Last nights dinner and todays lunch!! Amazing! I used a base recipe from the Paleomg website. It’s called Almost 5 Ingredient Pizza Spaghetti Pie. I added more ingredients and changed up the process of how I put it together and baked it. I precooked the squash two nights ago by roasting it in the oven @ 400 F for an hour. It called for onions, but I also added red peppers, spinach, and @balancedbites Super Garlic Spice Blend. I used 1 pound of ground sirloin versus Italian sausage. I did not use basil, & the original recipe called for it. I used a 12 ounce jar of @raoshomemade pizza sauce, only used 2 eggs, and added @applegate pepperoni to it to make a crust, plus put more on top! I also topped with banana peppers. I baked it @ 400 F, for 45 minutes. 😋😋😋😋

Ok it’s time to revisit the idea that meal prep has to be painstaking. Some quick recipes that are full of nourishing ingredients DO exist. This is one of my go-to’s! Put these fajita-stuffed sweet potatoes on your menu this week.
When it’s time to eat, I love to have these on a big bed of greens with extra lime juice and little pink salt! These are SO good and so easy. Give these a try and let me know how it goes 🥑
Fajita Stuffed Sweet Potatoes:
Bake sweet potatoes at 400°F for 20 minutes or until a knife can pierce the skin with no resistance. Let them cool for 10 min, then slice them down the middle and push them to open up the tops. Stuff the opening with roasted and sliced chicken, sautéed peppers and onions, salt and pepper. Top with guacamole, lime, and lots of cilantro
Sunday morning binge! Not really but it sure tastes like it. It’s crazy how real food tastes so good once you rid the body of all the bad stuff. I’m looking forward to having 🍷 🥃🥂🍺 but I think I’ll keep the food the way it’s been for 30 days even after the re-introduction phase. I will eat at functions but I think my choices will be better.

This chicken is ALWAYS in with the piglets. I guess she's figured out that mama pig is getting some serious eats and that there will be leftovers.
Normally we run piglets out on pasture. But, this is likely our last litter (we will be buying Gloucestershire Old Spots piglets from other farms to raise here), and I didn't want to start a separate fenced area for mama (other pigs sometimes kill piglets, so it's necessary to separate her from the group 🙄).
So, this mama will spend a few weeks in the barn behind the house. Certainly not my favorite place to keep a pig, but it works until I can get them castrated and out with the rest of the pigs.
If you're in the area stop by the store and ask to see the piglets! They are only a short walk from the store.

I admittedly miss bids for connection from my kids all day long because I’m trying to get things done. Each time they are driving me crazy, what I’ve realized is, they are making bids for connection. They NEED us to put our phones down and look them in the eye and simply listen - JUST like our spouses/partners do.
I talk to clients about this process when they are struggling to curb their nightly alcohol intake....I hear a lot of, “I just need to unwind”. It’s a hard pill to swallow but the majority of us CHOSE this life. We WANTED to have children but we ignore them while scrolling Facebook, we plop them in front of iPads to keep them busy instead of engaging them, then we drink to “unwind” and “decompress” from our lives.
Why are we trying to avoid interacting with our loved ones? Why do we have such a low tolerance for other’s normal behaviors? When will we begin to OWN that the life we chose isn’t so bad?
Take note of your kids bidding for your connection today....look them in the eye when they talk to you, spend times playing with them, have a dance party, remember how friggin lucky you are to live this life

The fastest side dish out there! These blistered tomatoes are perfect for weeknight meals or to add to your meal prepped breakfast for some added veggies!
I typically pick up 2-3 pints of organic cherry tomatoes from @aldiusa (such a great price for organic tomatoes) and will use them in various recipes during the week.
These blistered tomatoes are great as a side dish to any Italian inspired meal, on top of salad or eggs and my favorite - dipped in homemade pesto!
Here’s what you need:
2 pints cherry or grape tomatoes
2 tbsp avocado oil
1 tsp salt
1 tsp garlic powder
2 tbsp fresh parsley, mint or oregano, chopped
Preheat a large cast iron (or non-stick) skillet over medium heat for 3-5 minutes
Add the avocado oil and make sure it is evenly distributed around the pan (use a silicone brush or just rotate the pan until evenly distributed)
Add the tomatoes and quickly toss them to get coated in the oil
Allow the tomatoes to cook, un-touched for 3 minutes. Stir and cook 2 minutes more.
Turn off the heat and add the salt, garlic powder and fresh herbs. Serve hot or cold

