It was my husband’s birthday this weekend, and we attempted to make a Tres (more like Dos) Leches Cake! A thick one lol, and we maybe should have gone with making it in one long pan bc it barely absorbed the coconut milk we added to it. Still an awesome cake though. The frosting is the vegan version of Cool Whip, and I sprinkled some cinnamon on top before digging in. Anyone have any advice for future Tres Leches cake attempts? .

Hey guys!! Slightly different to what I usually do but I've filmed a Veganuary video! I tried to eat as many of the fast food outlet vegan alternatives as I could so I could review them for you in this video.

I went in with absolutely no expectations, I wasn't sure what the vegan food would be like. I would say I was pleasantly surprised with most of it! Companies like KFC, Subway, Greggs, Costa have done a really good job with making some great alternatives...and this is coming from a big meat eater!

Make sure to check out the video and let me know what you think of Veganuary. Do you approve of companies now offering more plant alternatives? Do you think its a fad that'll pass? Let's hear your thoughts guys!

Creamy Sweet Potato Soup from @gemswholesomekitchen Self-care Cookbook.⁣

Let me just say this was spot on 👌⁣

This creamy soup is made for winter. It's thick, creamy and has a nice kick. I first thought the teaspoon of chilli flakes (I used birds eye chilli flakes) was a wee bit much but after the stock, the sweet potato and coconut milk I was put at ease. ⁣

I definitely recommend Gems book though if you want some real good mood food. ⁣

I’m not working toward a certain number on the scale but I am working toward a leaner, stronger more toned body!

It has been hard to lose weight, gain weight back and try to lose it again! It does get harder the older I get, but I am so proud of the body I have and I’m learning to love where I am every day!

I went to my local health food shop today for a few things and I always pick up some kimchi. I love adding it to Buddha bowls or stir fry’s. It has live cultures which are fantastic for our gut health and I truly believe healthy gut healthy mind ❤️

Delicious chickpea spinach pizza with a sweet potato crust by @elavegan 😋😍 Who’d you share it with?

Ingredients
Crust
1 batch of gluten-free pizza crust (or crust of choice)
Sauce
2 tbsp olive oil or any other oil (divided)
1/2 cup tomato sauce (tomato passata)
4 tbsp coconut milk canned (or any other plant-based milk)
1 tbsp balsamic vinegar (or apple cider vinegar)
1 tbsp hot sauce (or more/less to taste)
1 tsp coconut sugar (or regular sugar)
spice mix (1 tsp each of smoked paprika, onion powder, garlic powder)
sea salt and pepper to taste
Other ingredients
1 batch of easy vegan cheese sauce
1 avocado
1 15 oz can chickpeas
Instructions
Make the pizza crust as per the instructions in the recipe. Preheat oven to 200 degrees C (390 degrees F). To make the sauce, mix 1 tbsp oil and all other sauce ingredients in a bowl with a whisk. Spread the sauce (but save 3-4 tbsp) on the pizza crust and put the pizza in the oven for 10 minutes.

Heat 1 tbsp oil in a skillet, add the remaining 3-4 tbsp of sauce and the chickpeas and fry for 3-5 minutes over medium heat.

Spread the chickpea mixture and the vegan cheese sauce onto the pizza and put it back into the oven for another 10-15 minutes (or until crispy). Peel the avocado, remove the stem, and cut it into pieces and put it on the pizza right before serving. Season again with sea salt/pepper/spices if desired. Enjoy your delicious avocado chickpea pizza!

A #veganuary kihívásnak hála felfedeztem magamnak a csicseri omlettet, ami bár csak nyomokban emlékeztet a tojásrántottára, sokkal táplálóbb és finomabb, mint tojásos verziója ❤️ Én így készítem:

Hozzávalók két fő részére:
- 🌰 Négy evőkanál csicseriborsó liszt
- 🥄 Négy evőkanál zabpehely
-🥄 Két-három evőkanál olivaolaj

Delicious chickpea spinach pizza with a sweet potato crust by @elavegan 😋😍 Who’d you share it with?

