寒い1日だっけど、ドイツで一緒のお部屋だった、ゴーヴィンダちゃんと、プレマラクシュミとともに、ヴェジタリアンお寿司も食べれる、川越市の幸寿司(Kou Zushi) へ。2人はコースで私はセット。広くて綺麗なお店で、ゆっくりできました。野菜一つ一つに違う味付けがついていました。とっても美味しい。梅のお花がそっと添えてあったのですが、仄かに香りがする素敵な御膳でした。
今日は中国の旧正月の期間だったからか、川越氷川神社は大にぎわいでした。 なんたってNew Year ですもんね。

Had a day off posting yesterday to spend the evening chatting to my besties on facetime and not focusing on whether my food looks 'gram worthy' 📸!

SO WORTH IT! .
I actually had a really nice dinner, a halumi burger with steak cut chips (520 calories!) 🍔 so snaps to that! But just because I don't post about it doesn't mean I'm not being accountable 🍭 it's always a good idea to take time to do more important things for your mental health 🥰 for me that's making time for friends ❤.

Baked Eggplant Parm 🍆🍆🍆My goal for these guys was to make them easy & breezy, with no frying & no mess. It all happened except the mess part. 🤷🏻‍♀️I microwaved the eggplant slices prior to breading & baking. Why you ask? Because microwaving is the quickest & best way to remove water & air from the eggplant resulting in better flavor & texture. No need to salt & wait till it sweats🤓🤓ohhhhh yeahhh . Enjoy💚💚💚 and TGIF 🙃🙃🙃
What you need: 1 eggplant (about 1 lb),1/2 cup flour, 1 tbl corn starch, 3/4 cup carbonated (sparkling) water, 1/2 cup panko, 1/4 cup + 2 tbl nutritional yeast, 1 tbl olive oil 1 tbl lemon zest, 2 tsp oregano, 1 tsp crushed red pepper, 1/4 cup chopped parsley, salt/pepper
What you Do:
1️⃣ For the Eggplant: cut the length in 1/2 in sliced rounds. Season lightly with sea salt/ pepper. Place slices on a microwave safe plate, line with a kitchen towel, top with another towel & plate. Repeat layering again to add the rest of eggplant slices. Heat on high for 3-5 min. When done, press to get the remaining moisture/dry.
2️⃣Set up breading stations: one bowl with flour, cornstarch, & carbonated (sparkling) water mixed well. The other bowl with the remaining ingredients mixed well. Dip eggplant one at a time into wet mix & then dredge into panko. Place on parchment lined baking sheet
3️⃣Bake at 425 F for 20-30 min till golden & crispy, flipping half way through. I served my eggplant with fresh herbs & warmed Marinara.

Crispy Sweet n Sour Cauliflower Bites ❤️💛🧡💚The perfect app for the big game 🏈 These bites were so crispy & delicious & with the sauce they are sure to become a family & friend favorite. What you need: 1 small head of cauliflower, 1 cup flour, 1 tbl cornstarch, 1 1/4 cup carbonated water, 2 tbl chili sauce,1/2 tsp each of onion & garlic powder, 2 cups panko, 2 tsp smoked paprika For The Sauce: 1/2 cup grape jelly, 1/2 cup chili sauce, 2 tbl tamari or soy sauce
What you do:
1️⃣ On stovetop, cook cauliflower in boiling water 4-5 min until fork tender (not mushy)
Drain, rinse with cold water till cauli is cool, dry,set aside
2️⃣ To bread cauli set up 2 bowls, one bowl with flour, cornstarch, carbonated water, garlic, & onion powder, salt. The second bowl with with Panko & paprika. Line large baking sheet with parchment paper misted with oil
3️⃣ Take one caulif piece toss into flour dip, getting all areas, then into Panko bowl making sure it is completely covered, place on baking sheet. Repeat until all cauli pieces are coated
4️⃣Bake at 400 F for 20 min flipping half way through.
5️⃣ While cauli is baking make the sweet n sour sauce. Whisk all sauce ingredients over low on stovetop until warmed through.
6️⃣ Serve immediately with sauce for dipping or just pour the sauce on the bites, whatever your pleasure 💚💚💚I topped my bites with toasted sesame seeds and sliced green onions.

