We went to a Hypermarket in Krakow called Carrefour. There was loads of cool vegan stuff that we don’t easily get in the UK. I found this vegan salami that’s tastes just like the vegan Pizza Hut Pepperphoni.

Ayer para cenar sacamos del congelador unos filetitos sabor a mar de @lindamccartneyfoods que compramos en @bardanaherboristeria e hice unos bocatas en pan de hamburguesa. Los panes los unté con un poco de margarina con ajo y los pasé por la plancha. Machaqué un poco de aguacate (de la cesta eco) con lima y sal, le puse unos canónigos (de la cesta también), los filetitos... y veganesa. ➡️püriere die (aufgetauten) Beeren zusammen mit dem Ahornsirup und gib die Soße über den Amaranth
➡️Toppe dein Frühstück mit frischen Haselnüssen und lass es dir schmecken 😍

Crust:
1 cup almond flour
1 cup gf all purpose flour
2 Tbsp coconut butter, melted
4 Tbsp coconut oil, melted
1 Tbsp maple syrup

Filling:
1 15oz (400ml) can full-fat coconut cream
1/3 cup maple syrup
1/8 cup lime juice
1 tsp agar agar powder
1/2 cup cashews, soaked
1 Tbsp @unicornsuperfoods Ocean Blend

Topping:
1/2 cup blueberries
1/4 cup blackberries
zest of 1 lime
—•—Method—•—
1. Preheat the oven to 175°C/350°F and grease a 8” (20cm) tart tin.
2. For the crust, place all ingredients into a food processor until you have a sticky and crumbly dough. Transfer to the tart tin and press down evenly to the bottom and up the sides. Fill with baking beans, place in the oven and bake for 15-20 minutes until golden brown.
3. Add the coconut cream, maple syrup, and lime juice to a medium pot over high heat. Bring to a boil, add in the agar agar and let simmer for 1 minute until it has dissolved. Use a whisk to mix everything together.
4. Pour into a heat-resistant high speed blender, add the cashews and ocean blend and blend on high until smooth.

Crust:
1 cup almond flour
1 cup gf all purpose flour
2 Tbsp coconut butter, melted
4 Tbsp coconut oil, melted
1 Tbsp maple syrup

Filling:
1 15oz (400ml) can full-fat coconut cream
1/3 cup maple syrup
1/8 cup lime juice
1 tsp agar agar powder
1/2 cup cashews, soaked
1 Tbsp @unicornsuperfoods Ocean Blend

Topping:
1/2 cup blueberries
1/4 cup blackberries
zest of 1 lime
—•—Method—•—
1. Preheat the oven to 175°C/350°F and grease a 8” (20cm) tart tin.
2. For the crust, place all ingredients into a food processor until you have a sticky and crumbly dough. Transfer to the tart tin and press down evenly to the bottom and up the sides. Fill with baking beans, place in the oven and bake for 15-20 minutes until golden brown.
3. Add the coconut cream, maple syrup, and lime juice to a medium pot over high heat. Bring to a boil, add in the agar agar and let simmer for 1 minute until it has dissolved. Use a whisk to mix everything together.
4. Pour into a heat-resistant high speed blender, add the cashews and ocean blend and blend on high until smooth.
5. Poor into the tart tin and transfer to the fridge for 2-4 hours. Top with blueberries, blackberries and lime zest and enjoy!

Die "Nut"-Füllung besteht aus Datteln, gemahlenen Haselnüsseln, gehackten Walnüssen und Erdnussbutter. Die Datteln werden sowohl für den Teig als auch für die Füllung mit etwas Hafermilch und Sonnenblumenöl püriert. .

Peanut Lime Stir-Fry Bowl 🍲😍

Packed full of veggies paired with a delicious sauce! Recipe below:

To make:
Cook brown rice, quinoa or any whole grain of choice. Meanwhile, stir fry together any veggies of choice + edamame or tofu with 1/2 tbsp soy sauce, 2 cloves of garlic, and 1 tbsp of mincer ginger. Pour peanut lime sauce on top, serve with whole grain of choice and enjoy!

This week was challenging to say the least, but I made it through. 🙌🏽 One of the things that helped was starting off my day by just getting some frustrations out in my journal. I just wrote a few brief lines, but it slowly turned into a bunch of positive things I wanted to tell myself.