Let me start by saying this isn’t the most photogenic plate I have ever posted 😂 BUT flavors are ON. POINT. I’ve mentioned before that we buy our beef in bulk (I.e. 1/4 cow at a time) - not only do we find it to be a really cost effective way to get quality beef, but we also get cuts of meat we might not otherwise buy. ROUND STEAK for example. This cut is actually the bane of my existence, I never seem to cook it right, it’s never flavorful enough UGH. But I recently came across @tastesoflizzyt ‘s Slow Cooker Swiss Steak recipe and decided to give it a go. Round steak still isn’t one of my favvvvvorite things to cook, but if I have to... I’m definitely always using this recipe. .
The most time consuming part is dredging the meat and browning it, but as she mentions in the recipe... TOTALLY worth it. The “cream of mushroom” is actually broth blended with mushrooms and a few seasonings (aka really simple and healthy) - that plus some onions into the crockpot and you’re set! Bonus is the house smells absolutely amazing, so if you need something for Sunday dinner or a weeknight meal that’s ready when you get home - give it a try!

4 strips Whole30-compliant bacon, thinly sliced
1 pound Whole30-compliant Italian sausage, casing removed
1 large yellow onion, diced
4 cloves garlic, finely chopped
1 teaspoon dried red chili flakes
1 teaspoon dried fennel seeds
½ cup full-fat coconut milk
1.5 pounds russet potatoes, cubed
1 quart Whole30-compliant chicken stock
2 bay leaves
1 head Tuscan kale, thinly sliced into ribbons
kosher salt and black pepper to taste
Add bacon to a cold stock pot & set over medium-high heat. Cook bacon, stirring, until browned, about 6 minutes. Transfer bacon to a plate lined with paper towel & set aside.
Add sausages & use a wooden or metal spoon to break them into small pieces. Cook, stirring occasionally, until sausages are browned & cooked through, about 7 minutes. Transfer the sausage to a bowl & set aside.
Discard all but 2 tablespoons of the fat in the pot. If necessary, add olive oil. Add the onions & cook, scraping any brown bits on the bottom of the pot, until slightly soft & translucent, about 4 minutes. Add the garlic, chili flakes & fennel seeds, if using, & cook an additional 60 seconds. Add the coconut milk & cook until reduced by ¼ in volume, about 2 minutes.
Add the chicken stock, potatoes & bay leaves. Bring the liquid to a boil, lower the heat to medium-low & cover partly with a lid. Cook until the potatoes are fork tender, about 15 minutes.
Add the kale & cook until significantly wilted, about 3 minutes. If necessary, add water or chicken stock to cover. Return the cooked sausage to the pot & stir through. Let the soup simmer for 5 minutes for the flavours to come together. Taste for seasoning & adjust with salt and pepper as desired.
Ladle the soup into individual serving bowls & garnish with the reserved bacon
This Whole30 chopped big mac salad is such an easy, delicious and quick lunch or dinner to whip up on a weekday or to prepare for meal prep. It’s full of flavor, light & bright, and low carb + paleo!
Plus the only thing you have to really even cook is the beef! Just a little chopping and you’ve got your healthy salad ready to go.

Roasted Sweet Potatoes with Tahini

4 small sweet potatoes, cut in half lengthwise
2 tablespoons avocado oil
kosher salt and freshly-cracked black pepper
½ cup 100% pure toasted sesame seed paste (tahini)
1 clove garlic, finely chopped
1 tablespoon lemon juice
¼ teaspoon kosher salt
½ cup ice cold water
1 teaspoon Aleppo pepper
Fresh parsley leaves, for garnish
1. Preheat oven to 425F. Line a sheet pan with parchment paper.
2. Rub the flesh of each sweet potato with avocado oil and season with salt and pepper. Place on the prepared sheet pan, cut side-down, and roast for 35-40 min or until fork-tender and the flesh is caramelized. Don’t bother flipping the potatoes halfway since this just lets valuable heat escape from the oven.
3. While the potatoes roast, make the tahini sauce by combining sesame seed paste, garlic, lemon juice and salt in a bowl. Whisk until combined and a paste forms. While continuously whisking, slowly pour in the water a little bit at a time until the sauce is smooth and can coats the back of a spoon.
4. Transfer the sweet potatoes to a serving platter, cut side-up, drizzle with tahini sauce, sprinkle with Aleppo pepper and garnish with parsley. Serve immediately.

