SOPA DE ZANAHORIA Y ZUCCHINI
Con un día de lluvia y frío como hoy, lo mejor es una sopa caliente 🥣
Por acá les dejo la receta:
• 2 zanahorias
• 1 zucchini amarillo
• 1 ajo
• 1/2 cebolla • 2 tazas de leche de almendras
• 1/4 taza de Marañones
• sal/pimienta
• Orégano
.
Proceso:
En un sartén con aceite coco sofreí la cebolla con el ajo la zanahorias y el zucchini unos minutos
Y lleve a la licuadora con los demás ingredientes 🌪
Ya licuado todo pase la sopa a una olla mediana para calentar y dejar que hirviera.
Serví con quinoa crocante y algunos marañones tostados

Creamy Lemon Pasta Sauce .

🍋It’s Meyer Lemon season! This is one of the first vegan recipes I tried. My initial reference was from @foodnetwork but I’ve adapted it quite a bit over the years. You don’t have to use Meyer lemons, but I always do when I can get them. .
🍋Below is a draft recipe that I’ve been using lately that we enjoy. If you happen to try it and have any constructive feedback, I welcome it!

🍋Basic approach is to combine the below sauce ingredients in the blender, then simmer over very low heat to thicken it while the pasta is cooking. I usually season with the lemon extract and oil while the sauce is thickening. .
🍋For the sauce: 1/2 cup soaked cashews (or boil 10-20 mins) | 4 oz vegan cream cheese | 1.5 to 2 cups of plant milk ... depending on how thick you want it) | 3 heaping T Nutritional Yeast | Juice & Zest of one whole Lemon

🍋Season in the Pan while heating over very low heat with~ 1 tsp lemon extract | ~1 tablespoon Lemon Oil | Salt and Pepper | . 🍋Garnish with Parmesan Cheese | Pine Nuts | More Lemon Zest | Scallions as desired

🍋I used @violife_foods cream cheese / Parmesan and @elmhurst1925 plant milk. We sometimes throw in veggies or greens too but this time I just wanted to drink the sauce so I served it with these whole wheat conchiglie since they hold the sauce like little cups 😆 .

Eccoci giunti all’appuntamento #oggicucinoconleamiche . L’ingrediente della sfida sono i ceci scelti da @babbuinoghiotto.
Bando alle ciance, vi vado subito a raccontare della mia ricetta!!
Ho sbollentato un cavolfiore di media grandezza e scongelato una busta di ceci precotti da 400 gr. In una wok ho aggiunto olio e un’intera cipolla bianca tagliata a fettine sottili. Dopo averla lasciata rosolate qualche minuto ho aggiunto un bicchiere d’acqua a lasciata andare a fuoco medio finché non iniziava ad ammorbidirsi. Quindi ho aggiunto il cavolfiore e un’altro bicchiere di acqua insieme a un vasetto di passata di pomodoro. Ho aggiunto i ceci, aggiustato con sale e origano, mescolato e chiuso con il coperchio. Ho lasciato andare a fuoco medio finché il sugo non si è ristretto. Gli ultimi minuti ho tolto il coperchio e aggiunto una decina di olive nere. Ho trasferito il tutto in una ciotola di coccio , spolverato la superficie con grana grattugiato e gratinato in forno per 15 minuti. E #buonappetito. La ricetta non riporta pesate precise perché è stato fatto tutto sul momento, assaggiando di continuo. Non importa quanto grande è l ad cipolla o il cavolfiore, continuate ad assaggiare perché è un mix di sapori che vi stupiranno!!

i learned about this “banana split” in a kids nutrition session and although i’m allegedly an adult, it’s a favourite.

🍌 sliced banana topped with yogurt of choice, defrosted wild blueberries, and sunflower seeds. chocolate chips would also be good...or raspberries...or anything.

Quinoa, black beans, onion, corn, spinach, all topped with @daiyafoods cheeze and roasted brussel sprouts on the side! I ended up only being able to eat one pepper half, and estimate this meal to be about 3sp on #mywwpurple 💜.

Different blog post than what I’ve been writing lately but I was so excited to try @bitetoothpastebits that I wanted to share them with you all. #notsponsored @bitetoothpastebits are zero waste, no plastic tube toothpaste in a tablet form, in a glass jar. You know how much I love a glass jar 🤩I thought I’d be a good person to write an honest review because I’m a mom (the blog post shares what my kids think of them!) and I am pretty picky about my teeth 🦷 I have some helpful hints for moms curious about trying them (charcoal tastes good but leaves behind visible spit rivers just like traditional electric blue kid toothpaste... so choose plain white mint for kids!) and if you want the link to the post, comment below or leave me a 🦷🦷🦷🦷

I was and I am a big pasta lover. The cheesier & creamier, the better. When I gave up cow dairy; I gave up pasta altogether for a couple of years. Big mistake. Huge. I developed this recipe last year, and I can honestly say everyone who tries it loves it. 🌱 Roasted veggies and homemade tzatziki! by @micadeli_ with slices of potatoes, broccoli, carrots, snack pepper and onions.make them with 4 tablespoon of olive oil and a tablespoon of cumin and paprika. Mix well and bake 35-40 min in the oven at 200c until golden and crispy.

