Easy Vegetarian Ramen!! 🍜
My first ever time cooking ramen, super happy with how it turned out and surprised by how simple it was to create! Will definitely be posting some more ramen recipes on here in the future so if you’re a ramen fan stay tuned 😄✌🏼
You will need:
• ramen noodles • vegetable stock (2L) • 1/4 cup soy sauce • 1/4 cup mirin • 1tbsp sesame oil • 4 cloves of crushed garlic • 1tsp crushed ginger • 4 stalks of spring onion chopped
• 1/2 a red onion chopped • chilli flakes (or fresh chilli)
Toppings:
• egg
•fried onion
•bok choy • sweet corn •sesame seeds
To make:
1) combine stock, ginger, garlic, mirin, soy sauce, sesame oil, spring onion and red onion in a pot
2) bring to the boil and season with chilli flakes, salt, pepper etc.
3) let it simmer for 25mins
4) while simmering prepare noodles and toppings
5) once stock is finished simmering add the noodles and bok choy for an additional 2-3mins
6) serve with toppings! .

Greens!!! They are full of iron. After birth eating iron is very important as it helps to replenish blood. A diet rich in leafy greens is excellent, I sneak them into foods I cook for people postpartum all the time. .

Cod “Tacos” with Cilantro Lime Dressing
This recipe goes on the list for top 3 of my fave recipes. I didn’t miss the tortilla at all. The flavor is just so good! Topped with homemade slaw and pico! And the homemade cilantro lime dressing is just so good.
Ingredients
White fish of choice
Dressing:
Cilantro
Coconut Greek yogurt or normal Greek yogurt
1 avocado
Lime
Almond milk unsweetened
Slaw:
Chopped cabbage
2 tbsp mayo or coconut Greek yogurt
Vinegar
Lemon
Pico:
2 Roma tomato
Red onion
Cilantro
Lettuce for the wraps
Cook your fish in seasoning of choice.
Mix up pico
Blend 1 cup cilantro, half lime, one avocado, 1 Greek yogurt 1/3 cup almond milk
Mix up slaw ingredients

Ingredients:
1 package extra firm tofu (mine was 14 oz but a little more or less is perfectly fine)
¼ cup of soy sauce
¼ cup of olive oil
¼ cup of apple cider vinegar
½ teaspoon of garlic powder
½ teaspoon of fine sea salt
¼ teaspoon of black pepper
1 teaspoon of liquid smoke (optional)
Start by pressing your tofu. I like to use a tofu press for this but you can also do it by wrapping the tofu in a towel or paper towels, placing it on a plate, and then weighing it down with a heavy skillet for 30 minutes.
Cut the tofu into 1/2 inch wide stripes (see video above). I got about 8 out of mine. You don’t want them to be too thin or they’ll fall apart on the grill.
Make the tofu marinade by whisking together the soy sauce, olive oil, apple cider vinegar, garlic powder, fine sea salt, black pepper, and optional liquid smoke.*
Place the tofu in a sealable container and cover with the marinade. The marinate for a few hours or even overnight. When possible, I like to flip the tofu pieces over and move them around so that all of the tofu is getting to soak in the liquid.
Pre-heat your grill to 450 degrees F and brush the grate with oil. Place the tofu on the grill and grill for 8-10 minutes on each side. It’s done when both sides has firmed up a bit and has some nice grill marks.

🌭Once onions have soften, add your sliced sausage and sprinkle paprika 🥦Put sausage and onions aside when cooked, then in the same pan add more olive oil to sauté the broccoli florets
🧂Sprinkle salt, pepper and garlic powder 🥣Once broccoli is done add sausage and onions back into your pan then combine! 🧀Your quinoa should be done at this point so it’s time to sprinkle feta on top and enjoy.

Been on a homemade cooking spree lately. I always seem to feel better knowing how the food I'm eating was made. The ingredients, the labour, the freshness... So here we have it. Olive Tapenade Hummus 👉 Chickpeas. Garlic clove. Black olives. Olive oil. S&P. Garlic salt. Basil. Ice cubes. Lemon.
I will admit the basil was not a great add. I just wanted something fresh in it and that's all I had. Not total regret just not great. I'll have to try a different herb next time. I LOVE roasted veggies. One of my new meal prep hacks is to chop them all before I head to work, then when I get home, I can put them on a pan with oil and salt and roast. Dinner was this super simple veggie soup. I love making/having soups on hand - they’re easy to throw together, healthy, and delicious! Here’s what’s in this one:
- 2-3 garlic cloves
- 1/2 small onion - 2 small or 1 med leek, thinly sliced - 2 small/med zucchini, diced
- 3 carrots, sliced into circles - 3 stalks celery, chopped
- juice 1/2 lemon
- 24 oz low sodium broth (veggie, chicken, or bone broth)
- 1-2 c water
- 1 package organic soup herb blend (parsley, thyme, bay leaves)
- salt + pepper to taste
- pinch italian seasoning, turmeric, + ground ginger

To make: wash/prep veggies
Sauté garlic, onion, and leeks in large pot over medium heat for few minutes. Add carrots, zucchini, celery, stir, then add broth and water. Add salt and pepper to taste (I used ~1.5 tsps pink Himalayan salt), juice of 1/2 lemon, and package of herbs (save yourself the trouble of digging them out by tying the bunch together with some cooking twine; reserve some parsley for topping). Bring to low boil then reduce heat and simmer uncovered for ~30 mins, or until veggies are soft. Remove fresh herbs, add pinch of turmeric, ginger, and Italian seasoning to taste. Taste and add any additional seasoning if desired (gets better the longer it sits). I love it topped with a generous amount of nutritional yeast/vegan parm or pecorino romano, freshly ground black pepper, and fresh parsley. Avocado is delish on top too! Pair it with a huge piece of sourdough or your favorite bread 😋
I just used up whatever veggies I had left in the fridge, but you could use any veggies you like! Potatoes, cauliflower, mushrooms, etc. would work to name a few. I needed something light but for a heartier meal, you could easily add cooked chicken breast, or white beans or pasta for a vegan option!

Stuffed sweet potatoes 🍠 These were delicious with some Asian flavors 😋

How to:
1. Clean the sweet potato and poke a few holes around it. Place on a baking sheet and bake at 400 for about 40 minutes.
2. Top with basically anything! I did broccoli, cauliflower, peanut sauce, and toasted coconut flakes!

Big bowl with all the goods 🌿🙌🏼 Spinach topped with chickpeas, leftover roasted peas, quinoa, tomatoes, avocado, kalamata olives, pumpkin seeds and a spicy almond dressing 🔥 Here’s the recipe I used for the dressing -
• 1 tbsp almond butter
