These carrot cake oats went down well when I posted them on my story a couple weeks ago, so I figured they deserved their own post🧡

For the oats themselves I used pre-soaked plain @simplyseedz porridge and added in a small grated carrot, a scoop of @thatprotein pumpkin & chia powder, cinnamon and some almond milk (all cooked on the hob)

But the real game changer was mixing some @nushfoods plain almond cream cheese with some @sweetfreedomuk light syrup- then I stirred half the mixture into the porridge and saved the rest for topping, alongside some salted caramel syrup, @meridianfoods cashew butter, raisins & cinnamon🍂 seeing this pic again is giving me CRAVINGS I swear •

Fajita Chickpea-Quinoa Bowl by @janetsmunchmeals 🌿 A delicious bowl that's full of flavor and texture!

​How to:
Veggies: slice 1 bell pepper, 2 chopped celery stalks, 1.5 cups broccoli florets, 1/4 medium onion, 3/4 cup mushrooms. Add to large skillet with 1 teaspoon each chili powder, kosher salt, garlic powder, oregano, cumin, 1/4 teaspoon black pepper 🔥 Saute for 8 minutes over medium heat in a couple teaspoons avocado oil, stirring frequently until crisp-tender🌱🌿

Cook quinoa. Can cook 1 cup dry quinoa and use leftovers for other meals during the week! 👍
.
Spicy tahini sauce: 2 T tahini, 1/4 teaspoon each kosher salt and chili powder, juice of 1 lemon, 1 teaspoon hot sauce, and about 2 T water (add another T water to thin if desired)
.
Roast chickpeas while veggies cook. Place 1/2 can drained, rinsed and dry chickpeas on a baking sheet and drizzle with oil of your choice. Toss, sprinkle with generous pinch of cumin, chili powder, salt. Toss again and roast at 400 degrees Fahrenheit for 15 to 20 minutes.

Assemble! Place quinoa in large dish with veggies, chickpeas, spicy tahini sauce. Served with arugula, sliced cherry tomatoes, mashed avocado and fresh cilantro!

💚Beetroot, Potato and leek soup💚 To please my poorly toddler, today’s mission was to try and find the brightest, most colourful soup recipe on the internet, and this one from @choosingchia popped up. As well as being such a lovely ruby red colour, and being packed with awesome veggies, it tasted great too and most importantly was a definite win with the toddler ”red soup tasty mama” 🙌🙌🙌

This isn’t Bristol but I need to share this with you! I went to Koj in Cheltenham (@kojcheltenham) on Friday and it was one of the most delightful dining experiences I’ve ever had outside Bristol. It’s around £20 for a return from Bristol on the train and there’s some really great restaurants and pubs to visit! 😍

Having watched Andrew Kojima on Masterchef several years ago, I was really excited to visit and meet Koj himself. The menu is sushi free which I love, as so many Japanese restaurants in the UK sell Westernised versions of sushi because white people like it despite it only being a small part of Japanese cuisine. Bold in his assertions as Andrew is, he’s even titled his new cookbook ‘No Sushi’ which is available to preorder now. ❌🍣

The menu is pretty straight forward in appearance and brimming with enticing small plates created by Koj and head chef Robin Stock; I didn’t understand everything on there but I ordered with the confidence of someone who’s partial to almost all flavours. If you’re not, then you must peruse the website as it’s one of the most useful and clear online menus I’ve ever come across. 👌🏼

After an incredible Okinawa Old Fashioned at the bar, our food arrived intermittently in true Japanese fashion and we grazed our way through our ‘Bunzai’ selection which includes miso soup, appetiser, bun, grazing dish and a side dish for £28 per head. Highlights for me were the both roasted and pan fried chunks of pumpkin, glazed with barley miso and walnut butter, and the crispy shiitake mushrooms, with a firm and crispy texture unlike anything I’ve tried before (that coming from someone who eats all the mushrooms) 🍄

Photos are few, and sub-par as I didn’t go with the intention of posting so only took quick phone photos for my own albums. Hope you’re inspired to visit, the last train home is 23:03 so you don’t even have the stay the night. ✌🏼

Garlic Hasselback Sweet Potatoes 🥔

My house is on a big sweet potato kick lately and these baked hasselback sweet potatoes are going to ruin all other ways of baking potatoes for you … except for sweet potatoes fries of course😏. Make a big batch and top these crispy little guys off with some simple cashew cream, tahini or guacamole and you have an epic easy meal or side for the whole week. TRY THESE! ⤵️

Ingredients:
6 small organic sweet potatoes, scrubbed
2 tbsp olive oil
5 cloves of garlic, thinly sliced
1 tbsp fresh parsley, finely chopped + more for topping
1/4 tsp dried thyme
A big pinch of salt & pepper
2 tbsp green onions, sliced

Topping ideas:
Tahini
Cashew cream
Vegan sour cream
Guacamole
.
Instructions:
Start by washing and drying sweet potatoes. Using a sharp knife, cut thin slices starting from one side of the potato across being careful not to cut all the way through the potato (you want the potatoes to stay intact). Whisk together all of other ingredients to make a marinate. Rub mixture into each sliced potato making sure to get some of the garlic into the crevasse of the potatoes. Bake in a preheated oven at 450 degrees F for about 1 hour or until potato edges start to crisp. Top with fresh parsley, green onion and something creamy like my ideas above.
. *To make a simple cashew cream: blend together 1 cup soaked cashews, 3-4 tbsp water, 2 tbsp lemon juice & a pinch of salt until smooth.