Spaghetti Lovers Soup ❤️🥣❤️🥣❤️Noodles in a creamy tomato soupy sauce. I pureed some white beans with cashews for the cream for some extra dairy-free deliciousness. Hope you enjoy... I know my daughter did I caught her licking the bowl 😂💗 What you Need:For The Bean Cream: 1-15 oz can of Cannellini beans drained & rinsed, 1/4 cup cashews (boil cashews 10 min to soften if you do not have a high speed blender), 2 tbl nutritional yeast, 1 cup veggie broth, 1 tbl apple cider vinegar, 2 tsp neutral oil, 1/2 tsp salt For The Soup: 2 tbl olive oil, 2 tbl vegan butter, 1 yellow onion finely chopped, 2 carrots finely diced (1 cup), 3 celery finely diced (1 cup), 1 tsp crushed red pepper, 2 tbl Italian seasoning, 2 garlic cloves minced, 2 tsp tomato paste, 1 tbl coconut sugar, salt/pepper, 28 oz crushed tomatoes, 1 bay leaf, 2 cups veggie broth, 9 oz spaghetti Soup Toppings: 1/4 cup chopped parsley, 1/4 cup chopped basil
1️⃣In a blender combine cream ingredients, blend in high till smooth. Set aside
2️⃣Heat oil/butter on high, then add onion, carrot, celery, heat on med/med low for, add some salt/pepper, cook until onion is translucent & veggies have shrunk up a bit about 5-7 min. Then add seasoning, cook 2 more min until you smell a nice aroma
3️⃣Add garlic & tomato paste, mix until veggies are all coated &paste darkens heat 2 min.Then add sugar, crushed tomatoes, veggie broth, bay leaf, & white bean cream. Bring to a boil then simmer on low 20 min with pot covered, stirring occasionally
4️⃣ While sauce is simmering, cook spaghetti in well salted boiling water till al dente. Reserving 1 cup pasta water before draining
5️⃣Remove bay leaf from soup, adjust seasonings, you can blend soup with immersion blender for a smoother broth, add reserved pasta water to adjust thickness. Divide pasta into bowls. ladle over soup, add fresh herbs if desired. Enjoy!!

Twice-Baked Shepard’s Pie Potatoes 🥔💚🥔💚To celebrate my 100k😱🙏🏻I just had to make a potato dish & share it with you all. This delicious recipe can be easily adapted from a weekend to a weeknight meal when time is limited. Make them like the picture above, or just make the filling & serve over baked potatoes with no twice baking or mashing required. Your choice💚
What you need: 4 medium baking potatoes ( I used russet) , 2 tbl olive oil, 2 carrots finely chopped, 1 med yellow onion finely chopped, 12 oz bag veggie/meatless crumbles (store bought), 1 clove garlic minced, 2 tbl tomato paste, 2 tbl corn starch, 2 cups veggie broth, 1 tbl balsamic vinegar, 1/2 tsp oregano, 1/2 tsp thyme, 1 bay leaf, 1 cup frozen corn, 1 cup frozen peas, 1 tbl Worcestershire sauce For the mash: 1/4 cup dairy free cream cheese, 1/2 cup non dairy milk, 1/4 cup dairy free butter, s/p to taste
1️⃣ Brush potatoes with oil, pierce with fork on both sides. Bake at 375F for one hour or air fry at 400 F for 40 minutes
2️⃣ While potatoes are baking, in a large sauté pan/pot heat 2 tbl of oil over medium, add carrots & onion, cook 5-7 min till onion is translucent & carrots soften.
3️⃣ Add crumbles & heat according to package directions until browned. I cooked my crumbles for 3 min. Stir in garlic, corn starch, tomato paste stirring continuously for 1-2 min until paste darkens in color
4️⃣ Add broth, vinegar, & spices. Scrape up any brown bits, simmer low for 10 min stirring occasionally.
5️⃣Add frozen veggies & Worcestershire sauce. Take out bay leaf. Adjust seasonings. Heat through.
6️⃣ When potatoes are cool enough to handle, split each in half, scoop out middle, leaving skins intact. Place skins on parchment lined baking sheet, & place potatoes in a bowl. Mash with fork or use a ricer (preferred method) then add milk, butter, cream cheese, s/p, & mix together till smooth.
7️⃣Next pack potato skins with veggie crumble. Fill skins all the way to the top.Then spread a thick layer of mash evenly across the tops of the crumble.
8️⃣ Bake at 350 F for 10 min then broil on top rack for 2 min to crisp up tops of potato. Enjoy!!!

