    Roasted Red Pepper Pasta with Vegan Parmesan by @ginabnutrition 🍝 Tag a fellow pasta-lover! Get the recipe below:

Serves 1 - Chop up 1 red bell pepper and place on a baking tray with 2 cloves garlic (don’t peel, just chop the ends off), a few cherry tomatoes (optional), drizzle of olive oil, salt + pepper - roast for 20 mins. 
In the meantime, put enough pasta for 1 on to boil in salted water. When the veg is done, squeeze the garlic out from it’s skin and add it all to your blender along with 1-2 tbsp nutritional yeast, 1 tbsp extra virgin olive oil, pinch chilli flakes, 1 tbsp tomato purée + 3 tbsp plant milk ~ blend until smooth and stir through cooked spaghetti/pasta until coated - garnish with a little basil and enjoy! ​.

    Pineapple Fried Rice 🍍 by @plantbased.traveler

2 cups cooked rice of choice * 
1 cup chopped pineapple

Tofu egg:
1/2 block organic firm tofu
1 small onion
2 garlic cloves 
1/2 tbsp nutritional yeast 
1/4 -1/2 tsp kala namak salt 
Pinch of turmeric 
Pepper to taste 
Veggies: 
1 red bell pepper 
1  carrot 
2 spring onion
1/2 cup shelled edamame 
1 cup chopped broccoli florets 
1/4 cup corn
1/4 cup peas

To season: 
2 tbsp coconut aminos 
2 tbsp teriyaki style sauce ** Chili flakes to taste

Optional: 
Pineapple boat for serving 🍍 *previoulsy cooked rice works best, or at least let it cool down completely before using ** I used @traderjoes Island soyaki sauce (Makes 2+ servings)

As always first step is to prepare your veggies. Wash/peel bell pepper and carrot and dice them. Cut washed broccoli into small florets and slice spring onion. If using frozen peas, corn and edamame, take them out of the freezer and set aside. 
Finely dice onion and garlic and sauté them with a few drops of oil or a splash of water, starting with the onion, then adding garlic once onion is starting to brown. 
Break up tofu into crumbles with a fork, add it to the pan together with the spices and continue cooking for a few more minutes. I like adding a splash of unsweetened plant milk if texture is too dry. 
Set tofu aside and sauté carrot, bell pepper, broccoli and spring onion, then add peas, corn and edamame to the mix. 
Next, add rice and stir until everything is well combined and heated through. Add tofu back to the pan/wok and season with coconut aminos, sauce and some chili flakes to taste.
At the very end add pineapple and enjoy 😊

Mohammad inspires me every time I have him in class. His OTF journey with us started almost exactly one year ago in September when he took class for the first time.     Do you ever have a post-dinner falafel craving that needs immediate attention? When I lived in Montreal, I got spoiled - I lived about two blocks away from a Lebanese takeout place that was open until 2am (and also a 24h Tim Horton’s, those were the days). Now, I’m nowhere near a Lebanese restaurant, and have to resort to making my own, which I guess I would have to do anyway, since chickpeas are a little carbier. .

So, this is my keto version of falafel, made with lupins instead of chickpeas (though you can used soaked almonds as well) and cooked up in the air fryer. They really don’t take that long to make, and are so delicious! If you are at all a falafel fan, I highly recommend giving these a go. Recipe link in bio (or search “falafel” on MeatFreeKeto.com)! 💛

    Years ago I tinkered around with brewing my own #kombucha. Life happened and I put it down. NOW things in my world are less chaotic and I have time for healthy hobbies like brewing and piddling In the kitchen. #Science and art were my favorite subjects in school. Makes sense that I'd combine the 2 subjects years later to create these awesome combinations of booch. I'm learning as I go. Next things to teach myself are how to make #waterkefir and #veganyogurt. I seriously love having to wait for these awesome things to peak and be ready to consume. Patience. #ilovekombucha #vegan #healthy #alchemy