For the Dill Pickle Wings:
2.5 lbs chicken wings
1 cup Whole30-compliant dill pickle juice
2 tbsp avocado oil
1 tbsp garlic powder
1/4 tsp freshly-cracked black pepper
For the Dill Pickle Mayo:
1 cup Whole30 compliant mayo
1 large dill pickle, finely chopped, around 1/4 cup in volume
1/4 cup fresh dill, finely chopped
2 cloves garlic, finely chopped
1/4 cup dill pickle juice
1/4 tsp freshly-cracked black pepper
1. Add wings to a zip top bag. Pour in the pickle juice and close the seal. Move the wings around in the juice to evenly coat. Crack a corner of the seal open, and press out as much air as possible. Reseal the bag, lay all the chicken wings flat and refrigerate on a tray at least 4-6 hours.
2. Meanwhile, prepare the Dill Pickle Mayo by adding all the ingredients to a mason jar and stirring to combine. Taste for seasoning and adjust black pepper as required. Seal and refrigerate until ready to serve.
3. When ready to cook, preheat oven to 425F. Discard pickle juice and pat wings VERY dry with paper towel. Place wings on a baking sheet lined with parchment paper. Drizzle with avocado oil and season with garlic powder and black pepper. Toss everything to coat and arrange wings in a single layer. Transfer wings to bottom rack of the oven and bake for 30-35min or until cooked to 165F and crispy. Note: I don't bother flipping the wings halfway. They always come out golden brown and crispy on both sides.

Who woulda thunk these Greek Burgzzz would become the most popular recipe on my blog?! 🤷🏻♂️I think it’s the toasted pine nuts and green bell pepper that put it over the top. The pepper lends a bit of sweetness and juiciness to the meat. And the pine nuts add an unexpected crunch. If you're allergic to nuts, obviously omit the pine nuts. If not, I strongly recommend you give them a try. You'll love the texture and slightly nutty flavor

2. Divide the mixture into 8 equal parts and form into patties. Drizzle both sides of each burger with a bit of avocado oil and season with salt and pepper. 3. Preheat grill or grill pan to med-high heat. Grill burgers approximately 5-6 minutes per side or until cooked to your preference. 4. Transfer burgers to a serving platter and cover with foil to keep warm. 5. Cut iceberg lettuce into wedges and prepare toppings. Arrange each burger individually or serve everything as a buffet so that family/friends can build their own burgers.
Trying to use up the odds and ends from the fridge before Justin and I leave in a few days, so that usually means I’m making some sort of stir fry or skillet.. like my cashew chicken skillet! 😍
It’s quick & easy to make, Whole30 & paleo, and the stir fry “peanut” sauce brings the whole thing together! Plus the leftovers are delish 🙌🏻

¼ cup coconut aminos
[1/4] cup fresh orange juice [1/8] cup fresh lime juice
2 garlic cloves, roughly chopped
1 teaspoon fennel seeds, coarsely ground
1 teaspoon aji amarillo paste
1 pork tenderloin
Kosher salt and freshly ground black pepper
½ recipe Copycat Ding’s Coleslaw, for serving (see previous post)
1. In a jar, combine the coconut aminos, orange juice, lime juice, garlic, fennel seeds and aji amarillo. Stir to combine. Season all sides of the pork with salt and pepper and transfer to a zip-top bag. Pour in the marinade and massage to coat. Squeeze out as much air from the bag as possible, seal, and refrigerate 4 hours to overnight.
2. Preheat oven to 250F. Line a sheet pan with a wire rack. Transfer pork onto the rack, reserving the marinade, and gently pat with paper towel to dry. Transfer to oven and roast until it reaches an internal temperature of between 140F-145F, about 1.5 hours.
3. Meanwhile, pour the reserved marinade into a sauce pan through a mesh sieve. Discard solids. Heat the marinade over medium-low heat until reduced to a glaze, around 15 minutes.
4. Preheat grill or grill pan over medium-high heat. Remove pork from oven and brush with avocado oil. Lay the pork in the pan and cook until grill marks form, around 2 minutes. Flip, brush the top with glaze and continue to cook until grill marks form. Continue this process until the internal temperature of the pork reaches between 160 and 165F. Apply one final coat of glaze before carving and serving with slaw.