🌱💚 Spinach Ravioli with Cashew-Truffle filling by @vegaliciously

Ingredients
250 g fresh spinach
250 g all purpose flour
a splash of water
150 g cashew nuts
50 g macadamia nuts
2 tbsp nutritional yeast
1/2 tsp salt
4 tbsp truffle oil

METHOD
2. place the spinach leaves in a saucepan and sauté for 5 minutes. Let cool down completely.
3. Place spinach in a food processor and process until creamy. Add in little by little flour and splash of water and process until the dough sticks together.
4. Cover the dough and let rest for 30 minutes.⠀
5. for the filling, place the nuts in a bowl and cover with boiling water. Set aside for 30 minutes.
6. Rinse the nuts and Place them in a food-processor. Add in a splash of water, truffle oil, salt and nutritional yeast and process until perfectly creamy. cover and set aside.
7. Using a pasta machine roll out the dough until it’s about 2 Millimeters thick.
8. Press a glass into the ravioli sheet and set the ravioli circles over a floured surface.
9. Each raviolo is made of 2 circles; put 1 tsp of truffle cream in the middle of a circle, moisten the edges of the dough with a pastry brush and cover with another circle.
10. Press the edges with a fork so that it wont open while boiling.
11. if you want them to be a little “al dente” let them dry out overnight on a floured surface.
12. Cook in boiling water for 5 minutes and serve with a dash of truffle oil and some macadamia cheeze.
13. Enjoy.

Ingredients
Cauliflower i floret cut into bite size pieces
Water
Oil for deep frying
For marinade
Vegenaise 1 T
Garam masala 1/2 T
Cumin powder 1t
Coriander powder 2t
Amchur powder 1t

For Batter
Flour 2 T
Corn flour 3 T
Salt 1t
Pepper 2t
Turmeric 1/2 T
Chilly powder 2t
Cider 1 C

Method
1) Bring a pot of water to boil and add cauliflower. Cook for 4-5 minutes and drain
2) Allow cauliflower to completely cool and coat in marinade ingredients. Palace in the fridge for 20-30 minutes
3) Make a thin batter by mixing all the listed ingredients
4) Dip cauliflower in batter and fry in olive oil

INGREDIENTS
▪️1 + 1/2 cups (225g) natural cashews
▪️1 cup (160g) whole almonds
▪️1/4 cup (35g) pistachios.
▪️1/2 cup (40g) shredded coconut
▪️Pinch of salt.
▪️12 fresh dates (pitted and chopped)
▪️270ml coconut cream
▪️1 Lemon rind finely grated then juiced
▪️1/3 cup (50ml) maple syrup
▪️Pinch of tumeric (but she used 1 TBS antioxidant blend *To decorate
Blueberries, rosemary or thyme sprigs, candied lemons

DIRECTIONS
1.Place cashews in bowl, cover with boiling water and soak 4 hours
2.Lightly grease 24cm fluted tart tin with removable base. Line base with baking paper
3.Place almonds, pistachios, coconut & salt in processor until finely chopped, then add dates and process until very finely chopped and mixture holds together when pinched. Spoon into prepared tin, using back of metal spoon to push mixture evenly over base and side of tin. Place in freezer to set.
4.Drain the cashews, place in blender with coconut cream, lemon rind, juice and maple syrup and blend until very smooth and creamy. Add antioxidant powder or turmeric and blend until smooth. Pour into tart case. Place in freezer for 3-4 hours until firm
5.Decorate as you wish and enjoy!

Ingredients
-6 tortillas (regular or gluten-free) about 15 cm in diameter
-1 tbsp vegetable oil
-1 onion, chopped
-2 cloves of garlic, minced
-3 cups cooked lentils (*see recipe notes)
-1 cup chopped bell pepper (color of your choice)
-1 cup chopped cherry tomatoes
-Spice mixture: 2 tsp onion powder, 1 tsp ground cumin, 1 tsp turmeric, 1/2 tsp smoked paprika, 1/2 tsp brown sugar, 1/4 tsp red pepper flakes, salt and pepper to taste
-1 tbsp soy sauce (gluten-free if necessary)
-1/2 tbsp balsamic vinegar
-1/3 cup plant-based milk or cream
-3 tbsp tomato paste
-Vegan cheese sauce or cheese of choice (to taste)

Instructions

Put tortillas in heat-resistant bowls and bake them in the oven at 390° Fahrenheit for about 15 minutes until they are lightly browned.

The taco cups will firm up after they cooled down.

In the meantime, chop the vegetables. Heat oil in a frying pan, add the onion and fry for about 1-2 minutes. Add garlic and bell pepper and fry over medium heat for about 3-5 minutes.

Add all the other ingredients (except cheese sauce) and fry for a further 3-4 minutes.

Put the filling into the taco cups, add vegan cheese sauce and fresh herbs (optional) on top. You can reheat the taco cups in the oven. Enjoy!