“I believe in you.”

“Let’s do the best we can today.”

As small or silly as that might seem, it helped. I brushed off what happened this week and I feel like I ended on a good note. 😌

The other thing that helped my mood was noodles. 🍜 I like flavoring my noodles when I make them for myself instead of using the flavoring packet that comes with them. Just use the noodles of your choice and cook according to the package with water and drain to use. I stir fried some broccoli 🥦, mushroom and some tofu then added the cooked noodles. Poured over my fav sauce over top and all set.👌🏽

Green is my most favorite color. 💚 Yellow a close second. 💛 Maybe that’s why I have such a high affinity towards matcha and mangos. 😂 Regardless, this bowl of updated matcha latte oats helped brighten my morning. These were super creamy and ugh...kind of want another bowl for lunch. 🙃

Matcha Latte Oats (updated)
1/2 cup rolled oats
1 cup unsweetened almond milk
1 tsp chia seeds
2 tbsp coconut cream (I got mine from Trader Joe’s)
1/2 banana sliced up
Pinch of salt to taste
1/2 tsp matcha powder +2 tbsp hot water
.
In a small bowl add matcha powder. With a spoon or a matcha whisk, gently break up any clumps in the powder. Add 1 tbsp of hot water first and gently whisk/mix together making sure no lumps remain. Add an addition tbsp of water, stir and set aside. Add oats, chia, milk and cream to a sauce pan and bring to a low simmer. Allow to cook and thicken while stirring occasionally for about 5 minutes. Remove oats from heat and add in matcha mixture to oats and fold into oats until matcha is fully incorporated. Serve topped with fruit. This is an extra step, but these oats to me were worth the extra care this morning. 🍵

Salt and pepper based on preference

Place chickpeas in a bowl and dab with a clean towel or paper towel to remove excess moisture from chickpeas. Add seasonings and toss together. Add chickpeas to an airfryer at 370F for 15mins OR heat oven to 400F and roast for 10 minutes, stir half way through and roast for an additional 10-15 minutes. Once cooked just allow to cool completely so they crisp up.

1 pint sliced cherry tomatoes
3 tsp chili powder
5 tsp curry powder
3.5 tsp cumin
2 tsp onion powder
3 garlic cloves minced
1/2 tsp pepper
1 tsp salt
1 can chickpeas rinsed and drained
3/4 cup cooked corn
1 can coconut milk
1.5 cups packed spinach
Cilantro and red chili flakes for garnish

Over medium heat, heat oil. Once hot, add tomatoes and spices, and cook for 3 minutes, stirring. Add garlic and cook another minute. Add remaining ingredients except the spinach and garnish. Stir to combine and cook at a low simmer for about 10 minutes uncovered, stirring occasionally. Cook longer for a deeper flavor, but you don't need to. Add spinach and cover, cook until spinach wilts, about 3 min. garnish

Vegan Hot Buffalo Wingz by @plantcrazii 🧡

You will need:

1 medium size pack(300g) of Oyster mushrooms *rinse them well

Wet ingredients:

2 cups thick unsweetened plant milk (I used pea milk)
1TB vinegar
1/4tsp black pepper
1/4tsp salt
In a bowl, mix everything together

Dry Mix:

1Cup All purpose flour
1Cup Corn Starch
1tsp all purpose seasoning
1/2tsp white pepper
1/4tsp black pepper
1/2Tb paprika
1/4tsp garlic powder
1/4tsp salt
In a bowl, mix everything together

Place all your oyster mushrooms into the wet mix bowl
and gently mix them in until they are all coated.

Next, Dip them into your dry mix batter and again into the wet mix and again into the dry mix.
You want them all double coated.

Deep fry all your pieces in hot oil until crisp and set them aside(*for extra crisp you can double fry them after they have rested for 5 minutes)

Buffalo Sauce:
In a pot on medium-low heat, mix in the following:
1 cup vegan Buffalo sauce(I used red hot sauce)
1/2 Cup water
2Tb dairy free butter,
2Tb brown sugar,
1/4tsp liquid smoke
Cover pot for 5 minutes & done.

Let your sauce cool for 3 minutes and toss your crunchy "wings" into the sauce
until they are all fully coated. #bestofvegan