🌱Queso Semicurado al curry 🌱 Muy buenas noches!! Nos ha encantado esta versión de Semicurado, el sabor potente del curry amarillo con el toque de hinojo y el mix de semillas le dan un sabor 👌
Receta:⠀
🌱400 gr anacardos 🌱1 cucharada de miso de arroz sin pasteurizar.⠀
🌱8 probioticos (Solgar 40+)
🌱2-3 Cucharadas de agua⠀
🌱1 Cucharadita de semillas de hinojo (infusión)
🌱3 Cucharadas de curry amarillo de @frutosecoonline
🌱Mix de semillas de @frutosecoonline
1-Remojamos los anacardos toda la noche.⠀
2- Los trituramos con el miso y el agua con la ayuda de un procesador de alimentos. ⠀
3- Cuando tengamos una crema fina y sin grumos, añadimos los probioticos y procesamos 2 minutos más.⠀
4- Los tapamos con una gasa o tela de quesos y los dejamos a 30 grados durante 24 horas. Si no tenéis posibilidad de dejarlos a esa temperatura dejadlos más tiempo, 48 horas.
5-Una vez pasado el tiempo de fermentación añadimos el curry, el hinojo y procesamos de nuevo durante dos minutos.⠀
6-Damos forma a nuestros quesos (salen 3) y los bañamos con el mix de semillas. ⠀
7-Dejamos madurando unos días y los disfrutamos en buena compañía.⠀ Y con esta propuesta participamos en el reto de @losmartesvegan

Started from the bottom now we here 😁

I am no different to you. I didn't just eat meat, I loved it. Every meal was chicken or beef. I especially loved chicken skewers and sirloin steaks. I was a weirdo who ate cooked mince with no salt or seasoning. I even judged people who didn't eat meat, like how boring their lives must be.
.
I did the 'normal' thing and if I saw any farm or slaughterhouse footage I would look away. I didn't want to know about it, because I loved the taste of meat and wasnt willing to give it up, yet I called myself an animal lover.
.
The guilt built up so much I just thought for a period of time I'd give meat a break and see how I went. I had no idea what amazing food tasted like until I went on a plant based diet. Every flavour seemed enhanced and the thought of eating meat all of a sudden seemed so boring to me. The smell now repulses me.
.
My only regret was not doing it sooner. So many animals suffered because of me but the best apology was changing my behaviour going forward and deciding to never pay for an animal to suffer again.

There’s a lot of bad information out there when it comes to nutrition. ⁣

And frankly, ever since “The Gamechangers” came out on Netflix, things have gotten REALLY BAD 😅⁣

But I digress as I don’t want to go down that vegan rabbit hole .. 🐰⁣

Growing up we were taught about nutrition from the government. The American Heart Association (AHA) and the Federal Food & Drug Association (FDA) that we need to be eating a certain way.⁣

And this leads to doctors telling us that we need to be eating a certain way. ⁣

But the fact of the matter is, we need to be eating in a way that is BEST FOR OURSELVES. ⁣

Don’t @ me and tell me that eating red meats is bad or unhealthy. ⁣

If you do I invite you to find me, and pay for tests to be done on me to prove how “unhealthy” I am 😂⁣

The fable of cholesterol being bad for you is a joke.⁣

Sure, anything too high or out of moderation is unhealthy. And cholesterol is no exception.⁣

But cholesterol actually has a ton of benefits and does a ton for the body, including being used to produce hormones such testosterone for men, estrogen for women, cortisol, and vitamin D.⁣

On top of that, there has actually been studies done that prove that countries with people who tend to have higher levels of cholesterol, actually live longer! ⁣

And anecdotally, cholesterol has been said to raise strength when working out. ⁣

Please, find me a peer-reviewed study that says cholesterol is bad 🙂⁣

Bowl verde🌿💛tiene garbanzos, verduras salteadas, aceitunas verdes, lechuga, palta, arroz y semillas de ajonjolí. Con un aliño cremoso y un poco ácido🍋

Vegan Mushroom Stroganoff by @elavegan 🍄 Tag someone who'd love to try this delicious recipe! ​
​Recipe: 2 Servings
1 onion diced
2-3 cloves of garlic, minced
1 tbsp vegetable oil
11 oz mushrooms, sliced (300 g)
4 tbsp white wine (optional)
1 tbsp tamari or soy sauce
3/4 cup vegetable broth or water (180 ml)
3/4 cup plant-based milk/cream (180 ml)
2 tbsp cornstarch
Spice mixture: 1 tsp onion powder, 1/2 tsp garlic powder, 1/2 tsp smoked paprika, a pinch of chili flakes, sea salt & pepper to taste
1 tbsp nutritional yeast flakes (optional)
Fresh thyme leaves and/or parsley (and/or tarragon), chopped
Serve with brown rice or pasta of choice