Ingredients
Crust
1 batch of gluten-free pizza crust (or crust of choice)
Sauce
2 tbsp olive oil or any other oil (divided)
1/2 cup tomato sauce (tomato passata)
4 tbsp coconut milk canned (or any other plant-based milk)
1 tbsp balsamic vinegar (or apple cider vinegar)
1 tbsp hot sauce (or more/less to taste)
1 tsp coconut sugar (or regular sugar)
spice mix (1 tsp each of smoked paprika, onion powder, garlic powder)
sea salt and pepper to taste
Other ingredients
1 batch of easy vegan cheese sauce
1 avocado
1 15 oz can chickpeas
Instructions
Make the pizza crust as per the instructions in the recipe. Preheat oven to 200 degrees C (390 degrees F). To make the sauce, mix 1 tbsp oil and all other sauce ingredients in a bowl with a whisk. Spread the sauce (but save 3-4 tbsp) on the pizza crust and put the pizza in the oven for 10 minutes.

Heat 1 tbsp oil in a skillet, add the remaining 3-4 tbsp of sauce and the chickpeas and fry for 3-5 minutes over medium heat.

Spread the chickpea mixture and the vegan cheese sauce onto the pizza and put it back into the oven for another 10-15 minutes (or until crispy). Peel the avocado, remove the stem, and cut it into pieces and put it on the pizza right before serving. Season again with sea salt/pepper/spices if desired. Enjoy your delicious avocado chickpea pizza!

That peanut butter tho 👀 one of the most satisfying visuals I’ve ever seen. 😌 I know peanut butter doesn’t work for everyone, but it works for me. 🥜I also know it can provide an ample amount of good nutrients (protein, magnesium, zinc, and b vitamins). But one of the reasons I use it is because it is satisfying. If you struggle with feeling full, you could benefit from incorporating some satisfying foods like nuts, nut butters, avocado and various seeds (flax seeds, chia seeds and hemp hearts). Focus on the amount that is appropriate for you. 🥑

Dry ingredients
2 cups gf all purpose flour, 240g
1/3 cup cocoa powder, 35g
2 tsp baking powder
1 tsp baking soda
1/4 tsp sea salt

Wet
3 tbsp flaxseed meal, 18g
7 tbsp water
1 cup unsweetened soy milk, room temperature
1/2 cup packed unrefined coconut sugar, 100g
1/3 cup coconut oil
1 shot of espresso or water, about 1/4 cup
1 tsp vanilla extract .
Topping
100g melted dark chocolate .

Preheat oven to 165C/330F. Grease a 1 pound loaf pan (8.5 x 4.5 x 2.75 inch) and set aside.
Combine flaxseed meal and water. Let rest for few minutes until thicken. .
In a large mixing bowl, sift dry ingredients and mix well.

Whisk together wet ingredients and flaxseed mixture. Pour chocolate mixture to dry mixture. Gently fold the mixture with a spatula to incorporate. .
Pour mixture into a prepared pan. Tap gently against the counter to release any air bubbles.
Bake at preheated for 1 hour or until the toothpick comes out clean. Allow cake to cool completely in the pan. .
Gently remove cake out of the pan. Spread melted chocolate over the cake. Slice and serve. #bestofvegan

Directions:
Remove the pit from the date and soak it in a little hot water for 10 minutes. Then mash it with the water to create a date paste. Mash the banana as well and stir both in your oats and milk with the maple syrup, peanut butter, cocoa powder, and cinnamon until mixed well. Place in the refrigerator for at least a few hours, or overnight. Top with peanuts and dairy-free chocolate chips.

1 blood orange, diced
1/4 small red onion, minced
1/2 jalapeño, finely diced
5 sprigs cilantro, finely minced
1 Roma tomato, diced
1/4 powder garlic
Pinch of salt

Combine all diced ingredients into a bowl and combine well. Adjust salt to preference and allow salsa to sit in the fridge for at least 15 minutes before serving!

fudge factor—-20/10. easyyyyy banana chocolate blender muffins with NO added sugar unless you want to add a chocolate square to the top like me. i also baked them with a dollop of peanut butter on top because 😍 run to the kitchen✨🙌🏽
blend in a blender:
2 cups almond flour
4 small very ripe bananas
1/2 tsp baking powder
1/4 cup almond butter or any nut butter
2/3 cup unsweetened vanilla almond milk
1/4 cup cacao powder
1 tsp vanilla extract
1/3 cup flax meal
bake at 375 for 25 min ✨
cool completely and enjoy!
