    Creamy Tofu Korma by @cupfulofkale 🧡

yield: 4 prep time: 10 MINUTES cook time: 30 MINUTES total time: 40 MINUTES

INGREDIENTS
KORMA PASTE
1/2 tsp cumin seeds
1/2 tsp coriander seeds
1/2 red onion
4 garlic cloves
1/2 inch ginger
1 tsp garam masala
1 tsp ground cumin
1/2 tsp ground turmeric
1/4 tsp ground cardamom
1/4 tsp ground cinnamon
Pinch of hot chilli powder
2 tbsp tomato puree
1 tbsp oil
OTHER INGREDIENTS
500g extra firm tofu
1 tin (400ml) coconut milk
1/2 cup cashews
1/2 cup water
75ml vegetable stock
1/2 lemon
TO GARNISH
1/2 cup cashews, toasted
Fresh coriander

INSTRUCTIONS  1.  In a dry frying pan on medium-high heat fry the coriander and cumin seeds until fragrant. Add to a blender/spice grinder and blend until fine.
 2.  Add them along with the remaining paste ingredients to a blender and whizz until a paste forms. If it's getting stuck in the blades add a splash of water to loosen.
 3.  In a large frying pan heat a tbsp of oil and add the tofu. Break up into chunks using your hands (for a more meaty look) or cut into 1 inch pieces. Fry for 5-10 minutes until starting to crisp and turn golden. Transfer to a bowl and set aside for later.
 4.  In the same pan, add the curry paste along with the coconut milk and vegetable stock on a low heat.
 5.  Place the cashews and water in a high speed blender until creamy. If you don't have a high speed blender you will need to soak them in hot water for 20-30 minutes to soften them.
 6.  Add to the pan with the curry sauce and bring to a gentle simmer for about 15 minutes.
 7.  Meanwhile in a fry frying pan on medium heat add the cashews and toast until turning brown. Stir frequently so they don't burn.
 8.  When the korma sauce has thickened and is nice and creamy add the tofu in until warmed through. Add juice of half a lemon, stir and then taste. Season with salt and pepper.
 9.  Top with the toasted cashews and fresh coriander and serve! #bestofvegan

150g de cream cheese

    Gluten free peanut butter almond cookies by @nm_meiyee 💜

Ingredients (recipe makes 6) 
1/2 cup organic gluten free all purpose flour
1/3 cup almond flour 
1/4 cup creamy peanut butter, sugar free 
2 tbsp coconut oil 
2 tbsp maple syrup 
1 tsp vanilla bean extract 
1/2 tsp baking soda 
1/4 tsp sea salt .
100g dairy free dark chocolate, melted 
1/4 cup almond, chopped .

Preheat oven to 180c/360F
In a large bowl combine flour, almond flour, baking soda, get it a good mix. Add in peanut butter, coconut oil, maple syrup, vanilla, salt and mix until well combined.

Divide the dough into 6 pieces. Roll dough into balls. Place on a cookie sheet and use the cookie stamp to press the dough. Bake for 10-12 minutes or until golden brown. Allow cookies to cool completely. .
Dip the cookies in chocolate glaze about halfway, let excess drip off, and place back on parchment-lined pan. Top with chopped almonds. Refrigerate for 5 minutes until set. Enjoy! #bestofvegan

    Coucou les gourmands, j'espère que vous allez bien.

Ici, aujourd'hui, il y avait un beau soleil mais accompagné d'un froid de canards. Du coup c'est devant un agréable feu de cheminée, qu'avec les copines, on a dégusté une tarte aux pommes aussi reconfortante que cette ambiance cosy.
Un vrai kiff 🥰

Pour la recette j'ai utilisé la pâte feuilleté express publié en story permanente.
Apres l'avoir étalé et découpé son contour, je l'ai piqué à la fourchette puis j'ai ajouté de la compote de pommes. J'ai découpé finement des tranches de pommes que j'ai disposé soigneusement. Ensuite j'ai saupoudré de cassonade et j'ai mis quelques dés de beurre sur le dessus. J'ai fini par badigeonné tout le contour de jaunes d'oeufs et j'ai fait cuire ma tarte une trentaine de minutes à 180 degrés.
N'hésitez pas à faire défiler les photos 💜

    It’s been a while since we been to @calgaryhancorea and glad we are back! They have tons of great dishes but all the portion are huge so best to go with a group of people so you get to share all their delicious dishes. We got quite a few things to share amongst the 4 of us! Bibimbap, pork bone soup, seafood pancake, beef bulgogi and spicy pork and squid.

    It’s been a while since we been to @calgaryhancorea and glad we are back! They have tons of great dishes but all the portion are huge so best to go with a group of people so you get to share all their delicious dishes. We got quite a few things to share amongst the 4 of us! Bibimbap, pork bone soup, seafood pancake, beef bulgogi and spicy pork and squid.

В общем мы решили долго не думать и взять фирменное блюдо. Слайсы бекона, шпинат, яйцо пашот, бриошь и все это под голландским соусом. Окей, это действительно стоит внимания. Простое, но утонченное блюдо, которое позволяет быстро перекусить и при этом почувствовать себя немного эстетом (это же все-таки не просто жареная яичница, камон). Хотите порадовать себя с утра чем-то более интересным, чем овсянка, тогда вам точно сюда. Всем доброго утра!
