tofu Tenders by @anniinaskitchen ❤️ So delicious and super crispy! Get the recipe:

Recipe for 18 pieces:
400g (14oz) Extra firm tofu
Cornstarch
Plant based milk, unsweetened
2,5 dl (one cup) Panko style bread crumbs
2,5 tbsp olive oil
1 tsp paprika powder
1 tsp salt
Black pepper
Dried basil
Hot sauce + melted vegan butter
Dip: vegan mayo and bbq sauce

Cut the tofu into sticks and put between paper towels. Place some weights over the tofu, let drain for about 15 min.
Preheat oven to 220c (425f).
Put the cornstarch in one bowl, the plant milk in a second bowl, and mix together panko, oil, paprika, salt, pepper and dried basil in a third bowl. Pour the crumb mixture onto a plate.
Dip the tofu sticks first in cornstarch then in milk and then roll in crumb mix and place to lined baking sheet. Bake in a oven for 25 min, flip and bake for 15 min until the tofu is crispy.
Brush tofu sticks with hot sauce + melted vegan butter mix and enjoy!

My Sweet Sticky Tofu Recipe seems to be quite popular! So I’d thought I’d bring it back up to my feed and share the recipe again! 💚 - I served it with stir fry garlicky broccoli & mushrooms and protein noodles made from pea protein! Think I’ll make this again tomorrow for my dinner! Happy Wednesday friends! ⁣

Sweet Sticky Tofu:⁣
• 1/2 block extra firm tofu, drained & pressed all the liquid out⁣⁣⁣
• 2 tbsp soy sauce⁣⁣⁣
• 2 tbsp maple syrup⁣⁣⁣
• 1 tbsp sriracha sauce⁣⁣⁣
• 1 tsp garlic powder⁣⁣⁣
• 1/2 tsp ground ginger⁣⁣⁣
• 1 tbsp cornflour ⁣⁣⁣
⁣⁣⁣
1. Prepare the tofu by draining all the liquid out of the packaging, then gently pressing the tofu in between two clean tea towels until dry. Slice the tofu into bite-size cubes.⁣⁣⁣
⁣⁣⁣
2. Whisk all the sauce ingredients together in a small bowl until smooth and well combined.⁣ Stir in some sesame seeds for a crunchy texture.⁣⁣
⁣⁣⁣
3. Dunk the tofu cubes into the sweet sticky sauce until the tofu cubes are covered, then marinade them for 30 minutes by covering with clingfilm and placing them into the fridge to chill and soak up all the flavours.⁣⁣
⁣⁣
4. transfer the tofu into a heated frying pan/wok with a little spray oil. Cook for about 10 minutes on a medium-high heat setting until sticky and firm.⁣⁣⁣

5. Serve with your stir fry veggies and noodles! Enjoy! ⁣⁣⁣

⁣⁣ps. If you have any sauce left, I normally drizzle it all over the food in my bowl 😋⁣