What you need: 8 oz favorite pasta For the Sauce: 1/2 block of silken tofu (6 oz) , 1/2 head cauliflower steamed (about 2 cups), 1 cup non dairy milk( I used soy) 1/4 cup nutritional yeast, 1 tbl white miso, 1 tsp black pepper, 1/2 smoked paprika, 1/4 garlic powder, 2 tsp white vinegar , 2tbl olive oil The shrooms: 2 cups King oyster mushrooms (sub shiitake) sliced lengthwise, 2tbl tamari, 1 tbl olive oil, 1/2 tsp smoked paprika, 1/4 garlic powder, black pepper
1️⃣Whisk together mushroom marinade, pour over mushrooms making sure all are coated, bake in oven 375 F for 20min on parchment lined baking sheet, flipping half way through
2️⃣In a high speeed blender or food processor blend sauce ingredients except oil, until smooth 2-3 min. Then add oil, mix on low till combined
3️⃣Cook pasta in well salted water, drain, reserve 1/2-1 cup pasta water. Bring pasta back to pot

Vegan “Honey” Mustard Tofu Tenders: Don’t you love that the more you do something the better it gets. I think that applies to lots of things including preparing TOFU! In this recipe I toasted my panko prior to baking. You are going to love this tofu recipe cause it has lots of CRUNCH on the outside with a tender yummy interior layered with a vegan honey mustard sauce. Happy Thursday foodie friends 🙃💕
What you need: 15 oz block of pressed tofu, 1/2 cup Dijon mustard, 1/2 cup agave, 1/4 cup yellow mustard, 1/4 cup vegan mayo, 1 1/2 tsp salt, 2 cups panko, 2 tbl neutral oil, 1/3 cup cornstarch What you do:
1️⃣ Cut pressed tofu into 3 slabs through its depth, then cut each slab into 3 equal size tenders, lightly score slices with a knife on both sides,sprinkle with salt. Set Aside
2️⃣In a bowl mix mustard, agave, mayo, & salt/pepper
3️⃣Use 1/2 of mustard sauce to marinate tofu slices. I used a brush to make sure all edges and sides were covered. Marinate for at least 30 min.Place in fridge
4️⃣ In saute pan, over medium heat, heat oil till warmed ( toss panko crumb in to see if it sizzles) add panko. Stir continuously for 5 min till panko changes to a golden brown color. Turn off heat, leave in pan, let cool
5️⃣ Set up 4 stations to bread tenders: 1 plate with corn starch, a bowl with remaining mustard sauce, panko in pan, and lastly a rimmed baking sheet lined with parchment paper with a wire rack on top (optional but recommended)
6️⃣ Take one tofu tender, dredge in corn starch (shake off excess) dip into mustard sauce, then press tender into panko crumbs covering all edges, place on rack/parchment paper. Repeat
7️⃣ Bake 400 F for 30-35 min flipping half way through cook time. Enjoy!! I served mine with the remaining mustard sauce for dipping & added some cayenne pepper for some heat and chopped green onion to give a pretty color pop 💚

1️⃣ Cut pressed tofu into 3 slabs through its depth, then cut each slab into 3 equal size tenders, lightly score slices with a knife on both sides,sprinkle with salt. Set Aside
2️⃣In a bowl mix mustard, agave, mayo, & salt/pepper
3️⃣Use 1/2 of mustard sauce to marinate tofu slices. I used a brush to make sure all edges and sides were covered. Marinate for at least 30 min.Place in fridge
4️⃣ In saute pan, over medium heat, heat oil till warmed ( toss panko crumb in to see if it sizzles) add panko. Stir continuously for 5 min till panko changes to a golden brown color. Turn off heat, leave in pan, let cool
5️⃣ Set up 4 stations to bread tenders: 1 plate with corn starch, a bowl with remaining mustard sauce, panko in pan, and lastly a rimmed baking sheet lined with parchment paper with a wire rack on top (optional but recommended)
6️⃣ Take one tofu tender, dredge in corn starch (shake off excess) dip into mustard sauce, then press tender into panko crumbs covering all edges, place on rack/parchment paper. Repeat 
7️⃣ Bake 400 F for 30-35 min flipping half way through cook time. Enjoy!! I served mine with the remaining mustard sauce for dipping & added some cayenne pepper for some heat and chopped green onion to give a pretty color pop 💚

Veggie Mac n Cheeze Chowder: it’s gloomy here in NYC and I want soupppp ...so cozy, chunky, and cheezyyyy. Hope you enjoy it!
What you need: 8 oz cooked macaroni ( or your favorite small pasta shape) For the Cashew Cream: 1/2 cup cashews, 1 cup veggie broth, 1/4 cup jarred red peppers chopped, 3 tbl nutritional yeast For The Soup:1/4 cup vegan butter, 1 onion finely chopped, 1/4 cup flour, 2 tsp Dijon mustard, 3 cups veggie broth, 2 cups broccoli florets finely chopped, 2 celery stalks chopped, 1 large carrot peeled & finely chopped, 1 1/2 cup non dairy milk (I used soy), 1 tbls white vinegar, salt/pepper to taste
What you do:
1️⃣ In a high speed blender combine cashew cream ingredients & mix on high till smooth. Set aside
2️⃣ In a large pot, melt butter on med heat, add onions and sauté till translucent about 5 minutes
3️⃣ Add mustard, mix, then slowly whisk in flour, over med heat for about 2 minutes
4️⃣Add broth & veggies, bring to a boil, then simmer 20-25 min till veggies are tender