Instructions
Heat oil in a large pan/skillet, add onion and fry for about 5 minutes. Add garlic and fry for a further 1 minute.
Now add the mushrooms and fry over medium heat for about 5 mins.
Pour in white wine (optional), vegetable broth, tamari (or soy sauce), and the spice mixture. I love adding nutritional yeast flakes as well but that's optional! Bring to a boil.
Add cornstarch to the plant-based milk or cream and stir to dissolve.
Pour the milk/cream mixture into the pan and cook on low-medium heat for about 10 minutes until the sauce thickens. Taste and adjust seasonings as to your preference.
Add fresh thyme leaves and/or parsley and/or tarragon to taste! Enjoy with brown rice or pasta of choice!

This is a legit and actual bibimbap. It’s rice mixed with leftovers in the fridge. I had some red cabbage, a little kale (sautéed with oil salt and pepper), carrots, steamed broccoli, shiitake mushrooms (sautéed), mashed yams, and some cucumber kimchi. I also had some leftover bibimbap sauce (gochujang, soy sauce, mirin, rice wine vinegar, maple syrup, black pepper) and drizzled some over the top. Finished it off with a sprinkle of sesame seeds. I am never not satisfied after a bowl like this one. Never!

Kung Pao Style Cauliflower ⠀

2 small heads cauliflower (makes around 3 1/2 cups of florets)⠀
1 tbsp soy sauce + 1 tsp cornstarch, mixed⠀
__⠀
3 tbsp oil ⠀
4 cloves garlic, minced⠀
1/4 cup sliced onion leeks⠀
1 red bell pepper, sliced ⠀
1 green bell pepper, sliced⠀
1/4 cup peanuts, optional⠀
Dried chili, optional⠀
1/4 tsp Szechuan peppercorns, optional ⠀
__⠀
Sauce ⠀
1 tbsp Chinese black vinegar ⠀
3 tbsp soy sauce⠀
2 1/2 tbsp coconut sugar ⠀
3 tsp cornstarch + 2 tbsp water ⠀
__⠀
1. Mix all the sauce ingredients together except the cornstarch and water. ⠀
2. In a bowl, marinate the cauliflower in soy sauce and cornstarch mix for 10-15 minutes.⠀
3. Add 1 tbsp oil in a pan. Place the marinated cauliflower and cook for 15 minutes until tender. Cover while waiting for the cauliflower to cook in the steam. Set aside cooked cauliflower. ⠀
4. Add 2 tbsp of oil in a pan. Once hot, sauté the garlic, onion leeks, bell peppers, Szechuan peppers, and dried chili (if using).⠀
5. Add in the sauce mixture. Once it boils, add in the cornstarch and water mixture. Lower heat and then mix well. Add in the cauliflower. Cook until the cauliflower absorbs the sauce and is thick. .⠀

Kale Ravioli with Spicy Bolognese Filling by @vegaliciously 🔥 This recipe is perfect if you have some leftover kale (or even spinach) in the fridge! .
INGREDIENTS (4 servings):
for the bolognese
50 g dried soy meat (soaked in boiling water)
1 onion (minced)
2 garlic cloves
1 carrot (minced)
1 chili (minced)
2 tbsp oil
1 cup red wine
1 can pelati
1 tbsp tomato paste
for the ravioli:
100 g kale
250 g all purpose flour
a splash of water
METHOD
1. Rinse and drain the “meat”.
2. heat a saucepan over medium heat, add in oil, onion, garlic, carrot and chili and sauté for 5-8 min.
3. Add in soy meat and brown for 5 min then pour in wine and cook until evaporated.
4. Add in pelati and tomato paste and simmer at low temperature for 1 hour.
5. For the ravioli, steam kale for 15 min then place in a food processor with 100 g flour and process until combined. Add in the rest of the flour and process until you reach a sandy consistency.
6. Form a ball with the dough and roll it out until 2 mm thick.
7. Press a glass into the ravioli sheet and set the ravioli circles over a floured surface.
8. Place 1 tsp of filling in the middle of a circle, moisten the edges of the dough then cover with another circle, press the edges and set aside.
9. Boil the ravioli for 5 min and serve with a drizzle of olive oil and some vegan parmesan.

Nourishing Bowl by @plantbasedrd 🥣 Filled with massaged kale, baked tofu, baked sweet potato, cucumber, roasted Brussel sprouts, mushrooms, some spicy kraut and lots of tahini!

For the baked tofu, set the oven to 400F. In a container just toss together 1 tbsp tahini, pinch of salt and 1 tbsp sweet chili sauce. Take the pieces of tofu and place on a lined baking sheet. Place in oven and bale for 20 to 25 minutes.