Chickpea “Ceviche” served in a crispy Tortilla Bowl (Air-fried): Just wanted to spread some lime love today with all the summer flavors. Ceviche is typically a seafood dish originating from Peru. Here’s my plant based version served in a crispy tortilla bowl (air fried) This recipe is pretty flexible, if you don’t care for limes, add lemons.
What you need: For the Salad: 3 cups chickpeas drained, rinsed and dried, 1/2 red onion thinly sliced, 2 mini cucumbers finely diced, 1/2 pint grape tomatoes cut in half & deseeded, 1/2 red pepper finely diced, 2 green onions chopped, 1 jalapeño pepper deseeded finely chopped (optional), 1/2 cup cilantro chopped, 1 avocado sliced/ or diced For the Dressing: juice of two limes, zest of 1 lime, 2 tbl Worcestershire sauce, 2 tsp maple syrup, 2 tsp olive oil (optional)1 tsp cumin, 1/2 tsp oregano, 1/2 tsp sea salt, 1/4 tsp black pepper.For Tortilla bowl: 3 large tortillas
What you need:
1️⃣ Place chickpeas in large glass mixing bowl, mix well with cucumbers, tomatoes, red & green onions
2️⃣ Whisk together dressing ingredients, adjust seasonings if needed
3️⃣Add chopped avocado & cilantro
4️⃣ Preheat Air-fryer to 350 F. Use an oven safe bowl , gently push tortilla down to fill the gaps of the container & tortilla to take on its shape, place a smaller oven safe container in the middle of the tortilla to keep it in place
5️⃣Heat tortilla till edges get crispy and check to see it holds its shape without the middle insert. About 3-5 min.Use tongs to remove, it’s very hot.
6️⃣Flip tortilla bowl over, still leaving it in the oven safe container. Heat another 2-3 min. Repeat for other tortillas
7️⃣Place ceviche in tortilla bowl, serve with extra lime juice. Enjoy!! 💚💚💚💚

Green Goddess Burritos (oil & gluten free)🌯💚🌯Do you notice anything different about my burritos?Yup, they’re green. I swapped my soft tortilla for a cabbage leaf.If you haven’t already heard cabbage is the new “IT” veggie for 2020. Whatever the case 😂I think all you really need to know is that these burritos taste delicious & crispy cabbage is a great way to get your green on.Enjoy!!! Recipe inspired by @forksoverknives magazine winter 2020 issue 💚
What you need: 8 Savoy cabbage leaves( the outer large leaves) , 1 small/med red onion finely chopped, 2 cups sweet potato finely chopped (about 1 large potato), 2 garlic cloves minced, 2tsp chili powder, 1 tsp cumin 1/2 tsp smoked paprika, 1 cup frozen corn defrosted, 1 15 oz can of black beans rinsed/drained, 1/4 cup store bought salsa, 1 cup cooked quinoa, s/p to taste, juice of 1/2 lime
1️⃣ Prepare the cabbage leaves. Bring a pan of salted water to a rolling boil. Plunge the cabbage & cook for 2 minutes. Run under cold water. Pat the leaves dry with a kitchen towel, and trim hard stem at the base of the leaf which will make it easier to roll. Set aside
2️⃣For filling: heat a large skillet over medium, test heat with droplets of water until it sizzles Add a couple tbls water, potatoes, onion, garlic, & spices. Reduce heat to med/low adding 1 tbl of water at a time when needed to prevent sticking, scraping up brown bits in pan for more flavor. Cook and stir 20-25 min until potatoes are cooked through. Add corn, quinoa, black beans, salsa, heat through. Add salt/pepper to taste & lime juice. Adjust seasonings
3️⃣To assemble burritos: I used 2 leaves to form one burrito. First, lay one cabbage leaf down with bottom stem facing you. Next, lay another leaf down, overlapping 1/2 length of the first leaf. Spoon 3/4-1 cup of mixture in the center. Tuck left & right sides in then tightly roll from bottom to top into a tight cylinder. Place on wire rack seam side down on a parchment lined baking sheet.Repeat. Makes about 4 large burritos. Or use one leaf with 1/4-1/2 cup filling to make smaller burritos.
5️⃣ Roast in the oven at 400 F till cabbage gets crispy 15-25 min. I served my cabbage burrito with homemade quac
